Moisture Sorption Behavior And Shelf Life Prediction Of Teff Seed And Flour, Baba Abdissa, Rudrayya Math, Kodandaramreddy Desham, Srinivasulu Korra
Journal of Applied Packaging Research
Moisture sorption isotherms of Teff seed and its flour were determined over the range of relative humidity (11–92%) using a gravimetric technique at constant temperature (27°C). The results obtained showed that the moisture sorption isotherm of both is almost similar and sigmoid with increasing equilibrium water content at the constant temperature. The curves start raising high above 64% RH indicating the products deteriorates faster above 64% RH. Hence the moisture content equilibrating to 64% RH was taken as critical for both Teff seed and flour variants. The sorption isotherm fits the GAB equation as per GAB generalized equation for sorption …

Multiple chronic conditions (MCCs) such as diabetes, hypertension, heart disease, arthritis, asthma, and common respiratory problems are prevalent in over one-fourth of Americans, and separate drugs are prescribed to manage each of the diseases. The nutritive crop seeds loaded with multiple drugs could be a cheap and sustainable alternative to drugs produced by pharmaceutical companies. Our long-term goal is to produce chickpea seeds containing comparable dosages of multiple drugs regularly prescribed for managing MCC. In this work, we conducted experiments to understand the uptake and translocation of metformin into the tissues of chickpea to demonstrate the applicability of LC–HR-ToF-MS in …

Sodium Propionate And Sodium Butyrate Promote Fatty Acid Oxidation In Hepg2 Cells Under Oxidative Stress, Kristina Jazmin Cook
LSU Doctoral Dissertations
Non-alcoholic fatty liver disease (NAFLD) is a spectrum of disturbances that includes simple steatosis, non-alcoholic steatohepatitis (NASH), fibrosis, cirrhosis, and liver cancer. NAFLD affects individuals that consume the typical Western diet consisting of high levels of fats and carbohydrates. The increase in circulating free fatty acids, palmitate and oleate, or lipopolysaccharides (LPS), induce oxidative stress and pro-inflammatory cytokine production in the liver, which all contribute to NAFLD progression. In this study, we are evaluating the mRNA expression of genes associated with fatty acid oxidation (FAO) and the protein expression of pro-inflammatory cytokines related to NAFLD using the HepG2 human liver …

Food packaging can be considered as a passive barrier that protects food from environmental factors such as ultraviolet light, oxygen, water vapour, pressure and heat. It also prolongs the shelf-life of food by protecting from chemical and microbiological contaminants and enables foods to be transported and stored safely. Active packaging (AP) provides the opportunity for interaction between the external environment and food, resulting in extended shelf-life of food. Chemoactive packaging has an impact on the chemical composition of the food product. The application of natural additive such as essential oils in active packaging can be used in the forms of …

Food Studies - All Scholarship
This chapter addresses why immigrant farmers are so unlikely to participate in USDA direct financial assistance programs, despite immigrant farmers’ growth as a new group of farmers and particularly as a group that the USDA declares they want to support. We contend that the standardization of practices and bureaucracy inherent in receiving USDA assistance stands in stark opposition to the agrarian norms and practices of immigrant farmers and hinders their participation in USDA opportunities. The requirements of standardization help to maintain a racialized class boundary in US agriculture today, playing a large role in preventing immigrant farmers from moving up …

Department of Nutrition and Food Studies Scholarship and Creative Works
Pecan (Carya illinoinensis) is a tree nut native to North America. Although inhibited light exposure (most specifically as a result of overlapping tree canopies) has been shown to impair yield, the effect of this factor on nut antioxidant properties remains unknown. This study investigated effects of mechanical pruning and canopy height position of fruit on pecan kernel antioxidant contents and capacity. Beginning in 2006, trees in a ‘Western’ pecan orchard in New Mexico were subjected to three mechanical pruning frequency treatments (annual, biennial, and triennial) paralleling conventional practices, while other trees were maintained as unpruned controls. During the 2012 to …

This paper deals with the investigation of ultrasound (US) pretreatment of brewer’s spent grain (BSG) as ameans of releasing fermentable sugars, and the subsequent production of ethanol from this lignocellu-losic biomass. Using response surface methodology (RSM), the influence of US power, time, temperatureand biomass loading on fermentable sugar yield from BSG was studied. The optimal conditions werefound to be 20% US power, 60 min, 26.3°C, and 17.3% w/v of biomass in water. Under these conditions,an approximate 2.1-fold increase in reducing sugar yield (325 ± 6 mg/g of biomass) was achieved, relativeto untreated BSG (151.1 ± 10 mg/g of biomass). In …
Development Of Specific Natural Bacterial Beta-Glucuronidase Inhibitors For Reducing Irinotecan-Associated Diarrhea, Fei Yang
Wayne State University Dissertations
Irinotecan is a derived compound from the plant alkaloid camptothecin (CPT). It specifically inhibits eukaryotic DNA enzyme topoisomerase I. Irinotecan was approved by the FDA as the second-line therapy for metastatic colon or rectal cancer in 1996. However, one of its leading side effects is diarrhea. It has been reported that up to 88% of treated patients were suffering from diarrhea and 31% of cases with grade 3 or 4 diarrhea. Irinotecan is metabolized into SN-38G in the liver, then SN-38G is excreted to the intestinal tract and deconjugated back to SN-38 by bacterial β-glucuronidase. The free SN-38 in the …

Characterization And Analysis Of Curcumin Extracted From Turmeric Using Mass Spectrometry And Uv-Vis Spectroscopy, Cecilia Russo, Anna Fedor
Student Research Poster Presentations 2020
Turmeric is a spice most commonly found in Indian cuisine that is known for its medicinal properties. The most active compound that can be found in turmeric is curcumin. Curcumin is a polyphenol that is best known for its antioxidant and anticancer properties. Curcumin is mostly insoluble in water so the extraction of curcumin from turmeric was achieved by using ethanol or dichloromethane/hexane as the solvent. Since turmeric is not soluble in these solvents, a small amount of turmeric was soaked in larger amount of ethanol or dichloromethane/hexane to allow the curcumin to be dissolved out. The resulting solution can …

Colorectal cancer (CRC) constitutes a major burden on the healthcare system as the second most commonly diagnosed cancer in the developed world. Dietary folate is considered an important modulator of colorectal cancer. Folate restriction has been implicated in increasing CRC incidence by disrupting nucleotide synthesis, Impacting DNA methylation and inducing genetic instability. Our research shows that the timing and duration of dietary folate restriction can differentially impact Colorectal cancer initiation. Acclimating mice to folate restriction for 8 weeks results in a reduced number of preneoplastic lesions compared to mice placed of folate restriction for 1 week prior to initiating the …

Characterization And Use Of Pathogen Specific Bacteriophages To Reduce The Viability Of Escherichia Coli O157:H7 Contamination On Fresh Produce, Badrinath Vengarai Jagannathan
Theses and Dissertations--Animal and Food Sciences
Fresh produce is one of the most common sources of food-borne outbreaks, involving various pathogenic microorganisms such as Escherichia coli. Recent outbreaks have clearly shown that post-harvest washing has limited effectiveness on decontaminating produce and may contribute to cross-contamination of produce due to various limitations. Excessive use of sanitizers and antibiotics has also led to the development of many antibiotic-resistant strains of bacteria that have made the food industry more vulnerable.
Bacteriophages are a bacterial viruses that can selectively infect and replicate within bacteria leading to cell lyse and death. Bacteriophages have become widely recognized due to their ability …

The anti-hypochlorite activity of açaí (Euterpe oleracea Mart.), goji (Lycium barbarum L.) and schisandra (Schisandra chinensis) fruit extracts were assessed by determining the reactive chlorine species (RCS)-scavenging ability of these three “super-food” berries. In addition, the aqueous extracts obtained were employed as both the media and the catalyst in a green chemistry approach to the synthesis of a coumarin-based fluorescence turn-off sensor, which was then used for anti-hypochlorite activity testing. The aqueous extracts were also assessed for total phenolic content (TPC), using the Folin–Ciocalteu method, and the antioxidant activity using the ABTS+• assay. Moreover, the main water-soluble polyphenolic constituents of …

Association Between Breastfeeding And Child Stunting In Mexico, Ana Paola Campos, Mireya Vilar-Compte, Summer Sherburne Hawkins
Association Between Breastfeeding And Child Stunting In Mexico, Ana Paola Campos, Mireya Vilar-Compte, Summer Sherburne Hawkins
Department of Public Health Scholarship and Creative Works
Background: Globally, the prevalence of child stunting has been decreasing over the past decades. How-ever, in low-and middle-income countries such as Mexico, stunting is still the most prevalent form of undernutrition affecting a large number of children in the most vulnerable conditions. Breastfeeding has been identified as one of the key affordable and modifiable maternal health behaviors protecting against child stunting. Objective: To examine the association between breastfeeding (defined as never breastfed, any breast-feeding for <6 months, and any breastfeeding for ≥6 months) and other individual-, household-, and area-level factors with child stunting (defined as length/height-for-age-z-score for sex under –2 standard deviations of the World Health Organization child growth standards’ median) in Mexico. Methods: Secondary data analysis using the 2012 Mexican Health and Nutrition Survey, which allowed representativeness of rural and urban areas at national level and among 4 regions in Mexico. Our subset included data on 2,089 singleton Mexican children aged 6–35 months with information on previously identified risk and protective factors for stunting. We conducted fixed-and mixed-effects logistic regression models sequentially controlling for each level of factors. Findings: Overall, 12.3% of children were stunted and 71.1% were breastfed for ≥6 months. Any breast-feeding and being female were consistent protective factors against child stunting across all models. In contrast, child low birthweight, maternal short stature, higher number of children aged <5 years per household, and moderate to severe food insecurity were consistent risk factors for child stunting across all models. Conclusions: According to our findings, efforts to reduce child stunting in Mexico should include prenatal strategies aiming to prevent low birthweight offspring particularly among short-stature women, moderate to severe food insecure households, families with a higher number of children aged <5 years, and indigenous communities. Postnatal components should include multilevel strategies to support breastfeeding.

A Natural Antimicrobial From Bacillus Subtilis As A Biosanitizer For Resilient Membrane Biofilms, Pratishtha Verma
Electronic Theses and Dissertations
The microbial attachment and colonization on separation membranes lead to biofilm formation. Some selective isolates within the biofilm constitutive microflora acquire resistance and emerge predominant over prolonged use of the membrane. Thus, proving the cleaning and sanitization protocols to be ineffective in adequately removing resilient biofilms. This subsequently leads to selecting microbial resistance within the constitutive microflora to almost all antimicrobial treatments and hence, creates a need to develop novel alternative strategies to control biofilm formation on membrane surfaces. The first research project under this study was designed to understand the microbial interactions and emergence of predominance within biofilm constitutive …

Biodegradable Cellulose Films As Alternatives To Plastics, Cecilia Wambui Wanjuu
Electronic Theses and Dissertations
Plastics are versatile and have desirable packaging characteristics such as flexibility, durability, and affordability. The production of plastics has increased over the years resulting in concerns about their single-usage and disposal. Since plastics are nonbiodegradable, they have been associated with detrimental health impacts due to the leaching chemicals from the landfills and their accumulation in the natural and marine environment. Cellulose obtained from agricultural residues is a viable substitute because of its low density, biocompatibility, biodegradability, low toxicity, and a strong and stiff structure. However, the extraction of cellulose has been less exploited because of its insolubility in water and …
