Using proteinase negative variants of Streptococcus cremoris UC310 or UC320 to manufacture cottage cheese, theoretical yields were increased 1.97% and 1.56% respectively when compared to the theoretical yields of the proteinase positive parents. Yield differences were strain dependent and differences between positive and negative variants were not manifest with strains of UC73 and UC97. It was necessary to produce bulk culture using pH control and to add sufficient nitrogenous stimulant to provide carry-over stimulant into the cheese milk. The effect of added iron on the growth of Clostridium botulinum type A in a chemically defined medium was studied. Growth of C. botulinum was supported by an iron level of 0.05 ug/ml with maximum growth observed at a level of 3 ug iron/ml.
Electron paramagnetic resonance (EPR) studies were conducted to detect the presence of iron-sulfur centers and iron-nitric oxide complexes in untreated and nitrite treated cell-free extracts of C. botulinum type A. The effects of whey-based and milk-based starter media, and low concentrations (0.02% each) of citrate, phosphate and calcium upon various milk coagulation properties were measured. Samples inoculated with milk-based starter medium had shorter coagulation times, faster rate of curd formation, and greater final curd firmness than those inoculated with externally neutralized whey-based starter. Starter medium treatment was statistically interacted with calcium for coagulation time and rate of curd formation. Citrate addition caused longer coagulation times, slower rates of curd formation, and weaker final coagula. Citrate interacted with calcium and phosphate for several of the parameters measured. Pediococcus acidilactici as a lactic acid producer, and sucrose were added to breakfast strip products in order to reduce added levels of sodium nitrite and sodium chloride and yet limit the growth of Clostridium botulinum and inhibit toxin production. Sucrose at 0.4 or 0.9% with P. acidilactici at 1.0 x 108 cells/g were added during preparation of breakfast strip products prepared with combinations of 40 or 80 ppm sodium nitrite and 1.0 or 2.0% sodium chloride. A number of immune abnormalities have been found in epileptic patients treated with antiepileptic drugs (AED). The alterations seen range from mild suppression of immunoglobulins to severly impaired humoral and cellular immunities. There is evidence for both drug effects and genetic or acquired factors as contributors to these abnormalities. In order to examine the basis for immune abnormalities in patients with epilepsy, a number of experimental designs were employed: clinical studies, in vitro studies, and use of an animal model.

The seasonal feeding behavior, forage preferences and body weight responses of goats were studied under three densities of woodland (called caatinga), and under three stocking rates. The experiment was located in the semi-arid tropics of northeastern Brazil at 3 42' South latitude, and 40 21' West longitude at an elevation of 75 meters. Mean annual precipitation of the area is 832 mm.
Removing the shrubs and trees increased yields of herbaceous only on partially-cleared sites. Goats gained body weight (kg BW/ha) during the wet season, with the cleared treatment showing the best body weight response per unit of land. However …

Although several writers have emphasized the habit-like characteristics of bulimia nervosa, no study has investigated the extent to which bulimia responds to treatment specifically for habit disorders. Habit reversal is a general treatment plan which teaches individuals to regain lost awareness of all aspects of a habit. The habit is then interrupted at the earliest movement in the chain by a physically competing response. Habit reversal (Azrin & Nunn, 1973) has been effective in treating other habits (e.g., stuttering, tics, bruxism). In the present study, habit reversal was adapted for the treatment of bulimia.

The Model A and Model C Title I evaluation options were compared by using both options to measure the effectiveness of handicap intervention in a Head Start program. Two hundred three children in Jackson County (Oregon) were pretested with the Developmental Indicators of Learning Test (DIAL), the Peabody Picture Vocabulary Test (PPVT), the Visual-Motor Integration Scale (VMI), and the Carrow Elicited Language Inventory (CELI). The 43 children who scored below the predetermined cut-off level were placed in a six-month intervention program. An attempt was made to determine the effect of overall indispensible amino acids (IAAs) level on growth rate and efficiency of broiler chicks. There were two overall levels: the low (8.33% IAA, 17.6% CP containing all IAAs at the minimum requirement found in preliminary studies), and the high (10.77% IAA, 21.5% CP with IAAs increased by 28%). Both diets contained 13.7 Megajoules ME (3277 Kcal) per kilogram.

Forty-eight Holstein cows at Utah State Dairy Farm were blocked statistically according to date of calving, previous milk production, and numbers of lactation at parturition. The cattle were assigned randomly to one of four treatments within blocks. The four treatments included a base ration (control, treatment #1), base ration plus .8% of sodium bicarbonate (treatment #2), base ration plus .4% of magnesium oxide (treatment #3), and base ration plus both .8% of sodium bicarbonate and .4% of magnesium oxide (treatment #4). Forty-four alfalfa hays from different cuttings, maturities, and locations were fed to sheep in a digestion study. Subsamples of the hays along with corresponding fecal samples were ground and analyzed for dry matter, (DM), organic matter (OM), crude protein (CP), acid detergent fiber (ADF), neutral detergent fiber (NDF), and permanganate lignin. In vivo digestibility (IVDMD) were also determined fro each hay.
The hay and fecal samples were scanned with a near infrared reflectance spectrophotometer. Chemical and digestible data for each hay and fecal sample were entered into the computer and separate multiple regression equations developed.

A buffered growth medium was developed that sustained a significantly greater concentration of various strains of Streptococcus lactis and Streptococcus cremoris than did milk. The active buffering ingredients of this medium were magnesium hydroxide, ammonium and sodium salts of phosphate and citrate. This medium was entitled Lactic Culture Buffered Growth medium (LABGRO) and possessed about 8 times the buffering strength between pH 6.6 and 5.1.

Protein recovery and coagulation properties of five commercial and fractionated milk clotting enzymes were studied. The fractionated enzymes were Sephadex G-100 fractions of the commercial enzymes. Milk clotting activity of each fraction was tested using Berridge substrate. All fractions from each preparation which had milk clotting activity as measured with the Formagraph were collected and pooled. These samples and the original enzyme preparations were used to coagulate milk. Percent of protein lost in whey was determined by Kjeldahl. Coagulation was followed using a spectrophotometer monitoring changes in apparent absorbance at 600 nm. Curd protein yields using the five original enzyme …

This study was conducted to evaluate several forms of equations for predicting Cheddar cheese yields based on the fat and protein content of milk and moisture content of cheese. Production and quality control data from a Cheddar cheese plant for one entire year was used. This included the pounds of milk that went into each vat of cheese, yield of cheese from each vat, cheese moisture from each vat, and fat and protein percentages of the milk.

From Cache Valley Dairy Association in Smithfield, Utah, milk from two to three cheese vats plus the corresponding Swiss cheese trimmings, salted cheese, and whey were sampled each week from October 1981 to October 1982. The weights of the Swiss Cheese were recorded. Milk samples were analyzed for fat and protein; cheese samples were analyzed for fat, protein, and moisture; whey samples were analyzed for fat.

An enzyme immunoassay specific for several β-lactam antibiotics rather than individual antibiotics was investigated. The goal to develop an enzyme immunoassay for analysis of a whole class of compounds at one time is different than the goal of most enzyme immunoassays which desire specificity for drugs or hormone levels. Detection of the presence of all β-lactam antibiotics is wanted and identification of specific antibiotics is not needed.

The objective of the study was to ascertain whether some infant formulas provide sufficient amounts of manganese and copper for adequate nutrition, Twelve piglets, within the first week of life, were divided by sex, litter and weight into two treatment groups. Both groups received concentrated Isomil, a soy-based infant formula and distilled water ad libitum. Isomil was analyzed and found to contain 1.05ppm manganese and .98ppm copper. The supplemented group received an additional 30.6mg manganese and 6.76mg copper per can (388ml) of concentrated Isomil. Weight gains were not significantly different. A modification of a linear diffusion test for measuring milk clotting enzymes at concentrations of 1 x 10-4 to 1 x 10-1 chymosin units/ ml was developed to permit quantitative assay of porcine pepsin in Cheddar cheese with a standard deviation of 6%. The amount of porcine pepsin retained in Cheddar cheese curd was dependent on pH of milk at setting. Milk at pH 6.6, 6.4, 6.2, and 6.0 was set with porcine pepsin, acidified with lactic acid and glucono-~-lactone and made into Cheddar cheese. Cheddar cheese was made by the traditional 4.5-h method from three experimental lots of milk, each standardized to casein/fat ratios of approximately 0.64, 0.67 and 0.70. The effect of casein/fat ratio on milk fat recovery was determined. The effects of milk composition on curd firmness at cutting, cheese composition and resulting yield of cheese were evaluated. Correlations between milk constituents and various cheese components were obtained. Milk fat recovery was unaffected by casein/fat ratios within the limits of 0.64 and 0.71. To date there have been no complete reports of the nutrient intakes of persons with Type I diabetes mellitus who use continuous subcutaneous insulin infusion (CSII) pumps. The purpose of this study was to describe the sample population and to determine the nutrient intake of adult Type I diabetics from the Salt Lake City, Utah area, who use CSII.

A rugged and sensitive instrument "Vatimer" was developed to evaluate the coagulation properties of milk in cheese vats. Microvolt signals from the instrument varied with standing-wave motion of milk, forces arising from coagulation, curd firming, curd syneresis and also clean-in-place spray forces. Curd firmness at cutting varied three to four fold in commercial Cheddar cheesemaking operations.
The Formagraph instrument was used to select individual cow milk samples with good and poor chymosin-coagulation characteristics from the Utah State University Holstein herd. The influences of dietary deficiencies of folic acid or zinc on rotaviral disease infant mice were studied. Preliminary studies indicated that bovine and simian rotaviruses, but not porcine rotavirus, caused diarrhea in infant mice. Bovine and porcine rotaviruses were not, however, sufficiently infectious to replace murine rotavirus in studies utilizing the murine model. It was also determined that murine rotavirus purified by a cesium chloride gradient was highly infectious and useful for subsequent studies on nutritional influences of rotaviral disease. Clearing of trees from the so-called caatinga woodland that characterizes the vegetation of the semi-arid region of northeast Brazil offers possibilities for increasing forage production. This research analyzed the first-year effects of clearing caatinga on dry season forage for goats and sheep. In addition, factors affecting litter decomposition on cleared and uncleared caatinga were assessed to evaluate the viability of deferring grazing of forages during the wet season for use later in the dry season.

A computer model for use in predicting the impact of various improvement options on command area expansion of a deep tubewell irrigation system has been developed. A field study was conducted on 11 selected deep tubewells located at two sites, namely Dhamrai and Thakurgaon, in Bangladesh to collect necessary physical data to provide irrigation engineering insight and a basis for testing and application of the model. Cotyledonal- or transverse-cracking (TVC) in certain cultivars of snapbeans, Phaseolus vulgaris L., seeds, clearly evident during germination, seriously places affected seedlings at a competitive disadvantage. TVC is an inherited trait and occurs across cell walls of cotyledons rather than along cell walls. Thus, it might be hypothesized that internal pressure resulting from swelling of storage proteins during imbibition might account for cellular rupture. Water was applied to swaths of cut alfalfa forage with oscillating sprinklers to stimulate rain damage to field drying alfalfa hay to determine the changes in chemical composition, loss of yield, and acceptability of rain damaged hay to sheep. An additional objective was to develop models to estimate yield losses form experimental hay. The experimental hay was prepared with a 2x2x4x4x2 factorial design. Thirty-five range cows of various breeds were obtained for the study. Body measurements taken were live weight and hip height and all cows were condition scored for level of fatness. The cows were slaughtered and the following morning several carcass measurements were taken and the plate was removed from the left side. These plates were boned and the remaining flesh ground for chemical analysis of percent carcass fat. Regression equations were calculated for estimating percent carcass fat from condition score, weight:height ratio and hip height (R2=.765). Two biological types of cows, straightbred Herefords (HxH) and Simmental-Hereford crosses (SxH), of similar body condition were individually fed over a 10 week period to compare the biological types for maintenance and to determine the influence of milk production potential and of size. Cows were nonlactating and in the last part of the first trimester of pregnancy. During the first 5 weeks of the feeding experiment, one-half of each type was fed 75% of estimated maintenance while the other half was fed 125% of estimated maintenance. Twenty-six range beef cattle ranches in southern Utah were surveyed by personal interview to obtain production data. The data were used to characterize the level of production efficiency in terms of calving rate, weaning rate, weaning weight, and net weaning weight in these operations; and to identify factors associated with differences in productivity.
The data revealed that productive efficiency was generally lower than the potential.
Mean calving rate of cows exposed for breeding was 83.4%. Stepwise regression involving calf death losses at or shortly after birth and heifer replacement rate accounted for 98.3% of the variance in calving rate. Calving …
