A process of removing thinner kernels of rough rice, i.e., thickness fraction process, has been suggested as a method for increasing milling yields in the rice industry. Bovine respiratory disease (BRD), as one of the most common and costly diseases in the beef cattle industry, has significant adverse impacts on global food security and the economic stability of the industry. The bovine respiratory microbiome is strongly associated with health and disease and may provide insights for alternative therapy when treating BRD. The niche-specific microbiome communities that colonize the inter-surface of the upper and the lower respiratory tract consist of a dynamic and complex ecological system. Fermentation of food waste into 2,3-butanediol (2,3-BDO), a high-value chemical, is environmentally sustainable and an inexpensive method to recycle waste. Compared to traditional mesophilic fermentation, thermophilic fermentation can inhibit the growth of contaminant bacteria, thereby improving the success of food waste fermentation. However, the effects of sugar and nutrient concentrations in thermophilic food waste fermentations are currently unclear. Here, we investigated the effects of sugar and nutrients (yeast extract (YE) and peptone) concentrations on 2,3-BDO production from fermenting glucose and food waste media using the newly isolated thermophilic Bacillus licheniformis YNP5-TSU. Soy protein (SP), egg white protein (EP), and whey protein (WP) at 6% w/w were individually incorporated into the batter of a wheat starch (WS) and wheat gluten (WG) blend (11:1 w/w ratio). Moisture adsorption isotherms of WS and proteins and the viscosity, rheological behavior, and calorimetric properties of the batters were measured. Batter-breaded fish nuggets (BBFNs) were fried at 170 °C for 40 s followed by 190 °C for 30 s, and pick-up of BBFNs, thermogravimetric properties of crust, and fat absorption were determined. Crosses between Drosophila simulans females and Drosophila melanogaster males produce viable F1 sons and poorly viable F1 daughters. Unlike most hybrid incompatibilities, this hybrid incompatibility violates Haldane’s rule, the observation that incompatibilities preferentially affect the heterogametic sex. Furthermore, it has a different genetic basis than hybrid lethality in the reciprocal cross, with the causal allele in Drosophila melanogaster being a large species-specific block of complex satellite DNA on its X chromosome known as the 359-bp satellite, rather than a protein-coding locus. The causal allele(s) in Drosophila simulans are unknown but likely involve maternally expressed genes or factors since the F1 …

The purpose of this study was to determine how communicating authentic agricultural information using an infographic affects Millennial and Generation Z students’ perceptions of genetically modified organisms (GMO) and to determine the perceptions of college students regarding the infographic used to convey agricultural messages. This study used survey research methods with open- and closed-ended questions administered through Qualtrics. The questionnaire was designed with five sections including a pre-questionnaire, content presentation, post-questionnaire, infographic perception questionnaire, and demographics section. Cost-effective weed suppression is an important consideration for tomato growers. Growers often choose methods which minimize hand labor, as hand weeding can be prohibitively expensive. This project determined economic viability of high tunnel tomatoes treated with several methods of weed control, both organic and chemical. These methods included: 2-week hand weeding, 1-week hand weeding, preemergent herbicide application (plots sprayed with herbicide prior to weed emergence), straw mulch (plots bedded with straw), landscape fabric (plots covered in fabric), and untreated weedy control plots. Food insecurity is a growing issue in developing and developed countries alike, and in countries like Belize, the prevalence of hunger has soared in recent years. Not having access to diets with sufficient calories and nutrients leads to a host of developmental issues, including stunting and cognitive delays. The purpose of this work was to create an all-encompassing manual for small-scale poultry production in order to provide nourishment for the students and staff of a school in Belize. Inuit living in Nunangat, a northern territory in Canada, are facing unprecedented rates of food insecurity. The increasing impacts of anthropogenic climate change are rapidly changing the Arctic landscape in Nunangat, posing challenges to Inuit hunters who hunt and live completely self-sufficient off of the land. Se’i sapi is a traditional Indonesian smoked meat product that is normally degraded by both microorganisms and lipid oxidation. The aim of this study was to determine the effect of essential oils on the quality of sterilized se’i sapi. Firstly, antioxidant activity and total phenolic compounds of cinnamon (CEO) and nutmeg (NEO) essential oils, and liquid smoke were investigated. It was found that CEO and NEO had good potential on their antioxidant activities, while liquid smoke exhibited very low antioxidant activity. Total phenolic content of CEO and NEO showed a high value, which were 110.64 and 109.13 mg GAE/g, respectively. …

การผลิตน้ำทุเรียนที่มีปริมาณฟรักโทโอลิโกแซ็กคาไรด์สูง, นันทัชพร ไชยชนะ

งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของเอนไซม์ Pectinex® Ultra SL-L ต่อการลดปริมาณน้ำตาลซูโครสในน้ำทุเรียนเข้มข้น 15% w/w โดยศึกษาที่อุณหภูมิ 55 องศาเซลเซียส และแปรระยะเวลาในการบ่ม 2, 4, 8, 24 และ 48 ชั่วโมง ศึกษาผลของการเติมนมต่อความคงตัวของฤทธิ์การต้านอนุมูลอิสระในน้ำทุเรียนที่เก็บรักษาที่อุณหภูมิ 4 องศาเซลเซียส เป็นเวลา 15 วัน และศึกษาหาภาวะที่เหมาะสมต่อการผลิตไมโครแคปซูลน้ำทุเรียนด้วยการทำแห้งแบบพ่นฝอย โดยแปรชนิดสารห่อหุ้ม (มอลโตเด็กซ์ตรินต้านทานการย่อย, มอลโตเด็กซ์ตรินต้านทานการย่อยผสมกับกัมอาระบิก และกัมอาระบิก) และอุณหภูมิขาเข้า (140 และ 160 องศาเซลเซียส) โดยผลการทดลองพบว่าการใช้เอนไซม์ Pectinex® Ultra SP-L ส่งผลทำให้ปริมาณน้ำตาลซูโครสในน้ำทุเรียนมีปริมาณลดลงและมีปริมาณ fructooligosaccharide (FOS) เพิ่มขึ้น โดยระยะเวลาการบ่มไม่ส่งผลต่อปริมาณ FOS อย่างมีนัยสำคัญ (p>0.05) และเลือกระยะการบ่มที่เวลา 2 ชั่วโมง ไปใช้ในขั้นตอนต่อไป และจากผลการศึกษาผลของการเติมนมต่อความคงตัวของฤทธิ์การต้านอนุมูลอิสระในน้ำทุเรียนพบว่าน้ำทุเรียน น้ำทุเรียนเติมเอนไซม์ น้ำทุเรียนผสมนม และน้ำทุเรียนผสมนมเติมเอนไซม์ มีปริมาณน้ำตาลซูโครสและ FOS ปริมาณสารประกอบฟีนอลิกทั้งหมด และฤทธิ์การต้านอนุมูลอิสระที่ลดลงอย่างมีนัยสำคัญทางสถิติ (p≤0.05) เมื่อมีระยะเวลาการเก็บรักษาที่เพิ่มขึ้น ในขณะที่ปริมาณจุลินทรีย์ทั้งหมดและปริมาณยีสต์และรามีปริมาณเพิ่มขึ้นน้อยกว่า 4 log CFU/mL โดยน้ำทุเรียนผสมนมเติมเอนไซม์มีค่าพรีไบโอติกแอกทิวิตีมากที่สุด และเลือกน้ำทุเรียนเติมเอนไซม์ไปใช้ในการศึกษาหาภาวะที่เหมาะสมต่อการผลิตไมโครแคปซูลน้ำทุเรียนด้วยการทำแห้งแบบพ่นฝอย จากการทดลองพบว่าทุกปัจจัยในภาวะการผลิตผงไมโครแคปซูลน้ำทุเรียนส่งผลต่อสมบัติทางกายภาพ เคมี และฤทธิ์การต้านอนุมูลอิสระของไมโครแคปซูลน้ำทุเรียนอย่างมีนัยสำคัญทางสถิติ (p≤0.05) และพบว่าผงไมโครแคปซูลมีสีเหลืองสว่างปนเขียวอ่อน มีร้อยละผลผลิตอยู่ในช่วง 48.94±0.90% ถึง 64.50±1.86% มีความชื้นและค่ากิจกรรมของน้ำต่ำกว่า 6% และ 0.3 ตามลำดับ ซึ่งเป็นไปตามมาตรฐานผลิตภัณฑ์อาหารแห้ง ความสามารถในการละลายอยู่ในช่วง 81.53±4.65% ถึง 94.21±5.58% มีประสิทธิภาพในการกักเก็บสารต้านอนุมูลอิสระอยู่ในช่วง 88.63±0.20% ถึง 97.28±0.14% และผลจากกล้องจุลทรรศอิเล็กตรอนแบบส่องกราดพบว่าผงไมโครแคปซูลที่ใช้มอลโตเด็กซ์ตรินต้านทานการย่อยเป็นสารห่อหุ้มมีลักษณะรูปร่างทรงกลม พื้นผิวเรียบมากกว่าสารห่อหุ้มชนิดอื่น ในขณะที่ผงไมโครแคปซูลที่ใช้มอลโตเด็กซ์ตรินต้านทานการย่อยผสมกัมอาระบิกและกัมอาระบิกเป็นสารห้อหุ้มมีลักษณะพื้นผิวไม่เรียบและมีรอยบุบโดยรอบ เมื่อพิจารณาปริมาณสารประกอบฟีนอลิกและฤทธิ์การต้านอนุมูลอิสระพบว่าผงไมโครแคปซูลน้ำทุเรียนที่ใช้กัมอาระบิกเป็นสารห่อหุ้มและมีอุณหภูมิขาเข้า 140 องศาเซลเซียส มีปริมาณสารประกอบฟีนอลิกและฤทธิ์การต้านอนุมูลอิสระด้วยวิธี DPPH และ FRAP …

This work documented the influence of the protein source (MPC80 and WPC80), protein content (4-12%), and temperature (5-35ºC) on the rheological behavior (flow curve, frequency sweep, and creep-recovery) of ice-cream mixes (ICM). For each protein source, the viscosity of the ICM was satisfactorily modeled (𝑅2>0.98, 𝑅2 𝑎𝑑𝑗>0.98, and E0.99), while the recovery phase was represented by an empirical model. The percentage of recovery (%R) of the ICM significantly decreased with the protein content.

The seafood sector in particular suffered greatly as there was an increase in illegal fishing, it is made up of perishable goods, it is seasonal in some places, and imports and exports were slowed. Background: Using the framework of the Socio-Ecological Model, the current study aimed to investigate the associations between nutritional knowledge, food environment, food acquisition behavior, and daily recommended fruit and vegetable consumption (≥5 cups of fruits and vegetables) among Burmese refugees and immigrants in the Capital Region, New York. Methods: During July - November 2018, a cross-sectional survey with face-to-face interviews was conducted among Burmese refugees and immigrants aged 18 years and older living in Albany and Rensselaer counties (n=173, 52.0% female, mean age = 42.8). Introduction: Water, sanitation, and hygiene practices in sub-Saharan Africa, including Zambia, have not met the Millennium Development Goals (MDGs) and remain inadequate to improve the overall health and wellbeing of most populations.
Methods: Survey research, interviews, WASH observations, and anthropometric assessment were conducted between May-June 2022 on 6-7th grade students within 6 Zambian schools.
Results: While hygiene knowledge was prominent, and handwashing stations and pit latrines were available, schools rarely supplied soap or toilet paper. Diarrheal and respiratory diseases were common and water shortages remain problematic with some students traveling long distances to reach a water source.

Introduction: Dental caries is the most prevalent and infectious disease worldwide. Zambia has a high rate of vitamin A deficiency, and this deficiency is associated with dental caries.
Methods: Visual dental checks, interviewing, and anthropometric assessments were done on 781 Zambian primary school children.
Results: Caries rates are 20% among sample populations, males have more decay than females, first molars are the most decayed, a majority use toothbrushes to clean their teeth, and children who eat vitamin A rich foods are less likely to have dental caries.
