Growing The Mission: Nonprofit Organizations Conducting Food-Growing Activities In The Twin Cities Of Minnesota, Marcos Stoltzfus

Growing food has become an increasingly common activity for nonprofit organizations, and doing so offers many opportunities to confer benefits to individuals and communities. Through a qualitative methodology, this research project uses a grounded theory approach to explore the challenges, opportunities, and issues faced by nonprofits in the Twin Cities that conduct food-growing activities as part of their mission. The study found three main categories of themes relevant to this sub-sector: Food Philosophy and mission prioritization, business model and economic concerns, and integrated program design characteristics. Food security and adaptation to climate change has been an important research and development agenda in most of the development organizations and in the national policy of developing countries. The most vulnerable population from climate change and food security problems are rural and agricultural households in the developing and low income countries. Weather and climatic factors and food security has a direct link with poverty because a large majority of poor live in rural areas and depend on agriculture for their livelihoods. Rapid economic and cultural transition in the United Arab Emirates (UAE) has been accompanied by new challenges to public health; most notably a rapid rise in chronic disease. Breastfeeding is known to improve health outcomes in adulthood, is associated with reduced risk of developing chronic disease, and is therefore an important public health issue for this rapidly increasing population. Factors associated with infant feeding practices were examined in a cohort of 125 Emirati women and their infants, with data collected at birth and 3, 6 and 15 months postpartum by questionnaires and interviews. Most people have had an episode of foodborne illness at one time or another; however, the majority of those stricken with foodborne illness fails to associate ill health with something consumed within the past 72 hours. The World Health Organization (WHO) estimates that foodborne diseases affect 30% of the population in developed countries, and that in developing countries, about 2 million people die yearly due to foodborne illness. The preparation and consumption of one’s food is governed by choices, attitudes, behavior, and beliefs. In De La Salle University, a school surrounded by a variety of restaurants, students make these food choices every day. Understanding how these food decisions are made is noteworthy, as this paper seeks to comprehend the students’ budgeting and eating out behavior through the use of Fishbein and Ajzen’s Theory of Reasoned Action. Outbreaks of foodborne human illnesses resulting from contaminated raw or minimally processed fruits and vegetables have been widely reported globally. The microbiological challenges associated with fresh produce are diverse and respond differently to minimal processing technologies. Atmospheric cold plasma is a relatively new technology and represents a potential alternative to traditional methods for decontamination of foods. The objective of this work was to determine the influence of extrinsic atmospheric cold plasma (ACP) treatment control parameters and to optimize treatment parameters for decontamination with respect to different forms of key safety challenges pertinent to fresh produce.

Soft condensed matter (SCM) physics has recently gained importance for a large class of engineering materials. The treatment of food materials from a soft matter perspective, however, is only at the surface and is gaining importance for understanding the complex phenomena and structure of foods. In this work, we present a theoretical treatment of navy beans from a SCM perspective to describe the hydration kinetics. We solve the transport equations within a porous matrix and employ the Flory–Huggin’s equation for polymer–solvent mixture to balance the osmotic pressure. Background: Visual food stimuli have been shown to influence desire to eat and may influence overall energy intake. The purpose of this study was to determine the influence, if any, that time of day has on the neural response to visual food stimuli, as measured by functional magnetic resonance imaging (fMRI). Methods: Using a crossover design, 15 healthy women were scanned using fMRI while presented with low- and high-energy pictures of food, once in the morning (6:30–8:30 am) and once in the evening (5:00–7:00 pm). This study seeks to understand how humans impact the dietary patterns of eight free-ranging vervet monkey (Chlorocebus pygerythrus) groups in South Africa using stable isotope analysis. Vervets are omnivores that exploit a wide range of habitats including those that have been anthropogenically-disturbed. As humans encroach upon nonhuman primate landscapes, human-nonhuman primate interconnections become increasingly common, which has led to the rise of the field of ethnoprimatology. To date, many ethnoprimatological studies have examined human-nonhuman primate associations largely in qualitative terms. The purpose of this research paper is to look at the major factors that influence how SNAP recipients make decisions about food purchases. The secondary purpose of this paper is to touch upon whether or not SNAP recipients suffer disproportionally from food insecurity and obesity-related chronic diseases. Three sets of interviews helped to inform this study: interviews with employees at the Department of Transitional Assistance (DTA), interviews with researchers who have studied SNAP recipients extensively as part of their work, and interviews with nonprofit coordinators that work with SNAP recipients after they are approved for their benefits. Southern identities are undoubtedly influenced by the region's foodways. However, the South tends to neglect and even to negate certain peoples and their identities. Women, especially lesbians, are often silenced within southern literature. Where Tennessee Williams used literature to bridge gaps between gay men and the South, southern lesbian literature severely lacks a traceable history of such connections. The principal objective of this thesis is to explore the ways in which southern lesbians manipulate food metaphors to describe their sexual desires and identities. Food and communication are equally vital to the human experience. They are essential to nourishment and growth. Both can be complex and rich, or rudimentary and straightforward. Food and food preparation as a lens for study has recently expanded within the communication field. This study attempts to add to the existing body of research and specifically focuses on a complex interpersonal setting: meal preparation. Worldwide expenditures on international development in the form of assistance or “aid” have continued to increase as developed countries look to both help and influence developing countries. In 2011, more than $140 billion in development aid was distributed globally, more than double the amount expended for international development aid in 2003. Many of the countries that are in need of aid have governments that do not have the resources, the experience, political stability, or well-functioning institutions to effect long-term structural change to bring their people out of poverty.

Food and cooking have been a central theme in several courses developed recently at the University of West Georgia. In this presentation, the nature of the content and learning outcomes of these courses will be presented. This article argues that making "water security" a more predominant policy aim can help reconcile and integrate energy security and food security. Water security is the condition of a nation and its citizens having reasonable physical and economic access to sufficient and sustainable water, combined with acceptable levels of water-related risks (e.g., drought, flood, and water-related plagues).

Nutrition is related to the mental well-being of clients. However, the nutritional views and practices of social workers in the mental health field have not been thoroughly explored. By using the post-positivist paradigm, 15 mental health social work students were interviewed for their perspectives regarding nutrition and nutrition’s effect on stress. Their main ideas were identified, connected, and organized to develop a theoretical statement. The resulting theory focused on the development of social work students' perspectives in applying nutrition into their mental health practice. Biomarkers of selenium are necessary for assessing selenium status in humans, since soil variation hinders estimation of selenium intake from foods. In this study, we measured the concentration of plasma selenium, selenoprotein P (SEPP1), and glutathione peroxidase (GPX3) activity and their interindividual differences in 383 low-income blacks and whites selected from a stratified random sample of adults aged 40–79 years, who were participating in a long-term cohort study in the southeastern United States (US). We assessed the utility of these biomarkers to determine differences in selenium status and their association with demographic, socio-economic, dietary, and other indicators.
