Meat tenderness is an important quality trait critical to consumer acceptance, and determines satisfaction, repeat purchase and willingness-to-pay premium prices. Recent advances in tenderness research from a variety of perspectives are presented. Our understanding of molecular factors influencing tenderization are discussed in relation to glycolysis, calcium release, protease activation, apoptosis and heat shock proteins, the use of proteomic analysis for monitoring changes, proteomic biomarkers and oxidative/nitrosative stress. Each of these structural, metabolic and molecular determinants of meat tenderness are then discussed in greater detail in relation to animal variation, postmortem influences, and changes during cooking, with a focus on recent …

Section 147 of the Biosecurity and Agriculture Management Act 2007 requires the Minister for Agriculture and Food to carry out a review of the operation and effectiveness of any regulations made for the purposes of establishing an Industry Funding Scheme (IFS) every five years.

In 2010, regulations establishing three IFSs commenced to address pest and disease threats relevant to Western Australia’s broadacre and pastoral cropping and livestock sectors. This report documents the second fifth-year anniversary statutory review of the following regulations:

Winter feeding systems were evaluated on male Kiko meat goats against the traditional practice of raising goats in the winter months. Forty-Five Kiko bucks were randomly assigned to one of three treatments; Treatment 1, Treatment 2, and Treatment 3 consisted, respectively, of Cosaque Oats, annual Ryegrass, Crimson Clover mix, and 1.0% of BW concentrate supplementation with free choice hay. Forage clippings were analyzed for dry matter, crude protein, and neutral detergent fiber. Body weights were monitored over the grazing period. Blood samples were collected during the experiment, and animals were slaughtered for the evaluation of carcass traits. Data were analyzed …

Utilizing summer annual grass-legume forage mixtures has the potential to improve forage yield and nutritive characteristics, and/or animal performance during times when cool-season pasture growth is limited by high temperatures. Legumes can utilize atmospheric nitrogen, which can increase crude protein and forage digestibility in mixtures. As nitrogen application generally improves both the yield and nutritive characteristics of summer annual forages, but can have a negative effect on legume competitiveness, nitrogen fertilizer recommendations for legume-containing summer annual mixtures are not well established.

Biofilm formation by foodborne pathogens is a serious threat to food safety and public health. Meat processing plants may harbor various microorganisms and occasional foodborne pathogens; thus, the environmental microbial community might impact pathogen survival via mixed biofilm formation. We collected floor drain samples from two beef plants with different E. coli O157:H7 prevalence history and investigated the effects of the environmental microorganisms on pathogen sanitizer tolerance. The results showed that biofilm forming ability and bacterial species composition varied considerably based on the plants and drain locations. Piglets are born wet, and evaporation of that moisture decreases body temperature, increasing the risk of mortality. The objective of this study was to compare the effect of two commercially applicable methods for drying piglets at birth on piglet rectal temperature over 24 h after birth. The study was carried out in standard commercial farrowing facilities with 52 litters, using a completely randomized design with three Drying Treatments: Control (not dried); Desiccant (dried at birth using a cellulose-based desiccant); Paper Towel (dried at birth using paper towels). Piglets experience a rapid decrease in body temperature immediately after birth, increasing the risk of mortality. The objective of this study was to determine the effect of drying and/or warming piglets at birth on rectal temperature over the first 24 h after birth. Fungal endophyte-infected forages have been shown to alter herbivore feeding preferences. The objective of this experiment was to compare the preference of cattle, sheep, and goats for plants containing (E+) and not containing (E-) fungal endophytes using freshly harvested Oxytropis sericea, Ipomoea carnea, and Ipomoea asarifolia. Goats and sheep rejected all forage choices regardless of endophyte status except for grass and alfalfa hay. Endophyte status had no influence on cattle forage preferences. Cattle rejected all Oxytropis sericea E+ and E- choices. Cattle discriminated between Ipomoea species, preferring Ipomoea carnea to Ipomoea asarifolia (P = 0.004). In all …

Bos indicus females have more surface antral follicles than Bos taurus females; however, histological studies demonstrated no difference in total number of primordial follicles between these two biological types of cattle. Primordial follicle density in the ovary was less in Nelore ovaries compared to Angus ovaries, but no studies have examined the primordial follicle density in Bos indicus cross-bred females. It, therefore, was hypothesized that primordial follicle density in the ovary would decrease as percentage Bos indicus increased. The petroleum industry has an increasing interest in understanding the microbial communities driving biofouling and biocorrosion in reservoirs, wells, and infrastructure. However, sampling of the relevant produced fluids from subsurface environments for microbiological analyses is often challenged by high liquid pressures, workplace regulations, operator liability concerns, and remote sampling locations. These challenges result in infrequent sampling opportunities and the need to store and preserve the collected samples for several days or weeks. Although antral follicle count is a repeatable parameter across life that is positively associated with fertility, its use at weaning as a tool to discard less fertile heifers has not been extensively evaluated. The hypotheses of this work are: 1) maximum antral follicle count (MAFC) is repeatable between weaning and pre breeding evaluations, allowing selection of more fertile heifers at an early age, 2) heifers with high MAFC have growth and development parameters linked to an earlier puberty and pregnancy, 3) MAFC has a positive correlation with AMH concentrations, so that both could be used inter changeably. The federal government owns approximately 47% of all land in the western United States. In the state of Utah, about 64% of the land base is managed by the federal Bureau of Land Management (BLM) and the U.S. Forest Service (USFS). Odor emissions from livestock production have become increasingly important in the past decade. Odors derived from animal feeding operations are caused by odorous VOC emitted from the mixture of feces and urine, as well as feed and silage which may be experiencing microbial fermentation. Distillers grains are a by-product of corn grain fermentation used to produce fuel ethanol, and this industry has grown rapidly throughout the U.S. in past years. The objective of this experiment was to evaluate alternative sources of tropically adapted cattle germplasm and compare them with Angus- (AN) and Hereford- (HE) sired steers. Carcass, yield, and longissimus thoracis palatability traits from F1 steers (n = 621) obtained from mating AN and United States Meat Animal Research Center III cows to HE, AN, Brangus (BR), Beefmaster (BM), Bonsmara (BO), or Romosinuano (RO) sires were compared. Potential carrying capacities for land systems in the catchment of the Ashburton River were first estimated in 1983 as a result of a rangeland survey of the area undertaken during 1976, 1977 and 1978. Potential carrying capacity (termed capability capacity in the 1988 report) is a suggested sustainable level of use assuming that all pastures are in good range condition, the entire station is adequately watered for the effective management of livestock and seasonal conditions are average.

The Kent River Catchment is located in the South-West of Western Australia, approximately between latitudes 34° 15' and 35° 10' South and longitudes 116° 45" and 117° 50° East. The north-eastern boundary of the catchment stretches to the Albany Highway at Tenterden, and from there the catchment curves towards Rocky Gully before continuing to the South Coast (Figure 1.1.1). The catchment is located within the Shires of Cranbrook, Plantagenet and Denmark.

Surveys of rangeland resources in Western Australia to date have shown that 23% of the area surveyed is in poor range condition. Poor condition is characterised by the loss of perennial vegetation allowing wind and water erosion. Approximately another 37% is in only fair range condition (Curry and Hacker 1990).

The loss of range condition is partly due to uneven use of paddocks by sheep and cattle. The areas close to water and the preferred pasture types are often over-utilised, while areas well away from water and less preferred pasture types are under-utilised. The result is that rangeland in good, …

The role of the Rangeland Management Branch is to promote the sustained economic use of the rangeland resource. It provides research and extension services to the pastoral industry, provides advice on the condition of the range resource to Government and provides technical information on rangelands to other rangeland managers. A principal objective to be met in fulfilling that role is the development and promotion of economically efficient place systems that conserve the rangeland resource. This article deals with those native, naturalized and cultivated plants, which by virtue of contained cyanogenetic glycosides, are known to be poisonous or potentially poisonous to livestock in Western Australia.

Cyanogenetic glycosides are chemical compounds which contain a cyanogen (cyanide) radical combined with a sugar molecule. The sugar moiety may differ in glycosides obtained from different plants, and as a consequence glycosides from different plants, containing different sugar moieties, may be given different names.

Vitamin A is one of the essential vitamins for animal health. Grazing animals obtain their vitamin A requirements mostly from the carotene in green feed. This carotene is converted to Vitamin A in the intestinal wall and is passed to the liver and to a less extent the kidneys for storage. Some carotene also passes direct to the liver where it is stored before it is converted to vitamin A.
