Consumers consider tenderness and steak color to be two important attributes associated with meat quality. However, inconsistencies in both tenderness and steak color remain despite similar production practices of beef cattle. Stressful events before harvest may impact meat quality by initiating certain pathways such as abundance of heat shock proteins (HSP) and oxidation within the skeletal muscle. Heat shock proteins have been associated with tenderness while oxidation may affect steak color and flavor. In this study, 40 Holstein steers were administered adrenocorticotrophic hormone (ACTH) to mimic a stressful event before harvest. Animals were harvested at different times following the ACTH …

Bovine respiratory disease (BRD) is the most common and costly disease in the beef cattle industry, leading to high morbidity, mortality and huge economic loss. Despite the recent advances in vaccination and antimicrobial techniques, no significant health-improved outcomes have developed. Due to a deep investigation of the microbiome, respiratory microbiotas are known to have important roles for host health and disease. However, BRD specific pathogens have not yet been identified since they are found in both healthy and diseased animals. Bovine liver supplements are sought after by consumers due to their nutrient-dense profile and high protein content. However, there is a lack of information regarding bovine liver supplement labeling practices. The objective of this study was to assess labeling practices and compliance with U.S. regulatory standards among commercially sold bovine liver supplements. The product labels for 49 bovine liver supplements were examined for required information, including a statement of identity; net quantity of contents; “Supplement Facts” label; ingredient statement; and name and place of business of manufacturer, packer, or distributor with domestic address or telephone number. Biofilm formation by foodborne pathogens is a serious threat to food safety and public health. Meat processing plants may harbor various microorganisms and occasional foodborne pathogens; thus, the environmental microbial community might impact pathogen survival via mixed biofilm formation. We collected floor drain samples from two beef plants with different E. coli O157:H7 prevalence history and investigated the effects of the environmental microorganisms on pathogen sanitizer tolerance. The results showed that biofilm forming ability and bacterial species composition varied considerably based on the plants and drain locations. Piglets are born wet, and evaporation of that moisture decreases body temperature, increasing the risk of mortality. The objective of this study was to compare the effect of two commercially applicable methods for drying piglets at birth on piglet rectal temperature over 24 h after birth. The study was carried out in standard commercial farrowing facilities with 52 litters, using a completely randomized design with three Drying Treatments: Control (not dried); Desiccant (dried at birth using a cellulose-based desiccant); Paper Towel (dried at birth using paper towels). Piglets experience a rapid decrease in body temperature immediately after birth, increasing the risk of mortality. The objective of this study was to determine the effect of drying and/or warming piglets at birth on rectal temperature over the first 24 h after birth. A survey of East Texas beef cattle producers was designed to evaluate the management practices that were prevalent in the area. Demographic and cattle operation data from 103 respondents were analyzed using SPSS (Version 25; Chicago, IL). This electronic-based survey was distributed through Qualtrics. Respondents were located in Angelina, Nacogdoches, or Cherokee county. Most producers (38.8%) had a Bachelor’s degree. A negative correlation was established between castration method and weaning weight (p = - 0.204). Calves were weaned 50 pounds heavier when band or surgically castrated. Females were less likely to castrate their calves or utilize a mineral program. Approximately, …

Hybrid life cycle assessment (LCA) incorporating process-based and economic input-output (EIO)–based inventory data has been applied in various industries (e.g., wind energy, biofuel). Few hybrid LCA studies have been found in the food industry. This work analyzes the life cycle environmental impacts of the US beef processing industry using process-based and integrated hybrid LCA. The process-based inventory includes all resource inputs and waste outputs associated with a beef processing plant. The EIO-based inventory includes key activities missing in the process-based inventory, such as technical and management service, wood and paper, and industrial equipment. Feeder cattle future price spreads across all months have recovered to near pre-COVID-19 levels as quarantine restrictions and packing plant capacity issues have been mostly sorted out. For example, for the week of July 17, 2010 [sic], prices reached levels not seen since the beginning of March 2020. Pasture and corn progress are two factors that have the potential to push prices lower in the next coming months. Given current market conditions, producers have some options to lock in a margin.

For studies 1 through 3, 20 steers of predominantly Angus breeding, were stratified by body weight (279 ± 13.2 kg), assigned randomly to 6 paddocks, and fed a low S ground corn and soybean meal supplement that did not contain any byproduct feeds (0.31% total dietary S; LS) or LS supplement with an additional 0.25% S provided from sodium sulfate (Na2SO4; 0.58% total dietary S; HS) for a 114-d growing phase. Fungal endophyte-infected forages have been shown to alter herbivore feeding preferences. The objective of this experiment was to compare the preference of cattle, sheep, and goats for plants containing (E+) and not containing (E-) fungal endophytes using freshly harvested Oxytropis sericea, Ipomoea carnea, and Ipomoea asarifolia. Goats and sheep rejected all forage choices regardless of endophyte status except for grass and alfalfa hay. Endophyte status had no influence on cattle forage preferences. Cattle rejected all Oxytropis sericea E+ and E- choices. Cattle discriminated between Ipomoea species, preferring Ipomoea carnea to Ipomoea asarifolia (P = 0.004). In all …

National cattle genetic evaluations assume technician and imaging lab do not contribute to phenotypic variation when measuring carcass traits by ultrasound. The objective of this study was to estimate variance components of ultrasound carcass measurements, specifically variance contributed by ultrasound technician and imaging laboratory. Accounting for technician and imaging lab variation may increase accuracy of genetic predictions for carcass traits. Among management systems intended to increase heterogeneity on the landscape, patch burn grazing (PBG) is by far the most prominent and researched method. Though prescribed burning is seen as a healthy disturbance in grassland ecosystems, many landowners in the Northern Great Plains have an aversion to fire. Increased estradiol is the primary signal to initiate standing estrus, and cows that exhibit estrus prior to fixed-time artificial insemination have greater pregnancy rates than cows that do not. Therefore, understanding what factors may be present at the ovary that may regulate estradiol production is critical. A previous study reported that bovine follicles with greater follicular fluid concentrations of estradiol had decreased expression of GnRH-I and GnRH-II in granulosa cells (GC).
