New Beginnings In Reading (Irish) Literature: A Gastrocritical Look At George Moore's 'Home Sickness' And Colm Toibin's Brooklyn, Anke Klitzing

This chapter showcases gastrocriticism as a new beginning in literary theory and criticism, offering new readings of (Irish) literature. Gastrocriticism is an emerging form of literary criticism focused on human relationships with each other and to the natural world through food. It is informed by the concepts and insights of gastronomical scholarship and Food Studies and pays particular attention to the role food and foodways play in literary writing. The texts investigated here explore new beginnings themselves. The objectives of this study were to compare effects of 0-16% (w/w) splits content (xs) of soybeans stored at 35°C and 18% moisture content (w.b.) on dry matter loss rates (vDML), and to determine a splits multiplier (MS) for soybeans stored at these conditions, similar to the damage multiplier (MD) utilized in ASABE Standard D535 for shelled corn. Effects of percentage by weight splits (xs) on MS and safe storage time are expected to be greater than MD for corn because soybeans are prone to cracking and splitting, lipid oxidation, …

The Apiaceae family of plants contains over 3,500 species, many of which are used as food crops: vegetables (carrot, parsnip, celery, etc.), herbs (cilantro, fennel, dill, etc.), and spices (cumin, anise, caraway, etc.). Many spices have been shown to exhibit antimicrobial properties against both bacteria and fungi. We set out to determine if the Apiaceae spice extracts currently used in our lab for anticancer studies exhibit any antimicrobial properties. Cercospora spp. and Corynespora spp. are two common foliar fungal pathogens in Arkansas and other soybean-producing areas. Two primary diseases caused by Cercospora spp. are Cercospora Leaf Blight (CLB, caused mainly by C. kikuchii) and Frogeye Leaf Spot (C. sojina). Over time, many fungicides used to combat these diseases have become ineffective as the pathogens have developed a resistance to them. The class of the fungicide in question is Triazoles [Demethylation Inhibitors (DMI)–FRAC 3]. Polyphenol-rich spices and extracts of phenolic compounds are widely utilized in meat processing to modify product flavors. Chemically, polyphenols are reactive with myofibrillar protein (MP), the most functional fraction of all muscle proteins responsible for texture development in comminuted meat products. Such protein–polyphenol interaction is prevalent under oxidative conditions that are common in meat processing. As a large group of phytochemicals with diverse structures, phenolic compounds are known to interact with MP with varying efficacies. Protein oxidation, a phenomenon that was not well recognized previously but now better understood, is a complex chemical process occurring ubiquitously in food systems and can be induced by processing treatments as well. While early research concentrated on muscle protein oxidation, later investigations included plant, milk, and egg proteins. The process of protein oxidation involves both radicals and nonradicals, and amino acid side chain groups are usually the site of initial oxidant attack which generates protein carbonyls, disulfide, dityrosine, and protein radicals. งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของนาโนอิมัลชันน้ำมันหอมระเหยวานิลลา (NE) และพลาสมาที่ไม่ใช้ความร้อน (PT) ต่อคุณภาพและอายุการเก็บของกะทิ เริ่มจากเตรียม NE โดยแปรอัตราส่วนของน้ำมันหอมระเหยวานิลลา (EO) และสารให้ความคงตัว (Tween 80) เป็น 3 ระดับ คือ 1:1 (NE1:1), 4:1 (NE4:1) และ 5:1(NE5:1) โดยวัดขนาดของอนุภาค (particle size), การกระจายตัวของอนุภาค (polydispersity index; PDI), สมบัติการต้านออกซิเดชัน ด้วยวิธี Ferric reducing antioxidant power (FRAP) และวิธี 2,2-diphenyl-1-picrylhydrazyl (DPPH) และสมบัติการยับยั้งจุลินทรีย์ ด้วยการหาความเข้มข้นต่ำสุดที่สามารถยับยั้งการเจริญของจุลินทรีย์ (Minimal inhibitory concentration: MIC) และความเข้มข้นต่ำสุดที่สามารถฆ่าจุลินทรีย์ (Minimal bactericidal concentration: MBC) โดยทดสอบกับจุลินทรีย์ 4 สายพันธุ์ ได้แก่ จุลินทรีย์แกรมบวก (S.aureus และ B. licheniformis) และจุลินทรีย์แกรมลบ (E.coli และ S. typhimurium) พบว่า NE1:1 มีขนาดอนุภาคเล็กกว่าและการกระจายตัวของอนุภาคดีกว่า NE4:1 และ NE5:1 ในระหว่างการเก็บรักษาที่อุณหภูมิ 30 ºC เป็นเวลา 30 วัน และพบว่า NE1:1 มีค่าการต้านออกซิเดชัน FRAP สูงกว่าสูตรอื่น แต่ค่า DPPH ต่ำที่สุด อาจเนื่องมาจากการเกิดปฏิกิริยาย้อนกลับของอนุมูล DPPH และสารฟีนอลิกบางชนิดที่อยู่ในวานิลลา และมีค่า MIC และ MBC ต่ำกว่า NE4:1 และ NE5:1 ดังนั้น NE1:1 จึงเป็นสูตรที่เหมาะสมสำหรับ NE การทดลองขั้นที่สองเป็นการหาปริมาณที่เหมาะสมของ …

Phospholipids (PLs) found in milk are of great interest due to their health and nutritional benefits associated with their consumption. By-products generated during the manufacture of dairy products represent a source of PLs with potential for value-added opportunities. Currently, the extraction of PLs from by-products results in overall lowefficiencies, and it involves subsequent solvent separation and lipid recovery. This dissertation studied the extraction of milk PLs from by-product streams with a tertiary anime (N, N-dimethyl cyclohexylamine, CyNMe2) as a switchable hydrophilicity solvent. Yellow peas are a rich source of protein and phytochemicals. Peas are compatible with many diets restricted by sensitivities, allergies, or personal choice. As a result, peas are gaining popularity in food markets, despite the challenges they present. The biggest challenges for pea proteins in food markets are high content of fiber, starch, and saponins. These components cause processing challenges and create undesirable textures and bitter flavors. Pea proteins are typically extracted with alkaline extraction or air classification methods which result in 80% and 50% protein products respectively. The fresh-cut produce industry has seen expansive growth in recent years, to meet consumer demand ready-to-eat (RTE) salads have included the use of non-traditional ingredients. Uncommon ingredients include beet greens, kale, broccoli stalk, and Brussels sprouts, since these ingredients have not historically been consumed raw, potential food safety issues should be reassessed. Current processing technologies include produce washes that can reduce microbial levels but do not eradicate all populations. งานวิจัยนี้มีวัตถุประสงค์เพื่อพัฒนาเครื่องดื่มเยลลี่โปรตีนสูงจากโปรตีนเวย์ โดยใช้โปรตีนเวย์ไอโซเลท (whey protein isolate; WPI) เป็นแหล่งของโปรตีน ใช้เจลาติน (gelatin; GT) และบุก (konjac glucomannan; KGM) เป็นสารที่ทำให้เกิดเจล ในขั้นต้น พัฒนาสูตรเครื่องดื่มเยลลี่ที่มีโปรตีน 2 ระดับ คือร้อยละ 6 และร้อยละ 10 (โดยน้ำหนัก) โดยมีส่วนประกอบของสารปรับกรด (กรดซิตริก:กรดมาลิก; 1:1) สารให้ความหวาน (ซูคราโลส:อะซิซัลเฟม โพแทสเซียม; 1:1) และสารให้กลิ่นรส ร้อยละ 0.025 (โดยน้ำหนัก) ในสูตรเครื่องดื่มเยลลี่ทั้งสอง 2 ความเข้มข้น จากนั้นแปรอัตราส่วนของสารที่ทำให้เกิดเจล (GT:KGM) ที่ความเข้มข้นร้อยละ 1.5 (โดยน้ำหนัก) เป็น 5 อัตรส่วน ได้แก่ 100:0 75:25 50:50 25:75 และ 0:100 เพื่อวิเคราะห์สมบัติทางเคมีกายภาพและลักษณะทางประสาทสัมผัส ในการคัดเลือกตัวอย่างเครื่องดื่มเยลลี่โปรตีนสูง 2 ระดับ พบว่าเครื่องดื่มเยลลี่ที่มีโปรตีนร้อยละ 6 และ 10 (โดยน้ำหนัก) ถูกเลือกจากคะแนนความชอบโดยรวมของผลิตภัณฑ์สูงสุดที่มีนัยสำคัญ (p £ 0.05) จากผู้ทดสอบจำนวน 30 คน ซึ่งได้อัตราส่วนที่เหมาะสมของ GT:KGM ที่ 75:25 และ 25:75 ตามลำดับ โดยมีปริมาณของแข็งทั้งหมดเท่ากับ 9.10 และ 12.50 °Brix ค่า pH เท่ากับ 3.41 และ 3.43 ค่าความแข็งแรงของเจลเท่ากับ 58.02 และ 35.00 g (force) และความสามารถในการอุ้มน้ำเท่ากับร้อยละ 93.00 และ 83.90 ตามลำดับ ทั้งนี้สมบัติทางการไหลของเครื่องดื่มเยลลี่ที่มีโปรตีนร้อยละ 6 …

งานวิจัยนี้มีวัตถุประสงค์ เพื่อพัฒนาแนวทางการใช้สับปะรดตกเกรดผลิตเซลลูโลสจากแบคทีเรียที่อุดมด้วยจุลินทรีย์โพรไบโอติก เพื่อเป็นเครื่องดื่มฟังก์ชั่น งานวิจัยประกอบด้วย (i) ประเมินความเป็นไปได้ในการใช้น้ำสับปะรดเต็มส่วน (pH 4.0) เพื่อผลิต Bacterial cellulose (BC) โดยเติมเพียงแอมโมเนียมไดไฮโดรเจนฟอสเฟต (0.6 % (w/v)) สำหรับชักนำการทำงานของเอนไซม์ cellulose synthase โดยทดลองหมักด้วยแบคทีเรียมาตรฐาน 4 สายพันธุ์ ได้แก่ Gluconacetobacter xylinus TISTR 1064 (ATCC 23767), Komagataeibacter xylinus TISTR 086, K. xylinus TISTR 428 และ K. xylinus TISTR 1061 พบว่า แต่ละสายพันธุ์ผลิต BC ในน้ำสับปะรดได้แตกต่างกัน โดย TISTR 428 ผลิต BC ได้มากที่สุด (105.10±0.08 g/L) (p<0.05) จึงเลือกมาประเมินสภาวะการหมัก โดยแปรพื้นที่ผิวสัมผัสอากาศ และปริมาตรของน้ำสับปะรด พบว่า ค่า BC yield (y) มีความสัมพันธ์เชิงเส้นตรงกับอัตราส่วนระหว่างพื้นที่ผิวสัมผัสอากาศต่อปริมาตรน้ำหมัก (x) ดังสมการ y =19.422x + 25.936 (R2 = 0.9346) และพบว่า เมื่ออัตราส่วนระหว่างพื้นที่ผิวสัมผัสอากาศต่อปริมาตรของน้ำหมักเพิ่มขึ้น Hardness และ Cohesiveness มีค่าลดลง (p<0.05) ในขณะที่ Springiness, Gumminess และ Chewiness มีค่าเพิ่มขึ้น (p<0.05) (ii) คัดแยกแบคทีเรียผลิต BC เพื่อพัฒนาเป็นสายพันธุ์จำเพาะในการหมักน้ำสับปะรด โดยคัดแยกจากน้ำหมักสมุนไพรที่มีส่วนผสมของน้ำและ/หรือเนื้อสับปะรดที่มีอายุการหมัก 8 ปี 5 ปี และ 10 เดือน พบว่า สามารถคัดแยกแบคทีเรียที่มีสมบัติสร้างสารคล้าย BC ในน้ำสับปะรดทั้งหมด 4 ไอโซเลท จากน้ำหมักอายุ 10 เดือน เมื่อระบุชนิดด้วยการวิเคราะห์ลำดับนิวคลีโอไทด์ที่ตำแหน่ง 16s rDNA/RNA พบว่า ไอโซเลท K1, K4, K8 และ K3 ที่สร้างสารคล้าย BC คือ Kodamaea ohmeri (98.33%) Acinetobacter sp. (73.97%) Enterobacter cloacae (82.31%) และ G. xylinus (80.16%) ตามลำดับ เลือก K3 ที่มีสมบัติทางจีโนไทป์ที่ตรงกับสายพันธุ์ทางการค้า และเมื่อนำมาศึกษาสมบัติการสร้าง BC ในน้ำสับปะรด พบว่า สามารถสร้าง BC ได้มากกว่าและเร็วกว่าสายพันธุ์ TISTR ถึง 2 เท่า จึงนำไอโซเลท K3 มาพัฒนาเป็นสายพันธุ์จำเพาะในการผลิต BC ในน้ำสับปะรด โดยเพาะเลี้ยงภายใต้สภาวะที่ประเมินได้จาก (i) และแปรปริมาณแหล่งคาร์บอน (ซูโครส) ปริมาณแหล่งไนโตรเจน (เพพโทน) และปริมาณสารชักนำ (โซเดียมไดไฮโดรเจนฟอสเฟต) โดยใช้แผนการทดลองแบบ 3x2x2 แฟคทอเรียล พบว่า สภาวะที่มีปริมาณซูโครส เพพโทน และโซเดียมไดไฮโดรเจนฟอสเฟตที่ความเข้มข้น 5, 0.5 และ 0 % (w/v) ตามลำดับ มีปริมาณ BC ภายหลังการหมักสูงที่สุด (188.27±0.50 g/L) BC ที่ได้มีปริมาณความชื้นและค่า Aw สูงกว่าสภาวะอื่น (p<0.05) และเมื่อวิเคราะห์เนื้อสัมผัส (Texture profile analysis) พบว่า มีค่า Hardness ต่ำที่สุด และค่า Springiness สูงที่สุด น้ำสับปะรดหลังหมักประกอบด้วย กรดอินทรีย์หลักมากที่สุด คือ กรดซิตริก กรดมาลิก และกรดแอซิติก ตามลำดับ น้ำตาลประกอบด้วยฟรักโทสมากที่สุด รองลงมา คือ กลูโคส และซูโครส ตามลำดับ อีกทั้งมีปริมาณสารประกอบฟีนอลิกสูงที่สุด (p<0.05) และมีฤทธิ์ต้านออกซิเดชั่นสูงที่สุด (p<0.05) (iii) นำสภาวะที่ประเมินได้จาก (ii) มาใช้ในการผลิต BC ที่อุดมด้วยโพรไบโอติก โดยการเพาะเลี้ยง K3 ร่วมกับจุลินทรีย์ Lactobacillus plantarum FTCU10621 พบว่า BC ที่ได้มีปริมาณน้อยลง (26.40±0.80 g/L) และเป็น young BC และตรวจวัด L. plantarum FTCU10621 ในส่วน BC พบจำนวน 8.42±0.52 log CFU/g BC และในน้ำสับปะรดจำนวน 8.33±0.03 log CFU/ml ภาพถ่ายทางสัณฐานวิทยาของผิวหน้า BC พบเซลล์โพรไบโอติกถูกตรึงอยู่ใน BC คิดเป็น 7.08 log cell/g BC เมื่อวิเคราะห์โครงสร้างทางเคมีของ BC ด้วยเทคนิค FTIR พบว่า สเปกตรัม IR ของหมู่ไฮดรอกซิลมี % transmittance ต่ำ ส่งผลให้ BC มีลักษณะอ่อนนุ่ม และน้ำสับปะรดหลังหมักประกอบด้วยกรดอินทรีย์หลักมากที่สุด คือ กรดแลคติก กรดซิตริก กรดซัคซินิค และกรดมาลิก ตามลำดับ น้ำตาลประกอบด้วยฟรักโทสมากที่สุด รองลงมา คือ กลูโคส และซูโครส ตามลำดับ

Moringa oleifera leaf is considered an inexpensive source of protein. As leaf protein concentrate (LPC), protein content offered is higher and easier for use than in leaf. Therefore, this study aimed to prepare moringa leaf protein concentrate (MoLPC) from dried moringa leaves, compare their physico-chemical and functional properties and determine enhanced nutritional value of pancakes fortified with MoLPC compared to unfortified pancake. This research focuses on the optimization of ultrasound-assisted extraction (UAE) conditions of marigold flower extract (MFE) using response surface methodology (RSM) and to produce microcapsule using spray drying with different wall materials and ratios. Whey protein isolate supplementation has been recognized as having potential for regulating appetite, thereby potentially improving mood and food intake. The objectives of this project were to 1) analyze the effects of high-quality whey protein intake on overall diet and 2) identify and examine a correlation between tryptophan levels and mood regulation.
