UBT International Conference
Through the use of the analytical method known as Flame Atomic Absorption Spectroscopy (FAAS), we have analyzed a certain number of red and white wines. The aim of this study work has been to determine quantitatively the presence of Fe, Cu and Zn in different wines, and during different stages of winemaking, and whether these heavy metals are present within the limits set by the EU directive EC 606/2009 and OIV (International Organisation of Vine and Wine). None of the analyzed samples has exceeded the limits set by the EU and OIV, expect here a sample (Rhine Riesling) which we …

A Comparative Study Of Batch Fermentation Performance Of Saccharomyces Carlsbengensis And Saccharomyces Cerevisiae Based On Kinetic Parameters, Luljeta Pinguli, Ilirjan Malollari, Anisa Dhroso, Hasime Manaj, Dhurata Premtis
UBT International Conference
Biological systems are very complex regarding their kinetic behavior. There are many models that intend to predict fermentation performance, although Monod equation remains the best model. A detailed investigation of batch fermentation process at room temperature for two different types of yeast Sacharomyces carlsbegensis and Saccharomyces cerevisiae was carried out. Batch fermentation experiments were carried in 1 liter bioreactors, in the same medium, time and fermentation conditions. Kinetic constants were used to compare fermentation performance under similar conditions. Kinetic parameters investigation was done based on growth kinetics, ethanol productivity and substrate consumption (glucose) using computer simulation for different kinetic models. …

Ochratoxin A (OTA), is a mycotoxin, produced by a number Aspergillus species and Penicillium verrucosum, can be found in several food commodities including cereals, wine, coffee, cacao, spices or dried fruits, milk, meat resulting in a chronic human exposure. According to the toxicological studies, OTA has been shown to be nephrotoxic, hepatotoxic, teratogenic and immunotoxic to animals and human. It is a regulated mycotoxin and maximum limits in a wide range of foodstuffs have been established by Commission Regulation (EC) No 1881/2006. . The aim of our study was to investigate the presence of OTA in cereal derived products and …

Rooting is a process that is induced by many difficulties, especially in fruit trees. For this reason, four nutrient terrains that contain different concentrations of auxin ANA (α-naphthaleneacetic acid), BAP, GA3 and macro and micronutrient MSs are compared. Rizogenesis is observed after three to four weeks of cultivation on the ground of rupture. Explants react differently in each field used (Figures 4,5,6,7). The concentration of inorganic and auxinous ANA salts on the nutrient terrains affects the rooting index and the characteristics of the roots. Plants of the prunus cerasium L species showed better results during rooting cultivation I, where the …

Industrial Contamination Impact On Food Chain In Correlation To Poultry Eggs, Afete-Shala Musliu, Nexhat Balaj, Sami Makolli
UBT International Conference
Industrial contamination is one of the biggest concerns nowadays. The town of Mitrovica is located in the northern part of Kosovo, around 40 km north of the capital Pristina, with around 330 km2 and approximately 71,600 inhabitants, excluding the northern part of the city, in an altitude of about 500-550m. The town has the largest complex of mining and metallurgy in Europe -"Trepça", known for exploitation of Pb, Zn and Cd, and, as a consequence, Mitrovica continues to be one of the most polluted cities in Kosovo as in air, soil and water. The anthropogenic source of heavy metals in …

Proteases are group of enzymes that catalyze the hydrolysis of proteins, resulting in peptide and amino acid production. These are considered as commercially most significant among industrial enzymes, consisting about 60% of the total enzyme market. Proteases have wide areas of application in several industries like food, detergent, textile, pulp and paper, and pharmaceutical industries, as these offer environmentally benign, sustainable solutions to several challenges in the corresponding industry.Enzymes can be produced by plants, animals or microorganisms, yet the majority is produced by (recombinant) microorganisms, typically with modified features for high enzyme production. However, for e.g. food industry, the use …

Wine is an alcoholic beverage produced through the partial or total fermentation of grapes. Wine is characterized by color: white, pink or rose, and red. Red wine available in Albanian market was characterized for physicochemical and rheological properties. In the first phase, the physicochemical parameters were determined: density, total acidity, volatile acids, content of the alcohol, reduced sugars, free SO2, total SO2, pH and electric conductivity. In the second phase of the study, density and dynamic viscosity were experimentally determined as a function of temperature from 5 to 40°C. Kinematic viscosity and fluidity were determined according to the definitions. The …
Interaction Of Nanofibers With Epithelial Cells In The Digestive System, Agron Millaku
Interaction Of Nanofibers With Epithelial Cells In The Digestive System, Agron Millaku
UBT International Conference
In this study, we provide the evidence of interaction of tungsten nanofibres (NF- WOx) with epithelial cells in the digestive tube of a test organism, woodlouse Porcellio Scaber studied by scanning electron microscopy (SEM). When the nanofibers enter the body through food, not all of them pass through the digestive system, without an interaction with the epithelial cells. The result has provided us that in some areas nanofibers can react with epithelial cells on the digestive tube very fast. The images which were taken in the treated samples through scanning electron microscopy and energy dispersive spectroscopy analysis clearly show such …

We investigated to emphasize the physico-chemical properties of these three compounds: ginger oil, bee wax and black butter oil. After the determination we have come to the conclusion that for the ginger oil the values of the acid number, iodine number, soap and ester number have not changed from the standard values that are allowed. Therefore we conclude that this oil is healthy to be used in our daily diets. The bee wax after undergoing the necessary testing has showed that these chemical values, iodine number, soap and ester number have been deviated from the allowed standard values. However the …

Genealogical Analysis Of Bar’S Body Activity In Hemophilia At Two Brothers And A Cousin, Naser Kamberi
UBT International Conference
In this study it is included a sample of the Presevo population and villages of 3771 individuals. During family interviews, we encountered cases in women with hemophilia and hemophiliacs. Predicting that X-sex chromosome is inactive we did not have the case that females are hemophilic. By doing the genealogical analysis of these families, we will present the thoughts about the role of Bari's body when it comes to hemophilia. The genealogical method can be used especially effective in cases of monogenic inheritance. From the cases encountered during the hearing, we did not have any hemophilia in female gender. Considering that …

The microbiological quality of raw milk is key to the quality production of dairy products.
Alternation is a term that describes the change of composition, taste and smell at those points where it is inedible for the consumer. Microbial alternation of milk often involves degradation of proteins, carbohydrates and fats of organisms and their enzymes. Milk and dairy consumption has increased considerably in Kosovo over the last decade, and a large part of local productioncomes from small-scale distributors across the country. In this research, 50 milk samples weretaken at some of the cumulative sites and from dairy farms in three …

Beer production passes through those steps: malting, worth production, fermentation, and filtration. Filtration is used to remove yeast, proteins and other unwanted substances. Filtration is carried out by candle filters with kieselguhr, diatomaceous earth in a form of silica. In this study there are used three types of kieselguhr (DIF, CBL, and CBL3). There are used different kieselguhr quantities for the same beer volume and is measured filtration time, turbidity and beer color. Experiments showed that a good filtration is ensured by using all three types of kieselguhr. It is important to set a sufficient first layer from 800 to …
