One of the principal fertility problems of calcareous soils is the lack of available phosphates. The factors which control this availability are not completely understood. One hindrance to the solution of the problems involved results from confusion of the concepts of solubility and availability. Availability is the net effect of the chemical state of a plant nutrient element and the ability of the plant to utilize the forms of the element present under the existing chemical and physical environmental conditions. Salty soils are recognized as an ever increasing problem connected with irrigation agriculture. Millions have been spent by state, federal and private agencies on technical research in an attempt to solve this problem. A series of happenlngs in Salt Lake City during the early years of the reoent depression strongly Indlcate that certain relief clients were, at that time, more or leas chronic trouble makers. They frequently threatened and sometimes inflicted bodily harm on social case workers; they inflicted riots, held protest meetings and wrote protest letters to state and national officials. A check-up on the addresses of these clients showed that the majority lived in the same or near-by areas.

Comparison, of dairy breeds in most of the literature is concerned with listing numbers of cows in each breed, milk and, butterfat production and average butterfat test per cow. Table 1 shows the total distribution of dairy cattle throughout the United States and the relative distribution in the various areas. This table shows the wide difference in popularity of the various breeds in different areas. In the North Atlantic States the Holstein is definitely the most popular breed whereas dairymen in the South Atlantic States and in the South Central States prefer the Jersey breed.

The importance of an accurate measurement of fat in milk deliveries is fully appreciated by most producers and plant operators. Since milk is purchased on a fat basis, the accuracy of the procedure used in sampling and testing the milk has often been questioned by both the buyer and seller.

Cereal grains were known to be notably deficient in the anti-rachitic principle even before the discovery of vitamin D. Clinicians had associated a type of rickets of infancy, characterized by an over-weight, flabby, bowlegged condition, with a diet consisting mainly of cereals. Mellanby (1) in 1921 concluded that this type of rickets is induced by overfeeding with carbohydrates. He also showed in the same report, however, that oatmeal, although it contains less carbohydrates than the other grains tested, possesses a special tendency toward rachitogenesis.

Since it is the business of nutrition to maintain health and prevent disorders, leaving the cure of disorders to the medical profession, this study deals with the calcium and phosphorus metabolism of normal children and avoids going into the pathological phases, taking up rickets and tetany only in so far as prevention is concerned.

The flavor, quality and composition of market brick cheese varies greatly. Its moisture content often ranges from 37 to 43 per cent. The flavor may be similar to Limburger or it may even resemble that of Cheddar. Such a great variation in a specific food product tends toward disappointment for the consumer.
