Mozzarella cheese (MC) is widely used for pizza ap- plications, and it is generally shredded either in conver- sion plants or in pizzerias. The shreddability of MC is influenced by a variety of factors and it is critical to understand how different Mozzarella cheese types and storage conditions (temperature and age) affect this prop- erty. The present study investigates the impact of heat moisture treatment (HMT) on the utilization of dietary fibers from red lentil hulls and wheat bran and its subsequent effect on gut microbiota and short-chain fatty acid production. HMT significantly decreased the water absorption index in red lentil hulls but increased it in wheat bran. For resistant starch (RS), HMT elevated its content in red lentil hulls but diminished it in wheat bran. In terms of dietary fiber content, HMT increased soluble dietary fiber in red lentil hulls. Plant-waste-derived bioactive compounds have generated growing interest recently. In this context, this project examined the phenolic content, antioxidant capacity, antimicrobial activity, and antibiofilm capability of the seed extract of Phoenix dactylifera. Six date seed varieties (Fardh, Sukarri, Negal, Majdool, Zahidi, and Khadrawy) were studied. In this study, a novel ultrasound-assisted extraction technique is compared with the conventional extraction method (maceration using 80% ethanol), taking into account both the quality and quantity of polyphenols. In this research, the dietary fibers (DFs) from ginseng residue were extracted by employing three different extraction methods (alkaline: AL, acidic: AC, enzymatic: EN). The extracted DFs were characterized in terms of their structural and functional properties. The results clearly showed that, regardless of the extraction methods, all DF samples exhibited representative infrared spectral features. The DF extracted by AC (citric acid) had more porous structures with a looser configuration, in conjunction with high apparent viscosity, whereas the DF extracted by EN (α-amylase and protease) exhibited higher thermal stability. The results of our study underline the significance of the explicit consideration of consumer and producer heterogeneity and the size and type of the locality when analyzing the market and welfare impacts of the ‘Buy Local’ trend. In addition to providing important new insights on the market and welfare impacts of the ‘Buy Local’ trend, our analysis can also provide a valuable theoretical grounding for empirical studies aimed at quantifying the economic impacts of the trend in different food product markets as well as the impact of current and emerging policies affecting the markets for local foods.

This research explores the intersection of sustainable food practices and community connection in the Byron Shire, New South Wales Australia. This study specifically focuses on how practices such as composting, organic agriculture, farmers markets, and shared meals encourage both environmental well-being and social bonds. This project is presented as a 21 minute documentary titled Harvesting Connections, which included five semi-structured interviews with community members, including local farmers, home gardeners, market managers, and community garden leaders. This study examines the differences in food availability between tourist and rural markets in Bali, focusing on the factors contributing to a diet shift in Bali. Using a mixed-methods approach—including interviews with local residents, observational surveys, and a literature review—this research highlights the influence of tourism, social media, and government policies on food choices and accessibility. Findings reveal a noticeable increase in processed foods in tourist areas, driven by demand for convenience and "Instagrammable" options, while rural markets maintain a higher prevalence of whole foods despite the creeping presence of packaged products. Sustainable pest management requires growers and regional land managers to consider the relationships among pest management practices, pest and natural enemy communities, crop loss, and multi-scalar habitat complexity. However, the causal links among these variables, in particular potential interactions between landscape and local-scale habitat complexity, remain underexplored. In the context of organically managed strawberry crops in California’s Central Coast, we tested the independent effects of landscape and local habitat complexity gradients on arthropod communities and crop loss using a piecewise structural equation model (PSEM). Black sorghum contains a high amount of anthocyanins and proanthocyanidins, whereas white sorghum predominantly comprises phenolic acids. Polyphenols covalently and non-covalently interact with protein, whereas the structure of both compounds affects these interactions. This study investigated the interactions between phenolic acids, anthocyanins, proanthocyanidins and prolamin, which is the major protein fraction in sorghum, and their effect on the pasting properties of white and black, whole and milled sorghum using different chemical agents. Urea increased the pasting viscosity of black sorghum, but not that of white sorghum, indicating that hydrogen bonds and hydrophobic interactions between prolamin and anthocyanins and proanthocyanidins play …

This study aimed to compare the effects of different conservation methods on the biochemical quality and antioxidant activity of mint, celery, parsley, and laurel. The plants were subjected to oven-drying at two temperatures (30 and 50°C), microwave drying at different powers (100, 300 and 600W), refrigeration for 24 hours, and freezing for 24 hours, 7 days and 40 days). The moisture content and dry weight were measured for each method. The total phenolic content, flavonoids level, and antioxidant activity were evaluated in fresh and dried plants. Shallots from Brebes, also called Bima Brebes, have a more pungent aroma compared to other varieties. Its high demand results in increased prices in the market, leading to frequent cases of fraud wherein Bima Brebes shallots are replaced with other types of shallots. This study aimed to develop an analytical method using gas chromatography–flame ionization detector (GC-FID) fingerprinting combined with chemometrics to authenticate Bima Brebes shallots. Essential oils were extracted through ultrasonic hydrodistillation, followed by organoleptic, refractive index, GC-FID fingerprinting and chemometric analysis. Wheat is one of the most important cereal crops worldwide, but the production and productivity of wheat is affected by heat stress. A field experiment using an alpha lattice design with seven blocks was conducted on 35 elite wheat genotypes in the Terai region of Nepal to identify the most appropriate trait resulting in a high-yielding wheat genotype with high tolerance to heat stress. The development of innovative food packaging technologies, particularly those capable of monitoring freshness, has become increasingly important in the food industry. This research explores the development of a pH-responsive freshness sensor using polyvinyl alcohol–red cabbage (PVA/RC) nanofibers. The nanofibers are fabricated through the electrospinning technique and meticulously analyzed via scanning electron microscopy, Fourier-transform infrared (FTIR) spectroscopy, and differential scanning calorimetry (DSC). The results underscore the fine structure of the nanofiber matrix, with an average diameter of ~68 nm. Changes in land use and land cover (LULC) are critical for evaluating global spatiotemporal trends, especially regarding climate change and urbanization. This study investigates the dynamics of Landsat surface temperature (LST) in response to LULC changes and their effects on the seasonal microclimate in Kasur District, Pakistan. Using the Google Earth Engine platform, we employed a random forest algorithm to detect LULC changes (cropland, forest, built-up, fallow, barren, and water) and analyze seasonal spectral indices from Landsat imagery for 1988, 2002, and 2022. Single-use plastics (SUP), which are extensively utilized in food packaging, are one notable cause for the constantly growing littering issue. This novel study is one of the first attempts to systemically analyze food packaging data to reveal the potential for plastic packaging material reduction or substitution by utilizing a primary packaging material summary of single items sold in Finnish supermarkets. Ginseng (Panax sp.) is a medicinal plant used for its purported health benefits, primarily in East Asian countries. The COVID-19 pandemic led to a significant increase in sales of dietary supplements, including ginseng supplements, to purportedly support immune health and provide other health benefits. However, this heightened demand has subsequently increased the risk of adulteration in these dietary supplements. We employed a straightforward microwave-assisted extraction technique to investigate the presence of carbon dots (CDs) in Chinese herbal extracts derived from fructus gardeniae and gardenia charcoal, designated as CDs-1 and CDs-2, respectively. The found CDs exhibited unique photoluminescence with quantum yields of 0.95% for CDs-1 and 1.81% for CDs-2, indicating significant potential for bioimaging applications. Both CD types maintain approximately 80% of their fluorescence intensity after 120 minutes of continuous 365 nm UV exposure, underscoring their stability and suitability for prolonged biological studies. Chitosan and alginate, are non-toxic and biodegradable polymers used to enhance the stability of biotherapeutics by loading them into nanocarriers. In this study, the stone fish-derived low molecular weight peptide (Ala-Leu-Gly-Pro-Gln-Phe-Tyr), exhibited an in vitro ACE-inhibitory activity of 94.43 ± 2.05% and an IC50 of 0.012 ± 0.001 mM. The peptide was encapsulated via ionic gelation with alginate followed by polyelectrolyte complexation with chitosan. Overuse of levofloxacin (LEV) is often associated with bacterial resistance and serious health problems, underscoring the need for reliable sensing and monitoring of LEV molecules. Therefore, this study aimed to investigate LEV using boron-doped diamond (BDD) and boron-doped diamond modified with MXene (Ti3C2TX) (BDD-MXene) electrode. The successful deposition of MXene on the BDD surface was confirmed using scanning electron microscope (SEM). Cyclic voltammetry (CV) and square wave voltammetry (SWV) methods were also applied to evaluate the electrochemical behavior. In this study, nanostructured thin films were produced from thymoquinone (TQ)-loaded composites encapsulated with different ratios of bacterial nanocellulose (BNC) to chitosan (CS). The study aimed to investigate their characterization, antibacterial effects, and potential as drug film coating materials. Chemical features and morphological characteristics were determined, and release tests and antibacterial assays were conducted on the thin film layers. As a result, BNC/CS-thymoquinone composite films obtained at different ratios were found to exhibit the highest antibacterial effect, particularly films with a 70% BNC/CS to 30% thymoquinone ratio, against Salmonella typhimurium bacteria.

A sustainable solution to prevent the waste of fruits and vegetables from spoilage is the use of edible coatings or films. This research project aimed to create a fresh coating recipe that could effectively extend the shelf life of mangoes. The coating was composed of chitosan, glycerol, and gum Arabic mixed with the extract obtained from the extraction of Cleistocalyx operculatus plant. The prepared exact has a total polyphenol content of 17% and showed potent free radical scavenging abilities in a dose-dependent manner.
