Innovative Methyl Bromide Alternatives: Efficacy Of Acetic Acid Coated Ham Nets And Carboxymethyl Cellulose Films In Inhibiting Mite Infestations On Dry-Cured Ham, Sawyer Wyatt Smith
Theses and Dissertations
Dry-cured hams may become infested with Tyrophagus putrescentiae (ham mites) during the aging process. Traditionally, methyl bromide (MB) fumigation has been used to control these infestations, but its phase-out due to environmental concerns has prompted the need for alternative methods. This study evaluated the effectiveness of acetic acid-coated ham nets and carboxymethyl cellulose (CMC)-based edible films with propylene glycol (PG) in mitigating mite infestations. Laboratory trials assessed the impact of these treatments on mite orientation, reproduction, infestation rates, and sensory quality. Results indicate that CMC films were effective at controlling mite growth and reproduction with minimal sensory impact. In contrast, …

Chickpea (Cicer arietinum L.) is the second most widely grown legume crop after soybean. Here, we measured the macronutrients and performed proteome profiling of eight chickpea cultivars using two complementary protein extraction solvents. The total protein, starch, and soluble sugar contents significantly differ between cultivars, and we quantified 2434 and 1809 proteins, respectively, from urea- and water-based extraction solvents using a data-independent acquisition approach. The proteome-level differences can vary from 9-25% for the urea-extracted proteins, and the storage protein abundances significantly differed between the cultivars, where legumin content was detected as the highest, followed by vicilin and albumin. Fifty common …

Dairy Science and Food Science Faculty Publications: 2022 to Present
Fresh produce is traditionally labeled with plastic Price LookUp (PLU) stickers that are environmental contaminants and can easily detach during handling and disrupt traceability. The CO2 laser-labeling technology (LLT), an alternate method of produce labeling, has been gaining attention. However, the performance of this technology varies by produce, and consumer perception and acceptability remain understudied. The study evaluated consumers' perception and acceptability of the laser-labeled apple fruit that were purchased locally, laser-printed with a QR code, and coated with edible wax. A consumer study (N = 75) was conducted using 1) Apple with QR-code, 2) Apple with PLU plastic …

The Atheroprotective Impact Of Anti-Mir-33a-5p/3p In Cultured Pro-Inflammatory Endothelial Cells, Kun Huang
All Dissertations
Atherosclerosis is the process of cholesterol buildup within arterial cells, which is considered a leading factor that causes certain cardiovascular diseases. Cholesterol accumulation within pro-inflammatory endothelial cells is thought to induce atherogenesis and accelerate atherosclerosis progression. Evidence suggests inhibiting the microRNA miR-33a in arterial cells may promote atheroprotection via increasing ABCA1 protein expression. MiR-33a is processed into two functional strands, miR-33a-5p and miR-33a-3p. The potential atheroprotective effect of inhibiting miR-33a-5p and/or miR-33a-3p precisely in pro-inflammatory endothelial cells is not fully understood, as data is scant regarding what potential atheroprotective impact ABCA1-dependent cholesterol within pro-inflammatory endothelial cells demonstrates, which occurs via …

The Philippine Agricultural Scientist
Population control of golden apple snails (GAS, Pomacea canaliculata) is beneficial in rice farming; however, the associated control measures can be expensive and time-consuming. Currently, farmers use synthetic molluscicides such as niclosamide to control GAS infestation, but this has some drawbacks. For example, niclosamide has broad toxicity to non-target organisms and negatively affects the growth of rice seedlings. Plant extracts with potent bioactivity and low toxicity to non-target organisms are attractive alternatives to synthetic molluscicides. In this study, the bioactivity of the crude fruit extract of tagpo (Ardisia tomentosa) was assessed against GAS and tilapia (Oreochromis niloticus) fries. The potential …

Investigating Consumer Perception And Wine Quality Impact On Alternative Packaging On Grape (Vitis), Mark Walker Bartz
Investigating Consumer Perception And Wine Quality Impact On Alternative Packaging On Grape (Vitis), Mark Walker Bartz
Graduate Theses and Dissertations
The grape (Vitis species) and wine industry has major global economic impacts but faces issues with sustainability. The use of glass bottles for wine production is environmentally unsustainable due to energy-intensive manufacturing and poor recycling rates. However, wine consumers tend to associate glass bottles with higher quality over alternative wine packaging materials such as aluminum, polyethylene terephthalate (PET), and flexible bags/pouches. Since wine price and packaging influence consumers perception of wine quality, wine producers need to understand consumers to maximize profits. Thus, the overall objectives of this research were to investigate consumer perception and wine quality impact of alternative …

Culinary proverbs, tips and tricks, or old wives’ tales lead to many variations in a recipe. In Molecular and Physical Gastronomy, the term “culinary precisions” is used to describe any piece of information that has something to do with the technical description of the dish, but does not belong to the definition (that is the minimum required to make the dish). The aim of this study was to test the culinary precision that “using aged cultured buttermilk” (which should be more acidic than fresh buttermilk) improves the sensory properties of soda bread by promoting the chemical reactions between the acidic …
