Quantitation Of Formaldehyde Resulting From Oxidative Deterioration Of Unsaturated Fatty Acids, Stanley J. Andrews

Derivatives of 3-methyl-1-2-benzothiazolinone hydrazone were formed from the oxidation products of three oxidized unsaturated fatty acids. Aeration with oxygen and heat (65C) was used as a means of accelerating deterioration of lipid samples. Formaldehyde was recovered from oxidized pure standards of oleic, linoleic and linolenic acid methyl esters, and identified using gas chromatography. Formaldehyde was also recovered from oxidized lipid extracts of mechanic ally deboned turkey meat and turkey cluster fat. Gas chromatography was used to measure concentrations of unsaturated fatty acids during the oxidation of extracted lipids. Linoleic and linolenic fatty acids significantly decreased (p < .005) in oxidized lipid extracts from turkey cluster fat stored frozen for six months.

The objectives of this investigation have been to characterize black gram (Phaseolus mungo L.) and rice (Oryza sativa L.) proteins and to study changes in their nutritional value due to fermentation. Black gram, the legume chosen for this work, is one of the most important legume crops throughout a large part of the tropics.
The protein content of 60 mesh, dehydrated, defatted black gram meal was 28.5 percent. Sodium carbonate (0.5-1.0 percent), tetra-sodium pyrophosphate (0.5 percent), and sodium dodecyl sulfate (SDS) (0.5-5 percent) proved to be the potential protein solubilizers as they extracted more than 76 grams of …

Nitrite at the level found in turkey frankfurter formulations vii did not interfere in the hydrazone test as developed by Andrews (1975). The aldehyde levels of frankfurters made principally from MD turkey meat were, on the average, twice as high as the levels in the raw meat. Aldehyde levels generally increased as the frozen storage time of the raw meat increased. There were some variations from this trend due to variation in the fat content of the raw meat. The Technicon OSCC II was evaluated for application in dairy herd improvement central laboratories. Dilution using a Fisher Autodiluter made sample preparation for assay less time consuming and more convenient and resulted in the same accuracy as with the manual syringe technique.
Sample storage and the presence of a potassium dichromate preservative tablet had little effect on somatic cell count when tested within two days at room temperatures (20-23 C) or within four days at refrigeration temperatures (4-7 C). The preservative tablet caused an average increase of 14,000 cells/ml. The average cell count dropped 26 percent following two days at …

Forty-nine female rats initially weighing about 95 grams were used in this experiment to determine the effect of contraceptive hormones on body composition in zinc deficient and zinc supplemented rats. Four treatment groups were: 2 ppm of dietary zinc with daily contraceptive steroid injections, or with placebo injection, and 140 ppm of dietary zinc with contraceptive steroid injection or with placebo. The daily injected steroids consisted of 0.1ug of Ethynyl Estradiol and 0.1mg of Medroxyprogesterone in 0.1ml of corn oil. Non-hormone treated groups received 0.1ml of plain corn oil. All injections were administered into the Gluteus Maximus muscle. Food intake, …

James G. Matthews was a jack-of-all-trades. He worked as a coal miner for James C. Coal Company, worked for United Fuel Gas Company, the Nickel Plant, and as a mail courier. He also performed as part of a singing quartet. Mr. Matthews was born on May 30, 1902. He grew up on a farm near East Lynn, WV. After the death of his mother, Mr. Matthews attended elementary school on a part-time basis in order to work on the family farm. Whole milk acidified to pH 5.3 with hydrochloric acid was used for the manufacture of Monterey cheese. The milk was inoculated with one and one-half percent lactic starter and set with 12.5 ml rennet per 1000 pounds of milk. Normal washing treatments resulted in cheese with moisture in excess of 44 percent. Moisture content was brought below 44 percent by using wash water at a temperature such that the water-curd-whey mixture was 35 C. The pH of cheese made by preacidification was all between 5.21 and 5.09. No acid defects were encountered. Preacidification eliminated chance of spoilage or losses caused …

A procedure was developed for the extraction of rennet from fresh frozen vells. Frozen vells were minced in a Model VCM-25 Hobart Vertical Cutter/Mixer. Dry sodium chloride was added until the salt concentration in the moisture of the tissue was 10%. Salted tissue was placed in galvanized steel cells and heated in a water bath to 49, 54, 57 and 60 C for 0, 15, 30, 45 and 60 minutes. The heated tissue was dried to about 4% moisture at ambient temperature with the aid of an electric fan. The dried salted tissue was extracted with a sodium chloride solution …

The levels and weekly variations of certain lipid components were investigated in healthy adults, 33 to 60 years of age, on self-selected diets under home-living conditions with and without an increased proportion of polyunsaturated fats for a period of 26 weeks. Ten individuals served as controls and 16 were assigned to the experimental diet. Each of the groups contained an equal number of men and women. The experimental diet provided a ratio of polyunsaturated to saturated fatty acids of approximately one, with the substitution of vegetable oils for animal fats within the normal eating patterns of the participants. The composition of tomato fruit at nine different maturity stages was studied. The dry matter content decreased gradually, whereas the alcohol soluble material and non-protein nitrogen increased with ripening. Total nitrogen decreased up to the large green stage and then increased during ripening. Starch accumulated until nearly the large green stage and then diminished rapidly. Of the two components of starch, amylose decreased much faster than amylopectin, and the ratios of amylopectin and amylose thus increased during ripening. Among the amino acids, glutamic acid was present in an exceptionally high concentration, and its concentration doubled as the fruit ripened. A …

Four healthy university women students (age 21-26) while on self-selected diets and living under normal living conditions served as experimental subjects in a study of changes of serum total lipids, distribution of lipid classes, and the fatty acid composition of lipid fractions during the menstrual cycle. Effect of meal frequency (2 meals vs 3 meals with no breakfast) was also included.
Total lipids were extracted from serum. Chemical determinations of total lipids, total and free cholesterols, and lipid phosphorous were made on these extracts. Concentration of cholesterol esters and phospholipids were calculated and triglycerides plus free fatty acids were calculated …

Five normal, healthy, men (age 33-42) served as experimental subjects. The subjects were on self-chosen diets and received a test-dose of buffered nicotinic acid (Nico-Span in capsule form) of 2 gm daily for three weeks, from the second through the fourth weeks, of the six and one-half week test period. About 30 ml of venous blood was obtained twice weekly from each subject, after an overnight fast of at least 12 hours. Each subject collected a 24-hour urine sample of the day prior to the blood sampling and also kept a record of food eaten.

Millions of pounds of venison are harvested each year in the United States. Over 12,000,000 pounds of dressed venison are harvested during the regular season each year in the State of Utah. The hunters of venison contribute approximately 10 1/2 billion dollars to the economy of the state for licenses, lodging, transportation, and other expense of hunting. In many cases this source of meat is a significant part of the household meat supply. Venison is often wasted, however, because of its undesirable flavor. The Bureau of Indian Affairs has recently completed or is now in the process of building 19 new grade schools on the Navajo reservation. Some of these schools are boarding schools, and some are day schools, but each new school needs school lunch personnel. To meet this need intermountain School added to their curriculum a course in Quantity Foods to be given to Junior and Senior High School girls as a two year vocation. It is desirable in any dietary service to produce high quality and nutritious food within reasonable cost. Any training which the food service supervisor may receive in administration, nutrition and food preparation will aid in achieving this goal. No training program for food service supervisors in Seventh-day Adventist institutions in Mexico has been available. The plan for a two week workshop for food service supervisors was thus developed as a step toward meeting this need.
Principles on techniques of conducting workshops have been discussed.

In certain industrial areas fluorides are present in various amounts in the atmosphere. These fluorides are liberated by industrial processes at high temperature in treatment of materials containing fluoride, either as a natural impurity, or as added material for technical purposes. Equipment and procedures have been installed in many plants to reduce the output of fluorides significantly, yet forage and hay grown near the plants may contain elevated amounts of fluorides. The Vitamin A And Carotene Content Of Nebraska Butter, I. L. Hathaway, H. P. Davis
Nebraska Agricultural Experiment Station: Historical Research Bulletins
The vitamin-A, carotene, fat and moisture concentrations of Nebraska creamery butter were determined at monthly intervals for 25 months. Samples were obtained from 14 creameries located throughout the state. Their vitamin-A and carotene determinations were made with the aid of a spectrophotometer, and their fat and moisture analyses were determined by the A.O.A.C. methods. From a comparison of these data with the results of investigations in other states it was concluded that Nebraska butter was at least equal in vitamin-A value to average United States butter.
