Lipolysis is crucial for cheese flavor development, as lipolytic enzymes convert fats into free fatty acids that enhance flavor. While Kid/Goat (KG) lipases are traditionally used in cheese production, microbial lipases like M. javanicus (MJ) and C. cylindracea (CC) provide vegetarian, cost-effective alternatives. This study compares the flavor, texture, and composition of Feta and Parmesan cheeses made with microbial lipases as a replacement for traditional lipase. Conventional cheese making techniques were used to make experimental batches of Feta and Parmesan cheeses using a standard KG lipase and two experimental lipases, CC and MJ, and comparing all three against a control …

The COVID-19 pandemic has affected the diagnosis and treatment of pediatric tuberculosis (TB), which can pose a public health burden if not properly treated. This study aims to find out the risk factors for pediatric TB. The design of this study was cross-sectional, using TB surveillance data extracted from maintenance cards of individuals who underwent TB screening in 2020–2022 at health facilities in DKI Jakarta. The independent variables in this study are age, gender, contact history, BCG immunization, and nutritional status. Chondral defects significantly contribute to the overwhelming number of patients suffering from degenerative joint disease (DJD) daily. In efforts to prevent this pathology, chondral reconstruction procedures have emerged to prevent early development of this condition. Two current methods utilized include osteochondral autograft transplantation (OATs) and autologous chondrocyte implantation (ACI). In isolation, the effectiveness of each technique has been evaluated, however there has yet to be a definitive comparison of equivalency between the two. Problem Low breastfeeding rates remain a global challenge and a cause of adverse infant health outcomes despite the benefits of exclusive breastfeeding. In response, UNICEF and the WHO developed the Baby-Friendly Hospital Initiative (BFHI) to promote, protect, and support breastfeeding for infant growth and development. Context Hospital A is a mid-size hospital in Northern California. It has 24 labor, 13 antepartum, and 33 postpartum beds and serves a diverse population of patients. Problem Educational workshops are essential for helping older adults gain the knowledge and skills to live independently. However, at Independent Living Facility A, a lack of resident participation in these workshops was identified through a microsystem assessment with key stakeholders. Engaging more residents is critical for the facility to secure funding for these programs. Aim This project aimed to improve resident engagement in educational workshops by 10%, increasing it from 4.4% to 4.8%, over a 5-week period from October 16, 2024, to November 13, 2024. A newly established pediatric outpatient infusion center in Los Angeles does not have immediate access to a Code Blue Team or a Rapid Response Team, and instead relies on the Staff Assist protocol to manage medical emergencies. Via direct interviews, registered nurses at the infusion center report feeling underprepared and lacking confidence to respond to medical emergencies that must be escalated to code blue. The microsystem setting for this quality improvement project is an adult health unit at one of five safety net clinics housed within a macrosystem in a large urban setting in Northern California serving a low-income, predominantly Hispanic population. This paper examines the relationship between Adverse Childhood Experiences (ACEs), allostatic load, and the likelihood of women giving birth prematurely in the United States and Canada. I searched multiple databases exploring this association, identifying nineteen articles published between 2004 and 2024. The literature highlights that racism and discrimination are a cause of chronic stress, and that this stress, and implicit bias, are both implicated in preterm birth. While ACEs scores have been found to be associated with preterm birth, the results for allostatic load are mixed. Problem Engagement in educational workshops is important for older adults as it provides spaces to connect, learn, and continue independent living. Aim This quality improvement project aimed to increase resident engagement by 10%, raising it from 4.4% to 4.8%, during a 5-week period from October 16, 2024 to November 13, 2024.
