Current research on bioactive molecules in milk has documented health advantages of bovine milk and its components. Milk Phospholipids, selected for this study, represent molecules with great potential benefit in human health and nutrition. In this study we used confocal reflectance and multiphoton microscopy to monitor changes in skin morphology upon skin exposure to ultraviolet light and evaluate the potential of milk phospholipids in preventing photodamage to skin equivalent models. The results suggest that milk phospholipids act upon skin cells in a protective manner against the effect of ultraviolet (UV) radiation. Particle size has many effects on the cow. Adequate forage particle length is necessary for proper rumen function. Dairymen are also having a hard time measuring particle size. Proper particle size distribution of feeds is an important part of ration formulation. Management of forage particle size starts with harvesting forages at the proper stage of maturity. Total viable rumenbacteria counts through the use of colony-unit forming assays lack accuracy because they only include culturable bacteria capable of initiating cell division. Thus, bacterial counts can be underestimated. The use of fluorescent characteristics of cell membranes allows flow cytometry to enumerate and distinguish dead from live bacteria cells. The objective of this experiment was to investigate the viable and total ruminal bacteria counts when 3 levels of forage:concentrate in diets were fed at restricted levels with the addition of Saccharomycescerevisiae (YC). Restricted feeding and highconcentratediets are potential strategies for growing dairyheifers. Ruminal manipulation with additives such as Saccharomyces cerevisiaeyeastculture (YC) has been shown to alter digestibility when added to this type of diet. An experiment was conducted to investigate the ruminal fermentation and in situ digestibility of diets with 3 different levels of forage to concentrate (F:C) fed at restricted intake without and with YC addition. For the first part of my thesis, the effects of filtration temperature and heat treatment on the compositional properties of whole milk Ultrafiltration retentate (UF) were studied. Ultrafiltration is primarily run at temperatures in the range of 50-55°C but more and more plants are starting to filter at refrigeration temperatures. A heifer feeding trial evaluated the impact of high/low forage quality and high/low concentrate level nutrient-balanced diets on simultaneous odor and gas emissions from the manure. Gas concentration was determined using an infrared photoacoustic analyzer over a 24-hour period using a steady-state flux chamber setup containing urine:feces as-excreted from eight individual heifers. Odorous air samples were collected from chamber headspace and evaluated by six human assessors for pleasantness, intensity and detection threshold using a forced-choice dynamic olfactometer. Ammonia emission ranged from 0.64 to 3.94 mg NH3 cm-2 d-1 across diets. Average ammonia emission from the low concentrate (80% forage) diets …

The effect of cream pasteurization on the composition and microstructure of buttermilk after pasteurization, evaporation and spray-drying was studied. The composition of milk fat globule membrane (MFGM) isolated from buttermilk samples was also characterized. Pasteurization of cream resulted in higher lipid recovery in the buttermilk. Spray-drying of buttermilk had a significant effect on phospholipid content and composition. After spray-drying, the phospholipid content decreased by 38.2% and 40.6%, respectively in buttermilk from raw or pasteurized cream when compared with initial buttermilks. Pasteurization of cream resulted in the highest increase in whey protein recovery in MFGM isolates compared with all other processing …
