Endophyte-infected tall, toxic fescue is the most common forage for beef cattle in the southeastern U.S. However, exposure to this forage causes detrimental effects on the health of gestating cattle. The exposure to toxic fescue during gestation has been shown to impact fetal development during pregnancy and their offspring’s subsequent growth. However, limited information is currently available on the impact of this exposure on the meat quality of the offspring. Our objective is to determine how the dam’s exposure to toxic fescue during gestation impacts the beef color and quality of the final offspring.

The objective was to assess the effect of a probiotic microbial gel (BIOFRESH® Microbial Gel, Agrarian Solutions) administered on arrival in combination with feeding one of two different direct-fed microbials (DFM 365a or DFM 365b, Agrarian Solutions) on the health and growth performance of stocker calves at high risk for bovine respiratory disease (BRD). The objective of this study was to determine the effect of increasing zinc supplementation from organic-complexed sources to beef cows during gestation on calf performance. In May 2025, during gestation, Angus crossbred cows were confirmed pregnant with female sexed semen (n = 83) and enrolled in the current study. Cows (4.7 ± 2 years of age and 531 ± 84.4 kg body weight, mean ± standard deviation) were allotted to 4 groups (20 to 21 cows/group) based on, sire of heifer calf, cow age, and cow body weights taken at weaning. Nutritional management and lactation performance are critical factors influencing productivity in cattle. This research includes two complementary studies. The first study was a meta-analysis to develop a lactation curve for Bos taurus cattle in North America using data from machine or hand milked cows. Data from 7 studies were used resulting in 1340 cow-day observations. Milk yield was analyzed by parity (primiparous or multiparous) and feeding management (non-nutrient restricted or nutrient restricted), revealing that primiparous cattle peaked earlier and at lower yields than multiparous cattle, and nutrient restriction reduced peak milk yield. Immune and metabolic disruption during weaning represents a major challenge to health and productivity in beef cattle. This dissertation tested the hypothesis that supplementation with multi-strain direct-fed microbials (DFMs) modulates immune regulation and metabolic pathways associated with adaptation to weaning stress. To address this, whole-blood transcriptomics and plasma metabolomics were used to evaluate molecular and metabolic responses in newly weaned beef steers during the receiving period. Transcriptomic analysis identified differential expressions of genes associated with immune signaling and inflammatory regulation, indicating modulation of immune-related pathways without changes in growth performance. Feed efficiency in beef cattle is a complex trait shaped by physiological, behavioral, and social factors that influence how animals access and utilize feed resources. This study examined feed efficiency classification and how it is influenced by feeding behavior, competitive interactions, and bunk approach patterns in yearling Angus bulls housed in a drylot over two years. The beef industry plays a vital role in global agriculture, with carcass quality and consumer preference being key determinants of market success. This thesis examines predictive modeling techniques for estimating the Total Score of beef carcasses, a composite measure representing yield and quality, primarily used by the Nebraska Cattlemen Association. Using data from the Nebraska Cattlemen’s Foundation Retail Value Steer Challenge (2000–2023), the study compares the performance of First Order Multiple Linear Regression (MLR) with three machine learning techniques: K-Nearest Neighbors (KNN), Random Forest, and Gradient Boosting Machine (GBM).

Data from year one of a three-year experiment was used to determine behavioral and physiological responses of heifers adapted to grazing endophyte-infected fescue (E+TF) compared to heifers naïve to grazing E+TF. In May, yearling beef heifers from KY (n=15) and MT (n=30) were stratified by body weight, hair coat score, and disposition into nine pastures and assigned to one of three treatments: KY grazing E+ (KY-E+), MT grazing E+ (MT-E+), or MT grazing endophyte-free tall fescue (E-TF) (MT-E-). The objective of this study was to evaluate the feedlot performance, rumination activity, and carcass characteristics of high moisture ear corn (HMEC) as a roughage source in finishing diets fed to beef steers. The objective of this dissertation was to evaluate strategies to mitigate metabolic disorders in confinement fed steers. The first study was conducted on yearling beef steers to investigate the effect of a rumen buffer, calcium magnesium carbonate (CMC), when fed with or without tylosin phosphate (TYL), on growth performance, rumination activity and liver abscess prevalence. Supplementation of a rumen buffer was not an effective alternative to a feed-grade antimicrobial for the control of liver abscesses in beef steers. Supplementation of CMC reduced DMI, thus negatively influencing BW and ADG. No associative effects of CMC and TYL were observed for any …

Previous in vitro studies have pointed towards potential species differences in rumen carbohydrate utilization and acidosis susceptibility. The objective of this study was to determine the influence of vibration during transportation on beef sirloin water holding capacity, color, and tenderness. USDA Choice center-cut sirloin top butts (n = 45 cases) were collected at a commercial processing facility and randomly allocated to one of three treatments 1) regular pallet driven 241 km (Reg241), 2) regular pallet driven 644 km (Reg644), and 3) vibration isolation pallet driven 644 km (Iso644). Beef cattle production remains a cornerstone of global food systems, providing highly bioavailable protein and essential micronutrients that are difficult to secure from plant-based foods alone. Yet this production is also resource-intensive, requiring substantial land, feed, and water inputs while contributing significantly to greenhouse gas emissions. Efficiency of dry matter intake (DMI) and water intake (WI) is central to both productivity and sustainability, but accurate measurement of these traits—particularly in grazing systems—remains a major limitation. The objective of these studies was to evaluate nutritional strategies to improve beef cattle productivity through targeted supplementation and protein source manipulation. The first study investigated the effects of a phytogenic supplement (PHYT; a blend of turmeric, capsicum, and black pepper oleoresin) on colostrum yield and composition, calf passive immunity, and cow–calf performance. Twenty-three Angus-based cows were assigned to either a control group or received 250 or 500 mg/head/day of PHYT from 30 days pre-calving to 60 days post-calving. Recently, cattle feeders have extended days on feed (DOF) resulting in hot carcass weights (HCW) exceeding the limits of existing serial slaughter datasets. This study's goal was to determine the impact extended DOF exerts on growth performance, feed efficiency, and carcass characteristics of steers and heifers with varying proportions of Angus (AN) and Limousin (LM) genetics. Bovine in-vitro production(IVP) of embryos is a growing field for producing offspring with desirable genetics in the cattle industries. While IVP is effective, oocyte cytoplasmic maturation is compromised, and bovine oocytes matured in-vitro have reduced metabolic activity than those matured in-vivo. Mitochondria are the central unit of oocyte metabolism, producing ATP through OXPHOS. Photobiomodulation is a light treatment reported to improve metabolic activity. In five experiments, we measured the effects of photobiomodulation treatment with red LED at 16-(L-16) and 20 h(L-20) of bovine oocyte in-vitro maturation on subsequent embryonic development, mitochondrial activity and nuclear progression. The objectives for the two experiments were to determine the impact of nitrogen (N) fertilizer rate, establishment method through no-till (NT) or clean-till (CT), and supplementation on stocker, wheat stand, and economic performance. Within study 1, 24, 1.62-ha pastures, were used over a two-year period. Pasture treatments consisted of a combination of N fertilization rate (100.88, 134.5, or 168.12 kg/ha), applied as broadcast urea and split between two equal applications of 50% at planting and the remaining 50% in the spring when daytime average temperatures trend above 10°C, and of NT establishment or CT establishment.
