Cultivated oat (Avena sativa L.) is an allohexaploid (AACCDD, 2n = 6x = 42) thought to have been domesticated more than 3,000 years ago while growing as a weed in wheat, emmer and barley fields in Anatolia1,2. Oat has a low carbon footprint, substantial health benefits and the potential to replace animal-based food products. However, the lack of a fully annotated reference genome has hampered efforts to deconvolute its complex evolutionary history and functional gene dynamics. Here we present a high-quality reference genome of A. sativa and close relatives of its diploid (Avena longiglumis, AA, 2n = 14) and tetraploid …

Lupin seeds have an excellent nutritional profile, including a high proportion of protein and dietary fiber. These qualities make lupin seeds an ideal candidate to help meet the growing global demand for complementary sources of protein. Of consequence to this application, there are nutritional and antinutritional properties assigned to the major lupin seed storage proteins—referred to as α-, β-, δ- and γ-conglutins The variation in the abundance of these protein families can impact the nutritional and bioactive properties of different lupin varieties. Hence, exploring the conglutin protein profiles across a diverse range of lupin varieties will yield knowledge that can …

Human-wildlife interactions have developed since the agricultural revolution that occurred 10,000 years ago, and the expansion of commensal species’ geographical distribution led to conflicts that prompted humans to adopt a wide range of control methods for pest species (Horvitz, Wang, Wan, & Nathan, 2017; Riyahi et al., 2013; Saraswat, Sinha, & Radhakrishna, 2015). The order Rodentia is characterised by a high number of successful invaders, which humans have attempted to manage with the use of anticoagulant rodenticides (ARs) since the 1940s (Capizzi, Bertolino, & Mortelliti, 2014; Ruiz-Suárez et al., 2014). The rise and spread of a genetic mutation that infers …

Research outputs 2014 to 2021
Gluten related disorders, such as coeliac disease, wheat allergy and baker's asthma are triggered by proteins present in food products made from wheat and related cereal species. The only treatment of these medical illnesses is a strict gluten-free diet; however, gluten-free products that are currently available in the market can have lower nutritional quality and are more expensive than traditional gluten containing cereal products. These constraints have led to the development of gluten-free or gluten-reduced ingredients. In this vein, a non-GMO wheat flour that purports to contain “65% less allergenic gluten” was recently brought to market. The present study aims …

Lysine is the most limiting essential amino acid in cereals, and efforts have been made over the decades to improve the nutritional quality of these grains by limiting storage protein accumulation and increasing lysine content, while maintaining desired agronomic traits. The single lys3 mutation in barley has been shown to significantly increase lysine content but also reduces grain size. Herein, the regulatory effect of the lys3 mutation that controls storage protein accumulation as well as a plethora of critically important processes in cereal seeds was investigated in double mutant barley lines. This was enabled through the generation of three hordein …

Research outputs 2014 to 2021
Yeast are commonly used in the preparation of foods and beverages such as beer and bread and may also be used on their own as a source of nutrients and flavoring. Because of the historical connection of yeast to products made from wheat and barley, consumers maintaining a gluten-free diet can have concerns about the safety of yeast ingredients. Analyzing the safety of yeast and yeast-containing products presents some difficulties, as the yeast organisms actively degrade any gluten in the product, raising questions on the appropriateness of detection by traditional antibody-based methods. This study examines a variety of yeast and …

Coeliac disease (CD) is an autoimmune disorder triggered by the ingestion of gluten that is associated with gastrointestinal issues, including diarrhea, abdominal pain, and malabsorption. Gluten is a general name for a class of cereal storage proteins of wheat, barley, and rye that are notably resistant to gastrointestinal digestion. After ingestion, immunogenic peptides are subsequently recognized by T cells in the gastrointestinal tract. The only treatment for CD is a life-long gluten-free diet. As such, it is critical to detect gluten in diverse food types, including those where one would not expect to find gluten. The utility of liquid chromatography-mass …

Antibiotic Resistance In Gram Negative Bacteria Isolated From Fish Sold In Western Australia, Hannah Kathleen Robinson
Theses: Doctorates and Masters
Background Information The global misuse and overuse of antibiotics in human medicine and the animal production industry is contributing to the development of antibiotic resistance in bacteria. This is a serious threat to modern medicine and public health. Antibiotic resistant organisms can cause severe infections in humans which are difficult to treat, and in some cases impossible to resolve which can lead to premature death. Several studies have been conducted across the globe to assess the use of antibiotics in the seafood industry and the associated health risks, however, limited studies have recently explored this risk in an Australian setting. …

Theses: Doctorates and Masters
Vanilla is a very important flavouring agent, it is used as a major ingredient in a number of food products. The taste and aroma results from a specific blend of components present in the extract. There are over 170 volatile components, which all contribute to the flavour of the extract. These volatile components can be present in trace amounts or in relatively high concentrations. The range and concentration of volatile components is somewhat characteristic of the vanilla extract and its origin. Due to the high cost and low availability of natural extract, nature-identical and synthetic flavourings are often used to …
Attitudes To Biotechnology And Genetically Modified Food : A Review, Juliana Rose Cannon
Attitudes To Biotechnology And Genetically Modified Food : A Review, Juliana Rose Cannon

As peanuts age, the lipid component deteriorates, and the peanuts become rancid. The Health Department of Western Australia has received numerous complaints from consumers who are unsatisfied with the quality of peanuts they have purchased from certain grocers. Presently there is no standard methodology for detecting rancidity m peanuts, thus enabling grocers to continue selling peanuts of poor quality. In an attempt to overcome this problem, a standardised methodology needs to be developed, which will enable offending grocers to be prosecuted The three methodologies trialed were the Peroxide Value (PV), Acid Value (AV), and Fatty Acid Profile (FAP) methods. In …
