Bridging The Gap Between Public Opinion Research And Consumer Marketing Research: Insights Into U.S. Shoppers Of Organic Foods, Marilena O. Vilceanu, Olivia Grasso, Kristine Johnson
AMTP Proceedings 2019
The primary goal of this study embraces Hughner and team’s (2007) directive to focus new research on the growing segment of occasional consumers of organic and natural foods, rather than limit the search for consumer insights to the small, elitist groups of deeply committed consumers. Research questions address the demographics, attitudinal, and behavioral characteristics that identify organic foods as a premium product. Primary recommendations for marketing practitioners include focusing on higher income consumers, especially married individuals, who live in highly populated areas; creating a pleasant shopping experience; promoting non-food related organic items, and investing in brand presence and salience.

User Engagement Associated With Web-Intervention Features To Attain Clinically Meaningful Weight Loss And Weight Maintenance In Rural Women, Patricia A. Hageman, Joseph E. Mroz, Michael A. Yoerger, Carol H. Pullen
Journal Articles: Physical Therapy
Objective: Purely web-based weight loss and weight-loss maintenance interventions show promise to influence behavior change. Yet, little is known about user engagement with features of web-based interventions that predict clinically meaningful weight loss (≥5% bodyweight loss). This study examines level of website feature engagement with the likelihood of attaining ≥5% bodyweight loss after 6 and 18 months participation in a web-based intervention, among rural women at high risk of obesity-related diseases and disability.
Methods: In this secondary analysis of clinical trial data of 201 rural women, we examined weight change and user engagement, measured as clicks on specific web-based intervention …

Lost Community To Resilient District, Matthew C. Russo
Architecture Theses and Projects
Community reconnection is dependent on the revitalization of the site chosen for this project. Revitalization strategies that rely on universal fascinations such as waterfront beauty, culture, history, food, and recreation, have the potential to provide people from the downtown San Fernando area with reasons to reconnect to the currently neglected project site. Access to unique and novel experiences in addition to options not available in the downtown area become invitations for personal and community enhancements that reconnect those living and working downtown to the revitalized site. In turn, this reconnection creates an opportunity for the deserted site to survive and …

Adults 65 and older are adapting to technology at a slower rate compared to the overall population. Research has shown that programs can assist older adults in learning and embracing technology. However, little information exists about what specific forms of technology older adults are interested in learning and for what purposes. To describe areas of technology older adults are interested in learning and why this study examined qualitative data from an intergenerational service-learning program in which students in higher education assist and mentor older adults with and about technology that older adults want to learn. Data was analyzed from in-depth …

Prevalence Of Condensed Tannins In The Diet And Its Impact On Protein Intake Of Diademed Sifakas (Propithecus Diadema) At Tsinjoarivo, Madagascar, Emma Grace Thurau
Graduate Research Theses & Dissertations
Plant secondary metabolites (PSMs) are compounds found in plant tissues designed to deter herbivores. Tannins, a type of PSM, can bind to proteins and reduce their availability to consumers. The detoxification limitation hypothesis suggests herbivores will prefer foods with lower amounts of PSMs and exhibit decreasing rates of feeding when PSM levels are high in order to stabilize the amount of PSMs ingested. Although this hypothesis has been supported by observations from other mammalian groups, it has not been tested in lemurs with regards to their consumption of tannins.
I observed diademed sifakas (Propithecus diadema) over a 2-month period (June-August …

How Coping Process Relates To Eating Behaviors Among Military Veterans With Posttraumatic Stress Disorder, Debra Kimberlin
Graduate Research Theses & Dissertations
Posttraumatic stress disorder (PTSD) is a mental health condition faced by many veterans, and veterans with PTSD have higher rates of poor health and obesity than civilians. Evidence suggests mental health issues such as PTSD may be associated with disordered eating behaviors. In addition, veterans with PTSD may select a variety of coping behaviors to manage stress and emotions, some of which may negatively impact their health. This study explored the relationships between coping process, emotion- and stress-related eating, and eating disorder risk among a sample of veterans with PTSD (n = 239) who were recruited through veteran service organizations …

Ohno’s hypothesis predicts that the expression of the single X chromosome in males needs compensatory upregulation to balance its dosage with that of the diploid autosomes. Additionally, X chromosome inactivation ensures that quadruple expression of the two X chromosomes is avoided in females. These mechanisms have been actively studied in mice and humans but lag behind in domestic species. Using RNA sequencing data, we analyzed the X chromosome upregulation in sheep fetal tissues from day 135 of gestation under control, over or restricted maternal diets (100%, 140% and 60% of National Research Council Total Digestible Nutrients), and in conceptuses, juvenile, …

Implementation Of Social Innovations In Subsistence Marketplaces: A Facilitated Institutional Change Process Model, Madhu Viswanathan
Implementation Of Social Innovations In Subsistence Marketplaces: A Facilitated Institutional Change Process Model, Madhu Viswanathan
Marketing & Business Law Faculty Works
Implementation of social innovations in subsistence marketplaces often fails as a result of not bringing about institutional change. In this article, we study the process through which social enterprises facilitate local communities in effecting the process of institutional change as they introduce social innovations. Analyzing rich ethnographic data from 19 social enterprises, we develop the process of “facilitated institutional work” for implementing social innovation. We present a process model for implementing social innovation with four distinct stages involving social enterprises—(1) legitimating themselves within local communities, (2) disrupting aspects of the local institutional environment, (3) helping re-envision institutional norms or practices, …

Title: Measuring Nutrition Literacy Among Participants Enrolled in a Weight Management and Chronic Disease Prevention Program
Purpose: Type II diabetes, hypertension, and overweight/obesity are three of the most common diet-related health conditions and are closely linked to negative health outcomes. Limited nutrition knowledge is associated with inadequate preventative care and poor diet quality, which may exacerbate the development of these conditions. Research suggests that targeted nutrition education increases nutrition literacy and thus is an important component of diet-related chronic disease prevention programs. Despite its importance, nutrition literacy tools are not widely available and/or routinely used in practice. Program/Participants: A total …

The aim was to investigate the relationship between the energy contribution (E%) of foods according to the degree of industrial processing and the energy-adjusted dietary inflammatory index (E-DII) in pregnancy. Two 24-hour dietary recalls were obtained from each of the 784 pregnant women. Adjusted linear regression models allowed observing an inverse association between E-DII scores and E% from minimally processed foods β = -0.049 (95%CI -0.055– -0.042) and a direct association with the E% of ultra-processed foods β = 0.052 (95%CI 0.045–0.058), indicating a relationship between the dietary inflammatory potential and the degree of industrial processing of foods.

Students On The Margins: Intersectionality And College Campus Sexual Assault, Margaret Irene Campe
Theses and Dissertations--Sociology
This three-paper dissertation quantitatively identifies and examines three different substantive areas using data from the American College Health Association’s Fall of 2016 National College Health Assessment (ACHA-NCHA). Specific areas of inquiry include, marginalized populations and college campus sexual assault, intersectional analyses of risk factors for college campus sexual assault, and drinking protective behavioral strategies as prevention tools for college campus sexual assault. Paper one, titled, “College Campus Sexual Assault and Students with Disabilities,” explores a particular marginalized group of students that have been largely left out of college campus sexual assault studies: female college students with disabilities. The logistic regression …

This research investigates how consumer evaluations are shaped towards products that highlight either presence or absence of attributes that are unknown to consumers. Participants were recruited through Amazon Mechanical Turk online panel and randomly assigned to a variety of experimental conditions in four studies. Results of Study 1 show that, under the low brand trust condition, consumers have more positive evaluations of products with absence positioning than presence positioning. Study 1 results also show that under the high brand trust condition, the disjunctive gap between the absence versus presence positioning closes. In Study 2, these results are extended by utilizing …

City Limits: Heat Tolerance Is Influenced By Body Size And Hydration State In An Urban Ant Community, Dustin Jerald Johnson
University of the Pacific Theses and Dissertations
Cities are rapidly expanding, and global warming is intensified in urban environments due to the urban heat island effect. Therefore, urban animals may be particularly susceptible to warming associated with ongoing climate change. Thus, I used a comparative and manipulative approach to test three related hypotheses about the determinants of heat tolerance or critical thermal maximum (CTmax) in urban ants—specifically, that (1) body size, (2) hydration status, and (3) preferred micro-environments influence CTmax. I further tested a fourth hypothesis that native species are particularly physiologically vulnerable in urban environments. I manipulated water access and determined CTmax for 11 species common …

Porphyromonas gingivalis (P. gingivalis) and Fusobacterium nucleatum (F. nucleatum) are Gram-negative anaerobic bacteria possessing several virulence factors that make them potential pathogens associated with periodontal disease. Periodontal diseases are chronic inflammatory diseases of the oral cavity, including gingivitis and periodontitis. Periodontitis can lead to tooth loss and is considered one of the most prevalent diseases worldwide. P. gingivalis and F. nucleatum possess virulence factors that allow them to survive in hostile environments by selectively modulating the host's immune-inflammatory response, thereby creating major challenges to host cell survival. Studies have demonstrated that bacterial infection and the host immune responses are involved …

The Evolution Of Sunset Magazine's Cooking Department: The Accommodation Of Men's And Women's Cooking In The 1930s, Jennifer Hoolhorst Pagano
University of the Pacific Theses and Dissertations
The Western regional magazine Sunset has been published under a series of owners and publishers since 1898. In 1928, Sunset was purchased by Lawrence Lane, a Midwestern magazine executive who transformed it from a failing turn-of-the-century, general interest publication about the West, into a successful magazine about living in the West for the Western middle-class. Sunset had always been a magazine for men and women, and one that appealed to both male and female intellectuals at the time Lane purchased it. Lane and his editors attempted to interject more rigid middle-class ideals into a magazine that had espoused ideas that …

The Influence Of Food Insecurity, Low-Income, And Race On Diabetes Self-Management Practices Among Women With Diabetes, Jill La Capria
Walden Dissertations and Doctoral Studies
Diabetes is a chronic condition affecting more than 30 million adults living in the United States. Diabetes self-management (DSM) can prevent or delay the complications of diabetes and improve clinical outcomes; however, data show that low-income, food insecurity, female gender, and race contribute to challenges performing effective DSM. The health belief model was the theoretical framework for this cross-sectional study, which examined how food insecurity, low-income, and race affect DSM activities in women with diabetes. The sample population from the 2017 Behavioral Risk Factor Surveillance System survey consisted of 1,842 women with diabetes who were 18 years of age or …

Kinder And Less Just: A Critical Analysis Of Modern Gleaning Organizations And Their Place In Food Recovery Discourse, Anna Clare Gorman
Kinder And Less Just: A Critical Analysis Of Modern Gleaning Organizations And Their Place In Food Recovery Discourse, Anna Clare Gorman
University of the Pacific Theses and Dissertations
The practice of gleaning began as a way for the poor to provide sustenance for themselves and their families. Changes in societal ideas about private property as well as a shift toward a neoliberal style of governance have caused gleaning to become what it is today: a practice primarily undertaken by charitable organizations, nonprofits, and church groups who then donate their bounty to local food banks, providing fresh produce to the food insecure. In modern society, gleaning is often held up as a single solution to the problems of food insecurity, poor nutrition, and food waste. This thesis complicates that …
