This study investigated the influence of dietary antioxidants and quality of oil on the oxidative and enzymatic properties of chicken broiler meat stored in an oxygen-enriched package (HiOx: 80% O2/20% CO2) in comparison with air-permeable polyvinylchloride (PVC) or skin (SK) packaging systems during retail display 2–4 °C for up to 14, 7, and 21 d, respectively. Equine pituitary pars intermedia dysfunction (PPID) typically occurs in horses older than 15 years of age and is characterized by hair coat abnormalities, muscle atrophy and decreased insulin sensitivity. The first objective of this research was to compare the rate of whole body protein metabolism and relative abundance of key factors in the signaling pathways associated with muscle protein synthesis and protein breakdown in response to feeding in Control and PPID horses. No differences (P > 0.05) were seen between the PPID and Control groups in whole-body protein metabolism or post-prandial activation of the muscle signaling pathways regulating skeletal muscle protein …

Ergot alkaloids present in endophyte-infected (E+) tall fescue are thought to be the causative agent of fescue toxicosis, a syndrome affecting cattle in the eastern United States. Many of the observed signs of fescue toxicosis are thought to be attributed to peripheral vasoconstriction; however, there are data indicating that ergot alkaloids can alter blood flow to the gut. An experiment was conducted using right ruminal artery and vein collected from heifers shortly after slaughter. Vessels were mounted in a multi-myograph to determine the vasoconstrictive potentials of ergot alkaloids present in E+ tall fescue. Results indicated ergot alkaloids have the potential …

HACCP-based food safety programs have been widely acclaimed, accepted and implemented as an effective means of managing food safety risks. While HACCP training is a cornerstone of managing HACCP programs, there is little information about the effectiveness of HACCP training and the durability of HACCP knowledge. Findings reveal a link between involvement level in HACCP activities and the accuracy of HACCP knowledge over time. Opportunities for peer training in HACCP, irrespective of overall experience in the food industry provide favorable circumstances for maintaining accuracy of HACCP knowledge. This thesis improved a farm-level stochastic model with Monte Carlo simulation to estimate the impact of health performance and market conditions on dairy farm economics. The main objective of this model was to estimate the costs of seven common clinical dairy diseases (mastitis, lameness, metritis, retained placenta, left displaced abomasum, ketosis, and milk fever) in the U.S. An online survey was conducted to estimate veterinary fees, treatment costs, and producer labor data. The total disease costs were higher in multiparous cows than in primiparous cows. Left displaced abomasum had the greatest costs in all parities ($404.74 in primiparous cows and …

The decrease in productivity caused by fescue toxicosis has been estimated to cost the United States livestock industry more than $1 billion per year due to reduced growth and diminished reproductive efficiency. This goal of the research presented in this dissertation is to enhance the knowledge base concerning the underlying physiological changes that occur during fescue toxicosis that lead to reduced intake and weight gain in cattle.

The role of vitamin K in the blood clotting cascade has been well documented. Vitamin K has recently been implicated in improving bone health. The current studies were conducted to determine the effects of vitamin K in diets with and without mycotoxin contaminated corn on growth performance, bone characteristics, and related blood metabolites in pigs from weaning to market. Menadione sodium bisulfite complex (MSBC, 33% vitamin K) was chosen as the source of supplemental vitamin K because it is the most common form fed to swine. Sex in insects is determined by a cascade of regulators ultimately controlling sex-specific splicing of a transcription factor, Doublesex (Dsx). We recently identified homolog of dsx in the red flour beetle, Tribolium castaneum (Tcdsx). Here, we report on the identification and characterization of a regulator of Tcdsx splicing in T. castaneum. Two male-specific and one female-specific isoforms of T. castaneum transformer (Tctra) were identified. RNA interference-aided knockdown of Tctra in pupa or adults caused a change in sex from females to males by diverting the splicing of Tcdsx pre-mRNA to male-specific isoform. Tall fescue is native to Europe and was rarely planted in the United States until after the first four decades of the 20th century. However, since the release of the variety ‘Kentucky 31’ in 1943, this versatile cool season perennial grass has been widely planted for forage, turf, and conservation purposes, with most of the acreage planted consisting of this variety. “Fescue” has many attributes including wide adaptation, easy establishment, a long growing season, good forage and seed yield, and tolerance of a wide range of management conditions.

Eighty years have passed since Dr. F.N. Fergus collected seed of tall fescue from that hillside at the Suiter Farm in Menifee County that led to the commercial release of the cultivar ‘Kentucky 31’. Fescue provided an opportunity to replace the briar and weed patches that dominated the rocky hillsides of Kentucky with productive forage. Plantings of tall fescue were numerous in the state during the 1940s and 1950s, and its hardiness and adaptability resulted in the grass spreading over much of the middle and upper southeastern USA, eventually covering a region we now call the “fescue belt”. Tall fescue is a native of Europe. The exact date of its’ introduction into the United States is not known, but likely came as a contaminant in meadow fescue seed from England prior to 1880 (Figure 1). Tall Fescue was an entry in the National Herbarium Collection in 1879 and was grown in plots in Utah, Kentucky and Maryland (USDA) in 1880. In 1916, tall fescue plants were identified in Pullman, Washington with some of these plants taken to Corvallis, Oregon in 1918. Selections out of this initial planting were released in 1945 as the variety Alta.

Antibiotics are important to equine medicine, but can cause detrimental side-effects including reduced feed intake, allergic reactions, and diarrhea. Antibiotic-associated diarrhea (AAD) is attributed to disruption of the hindgut microflora, permitting proliferation of pathogenic microbes. The objectives were to evaluate the effects of antibiotics on beneficial fecal bacteria, AAD-associated pathogens, microbial species richness and fermentation. Horses were assigned to treatment groups: control (no antibiotics, n=6), trimethoprim-sulfadiazine (oral, n=6), or sodium ceftiofur (IM, n=6). Fecal samples were taken during adaptation (3 wk), antibiotic challenge (1 wk), and withdrawal (1 wk). Fecal cellulolytics decreased by >99% during challenge and did not recover …

Studies were conducted to investigate the effects of in ovo injection of selenium (Se) either as seleno-methionine (Se-Met) or sodium selenite (Na2SeO3) into the yolk of incubating eggs on tissue Se concentration, embryo livability, lipid peroxidation, immune response and growth performance. When white-shelled eggs were injected with 0.1ml of solutions providing 0, 2.5, 5, 10 or 20 μg Se/egg, no detrimental effects on embryo viability at 20 days of incubation were noted. Bat populations in the eastern United States are currently declining at unprecedented rates as a result of habitat loss, commercial wind energy development, and white-nose syndrome. Effective conservation of these declining populations requires knowledge of several aspects of summer and winter ecology, including daytime habitat use (day-roost selection and social behaviors), nocturnal habitat use (foraging habitat selection, prey selection, and prey abundance), and winter hibernation (torpor) patterns. Two experiments were conducted to determine the effect of feeding diets with a 2009 and 2010 naturally-contaminated corn to weaning pigs. For both experiments three diets were blended to contain 100% 2010 naturally-contaminated corn (control), 50-50% blend of the 2009 naturally-contaminated corn and 2010 corn (Diet 2), and 100% 2009 naturally-contaminated corn (Diet 3). The objectives of these experiments were to evaluate the effects of selenium (Se) and vitamin E (Vit.E) supplementation in maternal and progeny diets on the performance of breeder hens and the performance and meat quality characteristics of progeny.

Inclusion of Se, as Se yeast, in the diets of developing broiler breeder pullets resulted in greater Se accumulation of Se (P<0.01) in liver, pancreas, and breast tissues than when Se yeast was not provided. Improving the overall Se status of breeder pullets in the early stages may help maintain adequate tissue Se concentrations during egg production.

Maternal supplementation of Se yeast and Vit.E increased the liver and breast Se concentration (P<0.05) of newly hatched chicks compared to the chicks originating from hens not receiving dietary Se. At 7d of age, Se yeast supplementation in either the chick or maternal diet increased breast and liver Se concentrations (P<0.01). At 14d of age, breast and liver Se concentrations remained the highest for chicks supplemented with Se yeast (P<0.01), however there was no effect of maternal Se supplementation. Vitamin E supplementation in either the chick or maternal diets did not affect the liver Vit.E concentrations of chicks at 7 or 14d of age.

Supplementing broiler diets with Se yeast and Vit.E improved the meat quality characteristics of raw and marinated breast fillets. The Se …

Our objective was to know how the hepatic transcriptome expression of growing beef (Angus-cross) heifers (0.5 kg gain/day) was affected by the feeding of different sources of dietary (3 mg/day) Se supplements: inorganic Se (ISe, sodium selenite), organic (OSe, Sel-Plex®), or a blend (1.5 mg:1.5 mg) of ISe:OSe (Mix), compared to the adequate but non-Se supplemented “Control”. The biopsied hepatic tissues of these four groups heifers collected at day 168 (when liver Se assimilation had stabilized) after supplements of Se, was subjected to the microarray analysis to assess Se treatment effects.

Twenty-four steers were grazed on endophyte (Neotyphodium coenophialum)-infected [[Lolium arundinaceum (Schreb.) Darbysh]; E+] tall fescue (TF) and exposed to ergot alkaloids for an 106-d grazing period. Cattle were removed from pasture, placed in dry lots, and fed a non-toxic diet to evaluate changes in vascular contraction relative to time-off E+ TF pasture. Lateral saphenous veins (SV) were biopsied from steers at 0-, 21-, 42-, and 63-d off TF pasture and from 6 control steers at 0- and 63-d off bermudagrass (BG) pasture. Tall fescue [Lolium arundinaceum (Schreb.) Darbysh.] is an introduced cool-season perennial grass from Europe. Originally imported for regularly flooded pastures, tall fescue is now widespread across the United States due to its adaptability of a wide range of soils and climate. Kentucky 31 tall fescue is the ecotype discovered in 1931 by E.N. Fergus, which launched its popularity as a dependable, adaptable, and palatable pasture crop. In the mid-1970s, the negative effects caused by consuming tall fescue were termed fescue toxicosis.
