Belize is a food insecure, developing country. Although Belize has plenty of nutritious food in-country, the exportation of that food to generate income contributed to a distribution issue of that nutritious food. More impoverished areas of Belize do not have access to nutritious food because of the lack of affordability and high export rates. Diets with a lack of food, or lack of balanced, nutritious food can negatively impact growth and cognitive development, especially in children. Breast myopathies have caused significant economic losses to the poultry industry over the last decade. The induction of woody breast (WB), white striping (WS), and spaghetti meat (SM) have caused textural issues, functional issues, and a decline in consumer acceptance. Of these three myopathies, WB causes the most pronounced effects on product quality and reduces functional use. Woody breast is also commonly associated with expansive breast meat growth/high performing broilers. Evaluation Of Extended Aging Type And Cooking Practices On Palatability Of Beef Steaks, Katharine Anne Bugenhagen

Two studies were conducted to determine if sous vide was a viable way to improve palatability of various beef cuts, and to determine whether extended aging duration and the presence of a bone impacts the consumer ratings of beef short loins.When evaluating the impact of sous vide cooking (SVG) on multiple beef muscles, there was a muscle × method interaction for overall liking (P = 0.04). The traditionally cooked (TRAD) Longisimus lumborum (LL) was rated the highest (P < 0.05). The Chuckeye steak (CHE) was rated next, both TRAD and SVG, with the traditional ranked higher, this was followed by the Triceps brachii (TB) also for both TRAD and SVG, however for the TB the SVG ranked higher (P < 0.05). The TRAD Biceps femoris (BF) rated the lowest (P < 0.05) of all of the muscles. Shear force did no differ between the cooking treatments (P > 0.05), or was there an interaction between muscle × method for shear force measurements (P < 0.05). The LL was rated the highest for tenderness (P < 0.05) while the BF was rated the lowest (P < 0.05). The second study compared subprimals aged over three aging periods (21, 42 63 days), then split into bone-in or boneless steaks, there were no interactions observed within the consumer data (P ≥ 0.05). BI steaks were rated higher (P < 0.05) for juiciness and overall liking by consumers, however BI and BL were rated similarly by consumers for tenderness and flavor (P > 0.05). Traditional and genetic parasitological identification procedures were compared using naturaland artificial nematode parasite infections in Holstein steer calves. The traditional parasitological procedures measured fecal egg counts, coprocultures with subsequent larval collection and adult nematodes collected at necropsy. The genetic identification procedures measured ITS-2 sequences extracted from different stages of nematode development: raw feces, concentrated nematode eggs, third stage larvae and adults. The primary nematodes observed were Cooperia oncophora, Cooperia punctata and Ostertagia ostertagi. The traditional techniques were not significantly different from one another, while the genetic sequencing showed variation amongst the different procedures. Necrotic enteritis (NE), caused by C. perfringens and coccidiosis, is responsible for substantial economic loss annually. In the first chapter, we investigated the effect of secondary bile acid on necrotic enteritis. Day-old broiler chicks were randomly assigned to 5 groups of diets supplemented with 0 (basal diet), 0.8, 1.0, and 1.5 g/kg (on top of basal diet) deoxycholic acid (DCA). The birds were challenged with Eimeria maxima (20,000 oocysts/bird) at d 18 and C. perfringens (109CFU/bird/day) at d 23 and d 24 to induce NE. Production of beef cattle represents a $60 billion industry in the United States (USDA, 2015). The American beef cattle industry loses an estimated $370 million annually due to heat stress (St-Pierre, 2003). As of 2003, this was equal to nearly 99 million pounds of beef lost (USDA, 2015). However, little research has been undertaken to determine the cost-effectiveness of poultry diets used to produce chicken within these markets. Two 3-week experiments were conducted, each using 480 day-old male broilers placed randomly among 96 battery cages (5 per cage; 680cm2 per bird), to evaluate the influence of phytase supplementation, with or without supplemental xylanase, on bird performance. Individual body weights and cage feed weights were taken on days 0, 7, 14, and 21, and mean BW, body weight gain (BWG), feed intake (FI), and FCR over each period calculated. Recently, the poultry industry has encountered an emerging muscle myopathy known as woody breast (WB), which is characterized by hardness throughout the Pectoralis major muscle. Two experiments were performed to assess sensory characteristics and acceptability of WB meat and to determine the effect of broiler age on meat quality factors in varying severities of WB. Fillets were categorized as normal (NORM), moderate (MOD), or severe (SEV) WB. Research has shown that immune cells increased from an immune response, and endocrine concentrations directly affect sperm characteristics (Jones and Mann, 1976; Hansson et al., 1989; Grattan et al., 2007). Previous findings show a negative relationship between leukocytes and sperm function (Jones and Mann, 1976) and prolactin and fertility (Grattan et al., 2007). On the other hand, research has shown a positive relationship between insulin-like growth factor (IGF) and sperm characteristics (Hansson et al., 1989).
