Smallholder farmers make up a large portion of agricultural production in developing countries (Gueye, 2000; Upton, 2000). East Africa is one sector which has seen growth in poultry production over the pas five years. (Vernooij, Masaki, & Meiher-Willems, 2018). An increase in the consumption of poultry has generated an increase in demand for higher yielding broilers. This has led to an increase in atypical meat and issues with appearance. Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. Physical properties of meat can be altered by pH. A fast pH decline results in pale meat with decreased tenderness. A slow pH decline can result in darker meat with a reduced shelf-life. Poultry production holds an important place in Arkansas economically and as a food source. The importance of poultry production ultimately hinges on the demands of the consumers and the perceptions that drive their purchases. With this in mind, this study surveyed consumers to assess their perceptions of poultry production in Arkansas. The instrument used to survey consumers was created by the researcher and an expert committee at the University of Arkansas. As world population, per capita income and urbanization increase, consumption of meat, poultry, milk and eggs will continue to rise to meet the needs of approximately nine billion people in 2050. Global beef, pig and chicken production and per capita consumption increased between 2000 and 2010, with growth in broiler production and consumption outpacing both beef and swine. The increased production and consumption requires readily available feed ingredients in regions where animal production is rapidly developing.
