Nitrates and phosphates are essential nutrients for plants growth. Their excess presence in water, however, could cause eutrophication affecting the water quality and altering the aquatic ecosystem. Algal blooms and the presence of toxins such as microcystin in freshwater bodies are hazardous to humans, animals, and wildlife. Conventional technologies such as ion exchange, distillation, reverse osmosis, and bioreactors aid immensely to remove nutrients; however, they are expensive. Furthermore, building new nitrate and phosphate treatment units, maintenance and post-disposal are costly too. As a result of their extended shelf-life, dried dairy ingredients constitute a significant category produced for global markets. During the development of dairy ingredients, several drying trials are typically conducted to determine optimum drying conditions. The results of these trials can be critical in determining optimum dryer design. However, these trials can be expensive and time-consuming. An alternative that has recently been developed using a new technique called single droplet drying (SDD). Dysbiosis is associated with acute and long-term consequences for neonates. Probiotics can be effective in limiting the growth of bacteria associated with dysbiosis and promoting the healthy development of the infant microbiome. Given its adaptation to the infant gut, and promising data from animal and in vitro models, Bifidobacterium longum subsp. infantis is an attractive candidate for use in infant probiotics. However, strain-level differences in the ability of commercialized strains to utilize human milk oligosaccharides (HMOs) may have implications in the performance of strains in the infant gut. Milk spoilage is an inevitable occurrence, which generates waste and can result in food poisoning. When milk spoils, the off-flavor and curdling are due to excessive proliferation of various bacteria which causes pH changes. Time, temperature, environment,and previous handling practice all affects the spoilage rate. There is a need for a fast reliable and accurate method that can identify in situearly spoilage of milk. Delactosed permeate (DLP), commonly referred to as mother liquor, is a plentiful byproduct in the dairy industry. It is a direct byproduct of edible lactose manufacture produced in cheese and dairy ingredient facilities. Despite being rich in lactose and minerals, DLP is most commonly relegated to an animal feed product due to its high ash content, it inhibits and disallows crystallization of any remaining lactose. Delactosed permeate showed many inconsistencies from supplier to supplier and within lots from the same supplier in the eight DLP samples obtained from four separate mozzarella and cheddar manufacturing facilities. It is a common practice in dairy industries to nanofilter milk protein concentrate (MPC) to increase the solids and further drying efficiency. Increasing protein and solids in MPC increases viscosity and resist feed-flow in membrane filtration. Previous research proved that increased temperature and hydrodynamic cavitation (HC) have significantly reduced the viscosity of MPC which can potentially increase the level of solids by reducing concentration polarization during nanofiltration (NF). In cold temperature storage, Parmesan cheese can develop an undesirable browning defect. Certain pyrazine compounds converted from methylglyoxal have been identified and associated with the brown pigmentations in Parmesan cheese samples. This study focused on creating a cheese model system to study variables that caused browning and variables that helped reduce or alleviate browning. The cheese making steps for the cheese model system were monitored by measuring pH and TA and the final composition for % fat, % moisture, % salt and pH. Oats and barley are unique cereals owing to their nutritional and health benefits. Soluble dietary fiber components, especially β-glucan found in both grains, have been associated with the reduction of cholesterol, normalization of blood sugar levels and suppression of hunger. These nutritional and therapeutic attributes are ideal for production of novel and more diversified food products from these cereals. β-glucan, however, imparts high viscosity in food systems particularly in high moisture foods, thus impairing their sensory characteristics. Bread loaf volume is a significant economic factor in the baking industry. Numerous flour and dough quality tests exist in estimating the functional traits of wheat. However, none of these tests accurately or fully predict bread loaf volume. The ability of high intensity ultrasound to produce stable emulsions without the addition of surfactant was evaluated in a dairy-based formulation. The formulation consisted of protein (4.33 ± 0.05%, whey protein concentrates (WPC80), carbohydrates (21.52 ± 0.75%, sucrose and maltodextrin), oil (2.90 ± 0.05%, soybean oil), and surfactant (0-.05%). Pre-emulsions formulated with either 0, 0.025, and 0.05% of soy lecithin were treated for 5 min at an acoustic intensity of either 42.58 ± 2.98, 56.83 ± 3.01, or 70.48 ± 2.97 W cm-2. The phenomenon of hydrodynamic cavitation involves the formation, growth, and subsequent collapse of bubbles when a given liquid experienced a reduction of pressure below its vapor pressure. The presence of cavitation limits the performance and the safe operation of many machinery and pumps. Within the United States there are over 8,000 farmers markets, that sell directly to consumers. New York State has the second-largest number of markets, at 637, with the capital region host to 114 markets. Over the years the selections of offerings have grown to include not only produce but ready-to-eat foods, eggs, dairy products, crafts, beer, and wine. The increasing popularity of farmers markets coupled with inadequate regulatory oversight of these markets, can contribute to incidences of foodborne illnesses. Dental Health Factors Among Primary School Children In Southern Regions Of Ethiopia And Zambia, Gisselle Hernandez
NUTR/GLST 498b: Global Research Experiences in Nutrition and Health
Purpose: Assess oral health status, and factors affecting oral health, among primary schoolchildren in southern Ethiopia and Zambia. Methods: Visual dental assessments, anthropometric measurements, and questionnaires used to collect data among 6th and 7th grade students. Results: Although stunting rates were nearly equal, decay rates were not; 17.51% of Zambian students and 47.27% of Ethiopian students had one or more decayed teeth. Ethiopian students with dental fluorosis (74.55%) had higher rates of decay than those without the condition (p < .05). There were also significant differences between Ethiopians and Zambians regarding use of dental hygiene tools: Ethiopians were more likely to use dental sticks, while Zambians employed toothbrushes for cleaning. Conclusions: Dental health and hygiene education, focused on unique socioecological settings, could improve the oral health status of Ethiopian and Zambian children.

PURPOSE: To examine the relationship between iron-deficient anemia and malaria in primary school children in Southern Ethiopia and Zambia and assess the correlation between diet and health status.
METHODS: Market inventories, observations at health outposts, and interviews and anthropometric assessments of 6th and 7th grade students.

The utilization of brewer's spent grain for the production of malt flour is the focus of this article. The reader is presented with superheated steam and extrusion as technologies to reduce mycotoxin contamination and improve shelf life. Another option is the fermentation of brewer's spent grain with a cereal grade lactic acid bacteria for the production of sourdough bread. Milling of the brewer's spent grain for the production of bread is also covered.

This is an autoethnographic account, utilising prior publications, of my role in positioning food as a critical ingredient in Ireland’s tourism policy and strategy since 2009. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. The aim of this study was to assess how the DYD program impacted users’ food accessibility and how the program could be improved for the future. The skin color of muscadine grapes (Vitis rotundifolia) is typically classified as black or bronze. A glutathione S-transferase, VrunGST4, has been identified as a candidate gene for berry skin color in muscadine grapes. A molecular marker was developed within VrunGST4 to distinguish between muscadine genotypes (cultivars and selections) with bronze (T:T), heterozygote black (C:T), and homozygote black (C:C) berries.
