The objective of this study was to examine nutrient claims signage on the purchasing of snacks in corporate foodservice operations. The effectiveness of claims among foodservice operations serving primarily administrative roles (white-collar) were compared with those serving primarily manufacturing roles (blue-collar). An experimental study was conducted through the implementation of six nutrient claims evaluated by a group of registered dietitians. The snack items were conveniently placed near the cash register to “nudge” purchases, and sales of snacks before and after the implementation of claims were examined. Paired-samples t-tests indicated that after nutrient claims were implemented, sales of snacks increased …

The coronavirus outbreak has resulted in a significant reduction in peoples’ movements, migration and trade at both local and global levels. Lockdowns and travel restrictions all over the world have led to a rapid retrenchment of the world’s hospitality and tourism sector. This is not new. Historically, catastrophes impacted human mobility. Drawing from the historical connections between catastrophes, especially health crises, this paper highlights the impacts of catastrophes on the hospitality and tourism industries. In a fast-paced digitalization context, travel agencies face a challenge to increase productivity. Electronic word of mouth (eWOM) could allow better learning processes, improve communication with customers, and serve as a remarkable diffusion channel. However, this channel is not yet fully embraced by the sector. This research, delimited to Spanish travel agencies in the period 2012-2019, applies a two-stage double bootstrap data envelopment analysis to assess whether eWOM and how firms manage eWOM, contributes to achieving higher levels of efficiency. Results show that firms with higher valence and volume of online reviews tend to be closer to the efficiency frontier. …

Marketing Transformation In Tourism Through Visual Ethnography, Isabel Coll-Barneto, Francesc Fusté-Forné

This paper analyses the role of transformative tourism from the perspective of local establishments. The method is based on a visual ethnography study where 12 ecological accommodations located in Catalonia, north-eastern Spain, were asked to identify a photography that illustrates the philosophy of the establishments. Results discuss the meanings of the pictures focused on previous research in relation to the transformative facilitators. The physical, knowledge, social and psychological dimensions are analysed. The nature, the wood, and the relaxing areas are the most relevant elements provided by the hotels as part of their marketing strategy. Theoretical and practical implications are described.

Based on the Social Amplification of Risk Framework (SARF) and crisis decision theory, this study examined the influence of trust in different types of information sources on the believability of COVID-19 information (BCI). Furthermore, the influence of BCI on fearfulness and the corresponding influence of fearfulness on the intention to use hospitality services and stay at home are analyzed. Structural equations modeling, using data from 1,017 American consumers, successfully confirmed the significant influences of trust in media and government on BCI and the corresponding positive effect of BCI on fearfulness. This research aims to gain a better understanding of the impact of terrorism on risk perceptions and attitudes of Dutch travel behavior towards Egypt. The research process involved an online self-administered method created with one of the leading research and web-based survey tools called Qualtrics. The questionnaire was filled in by 414 respondents. Findings indicate that (potential) Dutch tourists are less likely to take risks when traveling with children. With the shift to remote teaching, many instructors used Zoom for synchronous work. However, this presented issues (fatigue, turning cameras off, inequitable technical hurdles) that motivated quantitative reasoning (QR) instructors to look for asynchronous alternatives. A common technique has been text-based online discussions, which can be difficult for students to find engaging. This mixed method study (N = 41) describes an inclusive video alternative, specifically for teaching QR and quantitative fluency skills, which was piloted in two asynchronous sections and one hybrid section of the same course. This dissertation unites organizational communication, and economic theory to understand how individuals make sense of economic crises, imbed power and logic in those understandings, and construct new economic realities in the aftermath of crisis. Contra economic orthodoxy, this project conceives of economy and economics as a social construct. As a social construct, individuals organize economy and economics through discourse, make sense of through narrative, and rebuild through communication. This dissertation combines different theoretical perspectives—actor-network theory, antenarrative organization theory, and the communication theory of resilience—to recenter social scientific accounts of economic reality around communication, story, and power.

In the current study we examine the prevalence and several predictors of careless responding to an experience sampling (ESM) study. While careless responding has been noted as a potential problem in ESM research, few studies have examined the prevalence of this behavior (Beal, 2015; Berkel et al., 2017; Eisele et al., 2020; Gabriel et al., 2019; Jaso et al., 2021). Using statistical methods of careless response classification, we derive cut scores from data simulation and graphical examination of item correlations, and flag 44.98% of response episodes as careless. Product customization is increasingly being offered as consumers interact with businesses online. When consumers customize a product, they often choose from among multiple, inter-related categories. Thus, the choices made in a prior category could influence choices in later categories (spillover effect). Currently, marketers attempt to nudge consumers to choose more expensive/profitable options by preselecting these options (explicit reference). However, most studies look at these parental influences in isolation either focusing on the environmental influences or the genetic influences. Prior research has established that analysts serve as an important monitor of managementand improve the quality of firms’ financial reporting. In this study, I utilize the natural experiment resulting from the mergers and closures of brokerage houses, to examine whether this exogenous change in firms’ information environment impacts the audit process. Specifically, I examine whether reductions in analyst coverage have an effect on auditor effort proxied by audit fees and audit report lag, as well as financial reporting quality, measured by future restatements. This study aims to conduct a nethnographic analysis of the dining experiences of Russian tourists who prefer Antalya as their destination, depending on their restaurant choices. The findings regarding the dining experiences within the scope of the study were obtained from restaurant reviews for 2019 on the TripAdvisor website. The purpose of this study is to find out the availability of the local dishes of the city of Batman in the menus of the accommodation establishments. Therefore, at first, the local dishes of this city were compiled via document analysis technique. As a result of this compilation, for the study, semi-structured interviews were conducted with the managers or head chefs of 13 accommodation establishments located in Batman. In this study we aimed to create a short, public-domain analogue of the Cross-Cultural (Chinese) Personality Assessment Inventory (CPAI-2; F. M. Cheung et al., 1996). Emic (culture-specific) traits measured by the CPAI-2 are purportedly specific to the Chinese culture and argued to not be fully captured by the consensus Big Five personality trait taxonomy. Research suggests that CPAI-2 traits may have unique predictive power, especially in non-Western contexts. However, research has been hampered by several limitations of the measure. The restaurant market is becoming more competitive, and businesses are challenged to differentiate themselves in this sector in terms of quality of services. This research aimed to identify the specific indicators for measuring the quality of restaurant service in Brazil. Based on a quantitative paradigm, we adopted a user-generated content analysis with a sample of 1,143,631 customer reviews from 35,611 restaurants in seven Brazilian cities available on the TripAdvisor platform.
