Journal of Food Science and Biotechnology
[Objective ] This study aims to increase the caproic acid yield of Aneurinibacillus JXN- 1.[Method ] First,a Plackett-Burman design was employed to screen the significant factors affecting caproic acid yield from eight medium components.Subsequently,the path of steepest ascent method was used to determine the optimal concentration ranges of these significant factors.Finally,a Box-Behnken design was utilized to establish a quadratic polynomial regression model,and the interactions among the significant factors were analyzed to predict the optimal medium composition.[Result ] The Plackett-Burman design identified the mass concentration s of sodium acetate and calcium folinate and the volume fraction of ethanol as significant influencing …

The meat industry faces significant economic losses and environmental impacts due to spoilage and waste, much of which results from inadequate, delayed, or inefficient quality assessment. Traditional methods used for assessing meat quality are often time-consuming, labor-intensive, and lack the ability to provide real-time information, making them insufficient for modern supply chains that demand safety, freshness, and minimal waste. Recent advances in nanotechnology position nanofibers (NFs) as promising materials for addressing these challenges through smart sensing and active packaging. NFs, characterized by their high surface-to-volume ratio, tunable porosity, and small diameter, enable superior encapsulation and immobilization of sensing agents. These …

Comparative Analysis Of Probiotic Viability In Alcoholic And Non-Alcoholic Kombucha, Isabella N. Cerrone, Brooke Pirkle, Danielle Williamson, Gianna Vendrell, Chloe Kraft

Kombucha is a fermented tea beverage valued for its probiotic and antimicrobial properties that arise from complex molecular interactions between yeast, acetic acid bacteria (AAB), lactic acid bacteria (LAB), and metabolic byproducts of fermentation. With the rising demand for non-alcoholic versions of traditionally alcoholic kombucha beverages, ethanol reduction methods have become common, though their impact on probiotic viability and antimicrobial properties remains poorly understood. This study investigates the effects of ethanol removal on kombucha’s functional properties, including probiotic survival, antimicrobial activity, and organic acid composition (pH).
