The purpose of this study was twofold. First, it sought to provide a profile of child development laboratory schools across the nation. Second, because laboratory schools are believed to be model programs that provide appropriate learning environments for children, their parents, and for the professional training of teachers, it was of particular interest to examine whether laboratory schools were training Early Childhood Education students in ways consistent with the current research and policies in the field. Specifically, the practices of laboratory schools at two- and four-year institutions were compared.

This study recognizes the need to identify and prioritize critical issues facing families. The literature review identifies and documents a number of critical issues facing families in American society. Survey questionnaires, which contained an abstract version of 33 previously identified issues, were sent to a sample of 2,000 people in Utah. The sample was randomly selected from resident listings in Utah telephone books. The survey asked respondents to rate each of 33 issues on a scale of 1 to 10, 1 being the least urgent and 10 being the most urgent. These issues include childhood, economic, health, and elderly concerns. …

Although the impacts of livestock and human activities on riparian zones and associated wildlife have been well documented, little is known about the impacts that browsing by large native ungulates such as elk and moose may have. In the northern Yellowstone area, some willow stands experience intense browsing by elk and moose whereas others experience medium or very low amounts of browsing. Abnormal T lymphocyte reactions in both autism and Alzheimer's disease (AD) have been reported. This research investigated the possibility that these abnormalities may involve circulating antithymic antibodies. Plasma samples from autistic patients, AD patients, and normal-matched controls were tested for reactivity against murine thymocytes.

In the first of 3 studies results of the enzyme-linked immunosorbent assay (ELISA) were statistically significant for binding (P < 0.001) between antithymic antibodies in plasmas of AD patients and murine thymocytes. Binding (P < 0.05) in low dilutions (1/2.5 and 1/5} of autistic patient plasmas was also observed. In the second study, plasmas of neither autistic nor AD patients significantly inhibited DNA synthesis of thymic cells in the presence of interleukin-1 (IL-l} and phytohemagglutinin (PHA). In the third study, no significant increases (P > 0.05) in cytotoxic activities were detected using AD patient plasmas and both untreated and heat-treated autistic patient plasmas. After further testing, these heat-treated plasmas diluted 1/64 and 1/128 had increased cytotoxicities (P < 0.05) when rabbit complement was added, an indication that cytotoxicity of antithymic antibodies is complement dependent.

Three non-lactating Holstein cows fitted with rumen cannula were used to determine crude protein and dry matter rate of disappearance of two protein supplements: 1) soybean meal and 2) bypass protein blend by using the in situ bag technique. Rate disappearance (%/hr) was higher for soybean meal. Two collection periods were completed using 6 cows with a minimum of 21 d adaptation to the treatment top dressed on to the total mixed ration. Ruminal concentration of ammonia N, blood ammonia, and urea did not differ between treatments. Total concentration of volatile fatty acids was higher for bypass protein blend-fed cattle …

Twenty-four early to midlactation Holstein cows were allocated to one of three treatments. Treatments consisted of: 1) basal ration plus 60 g wheat bran per day per head (control); 2) basal ration plus 57 g yeast culture per day per head; 3) basal ration plus 57 g yeast culture plus 3 g Aspergillus oryzae per day per head. Feed intake and milk yield were recoreded daily and milk composition and body weights were recorded weekly. Feed and fecal samples were recorded weekly. The research concerning eating disorders and concomitant conditions shows that anorexia nervosa and bulimia nervosa are serious disorders that pose many diagnostic and therapeutic challenges to mental health and nutrition professionals. Most psychologists and nutritionists receive broad-based training that likely only superficially touches upon the importance of these diagnostic issues. Nevertheless, effective treatment planning requires that diagnostic issues and concomitant conditions be evaluated and incorporated into the diagnosis and treatment of eating disorders. Thus, there is an increasing need for specialized training in order to better evaluate and treat the complicated clinical picture presented by eating disorder clients.

A UHT-processed skim milk (85%)/orange juice (15%) drink was developed. Product integrity and stability were maintained by two methods. Proper homogenization of the blend before UHT processing stabilized a drink formulation containing .25% carboxymethyl cellulose and .025% carrageenan. Adjusting the pH of the blend (pH 6.3 and 6.5) resulted in a different stabilization. After 28 days at room temperature, settling of milk solids was 5.2% of volume height in the prehomogenized sample and 86.9% of volume height in the same blend that had not been homogenized prior to UHT processing. The effect of time on taste threshold was examined in 30 diabetics and 30 control subjects (ages 22-30) who had participated in a sensory study 14 years previously. Detection and recognition taste thresholds for sweet (sucrose), salty (sodium chloride), sour (citric acid), and bitter (quinine sulfate) were assessed using triangle testing. Food preferences related to concentration of the stimuli in model food systems were tested using a nine-point hedonic scale. Mashed potatoes were used as the carrier for different levels of salt. The nature of the cell surface components involved in donor cell clumping (Clu+) and the relationship of Clu+ to high frequency conjugal transfer of lactose utilization (Lac) in Lactococcus lactis subsp. lactis ML3 was examined. Lactose positive (Lac+), Clu+ transconjugants, containing a novel 104 kilobase Lac plasmid, were obtained by mating ML3 with LM2301. When used as Lac+ donors in second round matings, these transconjugants transferred Lac at high frequencies ranging from 10-2 to 10-4 transconjugants per donor CFU. The effect of ultra-high temperature processing by direct steam injection and room temperature storage of pH-adjusted and unadjusted 3X (volume reduction) skim milk retentate and the effect of storage at various temperatures of 3X skim milk retentate without pH adjustment on their ζ-potential, viscosity, and pH were determined. Pasteurized skim milk was concentrated to 3X by ultrafiltration. In the pH study portions of skim milk retentate were adjusted to pH 6.38 ± .02 with HCl and 6.85 ± .01 and 7.32 ± .02 with NaOH between ultrafiltration and ultra-high temperature processing. The pigments responsible for pink or red discoloration in cooked vacuum-packaged meat products {bratwurst (pork and beef), ground pork, and pork roasts} were investigated. In bratwurst, this study attempted to characterize the red pigment that appears upon refrigerated storage, and to determine the effect of pH, cooking and storage temperature, and sodium lactate on incidence of red discoloration. Myoglobin was identified in the exudate of samples with red discoloration. Myoglobin levels of cooked products were significantly lower in samples of low initial pH (5.5) or cooked to higher than normal internal temperature (74°C). Chapter I reviews current literature on gene transfer systems in lactic acid bacteria, how genetically altered microorganisms for food are presently regulated, and how nisin is used as a food preservative.

Chapter II investigates previous reports which linked genes for nisin biosynthesis and sucrose utilization (Nip+Suc+) to plasmid DNA in two well characterized L. lactis subsp. lactis strains. A processing procedure for the manufacture of directly acidified cottage cheese curd from 16% total solids ultrafiltered retentate was developed. The effects of preacidification of skim milk before ultrafiltration and heat treatment of retentate were investigated to improve the functional and sensory qualities of retentate curd.

Retentate directly acidified with phosphoric acid and glucono-delta-lactone to pH 4.7 formed a dense, rubbery curd that could not be handled well in a vat. A heat treatment of 71.1°C for 30 min applied to the retentate resulted in a curd with acceptable handling properties. However, this heat treatment caused the curd to shift …

A new product, pork sticks, was developed. Optimum shelf life and safety were major concerns associated with this product. Potassium lactate (3%) or citric acid (0.5%, 0.56%, 0.60% or 0.66%) was added to pork sticks to determine their effects on microbial growth, sensory evaluation, and shelf life when stored frozen (-20°C), refrigerated (2°C), or at room temperature (22°C). Yogurts were made from intermediate-high temperature (100, 110, 120, and 130°C for 4 or 16 s), ultra-high temperature (140°C for 4 or 16 s), and vat heat (82°C for 20 min) treatments of skim milk fortified to 5% protein by either ultrafiltration or the addition of nonfat dry milk (NDM). Whey protein denaturation in heated milks increased with temperature and holding time from indirect plate heating and was highest in vat-heated milks. Whey protein denaturation and yogurt water-holding capacity increased with protein levels in the fortified milks compared to skim milk. Cation-exchange fast protein liquid chromatography separated whole casein into β-casein A2, A1, and B, K-casein, αs1-casein, and αs2-casein fractions as well as γ-caseins and several unidentified peaks using a urea-acetate buffer at pH 5 and a NaCl gradient. The whole casein fractions eluted in the following order: breakdown products of β-casein and unidentified peaks; β-casein A2, Al, and B; additional breakdown products of β-casein and unidentified peaks; K-casein; αs1-casein; and αs2-casein. Researchers studying diet selection of ungulate herbivores have generally considered plant palatability independent of animals' dietary history. However, more recent studies demonstrate that experiences within the life of an animal strongly influence plant selection. We are beginning to understand how food preferences and aversions are formed through gastro-intestinal feedback. My research specifically examines factors that influence the formation of conditioned flavor aversions in the generalist herbivore, sheep.

Forty high producing early to mid lactation Holstein cows were blocked according to stage of lactation and previous two-week milk yield (experiment 1). Eight ruminally and duodenally cannulated nonlactating Holstein cows were used for experiment 2. The economics of ranches in the Zimbabwe Midlands, generating income from cattle, or wildlife, or both, were compared during 1989/90 to test the claim that wildlife ranching can generate greater profits than cattle ranching on semi-arid African savannas. Both financial (market) prices and economic prices (opportunity cost) were used.

Financial data were obtained from 15 cattle, 7 wildlife and 13 mixed ranches in four areas with wildlife and from 15 cattle ranches in two areas with sparse wildlife. Estimates of economic prices were obtained from official data.

The purpose of this study was to determine the optimum combination of various cattle production, range forage, and crop harvesting alternatives available to ranch owners and managers in Utah. While many promising alternatives are available, determining which alternatives to implement is difficult because the total ranch operation must be considered.

Subnivean prey appeared to be the primary reason for subnivean access point use by martens. A logistic regression was used to create a predictive model for differential access point use. Prey biomass in grams and percent ground cover of coarse woody debris (CWD) were used as variables in the model. Goodness of fit of the multivariate model was 0.216; biomass was significant al p = 0.0003, CWD was significant at p = 0.0718. In this dissertation I first examine the ability of individual plants in the field to garner localized soil nutrients. I then measure actual soil variability around perennial plants and use various statistics to quantify the scale and degree of that variability.

Soil patches on opposite sides of Pseudoroegneria spicata tussocks were treated with distilled water or a nutrient solution containing N, P, or K in three field experiments. When P was augmented in the enriched soil patches, rates of P uptake increased significantly for roots from enriched patches compared with roots in control patches. Ultrafiltered skim milk concentrated to 20-22% solids was hydrolyzed with a mixture of proteases from Aspergillus oryzae and an acid protease from Aspergillus niger. The enzyme preparation from A. oryzae did not produce bitterness, so the effects of its hydrolyzing action on the whipping properties of the retentate in liquid and powdered forms were examined. Its effect on the amount of soluble nitrogen in the powder was also determined. After inoculation of 250 ml retentate with .05% w/v enzyme, the samples were held in a 45°C water bath. Pretest data from a two-year project entitled "An Early Intervention Program for Parents of Young Children at-Risk" were collected and analyzed, in a sample of 2,191 low-income parents, for Head Start participation and baseline information. Respondents participating in the sample were from the states of California, Delaware, Nevada, South Carolina, and Utah. For their participation in the study, respondents received a free subscription to age-paced newsletters, which contained information about appropriate growth expectancies, nutrition, and guidance for their child of 36 months or younger. This dissertation involved the design and validation of the Obesity Cognitions Inventory (OCI) which was intended to quantify cognitions associated with obesity. An initial pool of 117 items was refined through expert ratings, a pilot test involving 59 subjects, and a major test and validation using 217 subjects.

The resulting 56-item instrument contains scales measuring five types of cognitions: Personal Control, Dietary Restraint, Cost-Benefit Beliefs, Health Knowledge, and Self-Concept. Studies were undertaken to investigate if gastric acidity and iron chelation to a meat component enhance nonheme iron absorption. Cereal meals, with and without added proteins, were gavaged into iron-deficient rats. The role of iron chelation was investigated by adding sodium phytate, an iron chelator implicated with decreased iron absorption, to the meals. The role of gastric acidity was investigated by treating the rats with cimetidine, which inhibits gastric acid production. In rats with normal acid production, beef, pork and chicken enhanced iron absorption when phytate had been added to the meals, suggesting a role for chelation in meat enhancement …

Absorption bands responding to changes in fat, protein, and lactose concentrations in milk were determined. The effects of milk fat variation and lipolysis on the infrared spectrum were studied.

Absorbances from 1283 to 1100 cm-1 correlated with fat, protein, and lactose concentration and showed a low response to milk fat variation and lipolysis. A Fourier transform infrared spectrometer equipped with an attenuated total internal reflectance cell was calibrated using these absorption band s, partial least squares statistics, and milk samples from herds in Minnesota. The purpose of this dissertation was to study factors affecting moisture distribution in 290-kilogram stirred-curd Cheddar cheese blocks cooled in stainless steel hoops. Uneven moisture distribution within blocks may create cheese with variable texture and flavor, which can be extremely costly to the producer. The effects of temperature, pH, and vacuum treatment on moisture distribution were investigated. Temperature, pH, moisture, and pressure profiles were presented.
