Pantethine, a precursor of coenzyme A, has been shown to reduce serum cholesterol levels in hypercholesterolemic rabbits. The enzyme pantetheinase rapidly hydrolyzes pantethine to the vitamin pantothenic acid and the amino thiol cysteamine.
This study was designed to compare the effect of cysteamine and pantothenate supplementation with that of pantethine on hypercholesterolemic rabbits. New Zealand white rabbits were fed a 0.5% cholesterol diet for 5 weeks; treatment groups received only the high cholesterol diet (control), or a high cholesterol diet supplemented with 1% pantethine, or an equimolar amount of pantothenic acid or cystamine (the disulfide of cysteamine). To study the effect of meat (beef) on dietary iron bioavailability from enriched white bread (EWB) or whole wheat bread (WWB), diets were prepared in which the ratios of beef iron to bread iron were 100:0, 75:25, 50:50, 25:75 or 0:100. Hemoglobin regeneration efficiency (HRE), apparent iron absorption, and dry matter absorption were determined using weanling anemic and healthy male rats.
Meat iron was more available than EWB or WWB. Fortification iron in EWB was less available than the iron naturally present in WWB. At the iron dose given, HRE was similar for both anemic and healthy rats. Although healthy …

Protein quality in freeze-dried skimmilk (SM), regular cottage cheese (RCC), retentate (Ret) and cottage cheese made from ultrafiltrated skimmilk (UFCC) were evaluated by chemical (amino acid score) and biological methods. Biological evaluation was at 5, 8 and 11% protein level in growing rats by measuring biological value (BV), net protein utilization (NPU) and nitrogen efficiency for growth (NEG) over a 14-day period. A 28-day protein efficiency ratio (PER) was determined on the same products at 10% protein level. Effects of added lactose on PER of retentate, regular and UFCC were also evaluated. Whole milks were adjusted to pH 5.8, 6.2, or 6. 7 with HCl and batch pasteurized at 63°C for 30 min. Each was concentrated 5:1 (40% total solids) through a single tube polysulfone membrane Abcor ultrafiltration unit. Lactose (L), casein hydrolysate (CH), and one of two brands of yeast extract (YE1, YE2) were added into cooled retentates at 0.1, 0.3, 0.5, 0. 7 or 0.9% and equilibrated overnight at 4°C. The effect of proteolytic enzymes on the transformation and transfection of Streptococcus lactis LM2301 protoplasts was examined in an attempt to eliminate the variability observed. By using both chymotrypsin and mutanolysin to form protoplasts followed by spread plating, consistent frequencies of 104 to 105 transformants per μg of pGB301 DNA, and 105 transfectants per μg of c2 bacteriophage DNA where achieved. Optimum transformation and transfection frequencies were obtained when 16 h cultures were treated simultaneously with 25 U/ml mutanolysin and 1.25 U/ml chymotrypsin for 15 min. Vitamin A nutrition status was evaluated in 110 pairs of women and their preschool children at rural health posts in two different ecological regions of Northeast Brazil. Serum retinol and carotene, weight, height, tricep skinfold and mid-arm circumference were measured from each mother and child. Nutrition knowledge of mothers, socioeconomic living conditions and consumption of retinol and carotene food sources were assessed.
Nine children (8 percent) and one mother had less than acceptable serum retinol (less than 20 μg/dl). Additionally, 21 percent of the children and six percent of the mothers had "low" serum carotene levels. Thirty-seven percent and 57 …

Wood for firewood, fence posts and construction material and forage for domestic livestock are key resources in the caatinga vegetation zone of northeastern Brazil. This experiment was designed as a preliminary assessment of thinned caatinga as the basis of a production system which optimizes forage and wood production. Two levels of thinning (25% and 55% tree canopy cover) were compared to cleared (0% tree canopy cover) and undisturbed (95% tree canopy cover) caatinga in terms of forage and wood production and goat nutrition.

Rangelands in Jordan are deteriorated due to a combination of harsh environmental conditions and human misuse. Jordan is importing increasingly large quantities of meat and animal products to meet the demand from its growing population. Sheep are supplementarily fed during the dry season and large quantities of grain supplements are imported every year.

Experiments were conducted to determine the genetic reproductive potential of Rambouillet and St. Croix ewes . Ovulation rate (monthly) and estrus (daily) were observed for two years on 10 ewes of each breed to establish seasonal patterns . Both breeds demonstrated seasonal anestrus from May through July. Ovulation rates reached 2.0 or greater for both breeds during September to November, and decreased to 1.25 by March. Breeding groups for St. Croix and Rambouillet ewes were bred each February and August for five years to establish lambing performance at six month intervals. A ten-paddock short duration grazing cell was stocked with yearling heifers at a stocking rate of 0.7 ha per animal unit month and a stocking density of 0.14 ha per animal unit. A continuously-season- long-grazed (CSLG) pasture was used as a control. It was stocked at the same stocking rate, but at a stocking density of 1.4 ha per animal unit. Factors which affect iron bioavailability have been repeatedly and extensively investigated. A model, derived from these studies, has been developed for estimating available iron from meal data. However, many dietary surveys report only average daily intakes of iron, and do not report the iron present in single meals. No model to estimate available iron from daily iron intake has been presented in the literature.

The purpose of this study was to investigate analytical approaches for estimating the optimum (profit maximizing) rate of initial overstory kill for increasing seasonal forage availability on a specific ranch. The models were developed using the big sagebrush (Artemisia tridentata) - crested wheatgrass (Agropyron cristatum, A. desertorum) vegetation type on a Utah cow-calf-yearling operation as an example. The models should be applicable on any ranching situation where understory forage production is constrained by the establishment and growth of undesirable overstory vegetation.

Mastitic milk was detected by obtaining conductance measurements using an impedance microbiology Bactometer® 120 SC instruments. Conductance readings taken after 30 min at 25'C separated normal and abnormal milks when readings differed by more than 3% from the variance among instrument module wells. Samples blended from four quarters of a cow indicated milk from one quarter was abnormal if the salt level in the abnormal quarter raised the blend conductivity above that of normal samples and variance among the wells. The purpose of this study was to determine if participation in a marriage enrichment program had an impact on couple's relationships in the areas of regard, empathy, congruence, dyadic adjustment and self-esteem. Seven independent variables were also analyzed to see if they had any impact on the five outcome measures. A survey was given at four different time periods (pretest, immediately before the enrichment experience; posttest, immediately after the enrichment experience; three months following; and six months following the enrichment experience) to determine if change did occur and if it was maintained over time. The purpose of this paper was to attempt to identify variables which may enhance the ability of older widowed persons to adjust to viii bereavement. Depression and perceptions of physical health were the two aspects of adjustment selected for study. Several variables which current literature suggests may mediate grief adjustment were examined for their potential relationship to bereavement outcome. These were gender, level of grief, anticipatory grief and social network. The possible relationship between depression and perceptions of physical health was also examined for.

A pink color defect is commonly observed in freshly cut surfaces of cooked turkey rolls and fades rapidly upon exposure to air. The non uniform pink color makes the product appear undercooked, and the product must be discounted. The oxidation-reduction potential of the meat is important in development of pink defect. A pink color similar to that of commercial product was observed when the cooked meat was treated with either sodium nitrite or sodium dithionite. Information on human needs for pantothenic acid is limited and no recommended daily allowance has been established; although a safe and adequate level of 4-7 mg/day has been suggested for adults and adolescents. The adolescent population is often at risk for nutritional problems because of unusual eating patterns and major physiological changes which occur at this time. Pantothenic acid levels in urine, whole-blood and erythrocytes were determined in a healthy adolescent population using radioimmunoassay techniques. Intercept feeding was tested for its efficacy in reducing deer-vehicle collision frequency by diverting deer movement patterns away from highways using alfalfa hay as an attractant. Ratios of roadkills in control vs. treatment zones of three highway segments indicated that feeding reduced collision frequency. Spotlighting counts of live deer were significantly higher (P < 0.001) in the control than in the treatment zone, supporting the effectiveness of feeding in keeping deer distant from the highway. In a benefit:cost analysis, the benefits accrued by reducing collision frequency exceeded the costs of feeding on each highway both years, with one exception: in 1986 one of the highways demonstrated that particular features of an area may not be conducive to effectively attracting deer away from a highway. I recommend intercept feeding be used with alternate techniques, so that the most appropriate technique is applied in each situation to reduce collision risk.

The effects of micrococci on sensory characteristics of different batches of summer sausages were determined. Sixty four salt-tolerant indigenous isolates were selected from beef or mutton treated with 1.5 or 3.0% sodium chloride and 120 ppm sodium nitrite, and held at 5 or 10 C for 5 days. These isolates (61/64) were identified as staphylococci and micrococci. Summer sausages were made from several lamb, ewe, and ram carcasses which were hand deboned and blended after grinding to contain 22% fat. A new method for manufacture of natural cheese was developed using 5X ultrafiltered whole milk retentate. The retentate was prefermented to pH 5.0-5.2 before curd formation to simplify the cheese making process. It was demonstrated that the process can be made commercially feasible.
Ultrafiltration and diafiltration of whole milk were done so that the desired level of residual lactose was left in the retentate. Retentate was inoculated with lactic starter culture and incubated (prefermented) until all lactose was converted to lactic acid. The effects of dietary calcium and phosphorus levels on audiogenic seizure susceptibility and brain neurotransmitter were investigated in magnesium deficient rats. For 17 days, male weanling rats were fed magnesium deficient diets which also contained deficient (-), adequate (=}, and excess (+) amounts of calcium and/or phosphorus. Reduction of seizure incidence was seen in low calcium and/or low phosphorus diets. High calcium, and high calcium in combination with high phosphorus increased the severity of seizures. Manufacture of white soft cheese from ultrafiltered whole cows• milk involved acidification of pasteurized homogenized whole milk to pH 6.0 with phosphoric or citric acid. The preacidified milk was ultrafiltered at 54 °C until 60% of original milk weight was removed as permeate, diafiltered with deionized water equal to 38.5% of the original milk and concentrated by UF (4.8 fold) to pre-cheese (38% total solid). A short duration-high intensity grazing trial was conducted in spring of 1985 to determine whether shrub establishment in crested wheatgrass pastures could be enhanced through spring grazing by cattle, or by fertilization of shrub seedlings. Data was collected on diet selection by cattle during spring grazing, and on subsequent shrub growth and survival. Shrubs studied were transplants of sagebrush, Artemisia tridentata, fourwing saltbush, Atriplex canescens, bitterbrush, Purshia tridentata, and one year old bitterbrush seedlings.
Cattle did not browse sagebrush or fourwing saltbush transplants, but utilization of bitterbrush transplants and seedlings averaged 15 and 42 percent, respectively. Shrub …

This research was conducted at the La Raya experiment station, Cusco, Peru (4200 m elevation, 15°S latitude, and 70 °W longitude) using 60 Corriedale, and 60 Criollo ewes during three consecutive years (April 1981 - March 1984). Age, and weight at puberty, age at physical maturity, and the effects of breed, age (physically immature and mature), year, and month were measured on body weight, incidence of estrus, and incidence and rate of ovulation. There was a significant difference (P<.05) among breed, year, and the interactions for body weight at puberty. The mean age at puberty for 1982-83 was 693.6 days (23.1 months) for Corriedale and 483.3 days (16.1 months) for Criollo. The mean liveweight at puberty was 27.2 kg for Corriedale, and 25.3 kg for Criollo. Corriedale ewe lambs weighed more than Criollo, attained puberty seven months later than Criollo. At comparable age (15-17 months) at the Southern Peruvian Highlands 100 % of the Criollo reached puberty, compared to 58% of the Corriedale. Body weight, incidence of estrus and ovulation were affected (P<.01) by breed, age, year, month, and their interactions. Physical maturity was attained at 39 and 36 months of age for Corriedale, and Criollo, respectively. Weight changes during the year were associated with feed availability. The mean overall incidence of estrus was 45.4 % for Corriedale (43.6 in physically immature, and 47.2 % in mature ewes), and 67.1 % for Criollo ewes (66.3, in physically immature, and 68.7 % in mature ewes). The mean overall incidence of ovulation was 39.6 % for Corriedale (39.7, in physically immature, and 39.5 % in mature ewes), and 58.5 % for Criollo ewes (59.4, in physically immature and 56.7 % in mature ewes). Both breeds demonstrated seasonality of estrus and ovulation with the Corriedale being shorter than the Criollo. The incidence of ovulation in both breeds was less than that of estrus. The ovulation rate was 1.00 for Corriedale, and 1.03 for Criollo (P>.05). This research tested the use of non-sexist occupational modules of teaching activities and toys for preschool, second grade and fourth grade classes. In addition to brief descriptions of biological, cognitive development and social learning theories of gender role development, the literature review also focuses on factors which contribute to gender stereotyping in schools: teachers, teacher training, toys, teaching materials and activities. Several hypotheses were tested comparing project members as presenters of modules versus module use by regular classroom teachers and a module-free control group in each grade. The purpose of this study was to describe a sample of insulin-dependent diabetic youth in terms of selected anthropometric measurements, level of metabolic control and dietary intake. The 22 subjects (10 males and 12 females) were between the ages of seven to 16 years and, except for one female, regularly attended a multidisciplinary outpatient diabetes clinic.
The study involved cross-sectional observation of height, weight, triceps and subscapular skinfold measurements, mid-arm muscle circumference and weight:height ratios, and comparison of these measurements to national norms derived from non-diabetic controls. The effects of acidification, low temperature, high oxygen concentration, and rotenone on the color of dark colored beef muscle were determined by use of the Hunter color difference meter. Pre-rigor and dark cutting muscle homogenates bloomed (turned bright red) in the presence of low pH or rotenone. Dark cutting homogenates also bloomed at low temperature. Pre-rigor and dark cutting muscle slices turned bright red at low temperature in an oxygen atmosphere. In dark cutting beef muscle however, low temperature was sufficient to cause the development of bloom. Mutton meat was tested in different products in order to obtain prototype products in which mutton can effectively be used without the objectionable mutton off flavor. Mutton flavor reduction was achieved in the processed meat products by: (a) lowering mutton fat to a level of 10% or less, (b) using spices, smoking and/or curing, (c) substituting fat from beef or pork for mutton fat, and (d) the action of microbial starter cultures. The effects of iron, temperature, and presence of botulinal spores or sodium ascorbate on depletion of nitrite level were determined in meat and model systems. Higher temperature and presence of botulinal spores definitely increased nitrite depletion in a meat system. Added hemoglobin also significantly increased nitrite depletion, while ferrous iron and ferric iron did not significantly decrease nitrite level in a meat system. High temperature and presence of sodium ascorbate increased nitrite depletion in a model system.
