The Influence Of Thermal Treatment On Grass Carp Quality And Volatile Flavor Compounds, Chen Hui, Liu Yan, Li Zhipeng, Huang Lihui

The changes of quality, protein composition and volatile flavor compounds of grass carp were studied at 60, 70, 80, 90 and 100 ℃, shape, texture, nutritional value and flavor were set as the evaluation indexes. The results showed that the weight loss rate of fish increased with the treatment temperature, and the L* value of fish increased, but the a* value decreased. The hardness, cohesion, amino acid content, E/N ratio showed an upward trend. 87 types of volatile compounds were detected by SPME-GC-MS, including 24 kinds of alkanes, 19 kinds of aldehydes, 14 kinds of acids, 12 kinds …

Study On Isolation And Application Of Lactic Acid Bacteria Without Biogenic Amine Formation From Chinese Rice Wine, Xu Jianfen, Mao Jieqi, Wei Xiaolu, Liu Shuangping

In order to screen the strains without producing biogenic amines, some microorganisms were isolated from the fermentation mash and rice soaking water of Chinese rice wine. It was found that three strains had no amino acid decarboxylase activity, and had a certain ability of biogenic amines degradation. Moreover, the metabolic characteristics of the three strains were analyzed. The results showed that OD600 of the three strains reached a considerable level in the culture medium of 2.50%Vol. In the 8.80%Vol culture medium, strains 5-4 and 8-3 were inhibited whose OD600 was significantly lower than that of strain 14-2-1. Phy-chemical properties and flavor substances of the three varieties of Hubei lotus root were studied by electronic nose and GC-MS. The results showed that there were significant differences in the physical and chemical properties except the total fiber content among the three hybrid varieties, and texture properties of the hybrid variety NO.5 of lotus root were better than the hybrid varieties NO.3 and NO.4. The antibacterial activity of phenyllactic acid (PLA) combined with food preservatives against foodborne pathogens Escherichia coli and Listeria monocytogenes was studied. The minimal inhibitory concentrations were determined by broth micro-dilution method and the interaction of PLA with food preservatives was determined using the checkerboard test. Furthermore, the synergistic effect of the optimized combination was evaluated through the time-kill assay. Results showed that PLA combined with nisin showed indifference effect against E. coli and additive effect against L. monocytogenes. Toona sinensis sprouts were packaged in 0.06 mm thick perforated PE bags and stored at -0.5 ℃(controlled freezing point) after pre-cooling at 4 ℃ for 12 h. In order to investigate the effects of controlled freezing point technology combined with the modified humidity packaging on preservation for Toona sinensis, the changes of weight losses rate, ascorbic acid, soluble protein, chlorophyll, total polyphenol, flavonoid, soluble sugar, malondialdehyde (MDA) content and polyphenol oxidase (PPO)activities were measured. The efficacy of low wavelength ultraviolet light (UV-C) as a disinfection process for a scattering fluid such as skim milk was investigated in this study. UV-C inactivation kinetics of two surrogate viruses (bacteriophages MS2 and T1UV) and three bacteria Escherichia coli ATCC 25922, S. Typhimurium ATCC 13311, Listeria monocytogenes ATCC 19115 in buffer and skim milk were investigated. UV-C irradiation was applied to stirred samples, using a collimated beam operating at 253.7 nm wavelength. A series of known UV-C doses (0–40 mJ·cm−2) were delivered to the samples except MS2 where higher doses (0–150 mJ·cm−2) were delivered. …

Conventionally-grown and organically-grown tomato seeds sourced from both fresh tomatoes and store-bought packages were germinated for seven days to evaluate the effect of seed source on germination rates. Seeds from fresh Roma tomatoes were prepared by allowing them to ferment in their own pulp for 24 hours, while commercially packaged dry seeds did not require any preparation. Once prepared, the seeds were spaced evenly on wet paper towels and stored in resealable plastic bags in groups of 10 for a total sample size of 100 seeds in each of four treatments. Consumption of ergot alkaloid-containing tall fescue grass impairs several metabolic, vascular, growth, and reproductive processes in cattle, collectively producing a clinical condition known as “fescue toxicosis.” Despite the apparent association between pituitary function and these physiological parameters, including depressed serum prolactin; no reports describe the effect of fescue toxicosis on pituitary genomic expression profiles. To satisfy the need of developing eco-friendly flexible antimicrobial packaging film with minimum use of synthetic chemical ingredients, the present study examined the efficacy of citric acid (CA) as cross-linking agent and essential oils (EOs), viz., cinnamon essential oil (CEO) and oregano essential oil (OEO) as natural antimicrobials in corn starch-polyvinyl alcohol (CS-PVA) film. Compared to film prepared from filmogenic solution (FS) containing 75 kg CS+8.75 kg PVA+24.6 kg glycerol per m3 FS, film additionally containing CA at 0.07 kg/kg CS indicated 95% higher ultimate tensile strength (UTS) and 27% lower water vapor permeability (WVP). In this study, caffeic and ferulic acids were used to test the effect on acrylamide formation and elimination in model reaction systems. In asparagine/glucose reaction system, addition of caffeic and ferulic acid at the concentration of 25 mmol/L and 250 mmol/L inhibited acrylamide formation. However, they increased acrylamide formation below 2.5 mmol/L. It was found that both of phenolic acids increased acrylamide elimination when ferulic acid or caffeic acid were heated with acrylamide, but the effect is not obvious, so effect of caffeic acid and ferulic acid influenced on acrylamide content in Maillard reaction system mainly influence on acrylamide formation …

This study aimed at the effects of purple sweet potato powder (PSP) with different amounts (namely null, 5%, 10%,15% and 20%) on the rheological properties and pasting properties of dough tested by farinograph, extensograph, and rapid viscosity analyzer. The results showed that addition of PSP significantly influenced the properties of a dough. With the increase of PSP, the rheological properties and gelatinization properties of the dough were improved, which means PSP could lessen the gluten thews and inhibit the gelatinization and expansion process of wheat dough. Olive pomace IDF were physical modified by high pressure homogenization (HPH) and colloid mill (CM) in this study. Moreover, the micromorphology, particle size distribution, functional groups, crystal structure and physico-chemical properties of IDF before and after the modification were analyzed. HPH group had looser morphology, more cavities and cracks, average particle size of 66.97 μm. CM group had looser morphology, more fracture, average particle size of 79.52 μm. HPH and CM modification didn’t affect IDF’s functional groups, crystal structure or crystallinity. The indica starch pregelatinized by microwave as raw material, the effect of ultrasonic auxiliary-dual enzyme method and seed induced-dual enzyme method on the structure and physicochemical properties of indica rice resistant starch of type RS3 were researched in this study. In this paper, the brand of faint-scent cigarette was as the object. Firstly, the blank, cigarette added fragrances and end product cigarette were conducted sensory evaluation, respectively. The results showed that the cigarette added fragrances has a significantly increase in all aspects, approaching the end product cigarette. However, there is some defectiveness in faint-scent, potpourri and sweet and sour properties. Secondly, the analysis of volatile compounds of tobaccos from added fragrances and end product cigarettes were analyzed by GC-MS. In order to improve the efficient secretion of intracellular product in Saccharomyces cerevisiae, wild diploid Y1 (2n) were mutagenized with UV treatment as original strain. To further identify, the degree of autolysis of each mutant strain was contrasted in low permeability condition by the test of its content of FDP, extra-cellular nucleic acids and proteins. The results showed: Hs5*(n)showed the highest degree of conditional autolysis in low permeability condition, the concentration of FDP in extracellular environment was 25.81 μg/mL. In the present study, the method of tissue culturing was used to isolate the endophytic fungi from healthy ginkgo roots and stems. After repeated separation and purification, 116 Ginkgo endophytes were isolated. Metabolites of these fungi were preliminarily analyzed by high-performance liquid chromatography (HPLC), and a ginkgolide producing endophyte strain was finally screened out. The production of ginkgolides by this strain was more than 11.4 mg/L. The endophytic fungi strain was identified as Mucor spp. by morphology characteristics and phylogenetic analysis of internal transcribed spacer (ITS), and It was the first report in the ginkgolides producing endophytic fungus from Ginkgo …

Extractions of flavonoid compounds in onion with ethanol, using the optimization factors of single factor and orthogonal design experiments, the flavonoids extraction rate of onion peel was 21.58%. The effect of quercetin on the differentiation of 3T3-L1 preadipocytes was best by separating the flavonoids from the liquid phase and acting on the 3T3-L1 preadipocytes. The expression of fat differentiation related gene FASmRNA was measured in 3T3-L1 adipocytes induced by flavonoid monomers of onion skin for eighth days. The volatile components in Anhua and other dark teas were analyzed by headspace solid phase microextraction (HS-SPME) combined with gas chromatography-time of flight mass spectrometry (GC-TOF MS). About 41 volatile compounds were analyzed qualitatively and quantitatively. A classification model and predict the authenticity obtained from variance analysis, principal component analysis (PCA) and partial least squares discriminate analysis (PLSDA). An Ultra-High Performance Liquid Chromatography-Quadrupole/Electrostatic Field Orbitrap High-resolution Mass Spectrometry method (UPLC-Q-Orbitrap HRMS)has been developed for the determinations of the drug residues of 21 SAs and 12 QNs in aquatic products.The sample was extracted by acetonitrile, cleaned up by acetonitrile saturated normal hexane and quantified in internal standard method.The results showed that 33 products presented a good linear relation in the range of 0.1~100 ng/mL. r2>0.996.
