A series of greenhouse-based, rotary-drum bioreactor experiments was designed to study microbial dynamics and enzyme activity during optimization of food waste composting. This work aims to optimize food waste composting by defining the best food waste-to-bulking agent proportion controlling conditions and by evaluating the food waste composting process when inoculated by a bacterial inoculant product compared to uninoculated compost. Three experiments were run in total. The two first experiments were conducted for 48 days with sampling at each step of composting, while the third experiment last 50 days and included one extra sampling date. The purpose of this study was to determine the perceived influence of student teaching internship experiences on the perceived success of school-based agricultural education (SBAE) teachers in their first year of teaching. An explanatory mixed-methods design was utilized to gather the both qualitative and quantitative data. Census sampling was used to select 30 SBAE teachers teaching within high schools in Arkansas. This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. The interview data revealed individualized needs based on the size, years in operation, and mission of each urban farmer interviewed. This thesis contains two articles that describe and characterize the use of the social media platform of blogging in the context of the animal agriculture and protein industry. The first article used content analysis to analyze blog posts and look for themes throughout the posts. This study included 37 posts from ten authors and resulted in four recurrent themes. The major themes were environment, consumption of protein, alternative protein source, and alternative dieting. The tones regarding these themes were both negative and positive toward the protein industry.

A study conducted by Shoulders and Myers (2013) revealed that only 15.4% of the agricultural educators the researchers interviewed incorporated reflective practices laboratory experiences. We use a bivariate sample selection model to address peer network effects on participation in and/or intensity of use of land being irrigated by alternative irrigation practices in the state of Arkansas. As groundwater in the state becomes more limited, the use of scientific scheduling, flowmeters, and more efficient row crop water application systems will allow producers to better manage water resources. We find relatively large, positive relationships between belonging to a peer network of the same irrigation practice and participation in that practice. This work classifies examples of infrastructure interdependencies found in the food and agriculture critical infrastructure sector. Interdependencies are identified through an examination of rice and poultry agriculture throughout the state of Arkansas. The subtleties of interdependence examples in the food and agriculture sector are inadequately captured by the well-studied interdependence classification taxonomies. Through 39 interviews, we develop an understanding of the subtle temporal, geographic, and productivity scales of interdependence in over 100 examples and present five new, distinct classifications of interdependence: (1) dynamic physical, (2) dynamic geographic, (3) deadline, (4) delay, and (5) human, economic, and natural resource interdependencies. In the first article, the animal welfare website content of Cargill, Tyson Foods Inc., Smithfield, JBS® and Sysco were analyzed for persuasive frames, common topics, and key terminology to describe their corporate positions on animal welfare. Assessment of the Arkansas horse 4-H program utilized stakeholders’ perceptions to describe inputs, outcomes, preferences and impacts provided by the Arkansas Cooperative Extension Service. Stakeholders’ perceptions were captured through three studies. Studies included the following: a pre- and post-test evaluation of the 2016 summer horse camp, purposive interviews with county agents (n = 6), volunteer leaders (n = 4), and parents (n = 4) of horse 4-H clubs, and a statewide survey provided to Extension staff (n =26) and volunteer leaders (n = 28) affiliated with horse 4-H clubs.

Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. The ballot issue education program, was evaluated during the 2014 election cycle to determine the program’s impact on voters. This descriptive study sought to describe program participants, to determine knowledge transfer of county agents, to describe knowledge acquisition of program participants, and to measure whether people who attended Cooperative Extension Service presentations made informed choices on Election Day.
