Beef producers in the United States are working to meet rising global demand for animal protein while facing major challenges such as drought, climate uncertainty, and rapid urbanization. These issues make it difficult to produce consistent and dependable feed, pushing producers to explore new ways to grow feed using fewer natural resources. Vertical farming systems are one option that can grow sprouted cereal grains indoors throughout the year while using decreased land and water than traditional agriculture. Sprouted barley grows within six to seven days and may serve as a nutrient dense alternative feed source for cattle at several stages …

Feed costs are the most significant expense of most ranching operations in the Intermountain West. Year-round grazing opportunities, hay cost and availability, calving season, cow size, milk production, and feeding logistics are all considerations in a supplementation program. The key to effective winter feeding is to balance the cost/benefit ratio of the supplementation programs while meeting nutritional demands at a minimal cost.

Background: Severe fever with thrombocytopenia syndrome virus (SFTSV) is a highly pathogenic bunyavirus with a high case-fatality ratio for which there is no approved vaccine. Studies have assessed different vaccine technologies. However, few studies have yet assessed the immunogenicity of heterologous prime-boost regimens. Methods: Here, we compare a lipid nanoparticle (LNP)-encapsulated nucleoside-modified mRNA-based vaccine encoding the SFTSV glycoproteins, Gn and Gc, to our recently described recombinant VSV SFTSV (rVSV-SFTSV) vaccine in single dose, homologous, and heterologous prime-boost regimens in mice. Inflammation of the mammary gland, also known as mastitis, is a prevalent and financially impactful disease in sheep production. The objectives of this survey were to 1) evaluate current testing methods: somatic cell count (SCC), California Mastitis Test (CMT), and bacterial culture, as well as novel biomarkers: lamb performance, milk composition, and udder conformation, for their impact on ewes categorized as clinically healthy or unhealthy under intensive management systems at 15 days in milk (DIM) and 30 DIM, and 2) identify biological markers that are correlated with clinical and subclinical mastitis. Background/Objectives: Chronic inflammation and Western-style diets elevate colorectal cancer (CRC) risk, particularly in individuals with colitis, a feature of inflammatory bowel disease (IBD). Diets rich in polyphenol-containing functional foods, such as cocoa, may reduce gut inflammation and modulate the gut microbiome. This study investigated the impact of cocoa polyphenol (CP) supplementation on inflammation and microbiome composition in mice with colitis, fed either a healthy or Western diet, before, during, and after the onset of disease. Background/Objectives: Anthocyanin (ACN)-rich foods are known to influence the gut microbiota composition, but the temporal dynamics and structural specificity of these effects remain poorly understood. This study investigated how distinct ACN-rich fruit supplements impact the gut microbiome over time in the context of a Western-style diet. Influence Of Age At Harvest And Packaging Conditions On Color Stability Of Bovine Psoas Major Muscle, Xiao Lu, Xin Luo, Sulaiman K. Matarneh

This study investigated the effect of cattle age on the color stability of Psoas major steaks under different packaging conditions, including polyvinyl chloride (PVC) film packaging, high-oxygen-modified atmosphere packaging (HiOx-MAP), and carbon monoxide modified atmosphere packaging (CO-MAP), over a 14-day storage period. Steaks from old cows had a greater myoglobin content than those from young animals (p < 0.05), resulting in a darker beef color. Regardless of animal age, steaks in PVC and HiOx-MAP exhibited poor color stability during storage, as evidenced by the low color intensity and high surface metmyoglobin (MetMb; p < 0.05). These samples also exhibited a reduced MetMb reducing activity (MRA) and oxygen consumption rate (OCR) and higher 2-thiobarbituric acid reactive substance (TBARS) levels, with these effects being evident in steaks from mature cows. In contrast, steaks stored in CO-MAP had greater redness, MRA, and OCR, along with lower surface MetMb and TBARS levels (p < 0.05), contributing to the limited discoloration of steaks from both age groups. These findings suggest that while both harvest age and packaging affect the shelf stability of bovine steaks, packaging plays a more significant role. CO-MAP proved to be more effective than aerobic packaging and may mitigate age-related differences in color stability.

The once mysterious “dark matter of nutrition”, comprising countless plant derived secondary compounds, also known as phytochemicals, is now understood to have significant and wide-ranging effects on consumers, including myriad health benefits in humans and livestock. The selective consumption of phytochemically rich and diverse plants, in appropriate doses, by ruminants represents an adaptive means of therapeutic and prophylactic self-medication. Due to their chemical structure, phytochemicals have long been recognized as antioxidants. However, the mechanisms that underlie numerous additional phytochemical-based health benefits are generally less understood. This study evaluates the effects of a proprietary tannin blend (BX), supplemented with or without sodium monensin (MON), on beef cattle performance, carcass traits, and health. Steers (n = 2986; initial shrunk body weight (SBW) 254 ± 9.2 kg) were allocated into 48 pens (61–62 steers/pen; 12 pens/treatment) fed for 230 d. Treatments included (1) no feed additives (CTL); (2) BX (7.95 g/animal daily); (3) MON + Tylosin phosphate (TYL; 437.52 mg MON/animal daily + 80 mg TYL/animal daily); or (4) MON+BX (437.52 mg MON/animal daily + 7.95 g BX/animal daily). North American rangelands are vast, open landscapes that support diverse ecosystems and provide many ecosystem services. Many wildlife call sagebrush rangelands home, including the Greater sage-grouse (sage-grouse; Centrocercus urophasianus). Sage-grouse habitat encompasses 165 million acres across western North America, and this bird has been of conservation concern as their populations drastically declined since the 1960s. Rangelands are also grazed by livestock, which has the potential to negatively affect sagebrush ecosystems when overgrazed or overstocked, which could be detrimental to sage-grouse nesting habitat. Background/Objectives: Anthocyanin (ACN)-rich foods may support gut health by modulating the microbiome and reducing inflammation, potentially lowering the risk of colitis-associated colorectal cancer. However, the dynamic response of the gut microbiome to ACN-rich diets is not well characterized, including in the context of structural and compositional differences among ACN-containing foods. Integrated Monitoring in Bird Conservation Regions (IMBCR) detection data for the state of Utah, USA, and LANDFIRE uncharacteristic exotic Departure Score data over Utah during our study period, as well as additional environmental covariates used to make the model more ecologically accurate. Environmental covariates include average May precipitation, average June temperature, distance to the nearest road, percent canopy cover, and the percent of three habitat types as defined by LANDFIRE; open tree canopy, herbaceous, and shrubland.
