Cooking skills are important but declining, with significant health, social, cultural, political, economic, and environmental implications. Food and cooking education can begin to address some of the negative effects of the cooking skills decline. This thesis makes the case for cooking classes in the education system, especially in higher education. The paper begins with a history of cooking education and skills, outlines the implications of the decline in skills, and discusses the potential for cooking education in higher education. It is imperative to achieve diversity in Higher Education. With affirmative action policies under fire, it is becoming difficult to enroll a diverse student body. Many critics see standardized tests, and the SAT in particular, as contributing to the problem. This paper reviews research on such criticism, about suggested alternative approaches, and regarding recommendations on how to improve the current situation. In general, this review finds little evidence against a judicious use of the SAT. Also, alternative approaches such as percent plans or abolishing the SAT have had little success in increasing diversity. However, most specialists agree that a comprehensive …

End-of-course student evaluations are frequently used to evaluate university faculty teaching. However, employing midterm student feedback has been found to be instrumental in informing faculty about instructional quality and improving student learning outcomes. This study examined and compared the effects on classroom instruction of using a midterm student feedback (MSF) survey in the graduate courses of two faculty, an untenured professor in public administration and a full professor in education. The researchers gathered data from 122 students over two years for three courses in 6 classes—4 in public administration, 2 in education. As a result of growing attention in cross-cultural research, existing measurement instruments developed in one language are being translated and adapted for use in other languages and cultural contexts. The benefits of having the same instrument across cultures can only be realized if the process of translation and adaptation of the measurement instruments produces measurement operations that function similarly across national and cultural boundaries. Producing invariant measurement instruments that assess educational and psychological constructs provide a way of testing the cross-cultural generality of theories that include these constructs.

This qualitative collective case study explored the mathematical teaching of three excellent elementary teachers who were nominated by experts in mathematics and mathematics educational organizations, agencies and universities. I examined what excellent elementary mathematics teachers know and do in their practice of teaching. The study depicts detailed verbatim interactions between the teachers and students during actual teaching episodes to give the reader naturalistic examples of the explanation patterns and questioning strategies that these excellent teachers used to further students’ understandings of mathematical concepts and procedures. The North Carolina State University (NCSU) CI program was initiated in 2008. Currently the NCSU Study Abroad Office (SAO) is working to update, define, and enhance the direction of this program. Provost Kim Cassidy and Jennifer Spohrer give an overview of the blended learning study funded by the Next Generation Learning Challenges Wave I grant. They explain the origins of the project, introduce some of the blended courses developed to date, and mechanisms for measuring their impact. They will also present preliminary findings from the research done on fall-semester courses and discuss opportunities and support available for faculty at partner institutions who want to develop and teach blended courses in AY2012-2013 as part of the project.

A two-phase, sequential mixed-methods design was used to assess perceptions of teacher efficacy (10 item survey, alpha = .90) to differentiate instruction for N = 36 graduates from one MAT teacher preparation program. Research questions addressed levels of self-efficacy, perceptions of preparedness, teaching tenure, and number of certifications held. Data were analyzed using descriptive statistics, one-way ANOVA and t-test procedures. A focus group with N = 10 purposively selected 2010 graduates and interviews with N = 2 graduates each from the 2008 and 2009 classes, and N = 2 faculty were conducted. Academically underprepared college students, i.e., those identified as needing developmental (remedial) English, mathematics and reading courses in order to maximize their potential for academic success at college-level studies, were provided with the opportunity to rent, for a minimal, subsidized fee, mini-computers bundled with digital course materials (e-books). The academic aptitude of the students who participated in the study was assessed when they entered the program, and their academic performance was assessed at the end of the semester in which they were provided with these resources. The purpose of this paper is to examine ways in which pedagogy and gender of instructor impact the development of self-regulated learning strategies as assessed by the Motivated Strategies for Learning Questionnaire (MSLQ) in male and female undergraduate engineering students. Pedagogy was operationalized as two general formats: lecture plus active learning techniques or problem-base/project-based learning. One hundred seventy-six students from four universities participated in the study. Within-group analyses found significant differences with regard to pedagogy, instructors’ gender, and student gender on the learning strategies and motivation subscales as operationalized by the MSLQ. The purpose of this study was to assess a faculty development program through direct measurement of student learning outcomes through investigating the relationship between participation in a faculty development program on speaking and writing pedagogy and student learning outcomes in oral and written communication. Faculty and students enrolled in senior capstone courses in Spring 2011 were asked to participate as part of requirements for internal assessment and external accreditation. Of the 1,448 students enrolled in capstone courses that semester, 1,002 papers and 727 recordings were received, representing 69% and 50% of those enrolled respectively. A sample of 400 papers and …

The purpose of this study was to evaluate the relationship between standardized content specific mastery assessments and NCLEX-RN outcomes. Three content-specific standardized assessments testing Fundamentals, Pharmacology and Mental Health concepts were used to explain the dichotomous NCLEX-RN outcome of pass or fail. The three assessments were developed by Assessment Technologies Institute, LLC (ATI). The assessments were administered to baccalaureate nursing students (N = 119) during the first year of a nursing program in one public university over a period of five consecutive semesters. This study was designed to determine if differences existed between generations surrounding their preferred communication methods. In examining the social identity perspective of groups, scholars have found that many groups are categorized based on the social structure in which they exist. Generational groups have created their own social structure and set of cultural norms that define each generation.
