Mentoring has been recognized as an important relationship in a variety of circumstances. This study was conducted for the purpose of determining the perceived benefits or disadvantages of a mentor relationship and identifying characteristics of the relationship. Another objective was to explore to what extent the nature of the mother/daughter relationship functions as a factor that makes the choice of a mentoring pattern more likely.
The study sample consisted of 47 females, 12 graduate students and 35 assistant or associate professors on the faculty at Utah State University. The subjects completed several mother/daughter inventories, a mentoring inventory, and a personality …

The present research measures the role of exchange rate changes in explaining variations of sugar and rice trade. As background for this research, monetary, fiscal, and exchange rate policies of the Dominican Republic since 1970 are reviewed.
The theoretical framework describing the relationship between exchange rate changes and sugar and rice trade has been tested empirically using the Dominican Republic's annual data for the period of 1970-1987. Regression analyses on the import of rice and export of sugar are estimated.

Root exploitation of enriched soil microsites was examined for the tussock grasses Agropyron desertorum and Agropyron spicatum and the shrub Artemisia tridentata. Two mechanisms of exploitation of the microsites were examined: root proliferation and changes in nutrient uptake capacity. One day after nutrient solution was applied to small soil patches, the mean relative growth rate of Agropyron desertorum roots in enriched patches was two to four times greater than for roots of the same plants in soil patches treated with distilled water. In Somalia, camel (Camelus dromedarius) survivability and milk production has been higher than for other domestic livestock and contributes substantially to the subsistence of Somali pastoralists. The objective of this research was to study management, foraging behavior and nutrition of camels in their natural habitat to determine how production continues under seasonal nutritional stress.
Management systems of Ceeldheer pastoralists are based on available natural pasture and water. The natural rotation grazing system maintained an ecological equilibrium in the District.

Methods currently used to determine iron bioavailability have disadvantages for both the subjects and researchers involved. One safe and simple method that needs further evaluation, the serum iron absorption method, involves an initial blood drawing, dosages of iron, and blood drawings taken at intervals thereafter. Generally, the rise in serum iron or area under the curve is used to determine iron uptake. The Mozzarella cheese market is growing rapidly. Major concerns with cheese meltability and color have arisen in the fast food industry. Pre starter culture was used in this study to improve the physical properties of Mozzarella cheese. Three tests (stretch test, melt test, and browning test) were modified to evaluate the quality of cheese.

Three batches of milk were ultrafiltered to 60, 65, or 70% volume reduction before diafiltration. Starting diafiltration at 70% volume reduction took less time and water without affecting nutrient recovery.
Whole milk was heated to 60, 72, and 82°C for 16 s. Milk representing each heat treatment was divided into three batches, one unacidified (pH 6.6), the others acidified to pH 6.2 and 5.8. The milk was ultrafiltered, diafiltered, and concentrated to 5x (80% volume reduction). Retentate was inoculated with .5% lactic culture and incubated at 28°C to pH 5.1. Bovine plasmin activity was measured on H-D-valyl-L-leucyl-L-lysyl-4-nitroanilide by following absorbance changes at 405 nm. Steady-state kinetic parameters Vmax, Km, KI, and KI' were estimated. Bovine plasmin is competitively inhibited by casein and has a Kcat of .0158 ΔA405/min/nM, Km of .107 mM substrate, and KI of .86 mg/ml casein. Bovine plasmin can be measured directly in bovine milk without interference from casein.

Genetically enhanced high-carotene Beta III hybrid carrot was compared to a commercial carrot cultivar, Nantes Coreless, for carotene content and macronutrient composition. Beta III contained more than twice the total carotene content of Nantes Coreless, with α-carotene/β-carotene ratios higher in Beta III. Total solids from protein, lipids, and carbohydrate were greater in Beta III than in Nantes Coreless. Beta III contained about five times the amount of sucrose and one-fifth the amount of glucose and fructose than Nantes Coreless or reported literature values.

This work reviews studies of bovine K-casein and specifically K-casein macropeptide. Properties of K-casein, its structure and heterogeneity, proteolytic activity of some milk clotting enzymes on K-casein, and K-casein sensitive bonds are discussed. Macropeptides of other species are also presented. The carbohydrate moieties of bovine macropeptide together with their biological and physiological functions are reviewed.
Macropeptides were produced by enzymic hydrolysis from whole casein solution using crystalline chymosin (EC 3.4.23.4). Trichloroacetic acid (final concentrations 2, 8 and 12%) was added after 5, 30 and 60 min of incubation to precipitate protein and inactivate the enzyme. The filtrate was then exhaustively …

X-ray flourescence (XRF) and atomic absorption spectrophotometry (AAS) measurements for manganese, iron, copper, and zinc were compared for 96 samples of 21 foods from different sources. Correlation coefficients were 0.94 for manganese, 0.99 for iron, 0.93 for copper, and 0.91 for zinc for XRF vs. AAS determinations.
Similiar comparisons were performed on 228 samples of fast foods purchased in Utah retail outlets. Correlation coefficients ranged from 0.91 for copper to 0.97 for iron and zinc. Comparisons of values generated by XRF for manganese, iron, copper, zinc, selenium, arsenic, and aluminum to values certified by the National Bureau of Standards indicated …

Effects of Fe and Se status on GSHPx activity and lipid peroxidation in liver and intestinal mucosa were studied. Rats were Se and Fe supplemented (+Se+Fe), Se-deficient and Fe-supplemented (-Se+Fe), Se supplemented and Fe overloaded (+Se++Fe) by intramuscular injection, or Se deficient and Fe overloaded (-Se++Fe) for 20d. Fe overloaded tissues had more Fe, but hemoglobin was unaffected. Liver and mucosal GSHPx activity was low in Se-deficient rats. Thiobarbituric acid reactive substances (TBARS) were higher in Fe overloaded and -Se++Fe vs +Se++Fe tissues. Mucosal TBARS was higher in -Se++Fe rats gavaged with CBrCl3. Thirty-two non-anemic children were assessed clinically, biochemically and anthropometrically at six months, one year and two years of age to investigate the relationship of iron status to mental and motor development. Using dietary history and dietary record instruments, dietary iron was estimated and compared to the National Food Consumption Survey (1985) and the Recommended Dietary Allowances (RDA) for corresponding age groups. The Bayley Scales of Infant Development (which assess mental and motor development) and the Caldwell Home Inventory (which evaluates the environmental stimuli) were performed and correlated with blood iron parameters, anthropometric measurements and dietary nutrient intakes.

Cecal coccidiosis, caused by the protozoan Eimeria tenella, may manifest as a devastating disease in young chickens and result in substantial economic loss for producers. The parasite progresses through a complex life cycle, exhibiting both asexual and sexual (gamont) stages of development. The utilization of composed caged-layer waste (CCLW) in diets for pregnant ewes fed cereal straw was evaluated. Five sheep were assigned to five diets containing, 0, 5.72, 11.37, 23.80, and 32.69% CCLW in a 5x5 Latin square design. Water intake, feed intake and feces output were measured. Feed and feces were analyzed for dry matter, crude protein, acid detergent fiber (ADF), neutral detergent fiber (NDF), organic matter, hemicellulose and minerals. Thus, nutrient digestibility and nitrogen balance could be calculated. Obesity is a prevalent and refractory disorder. This study consisted of a meta-analysis of research focusing on diet and exercise treatments and their impact on obesity related measures. Only studies that report data for periods of 6 months or more after treatment onset were included. Forty-four studies were analyzed. These were drawn from 16 previous reviews of the literature as well as several computer data bases.
Following are some of the tentative conclusions drawn: (a) diets consisting of improved nutritional quality yield superior results to restricted calorie diets; (b) flexible, self-directed exercise yields better results than more regimented exercise; (c) …

A prototype treatment developed to significantly reduce symptoms of stress among inservice teachers was tested in this experiment. Thirty participants selected for high stress levels were randomly assigned to treatment and control groups. They were assessed on environmental, personality, and emotional variables, using self-report and expert-judge measures, both pre- and posttreatment. The experimental treatment was holistic, incorporating all processes previously found to be related to reducing teacher stress. At posttreatment, the treatment group averaged 1.02 standard deviations lower on the stress measures than the control group. Significant differences in the posttest means, favoring the experimental group, were found for 23 …

The attempt to identify risk factors or correlates of intraventricular hemorrhage (IVH) has been constrained by conflicting research findings, changing hypotheses about the etiology of IVH, and by the exceedingly complex nature of this neurological disorder. Three experiments were conducted to assess the potential for using Spanish goats to manage Gambel oakbrush winter range, dominated by Gambel oak (Quercus gambelii), for mule deer (Odocoileus hemionus). Summer-time food selection of goats, effects on plant community composition, and consequent effects on mule deer nutrition and foraging behavior were examined.
An apparent preference for juvenile oak browse, and low use of oak twigs was observed. Selection for juvenile browse may have been facilitated by the retarded phenology of oak as compared to that of associated flora. This differential was maintained by repeated browsing. Animal performance, …

One hundred sixteen third- and fourth-service lactating dairy cows from five cooperating herds were used to compare the pregnancy rate of cows given Gonadotropin Releasing Hormone five minutes following insemination with pregnancy rate of control cows. In addition, milk production level, age at service and days in milk at time of service were used to compare pregnancy rates. The purpose of this study was to define the messages related to food preparation that are conveyed by women's magazines to homemakers as consumers during the post-World War II period, and to analyze any changes of those messages over time. A content analysis of food related articles and advertisements in representative issues of Ladies' Home Journal and Good Housekeeping magazines from 1947 to 1986 was conducted. Both manifest and latent content were coded and agreement between the two measures was analyzed.

The teratogenic potency of retinoid analogs was determined in Syrian hamsters and compared to the teratogenic potency of all-trans-retinoic acid (all-trans-RA, ED50 = 10.5 mg/kg). A total of 15 analogs having variations in the cyclohexene ring were evaluated following various amounts of single oral doses on day 8 of gestation. Retinoids containing a five- or six-membered ring were as teratogenic as all-trans-RA, provided they had sufficient lipophilic substituents on the ring. Several studies suggest that the administration of GnRH near the time of insemination improves pregnancy rates in cattle. It has also been reported that there is greater improvement in repeat-breeder animals than at first service. The mechanism for this observation has not been established. Twenty-eight lactating Holstein cows that returned to estrus after one or more inseminations from the USU Caine Dairy were used in the study. Four barren Holstein cows fitted with ruminal fistulas were assigned to each of two dietary treatments in a replicated 2 x 2 Latin square design. Treatments consisted of a basal ration and a basal ration plus 10g/d of a viable yeast culture (Saccharomyces cerevisiae). Cows were fed treatments for a 21-day adaption followed by a 7-day collection period. Total ruminal bacteria, cellulolytic bacteria and protozoa were unaffected by treatment. Feeding the viable yeast culture significantly increased ruminal acetic acid and acetic/propionic ratio. Diversionary feeding, artificial feeding designed to divert animals away from areas where they might cause property damage, was tested for efficacy in reducing fruit orchard browsing by big game animals during two consecutive winters in Utah. Strategically placed attractive feedstuffs lured deer to feed stations and reduced fruit-bud browsing (1st year, P < 0.07; 2nd year, P < 0.01). Blossom and apple numbers were greater (P < 0.05) on trees in the feed (treatment) orchard than in the no feed (control) orchard in each year. However, higher (P < 0.05) apple production on trees where browsing was excluded in the treatment orchards compared to the control orchards indicated that intercept feeding did not increase crop production. Tree periodicity and other factors affecting apple production masked the effect of diversionary feeding on crop yield.

The depauperate fauna of Newfoundland provides a limited prey base for marten. Only two small mammal prey species, Microtus pennsylvanicus and Sorex cinereus, were found in any abundance in the old-growth forests of the study area. Of these two, Microtus displayed population fluctuations typical of most microtines. Analysis of marten scats indicated that Microtus is a very important prey item to the marten with other food. items being of lesser importance particularly when Microtus are abundant.

The purpose of this study was to determine and evaluate the dietary intake of pregnant women living in this geographical area, evaluate how their diets related to their iron status, how their nutrient intakes compared with other studies, and how their iron status and diet affected infant iron status and development, as assessed by the Bayley Scale of Infant Development.
The study involved 32 pregnant women who were between 8 to 14 weeks gestation and 20 to 35 years of age. They were followed through pregnancy and their infants were followed until three months of age.

Two Experiments were conducted to investigate the effect of iron status and iron source on iron bioavailability using the rat model. Beef was proportionally mixed with spinach (Experiment I) or soy protein isolate (Experiment II) to test if meat enhances the absorption of iron from spinach or SPI. Five diets with the iron from meat:spinach (or SPI) ratios of 100:0, 75:25, 50:50, 25:75 and 0:100 were prepared and fed to rats. FeS04 was used as a reference. Ice cream mix was fermented with yogurt cultures of Streptococcus thermophilus and Lactobacillus bulgaricus to four different pH's then frozen in a batch ice cream freezer. A consumer panel of 120 people tasted samples of strawberry flavored product with pH's of 4.4, 4.7, 5.1, and 5.4 and commercial frozen yogurt as a standard. Results from the panel were used to predict a preferred pH of 4.9. Another panel of 181 people compared product at pH 4.9 with 10, 15 and 20% strawberry flavoring. There was not a statistically significant difference among levels of flavoring.
