Introduction: Although the relationship between health behaviors and outcomes such as smoking and obesity with longer residence in the United States among Mexican American immigrants is established, the relationship between length of residency in the United States and risk for cardiovascular disease (CVD) is not fully understood. The objective of this study was to determine the relationship between immigrant status, length of residence in the United States, age, and CVD markers in a sample of Mexican American adults living in Brownsville, Texas.
Methods: We categorized participants in the Cameron County Hispanic Cohort study as immigrants in the United States for …

Host-Parasite Interactions In An Invasive Songbird, Courtney A.C. Coon
Host-Parasite Interactions In An Invasive Songbird, Courtney A.C. Coon
USF Tampa Graduate Theses and Dissertations
Introduced species are the greatest threat to biodiversity after habitat loss. Understanding the processes that permit organisms to become successful invaders may provide opportunities to prevent or limit their dispersal and establishment and thereby alleviate some of their harmful effects. The goal of my dissertation research has been to investigate whether invasive species have distinctive interactions with parasites, and some of the mechanisms that may underlie that variation. I used one of the world's most successful vertebrate invaders as a case study: the house sparrow (Passer domesticus; Introduction).
Previous research in the house sparrow suggested that loss of …
Starting A Conversation: The Need For And Application Of Service Design In International Development, Ruth Edmonds, Mary Rose Cook
Starting A Conversation: The Need For And Application Of Service Design In International Development, Ruth Edmonds, Mary Rose Cook
ServDes Conference Series
International Development is concerned with the provision of public services and development programmes in contexts where resources are scarce and states are often fragile. Service design has much to offer the kinds of problems faced by International Development organisations. In this paper; we open a conversation about the need for; and application of; Service Design in International Development; focusing on two of its core principles; collaboration and user-centeredness. We also unpack some problematics that need attention when applying a Service Design approach to International Development programming.

Informal; Formal; Collaborative: Identifying New Models Of Services Within Favelas Of Rio De Janeiro, Maíra Joly, Carla Cipolla, Ezio Manzini
ServDes Conference Series
Favelas in Rio de Janeiro are places characterized by the lack of infrastructure and access to services. Nevertheless; when looking more closely at these communities; it becomes apparent the power that their social fabric has to create solutions; opening field for the emergence of social innovations. In fact; preliminary research suggests a set of cases where people are already imagining and conceiving a new generation of services within these communities. This article introduces a research about services that arise from social innovations initiatives within favelas of Rio de Janeiro. More precisely; it describes how locals; using social networks connections inside …

Resource Oriented Service Ideation: Integrating S-D Logic With Service Design Techniques, Masanao Takeyama, Kahoru Tsukui, Yoshitaka Shibata
ServDes Conference Series
Although the importance of Service-Dominant (S-D) logic is recently recognized among service designers; they still have barriers in applying the perspective to design practices due to the lack of appropriate tools and techniques to operationalize its conceptual strengths. To advance the integration of S-D logic into service design; this paper introduces a resource-oriented service design approach that focuses on representing and reconfiguring value co-creation. In particular; a service ideation technique called ROSI; along with two representation tools named resource integration map and resource availability table; is developed based on the concepts of resource integration (Vargo & Lusch; 2008) and value …

Anthropology Faculty Scholarship
Local migration in developing-world settings, particularly among rural populations, is an important yet understudied demographic process. Research on migration in such populations can help us test and inform anthropological and demographic theory. Furthermore, it can lead to a better understanding of modern population distributions and epidemiologic landscapes.

Development, Characterization And Linkage Mapping Of Single Nucleotide Polymorphsim In The Grain Amaranths (Amaranthus Spp.), Scott Smith, Dr. Jeff Maughan
Journal of Undergraduate Research
The grain amaranths (Amaranthus sp.) are important pseudo-cereals native to the New World. During the last decade they have garnered increased international attention for their nutritional quality, tolerance to abiotic stress and importance as a symbol of indigenous cultures. Notwithstanding their renewed potential as an emerging alternative crop species, few molecular tools needed for accelerated breeding programs, have been developed. Our research describes the development and characterization of the first 411 single nucleotide polymorphism (SNP) marker assays for the species as well as the first complete genetic linkage map of the species.
Lactose-Hydrolyzed Yogurt Sweetness, Paul Mcmullan, Dr. Lynn Ogden
Lactose-Hydrolyzed Yogurt Sweetness, Paul Mcmullan, Dr. Lynn Ogden
Journal of Undergraduate Research
My project was focused on developing a yogurt that was sweeter than traditional yogurt via means of lactose-hydrolysis. The purpose was to find what percentage of added sugar could be spared when hydrolyzing the lactose inherent in milk. The 3 batches of milk had additional sugar and Non-Fat Dry Milk (NFDM) added to boost its lactose content. The two experimental batches were treated with the lactase enzyme and left to sit for a period of 48 hours, at which point one could safely assume that 99% of the lactose had been fully hydrolyzed. One of the experimental batches had 50% …
Stability Of Added Folic Acid In Micronutrient-Fortified Rice Using Different Cooking Techniques And Storage Conditions, Shintaro Pang, Dr. Michael Dunn
Stability Of Added Folic Acid In Micronutrient-Fortified Rice Using Different Cooking Techniques And Storage Conditions, Shintaro Pang, Dr. Michael Dunn
Journal of Undergraduate Research
Rice is the main staple in many people’s diet, accounting for 80% of the daily caloric intake of 3 billion people. Studies also show that folate intake is insufficient worldwide (Schoenlechner et al 2010). This is of much concern because folate deficiency is linked to many serious disorders, such as megaloblastic anemia and neural tube defects in newborns (Steur et al 2010). In order to remedy this problem, folate concentrations in many foods, including rice has been well analyzed. However, the stability of folic acid in rice is less known. This information is of interest because folic acid is very …

Selenium Toxicity In C57bl/6 Mice, Lauren Nielson, Dr. Merrill Christensen
Journal of Undergraduate Research
The purpose of my ORCA project was to determine the highest intake of selenomethylcysteine mice could consume without it being toxic to them. Selenium has been shown to have preventative effects on the progression of prostate cancer, so determining the optimum dosage of selenomethylcysteine (the most absorabable form of selenium) is essential for future research on this topic.

At the Agricultural Information Center (AIC) we are trying to provide relevant content for Cooperative Extension personnel located throughout the state of Kentucky. The College of Agriculture, Food, and Environment is the University of Kentucky's largest college and has employees located in all of the 120 Kentucky counties. Therefore, we are working to create and maintain relevant outreach services for a geographically and culturally diverse user group. Throughout this process, we have realized that creating online tutorials and virtual training sessions is not enough to support outreach services—we must stay visible. To stay visible, we have visited regional meetings and …

Background: Low-carbohydrate diets (LCDs) have been vastly popular for weight loss. The association between a low-carbohydrate dietary pattern and risk of gestational diabetes mellitus (GDM) remains unknown.
Objective: We aimed to prospectively examine the association of 3 prepregnancy low-carbohydrate dietary patterns with risk of GDM.
Design: We included 21,411 singleton pregnancies in the Nurses’ Health Study II. Prepregnancy LCD scores were calculated from validated food-frequency questionnaires, including an overall LCD score on the basis of intakes of carbohydrate, total protein, and total fat; an animal LCD score on the basis of intakes of carbohydrate, animal protein, and animal …

Healthcare Access And Health Outcomes In Southern Nevada, Jennifer Pharr, Courtney Coughenour, Shawn Gerstenberger
Nevada Journal of Public Health
In a publication from the Robert Woods Johnson Foundation, it was recognized that a person’s zip code was a more important predictor of health than their genetic code. Where we live influences not only our access to health care, but other health indicators as well. Clark County has a low primary care physician to population ratio compared to other counties in Nevada and in the US. Clark County also has highest rates of uninsured in the Mountain West and among the highest in the nation.
Southern Nevada fared worse than other Mountain West Metropolitan areas in health indicators and preventative …

Photobiostimulation In C. Elegans As A Model For Low Level Light Therapy, Michael J. Spoto, Daryl D. Hurd
Science Scholars
Low-Level Laser Therapy (LLLT) is a developing therapeutic technique that has been gaining recognition in the scientific community in recent years. Previous experiments performed in LLLT research projects have been primarily mammalian and cell culture based. These experiments have produced results showing accelerated tissue repair. In this experiment, we introduce a new model, Caenorhabitidis elegans, a free-living soil nematode, to be used in LLLT research by testing the effects of exposure of the organism to various wavelengths and intensities of light commonly used in LLLT. C. elegans was shown to respond to photobiostimulation when exposed to specific wavelengths of …

Nucleic Acid Analysis Of Black Dot Infected Russet Burbank Potato As Influenced By Environmental Phosphorus, Jeremey Gneck, Dr. Brad Geary
Nucleic Acid Analysis Of Black Dot Infected Russet Burbank Potato As Influenced By Environmental Phosphorus, Jeremey Gneck, Dr. Brad Geary
Journal of Undergraduate Research
Each year potato yields are reduced due in part to root pathogens such as the fungus Colletotrichum coccodes (Black Dot). Research interactions among Russet Burbank potatoes, C. coccodes and mineral nutrition will be conducted in hydroponic growth chambers in order to determine the optimal concentration of phosphorus, a necessary macro-nutrient required in plants for growth and disease resistance. The expected outcome of this research will determine the necessary concentration of phosphorus that will boost the plant’s natural resistance to the C. coccodes fungus without adversely affecting the plant. This research will then be added to prior studies that have measured …
