Determination Of Some Quality Parameters Of Fishballs Prepared From Raw And Boiled Fish, Özgür Akkuş, Candan Varlik, Nuray Erkan, Sühendan Mol

Turkish Journal of Veterinary & Animal Sciences

The shelf life of fishballs prepared using raw and boiled fish was examined during cold storage (+4 ºC ± 1). Sensory, physical (loss of weight), chemical (TVB-N, TMA-N) and microbiological analyses (aerobic mesophilic bacteria, total psychrophilic bacteria) of fishballs made from raw and boiled anchovies and stored under cold storage conditions were carried out every 3 days. All analyses were carried out with two repetitions. The shelf life of fishballs was 9 days at +4 ºC ± 1 according to the results of the sensory, physical, chemical and microbiological analyses.

In this study, the fertility parameters of dairy cows in a herd with or without postparturient problems were investigated. The fertility parameters of 168 cows in 4- and 6-year-old age groups from the Bursa/Karacabey Doğancı Farm during 1999 and 2000 were studied. Data were obtained from 78 healthy cows and 90 cows having one or more problem parameters (e.g., dystocia and hypocalcemia) related to calving-first service interval and the number of services were examined. Calving-first service interval for 4- and 6-year-old healthy cows was 83.29 and 73.62 days, respectively, while it rose to 182.33 days for 4-year-old cows, with dystocia …

Lungs from 8222 cattle slaughtered at an abattoir in Elazığ were examined macroscopically, and pneumonia was detected in 500 (6.1%) lungs. These samples were inoculated onto blood agar supplemented with 7% sheep blood for isolation of bacterial agents. A polymerase chain reaction (PCR) based upon the use of species-specific primers was carried out on DNA samples extracted from suspected Pasteurella spp. isolates. In addition, a mouse inoculation test was carried out on suspected Pasteurella multocida isolates. Chromosome numbers and structures were investigated in (Tinca tinca L., 1758) of the family Cyprinidae. A solution of 1 ml/100 g of 0.1% colchicine was injected intramuscularly. Four hours later the fish were killed and the kidney and gills were removed and cytogenetic methods were applied. Metaphase chromosomes of the cells in these tissues were investigated numerically and morphologically. It was determined that the fish have 2n = 48 diploid chromosomes made up of 6 pairs of metacentric, 8 pairs of subtelocentric and 10 pairs of acrocentric. In this study Cu, Zn, Pb and Cd contents were analysed in 3 molluscs (Octopus vulgaris, Sepia officinalis, Loligo vulgaris) and in one crustacean sample (Parapenaeus longirostris) caught in the Gulf of Antalya in January-March 2000. In molluscs, Cu content was determined to be between 1.82 and 6.22 mg/kg, and in crustacea, it was determined to be between 4.24 and 7.40 mg/kg. In the mollusc and crustacea specimens Zn content was 10.95-21.52 mg/kg and 11.73-14.27 mg/kg, respectively. Pb and Cd are the 2 most important heavy metals for human health. Thirty-four Streptococcus thermophilus strains were isolated from yogurt samples obtained from various villages in different regions of Turkey. These strains were examined for their antibiotic resistance patterns and plasmid carriage. The susceptibility of the isolates to 8 antibiotics (vancomycin, tetracycline, chloramphenicol, erythromycin, cephalothin, ampicillin-sulbactam, gentamicin and penicillin G) was determined by the disk diffusion method. Most strains of S. thermophilus were resistant to gentamicin (79%) and penicillin G (64%) and susceptible to chloramphenicol (94%) and tetracycline (88%). Three adult male hedgehogs (Erinaceus europaeus) were used to investigate the bones of the thoracic limb. It was observed that the area of the fossa supraspinata (48%) was slightly larger than that of the fossa infraspinata (46%). Foramen supracondylare and foramen supratrochleare were absent but in one hedgehog while there was a foramen supratrochleare in the right humerus, there was no such foramen in the left humerus. The tuberositas deltoidea was not developed well but the tuberculum majus and tuberculum minus, crista tuberculi minoris, crista supracondylaris lateralis, epicondylus lateralis and epicondylus medialis were prominent. This study was conducted to determine the ruminal degradation characteristics of nutrients with respect to pasture stage of maturity in Kars district. The nutritional parameters were dry matter (DM), organic matter (OM), crude protein (CP) and crude fiber (CF). Samples were collected from pastures of 9 vicinities of Kars district over a 28-day interval. The Early Development Of Brook Trout Salvelinus Fontinalis (Mitchill): Survival And Growth Rates Of Alevins, Nadi̇r Başçinar, İbrahi̇m Okumuş

Turkish Journal of Veterinary & Animal Sciences

In this study, data on the incubation of eggs, survival rates and development of brook trout (Salvelinus fontinalis, Mitchill 1814) larvae and alevins were evaluated. Durations of eyeing, hatching and swim-up were 245, 415 and 675 degree-days at a temperature range of 4-12 ºC, while survival rates from fertilisation to hatching and from fertilisation to swim-up stage were 56.5% ± 24.28 and 52.0% ± 23.67, respectively. Alevin weight exhibited a positive relationship with egg size (r = 0.945, P < 0.01).

The effect of ultrasound treatment on milk homogenisation was studied. A microscope, equipped with a camera and ocular micrometer, was used to determine the diameters of fat globules and to evaluate the homogenisation efficiency of milk samples homogenised by using ultrasonic and conventional homogeniser. It was found that ultrasound treatment with high amplitude (power) had an important effect on milk homogenisation compared with conventional homogenisation. As exposure times and power levels increased, homogenisation efficiency also rose. The highest homogenisation efficiency and the smallest fat globule diameter were 3.22 and 0.725 µm at power level 100 (450 W) for 10 min, …

The influence of 2 enzyme supplements for diets based on wheat with high or low viscosity on performance and some intestinal parameters of male broiler chickens were investigated. The experiment was of 2 x 3 factorial design, with 2 types of wheat (high or low viscosity) and 3 enzyme treatments (none, Avizyme 1300-xylanase or Avizyme 1500-amylase). Ileal digesta viscosity was significantly (P < 0.029) higher in birds fed with high viscous wheat than with low viscous wheat. Ileal digesta viscosity (P < 0.001) and dry matter content (P < 0.002) were significantly reduced by both enzyme preparations. Body weight gain, feed intake, dry matter intake, feed conversion ratio, DM retention and wet or dry excreta output were not significantly (P > 0.05) affected by all treatments. There were no significant interactions (P > 0.05) between the effects of wheat type and enzyme supplementation. A new medium prepared from ram horn hydrolysate was utilized for the enumeration of aerobic bacteria from environmental samples. First, horns were ground and 35 g of horn flour was hydrolyzed chemically. The hydrolyzed material was completed to 400 ml with deionized water and this resulting solution was termed ram horn hydrolysate (RHH). This study was carried out to determine the effects of phenobarbital, administered orally and intraperitoneally over different periods, on paraoxonase, arylesterase, aspartate aminotransferase (AST) and alanine aminotransferase (ALT) activities and total protein levels in the serum and liver. Thirty-six rats, 16-18 weeks old and weighing 240-260 g, were used. Phenobarbital was applied both orally and intraperitoneally at a dose of 100 mg/kg. An indirect enzyme-linked immunosorbent assay (ELISA) was developed for the detection of IgG serum antibodies to swine Sendai virus. To evaluate the preliminary potential of ELISA, sera from 10 healthy pigs and 34 sera from finishing pigs suffering from respiratory signs were tested. Emergence Of Quinolone Resistance Among Chicken Isolates Of Campylobacter In Turkey, Serap Savaşan, Alper Çi̇ftçi̇, K. Serdar Di̇ker

The development and extent of quinolone-resistance in broiler isolates of campylobacters over a 15-year period was investigated. Minimal inhibitory concentrations of enrofloxacin, ciprofloxacin and nalidixic acid for 567 Campylobacter jejuni and 233 Campylobacter coli strains were determined by the agar dilution method. Of the strains, 180, 420 and 200 were isolated during 1987, 1992 and 2000, respectively. Enrofloxacin or ciprofloxacin resistance was not found in isolates from 1987. The first fluoroquinolone resistance (1.4% to enrofloxacin and 1.2% to ciprofloxacin) appeared in strains isolated in 1992, approximately 2 years after the licensing of enrofloxacin in Turkey. In this study, the brain and other organs from an aborted bovine foetus were examined histopathologically and microbiologically. In addition, a serum sample from the aborting cow was examined serologically. A granulomatous inflammation, characterised by the infiltration of lymphocytes, plasma cells with some neutrophils and macrophages was observed in the meninges of the brain, liver and kidney. Brucella abortus biovar 1 was isolated in pure culture from the brain and other organs. The serum sample was positive for brucellosis. These findings indicate that Brucella abortus is a pathogen capable of inducing meningitis in bovine foetuses.

This study concerns an investigation of the growth properties of Sander lucioperca (L., 1758) living in Hirfanlı dam constructed on the Kızılırmak river. It was observed that 326 pikeperch (Sander lucioperca (L., 1758)) caught between August 1996 and July 1997 ranged between I and V years of age. The fork length and weight of the population were 105-529 mm and 12-1520 g. The length (L)-weight (W) relation and the condition factor were W = 0.00001049 L^{3.07} and 0.986, respectively.

We investigated the effects of drop volume on the development of mouse presumptive zygotes to the completely hatched blastocyst stage. For this aim, we established 3 experimental groups. In the first group, we cultured hybrid presumptive zygotes to the hatched blastocyst stage in 10 presumptive zygotes per 5, 10, 20, 40 and 50 µl drops. Milk progesterone level is a good marker to evaluate the functional status of the corpus luteum in all farm animals. The present study was conducted to monitor changes in milk progesterone concentrations at the time of oestrus and post-mating for diagnosing early pregnancy in Anatolian water buffaloes. Twenty-one buffaloes reared at the Kocatepe Agricultural Research Institute, Afyon, Turkey, were used. The types and rates of acrosome and other (head, mid-piece and tail) abnormal spermatozoon types were determined by the Spermac® staining technique. Semen from 5 stray tom cats under the same management conditions was used. Semen collection was performed under general anesthesia by electro-ejaculator once a week for 5 weeks. After ejaculation the semen was diluted by 100 µl of 0.9% NaCl solution and stained with Spermac® stain for morphological evaluation. Occurrence Of Aflatoxin M_1 In Some Cheese Types Sold In Erzurum, Turkey, Mustafa Gürses, Ahmet Erdoğan, Bülent Çeti̇n

Sixty-three samples of cheese consisting of 23 White cheeses, 14 Kaşar cheeses, 11 Tulum cheeses, 9 Civil cheeses and 6 Lor cheeses (whey-curd), were analyzed for the occurrence of aflatoxin M_1 (AFM_1) using enzymatic immunoassay. In 28 of 63 samples (44.44%), the presence of AFM_1 was detected in concentrations between 7 ng/kg and 202 ng/kg. The mean levels of AFM_1 were 28.08 ng/kg in White cheeses, 22.80 ng/kg in Kaşar cheeses, 74.05 ng/kg in Tulum cheeses, 12.32 ng/kg in Civil cheeses and 15.95 ng/kg in Lor cheeses.

Milk yields and milk compositions of 2 different goat breeds with high milk yields, the Damascus (Shami) goat and the German Fawn x Hair goat crossbred (B_1), were monitored during lactation in order to evaluate their performance under Eastern Mediterranean conditions as an alternative to the Hair goat which has a low milk yield and shorter lactation period. Body fat composition and growth performance of sea bass juveniles fed with different kinds of vegetable oils instead of fish oil were studied. Feeding trials were carried out with 600 sea bass (Dicentrarchus labrax L.) juveniles with on initial live weight of 7.58 ± 0.13 g. Experimental feeds contained fish oil, soybean oil, sunflower oil, corn oil and olive oil. The morphology of Heligmosomum costellatum, a nematode of field mice (Microtus epiraticus), was described by scanning electron microscope. The scanning electron microscopic view of this nematode revealed that the anterior end was surrounded by 2 cephalic vesicles. The 2 copulatory spicules of the male were enveloped in membrane and the male bursa was large. The female posterior end was characterized by a caudal spine. The body of this parasite had transverse ridges.

An Investigation Of Quality Changes In Anchovy (Engraulis Encrasicolus, L. 1758) Stored At Different Temperatures, Sevi̇m Köse, Mehmet Emi̇n Erdem

Quality changes in anchovy caught at different times during storage at ambient and refrigerated temperatures were investigated in 3 different batches. Sampling was carried out each day during storage. The results showed no significant differences among the anchovy batches except for bacteriological counts and trimethylamine (TMA) values at refrigerated temperatures. Storage time and temperature had a significant effect (P < 0.001, P < 0.05) on sensory, bacteriological and chemical values. Bacteriological counts and chemical values increased significantly (P < 0.05, P < 0.001) depending on time, while sensory results decreased (P < 0.05). According to sensory results, samples were acceptable for 1 day at ambient temperatures and for 2 days refrigerated. This study showed that refrigeration did not extend the shelf-life of fresh anchovies by more than a day compare to ambient temperature.

Phylogenetic relationships in some Turkish dog breeds were investigated to determine protein polymorphisms by electrophoretic analysis. Blood samples were collected from 276 dogs including the Kangal, Akbash and German Shepherd as well as Doberman Pinscher, Setter, Pointer and Labrador breeds. Enzymes and proteins were separated electrophoretically using isoelectrofocusing gel, starch gel and polyacrylamide gel. Polymorphism on albumin (Alb), postalbumin-1 (Poa-1), postalbumin-3 (Poa-3), transferrin (Tf), and esterase (ArE) loci was detected, while no polymorphism was observed on the hemoglobin (Hb) locus.
