The validity of the Homsey method for heme iron, modified Schricker and sodium pyrophosphate extraction methods for nonheme iron and atomic absorption spectrophotometry (AAS) and ferrozine methods for total iron were determined using spikes of hemoglobin, ground beef baked to different degrees of doneness, proportional beef liver:catfish mixtures and National Institute of Science and Technology reference materials.

The mean spike recoveries of 0.01g and 0.02g Hb in raw beef and raw chicken samples were 96.7% of the heme iron for the Homsey method, 97.9% of the total iron for the ferrozine method, and 85.7% of the total iron for the …

The purpose of this research was to determine the effects of heating (including heating to ultra-high temperatures) homogenized ultrafiltered whole and skim milks on whey protein denaturation and milk's subsequent rennet coagulation properties: coagulation time, curd firmness, and microstructure.

Whole and skim milk samples were ultrafiltered using a spiral wound ultrafiltration membrane system. Samples were preheated to 72°C for 58 s, held for 8 s then heated to 72, 89, 106, 123, or 140°C for more than 97 sand held for 4 s. Ice cream mix (12% fat, 11% milk solids nonfat, 12.5% sugar, and 4.5% corn syrup solids) was fermented with Lactobacillus acidophilus and Bifidobacterium bifidum. Half of the mix was heat treated at 82°C for 30 minutes and cooled to 40-41°C. The other half was warmed to 40-41°C and inoculated with the starter cultures. Both were made into ice cream and stored at -29°C. Survival of L. acidophilus and B. bifidum and of ẞ-galactosidase activity were monitored during 17 weeks of frozen storage. The development of an automated instrument employing reflectance colorimetry was described. Several models were designed, assembled, and programmed to perform microbial and enzymic tests automatically. Samples were prepared manually or automatically by a Zymate™ II robot. These samples were incubated during the tests to maintain an optimum temperature for reactions and microbial growth. During incubation, color changes of appropriate indicator dyes in the sample/reagent mixtures were measured intermittently, recorded, and compared to previously defined end points. The computer-controlled instrument received data that related time of color changes with the initial numbers of microorganisms or the enzyme activity of the samples. …

This study examined biological mercury removal from soil using mercury-resistant bacteria in soil microcosms. Mercuric chloride was used to artificially contaminate Kidman soil to mercury concentrations of 5 ppm and 10 ppm. Soil moisture content was maintained at three levels, 20%, 30% and 50%. Mercury resistant-bacteria were added to soil samples and the mercury removal rate was compared to control samples without added bacteria. Mercury removal rate was initially enhanced by the addition of bacteria. After 30 days, no difference was observed between samples and controls with initial mercury concentration of 5 ppm when soil moisture content was 20%. At …

Near infrared reflectance spectroscopy is routinely used for the analysis of quality components of feedstuffs. Near infrared spectrophotometers, coupled with a fiber optic probe, could enable direct measurements of the live animal. This study was conducted to characterize changes in the vulva and vestibule during the bovine estrous cycle using near infrared (NI) spectroscopy. Sixteen cycling Holstein cows were observed for estrus twice daily from 40 days postpartum for three estrous cycles or until conception was verified. Two greenhouse experiments were conducted to determine the amelioration effect of Ca salts (CaS04 and CaC12) on the growth of snapbeans (Phaseolus vulgaris L.) under sodium stress and to determine the effect of ion speciation on the uptake of Ca, Na, S04, and Cl by snapbeans.

In Experiment 1, the seeds were grown in styrofoam pots, with a growing medium of sand and vermiculite at a volume ratio of 3:1. The treatment solutions were 0 (Hoagland's solution), 20, 40, 60, and 80 mmolc/L NaCl or Na2S04.

Three greenhouse experiments were conducted with three phenotypes of alfalfa (Medicago sativa L.) obtained from a potassium (K)-deficient field and with their diallel crosses grown on low K soil. The first experiment was conducted to study the partitioning and broad-sense heritability of K and sodium (Na) between leaves and stems of the three phenotypes which were deficient in K and exhibited normal (N), marginal chlorotic (M), and white spot chlorotic (W) leaflets. The plasmids pDN211 and pDNll, isolated from the gene bank of the Rhizobium japonicum strain I-110, have been reported to complement two different Nif+ Hup· (nitrogen fixation positive and hydrogen uptake negative) mutants. A 5.9-kb Hindiii DNA fragment of the cosmid pHU52, isolated from the gene bank of R. japonicum strain 122DES, has been reported to code for the two polypeptide subunits of uptake hydrogenase. Small-ruminant production is an important part of the agricultural economy of northeastern Brazil. However, mild-to-severe undernutrition of livestock is an annual occurrence. Goats can tolerate the marginal forage conditions better than sheep, but the mechanisms underlying their superior tolerance are not understood.

An analysis of animal liveweights at the end of the year-long study indicated that reproducing mixed-race goats gained nearly twice (P<.05) the weight of reproducing hair-sheep of the Santa Ynez breed, and non-reproducing goats gained about 1.2 times more (P<.05) weight than non-reproducing sheep. Daily weight gains of lambs were less (P<.10) than those of kids for their first 80 days of life.

In the wet season, reproducing sheep and goats gained similar (P>.05) weight, while non-reproducing sheep gained more (P≤.05) than non-reproducing goats. Non-reproducing goats had greater (P<.05) forage organic matter intake (OMI) than the corresponding sheep in the two wet periods. In the late-wet period, non-reproducing goats had greater (P<.05) digestible energy intake (DEI) than corresponding sheep did but had similar (P>.05) digestible protein intake (DPI) as sheep.

Controlled environment experiments were designed to study the germination, seedling development, and defoliation responses of Chrysopogon aucheri and Cymbopogon jwarancusa to better understand their autecology and potential use in range improvement programs in Baluchistan.

In experiment 1, Cymbopogon jwarancusa had greater seed fill and viability than Chrysopogon aucheri. When incubated at six different alternating temperature regimes, seeds of Cymbopogon jwarancusa had greater cumulative germination at five temperature regimes and faster germination at the colder temperature regimes than Chrysopogon aucheri.

The effect of seasonal cattle grazing on a newly reintroduced population of California bighorn sheep (Ovis canadensis californiana) in Big Cottonwood Canyon, Idaho, was studied. The hypothesis that bighorn sheep avoid cattle was tested. The issue of avoidance between bighorn sheep and livestock is arguable. Some studies have found that bighorn sheep avoid cattle while others have found no response of bighorn sheep to cattle.

Commercial microbial milk clotting enzyme preparations were purified by immunoaffinity chromatography using purified antibody covalently coupled to porous glass beads as the column matrix. Commercial enzyme preparation diluted in 1 mM sodium acetate buffer at pH 5.0 was then biospecifically adsorbed to the column matrix by end-over-end mixing of the glass-antibody complex in the enzyme solution for 12 h at 5°C. The purpose of this study is to provide a better understanding of the coping strategies used by dairy-farm couples. The independent variables of size of farm, where the respondents grew up, off-farm employment, age, amount of formal education, and debt-to-asset ratio of the farm are analyzed to determine their impact on the use of coping strategies by the dairy-farm husbands and wives.

A sample of 116 dairy farm-couples was drawn from five counties in Northern Utah. The farm husbands and wives were each interviewed separately using a structured questionnaire.

The data for this study were obtained in October 1989 through the use of a 128-item questionnaire given to students attending an alternative high school in Ogden, Utah. The Rosenberg Self-esteem Scale was included as part of the questionnaire. A total of 166 usable questionnaires were received from the students.

The objectives of this research were to determine if relationships between self-esteem, race, gender, and religion and time use could be detected in at-risk adolescents. The history of Chinese restaurants in the American West shows that Chinese food became a part of the social and cultural realities for Chinese people, especially in the earliest years, partly because regional food helped maintain regional language and dialect. Beyond that, it also demonstrates how restaurants--even more than other service industries such as laundries--provide a living context in which Chinese met non-Chinese, and where the non-Chinese could become acquainted with Chinese art, eating customs, regional cookery, embroidery, and even family life. This research was conducted to quantify short- and long-term effects of atmospheric carbon dioxide on wheat. Growth, development, and yield of the spring wheat cultivar Veery-10 were measured in response to CO2 concentrations of 340 (ambient), 1200, and 2500 μmol moI-1 of CO2 air. These 3 CO2 levels were chosen to provide a control group, a predicted optimal CO2 environment, and a potentially toxic CO2environment, respectively. In two experiments, second-order conditioned taste aversion techniques were employed to develop aversions in rats, with a geotactic-excitation procedure as the independent variable. Periodic tilting of an experimental apparatus resulted in angular orientation changes of all subjects located within compartments of the chamber. The effect was excitation of geotactic behaviors, expressed as locomotor activity within the confines of these compartments.

Individual variation in survival and behavior of American marten (Martes americana) was studied in relation to disease, prey fluctuation, and clear-cutting from 10 January 1986 through 20 August 1987 in Newfoundland, Canada. Thirty-seven of forty marten captured on the study area were telemetered and monitored for part or all of the study.

Marten mortality was concentrated in two intervals, fall 1986 and late winter 1987. Mortality during fall 1986 was attributable to encephalitis, while marten deaths during late winter 1987 resulted from predation and starvation attributable to the prey decline. Milk coagulation consists of four overlapping phases: enzymic hydrolysis, micelle aggregation, gelation and syneresis. The objectives of this study were to determine the effects of added CaCl2 on milk coagulation and the relationship between enzymic hydrolysis and micelle aggregation with substrate at different concentrations.

Addition of CaCl2 to milk is widely practiced in industry and in laboratories. This changes calcium concentration, pH and ionic strength. It is impossible to separate these three variables and investigate each one independently.

Fasting and ketogenic diet prevent seizures in epileptic children, magnesium-deficient rats and other animal models of seizure disorders. This effect has been attributed to increased levels of circulating ketone bodies. The purpose of this study was to determine the role of serum ketone bodies, measured as beta-hydroxybutyrate (BHB), in preventing audiogenically-induced seizures in weanling rats fed a magnesium-deficient diet for 17 days.

Sixteen lactating regularly cycling dairy cows (14 primiparous, 2 multiparous) were used to determine the effects of somatotropin administration on basal, peak, and pulse luteinizing hormone concentrations during the breeding period. In addition, the effects of somatotropin administration on the pituitary response to a gonadotropinreleasing hormone challenge was studied. The experimental group received daily somatotropin treatments (25mg) for 24 days. The control group received a daily placebo. All animals were treated with three injections of prostaglandin F2-alpha (25 mgjtreatment) for estrus synchronization. The relationships of estradiol-17-beta, progesterone, and LH in the early postpartum St. Croix ewe were monitored during the breeding season in 1988. A second group of non-postpartum, ovariectomized St. Croix ewes were used to determine non-ovarian levels of progesterone for comparison. Results of this study indicate that:

  1. The short duration rise in progesterone exhibited by some ewes is indicative of an ovulation.
  2. Ewes that do exhibit a short luteal phase prior to the first "normal" luteal phase have a longer period from parturition to the first "normal" luteal phase.

Heifers should represent the greatest genetic potential within a dairy herd. To maximize this potential, heifers must be inseminated to proven sires, a practice requiring management changes on many dairies. Holstein heifers (n=115) were allotted to one of three groups to compare alternatives to daily estrous detection that may facilitate the management of a program of artificial insemination for heifers. Group 1 heifers (Controls) received no treatment but were observed twice daily for signs of estrus. Bovine somatotropin (bST) is a protein synthesized at the base of the brain and released by the pituitary gland into the circulatory system. BST is transported by the circulatory system and absorbed only by cells of target organs that possess cell surface receptors for the protein (11, 41). Its effect is initiated via a protein receptor initiation and cyclic AMP cascade. This effect on the cell continues well past the degradation of the bST molecule. The transition of Navajo Indian children from boarding schools to public schools has brought about the challenge of involving parents in their children's education. These people have previously been accustomed to having the education of their children left to the distant schools, with little opportunity for parental involvement. As a consequence, it is often difficult to get these parents to accept the schools' invitations to participate in conferences and other activities when parental involvement is important.

The effect of genotype on the occurrence of ovulation and estrus during the interval from lambing to ovulation accompanied by estrus (postpartum interval) was measured in White-Face and Black-Face ewes that lambed during the breeding season in 1986 and 1987. A group of St. Croix ewes was added to the study in 1987. The influence of lactation on the events of the postpartum interval was measured by comparing intact and mastectomized White-Face and Black-Face ewes. Underyearling Bear Lake sculpin exhibit a diel pattern of vertical migration throughout the pelagic region of Bear Lake (Utah-Idaho) until they are approximately 22 mm standard length. Individuals move from the bottom of the lake (5° C) during the day into the water column (13-16° C) at night. The migration, however, is not related to feeding. Although the dominant copepod in the water column, Epischura nevadensis, do undergo a similar diel vertical migration, stomach analysis of juvenile sculpin captured by trawling shows that they do not feed in the water column.
