This commentary extends Wiebers & Feigin’s (2020) plea to adopt diets that are less dependent on animals by calling on experts and activists to work for change with regard to farm worker labor conditions. Already doing among the most dangerous jobs, farmworkers are at increased risk of COVID-19. As we increasingly transition to plant-based diets, we must all ensure that farmworkers have safe and just working conditions to meet the demands of our changing diets.

Innovation in meat production has enabled modern humans to inflict far greater harm on animals, the environment, and public health than was possible just a few decades ago. Wiebers & Feigin aptly express the urgency with which these issues must be addressed. Those advocating for animals on moral grounds face resistance from omnivores citing taste, price and convenience. Further innovation in meat production (plant-based and cultured meat) will enable us to preserve the experience of eating meat whilst phasing out the many problems caused by industrial animal farming.

Sociology
Literature on the ethics and politics of food and that on human–animal relationships have infrequently converged. Representing an initial step toward bridging this divide, Messy Eating features interviews with thirteen prominent and emerging scholars about the connections between their academic work and their approach to consuming animals as food. The collection explores how authors working across a range of perspectives—postcolonial, Indigenous, black, queer, trans, feminist, disability, poststructuralist, posthumanist, and multispecies—weave their theoretical and political orientations with daily, intimate, and visceral practices of food consumption, preparation, and ingestion.

This paper proposes a return to the land and reconnection of spiritual practices through ethical teachings. Such a land ethic would involve answering the woes of industrial agriculture and providing a framework for farmers, consumers, and policymakers based on sustainable and spiritual considerations of the land. I analyze the loss of spiritual literacy and traditional ecological knowledge in the United States and discuss the spiritual history of agriculture in order to analyze contemporary religious perspectives on farming and agricultural ethics and thereby develop my own recommendations. I present this statement under three loose categories: People, Objects and their Environment. I consider People as human, Objects as art objects, domestic objects, and food, and Environment as the shared space of the former groups. Food directs this statement as I present each concept and creative process as a metaphorical dish. This research project focuses on the contentious issue of whaling in the 21st century and attempts to make sense of Japan’s whaling policy in terms of food culture and national identity. Using a constructivist theoretical framework, I analyze the impact of the whaling issue on Japan’s bilateral relations with other nations, in both the East Asian subregion and the larger global community. The results of this paper indicate that whale meat carries a deep symbolism in Japanese national identity and that the general issue of whaling has little effect of Japan’s bilateral relations with other nations. The Miami food scene - including restaurants, breweries, bakeries, and distilleries - is in a state unlike any it has experienced before. Fueled by innovators in cuisine and tangible public excitement, it is an unprecedented time in terms of both quantity and quality for South Floridians to eat and drink. The Miami Craft Brewery Collection effort within the Special Collections hopes to document and celebrate the rise of Craft Brewing in Miami through the collection of brewery documents, advertising ephemera, bottles/labels, actual beer, and oral histories from prominent leaders in the field.

Despite being a sparsely-populated country with less than 2% of its land arable, Mongolia has developed a rich and complex food culture, notably for its meat and dairy products, which could soon be at an historic high thanks to the tens of millions of animals on Mongolian pastureland. Many Mongolians and non-Mongolians view the countryside as a sea of milk that is currently being underutilized for economic exploitation. This thesis provides a culturally-comprehensive review of the plants utilized for food in the Bitterroot Salish tribe of northwestern Montana. As part of the larger Confederated Salish and Kootenai Tribes (CS&KT) of the Flathead Indian Reservation, the Bitterroot Salish historically utilized hundreds of plants for food, medicine and hygiene. This thesis aims to highlight food plants and their important cultural components. The information herein is a combination of history, ethnography, linguistics, ethnobotany, and first-hand experience with the current Salish community to provide a holistic framework of understanding traditional food plants today. Nixtamalization, from the Náhuatl nixtamalli, is a process in which maize is soaked in a vessel containing an alkali solution. The alkali processing of maize is essential in preparing corn for human consumption because it releases lysine and tryptophan and, most importantly, niacin. Without these, when the primary dietary staple is unprocessed maize, the result is malnutrition and disease, pellagra. Nixtamalization originated in pre-Columbian Mesoamerica but there was a paucity of corn processing in pre-Hispanic South America, even though corn was ubiquitous in both regions at a very early date. Calculating Restaurant Failure Rates Using Longitudinal Census Data, J. J. Healy, Máirtín Mac Con Iomaire

Failure rates in the restaurant industry are popularly perceived to be far higher than they actually are. This paper calculates failure rates in the Irish Food and Drinks Sector (IFDS), for the first time, using longitudinal census data from the Central Statistics Office (CSO) in Ireland, which follows the European statistical classification of economic activity (NACE). The results are compared with previously published literature on restaurant failure rates in the United States of America. This study also compares IFDS failure rates with other industry sectors in Ireland (construction, manufacturing). This paper aims to shed light on the dissonance caused by the superimposition of Dominant Human Systems on Natural Systems. I highlight the synthetic nature of Dominant Human Systems as egoic and linguistic phenomenon manufactured by a mere portion of the human population, which renders them inherently oppressive unto peoples and landscapes whose wisdom were barred from the design process. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

The aim of this article is to explore the speculative fiction works of three prominent, female speculative fiction writers: Ursula K. Le Guin, Margaret Atwood,and Octavia Butler through an ecofeminist lens. Ecofeminism, as first coined by Francois D'Eaubonne in 1974, is a philosophy that compares the oppression and abuse of women to that of the environment. This article notes how Le Guin, Atwood, and Butler portray women and the environment in post-apocalyptic science fiction. Not So Bizarre Foods is a summer-term program designed for upper-level Culinary Arts students from Johnson and Wales University, Providence. Unlike other programs serving students in the Culinary Arts, this unique model includes multiple locations and an internship. The proposed program features three month-long modules based in Lyon, France; Munich, Germany; and Naples, Italy allow for comparison across locations. I make an annual summertime return to Naknek, a town on Bristol Bay where the salmon have made their own annual summertime return for thousands of years. My thesis is a series of nonfiction essays about my background there, both as a commercial fisherman and my upbringing. It is something I consider the “Part One” of a book still under the process of writing. It is a series of essays, alternating these two motifs of the salmon and of my experiences growing up somewhere like Naknek.

This thesis describes how food, culture, and class have shaped how I have acculturated, negotiated and blended Mexican and American. It highlights various themes that have shaped my educational process, including, masculinity, family values, food production, service and consumption. The proximity of South Texas to the U.S.-Mexican border plays an important role in the gastronomy of the Rio Grande Valley (RGV). Bill Owens is a pioneer in the United States craft brewing industry through his efforts as an advocate, writer, publisher, brewer, and entrepreneur who created a lasting legacy by influencing generations of brewers and beer fans. Owens wrote the first book on homebrewing equipment (How to Build a Small Brewery: Draft Beer in Ten Days in 1982). He opened the third brewpub in the country (Buffalo Bill's Brewery in Hayward, California in 1983) where, in 1985, he introduced the first commercial pumpkin beer among other beer style firsts. Owens published numerous brewery-focused magazines that featured many illustrious beer writers. …

Food security in the arctic and subarctic is an area of growing research and concern as climate change continues to alter the availability of traditional foods eaten in remote areas, especially as shipping food has questionable sustainability and contributes to rising CO2 levels. Previous research has noted changes in the Icelandic diet making it more reliant on foreign imports, although there is still strong localized agriculture. Because of its geothermal activity, Iceland has a unique advantage over other highlatitude countries in growing food with a minimal carbon footprint, although that potential is unequal throughout the country. In a plane high above the snow-capped jagged peaks and cracked earth of Ladakh, I stared down below with awe, wondering how people ever coaxed life from the soil in this mountain-desert landscape. The intention of this study is to see how traditional subsistence farming actually takes place and the social settings formed by these practices. Issues of tastes and smells are often relegated to an ancillary or minor rank of importance in the domain of aesthetics, if recognized at all as legitimate objects of aesthetic inquiry and experience. This essay aims, firstly, to carve out a space of legitimacy for the aesthetics of tastes, and secondly, to clarify what aesthetic inquiry with regards to tastes must look like.
