The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. Ultrasound technology provides cattle breeders a relatively quick, non-invasive, and economical way to gather carcass data on live animals. Ultrasound provides the means to accurately predict body composition and develop estimated breeding values; however, national cattle genetic evaluations assume homogenous additive genetic and residual variances. These assumptions may be violated when estimating genetic merit for carcass traits by ultrasound because of differences in variance due to scanning technician and image interpretation laboratory. The objectives of this thesis project were to 1) characterize the influence of finishing system (grain-finished vs. grass-finished) on carcass characteristics, meat quality, the nutritional composition, and consumer preference for bison meat 2) evaluate the effectiveness of beef camera grading technology on grain- and grass-finished bison carcass characteristics, and 3) characterize the influence harvest systems (on-ranch vs. commercial facilities) on animal stress response, carcass characteristics, meat quality, and consumer preference of bison heifers. Preovulatory estradiol has been reported to play a crucial role in pregnancy establishment and maintenance, but the mechanism by which estradiol exerts its effects has not been well characterized. Specifically, the interactions between the maternal uterine environment and the developing conceptus can greatly impact pregnancy success or loss. The objective of this dissertation is to determine the effects of preovulatory estradiol exposure on uterine and trophectoderm transcriptomes, and uterine luminal fluid (ULF) protein composition. The growth promoting activity of implants have been documented. However, stage of growth in which the implant is administered may alter growth performance and carcass traits. An experiment was conducted to examine the effects of administering a conventional implant (Synovex C; SYN-C), or an extended-release combination implant (Synovex One Grass; ONE-G) to suckling steer calves on weaning weight, post-weaning growth performance, and carcass characteristics. The objective of this study was to quantify the differences in activity of jejunal maltase and isomaltase between 2 groups of steers with average dry matter intake (DMI) and differing average daily gain (ADG). Dry matter intake and ADG were measured in crossbred steers (n = 69). Jejunal mucosal samples were collected from 8 steers with the greatest (high) or least (low) ADG and average DMI (± 0.55 standard deviation). The complexity of host, pathogen, and environmental factors contributing to the incidence of BRD necessitate a multifaceted approach to investigate BRD. The objectives of the present study are to evaluate feeding behavior, animal performance and carcass characteristics of beef growing steers fed increasing amounts of carinata meal (CM). Due to the high protein content of the CM after the oil extraction for biofuel there is an opportunity to use it as a protein supplementation in beef cattle. Twenty-four steers blocked by weight were assigned to four corn-based diets (n = 6 animals per treatment). In the three treatment diets, carinata meal replaced high-moisture corn at 5, 10, or 15%. Two evaluations were conducted to evaluate the biological and economic production efficiency of retaining replacement females in a straight-bred Angus herd (HR) as opposed to purchasing crossbred replacements for a terminal sire production system (PR) where maximum maternal and individual heterosis is achieved. The first study was a comparison of the HR system versus PR system. It was modeled after a 100 hd, straightbred Angus cowherd that raises their own replacement females. Effects of enzymatically hydrolyzed yeast (EHY) and supplementation frequency (FREQ) on immune parameters among beef cows and calves was evaluated. Eighty multiparous (parity = 4.2 ± 0.3) cows were fed a common brome hay-based diet (CP = 8.0 ± 0.17%). Cows were blocked by expected calving date and stratified by body condition score (BCS) before random assignment of treatment. Beginning 88 ± 5 d prior to parturition, cows were provided 1 kg daily or 3 kg every 3 d of a soybean hull-based supplement (CP = 34.0, % of DM) that contained 0 or 3 g/kg EHY. A series of three separate experiments were conducted to determine the value of aspen tree (Populus tremuloides Michx.) as a ruminant feed component in growing, finishing and wintering rations. The entire tree, including the branches, leaves and bark, was fed to Hereford steers and commercial bred stock cows. In experiment 1, sixty steers were randomly allotted to six treatments of ten each. The six treatment rations were: 93% alfalfa as control, 12% aspen, 24% aspen, 36% aspen, 48% aspen and 48% aspen (with 4% sodium hydroxide). A computer model was developed to evaluate the energetic efficiency of postweaning beef production of various biological types of cattle fed rations with different energy densities. In Section I, a mathematical model was developed to estimate voluntary feed intake for growing cattle from weaning to slaughter. The mathematical model included effects of differences in energy density and crude fiber content of the ration and in breed and degree of maturity of cattle on feed intake. Five heifers from each of four breed groups (Angus x Angus, Charolais x Charolais and the two reciprocal crosses) were used in a study of gonadal hormone levels during the interval from 16 weeks before puberty to puberty (trial I). Puberty was defined as the first standing estrus. Two heifer calves from dams from each of the above breed groups and sired by a single Polled Hereford bull were used in a study of gonadal hormone levels from birth to weaning (trial II). During 1968, 29 Hereford steers were individually fed and marketed at one of seven constant weight classes from approximately 386 to 522 kg at intervals of 22.7 kg. During 1970, 21 Angus and Hereford crossbred steers were individually fed and marketed at one of four constant weight classes from approximately 386 to 522 kg at intervals of approximately 45.0 kg. The amounts of edible portion, trimmed fat, removed bone and the summation of the kidney, pelvic, and cod fat were determined on the steers of both years. There were 1,642,000 beef cows in South Dakota on_ January 1,1967, which was 14 percent higher than the 1961-65 average (South Dakota Crop and Livestock Reporting Service, 1967). These cows were valued at $307, 054, 000, a 27 percent increase over the 1961-65 average. There were 390, 000 head of cattle and calves on feed on January 1, 1967, a 33 percent increase over 1961 and a 22 percent increase over the 1961-65 average.
