The objective of this research was to evaluate a potential time-saving method for surface lipid content (SLC) measurement of milled rice by utilizing new extraction technology. The SLC is often used as the basis for quantifying the degree to which bran has been removed from kernels during the rice milling process; this quality factor is often referred to as degree of milling (DOM). The SLCs of two long-grain cultivars of rice, ‘Cypress’ and ‘Cocodrie’, were determined using an accelerated solvent extraction system (ASE) and compared to the conventional, manual system (Soxtec extraction system) that is typically used for SLC measurement. …

Physicochemical Properties And Leaching Behavior Of Eight U.S. Long-Grain Rice Cultivars As Related To Rice Texture, Devon Cameron, Ya-Jane Wang

There are many long-grain rice cultivars produced commercially in the U.S.; however, little work has been done on correlating the structure and physicochemical properties of starch with their texture. The physicochemical properties, leaching behavior, and texture attributes of eight long-grain rice cultivars were studied. Differences were observed in the approximate composition of kernels, including crude protein (6.6-9.3%), crude lipid (0.18-0.51%), and apparent amylose content (25.5-30.9%). These cultivars also differed slightly in thermal properties, such as onset temperature (73.7° to 77.4°C) and peak temperature (78.8° to 81.9°C). Vietnam’S Rice Economy: Developments And Prospects, Kenneth B. Young, Eric J. Wailes, Gail L. Cramer, Nguyen Tri Khiem

Vietnam shifted rapidly from being a net rice importer prior to 1987 to become the second largest world rice exporter by 1995. Net rice exports have leveled off at about 3.8 million metric tons from 1997 to 1999. The world rice price has dropped dramatically in 2000 to barely cover the rice production cost in Vietnam, and net rice exports are expected to fall to 3.4 million mt because of the poor import demand in 2000. This report reviews the policy adjustments that led to the rapid growth in rice production and evaluates the prospects for Vietnam to continue as …

The objective of this research was to determine the influence on drying characteristics of storing high-moisture content (MC) rough rice under various conditions and durations before drying. Two cultivars of rice, 'Bengal', a medium-grain cultivar, and 'Cypress', a long-grain cultivar, were used. The MC of 'Bengal' was 24.8%1 and that of 'Cypress' was 20.4% at harvest. Immediately after harvest, drying runs were performed with samples of both cultivars under two drying air conditions: one at 51.7°C (125°F) and 25% relative humidity (RH), and the other at 60°C (140°F) and 17% RH. When a rice kernel fissures, it can break in subsequent food processing operations and lose its commercial value. Head rice yield (HRY) is a measure of the percent of kernels that remain whole (at least three-fourths of original length) after rice has been milled. Our experiment was designed to test the effect of a rapid state transition during drying and tempering processes using cultivars Bengal and Cypress. ‘Bengal’ is a medium-size kernel and ‘Cypress’ is a long-size, thinner grained cultivar. Starch determines a large proportion of the textural properties of cooked rice. The amylose: amylopectin ratio plays a significant role in the functionality of native starch. In this study a medium-grain rice cultivar, ‘Bengal’, was used for starch structure characterization using high performance size-exclusion chromatography (HPSEC). This cultivar is characterized by having lower amylose content (15% to 20%) than long grain cultivars and being sticky when cooked, similar to short-grain cultivars. Prediction Of Rice Sensory Texture Attributes Using Spectral Stress Strain Analysis And Jack-Knife Model Optimization, Marura Lenjo, Jean-Francois Meullenet

Sensory texture characteristics of cooked rice were predicted using an extrusion test and a novel multivariate analysis method. Eleven sensory texture characteristics were evaluated via a trained descriptive panel and predicted for force/deformation spectra with partial least squares regression. Only four sensory attributes—adhesion to lips (Rcal = 0.83), cohesion of bolus (Rcal = 0.78), cohesiveness (Rcal = 0.69), and hardness (Rcal = 0.72)—were successfully predicted from instrumental measurements.

This study examines the impact of unfavorable media coverage on the stock market prices of major food companies, an issue of increasing importance to the food industry. The study focuses on the 16 April 1996 Oprah Winfrey Show, a popular television program that raised questions about the safety of the U.S. beef supply. The show resulted in considerable controversy, and some cattle feeders blamed the show for a drop in cattle prices. Fissures are fractures of a rice kernel that can be created during the drying and tempering process. They cause tremendous postharvest losses in milling yield. Understanding why and how rice kernels fissure will lead to optimal drying and tempering operations. This information could also provide input to plant breeders for producing rice cultivars that are more resistant to fissuring. Rice kernels were dried using various air conditions in a controlled environment chamber. The kernels were viewed by video microscopy to observe the occurrence of fissures. Phytoestrogens are biochemicals synthesized in plants which mimic steroidal estrogen activity in mammals. Analysis of these compounds in the legumes which produce them and in body fluids is important to the study of their physiological effects. High pressure liquid chromatography (HPLC) has been found to be an efficient and sensitive method of identification and quantitation of isoflavonoids, one class of phytoestrogen. Here we report the separation of three isoflavonoids, biochanin A, genistein and daidzein using an HPLC system with a Cg reverse phase column and a linear gradient mobile phase containing acetonitrile and acetic acid/water (10/90, v/v) over 60 minutes. …

An Economic Assessment Of The Myanmar Rice Sector: Current Developments And Prospects, Kenneth B. Young, Gail L. Cramer, Eric J. Wailes

AAES Research Reports and Research Bulletins

In this study, the Myanmar rice economy is described in the context of the current political situation and state of national economic development. The forces that are changing rice production and exports are identified; however, the rate of development involves a complex integration of government intervention and politics, as well as availability of resources. Probable scenarios for rice production and export are projected based on recent growth trends and expected infrastructure development. The Arkansas Global Rice Model is used to integrate the Myanmar rice sector with the global rice market in developing projections.
