Although China is generally known as a tea-consuming country, both the production and consumption of coffee in China has seen double-digit growth in the last decade. This upward trend is projected to continue as long as investment is sustained and levels of disposable income continue to increase. In this rapidly expanding market, it is important for coffee producers and retailers in China to understand the preferences of emerging Chinese coffee consumers. This paper examines the reasoning mechanism behind the consumer acceptance of genetically modified foods (GMFs) in China, and investigates influence of source credibility on consumer acceptance of GMFs. Based on the original Persuasion Model—which was developed by Carl Hovland, an American psychologist and pioneer in the study of communication and its effect on attitudes and beliefs—we conducted a survey using multistage sampling from 1167 urban residents, which were proportionally selected from six cities in three economic regions (south, central, and north) in the Jiangsu province through face to face interviews. As the per capita disposable income increases, the demand for meat is boosting in China. Pork, accounting for the largest part of Chinese meat consumption, plays an important role in meat demand in China. This study use data collected from a 2014 survey on Chinese meat consumption; four widely different Chinese cities, Beijing, Changsha, Tianjin and Wuhan are selected to provide a more complete view of Chinese pork and meat demand. We use both OLS model and Tobit model to analyze the effects of consumers' socio-demographic characteristics such as age, gender, income, and education on pork and meat demand. Results …

Booming economic growth and rising consumer incomes have impacted food preferences and purchasing behavior in China. At the same time, several internationally publicized food safety incidents, particularly in the animal husbandry sector, have heightened awareness of and concern for food safety and quality in meat and dairy. The leaders of the leading emerging economies Brazil, Russia, India, China, and South Africa (BRICS) claim that increased currency exchange rate volatility (CERV) from USD, EUR, and JPY (G-3) negatively impacts their exports, and expressed their desire for less trade dependence on these currencies.
