Potatoes in Kosovo are cultivated in about 10,000 ha with a low average production of 10-12 t /ha and represent one of the main agricultural crops, both for agro-economic, physiological and productive importance, as well as in feeding the population.

Salmonella Enteritidis represents a group of bacteria known to cause typhoid fever, food poisoning, gastroenteritis, enteric fever, and other diseases in humans. People are mainly infected with contaminated water or foods, especially meat, chicken meat and eggs. Salmonella gender includes over 2300 bacterial serotypes. Salmonella enteritidis and Salmonella typhimurium are responsible for over 50% of all infections caused in people anywhere in the world. Beer production passes through those steps: malting, worth production, fermentation, and filtration. Filtration is used to remove yeast, proteins and other unwanted substances. Filtration is carried out by candle filters with kieselguhr, diatomaceous earth in a form of silica. In this study there are used three types of kieselguhr (DIF, CBL, and CBL3). This paper deals with the method of determining vitamin C in non-alcoholic and fresh drinks, also deals with its importance in the human body and elaborates the problematic consumption of vitamin C in the daily dose of adult people. The aim of this research was to evaluate the possible contamination by heavy metals of milk from cows in Macedonia. The concentrations of heavy metals were determined in cow milk from the different farms, at three city (Kumanovo, Tetovo, Gotivar)in Macedonia. Each sample, homogenized and powdered, was mineralized in a microwave oven.
Quantitative analyses of Cd, Cr, Cu and Pb were performed using an atomic absorption spectrophotometer with graphite furnace; As was analyzed by hot vapor generation technique and Zn with the flame method.

Vegetables are one of the main sources of nitrogen on human diet.Nitrogen content in 30 soil samples and 30 vegetables samples are reported. The results indicate that nitrogen content was low in 33% of soil samples,normal in 50% of the samples, and high in 17% of soil samples. Reportedresults indicate that 47% of vegetables samples had low nitrogen content, 30%of them had normal nitrogen content, and 13% and 10% of them had high andvery high nitrogen content, respectively. During the study, were analyzed two natural juice with blueberry juice concentrate, packed in Tetra Pak. At the juice were studied these parameters: the technological process of juice production, the sensory characteristics (color, aroma, taste and homogeneity), physical and chemical (pH degree, refraction index, soluble solids degree ° Brix and turbidity expressed with NTU ). Lactic acid bacteria (LAB) with ability of acid and bile salt resistance were isolated from the feces of the longevity population in Rugao by using selective medium, artificial gastric juice and bile salt medium, and the ability of cholesterol reducing and manner were studied. This study aimed to isolate lactic acid bacteria containing in vitro resistance ability from Sichuan fermented vegetables. Five strains of Lactobacillus were isolated from fermented vegetables and analyzed by 16S rDNA. Four strains of them were Lactobacillus plantarum, named as E-6-1, E-1-2, E-6-3, D-2-3 respectively, and another one was Lactobacillus alimentarius, named as C-2-1. The in vitro resistance of the 5 strains was determined by artificial gastric juice and bile salt. To comprehensively develop and utilize Camellia semiserrata resources, compounds of ethanol extract of Camellia semise-rrata Chi. cake were separated and identified. Five purified compounds were achieved by HPLC preparation from 4 fractions including XVII, XXVI, XXVIII and XXXIV by ethyl acetate extraction and silica gel column chromatography. In this study, 2 strains of Enterococcus faecalis HYD09 and HYN06 isolated from traditional fermented food were used to determine the enzyme activity of fermentation supernatant, and evaluate the basic safety of the strains. In order to increase the metabolites of the strain BD3900 inhibiting the S. mutans biofilm formation, the inhibition rate of biofilm formation by Streptococcus mutans was used as indexes. The effects of the cultivation time and temperature, the carbon resources, the concentration of sucrose and the inoculum amount were investigated. Mechanical pulverization was generally used to fractionate starch granules, but this method produced broken starch granules, thus resulting in the difficulties in finding the relationship between particle size of starch granule and hydrolysis efficiency by enzymes. Therefore, a sedimentation method based on stokes law was developed to produce unbroken starch granules with different particle sizes. The results showed that four sizes of starch granules were obtained and their average equivalent particle diameters were 17.39, 25.81, 38.77, and 56.53 μm, respectively. Noni powders with the moisture content of 15.33% were prepared from fresh noni fruit by spray drying, then vacuum freeze drying to obtain samples with moisture content (0.44%~9.00%) by different dying time respectively. Monte Carlo-uninformative variable elimination (MC-UVE) algorithm and successive projections algorithm (SPA) were adopted to the optimization of wavelengths obtained from the region of interest (ROI). A rapid detection method of using the near-infrared spectra(NIRS)to determine the concentration of syrup (trehalose, maltose and glucose ) in producing trehalose by synthase was established. The 65 NIRS samples of trehalose syrup were divided into a calibration set of 48 samples and a prediction set of 17 samples.
