Various concentrations of ferrous and ferric iron solutions were held at room temperature for 60 min before they were assayed for ferrous iron, which may be unstable due to oxidation. The ferrous and ferric solutions (in pH 2 HCl) were maintained as such for 60 min without the use of chelators. There was no significant oxidation of ferrous iron. Also, four different levels of each ferrous and ferric iron were injected into proximal duodenal loops of rat intestine and uptake was determined at four different time intervals. The problem of age gelation in ultra-high temperature (UHT) sterilized milk retentate (ultrafiltered 3x concentrated) is investigated in this work. Transmission electron microscopy (TEM), utilizing the microcube encapsulation technique and protocols for immunolocalization of milk proteins, provides insight into the phenomenon of age gelation of UHT-sterilized, ultrafiltered (UF) milk retentate. Primary antibodies (specific for the native as well as the complexed forms of milk proteins) and secondary antibodies (conjugated to gold probes) are used to elucidate the positions of the milk proteins in various samples of milk from the stage of milking through UHT sterilization and storage for 12 months, …

Skim milk was ultrafiltered to three lactose/protein ratios and spray dried. The skim milk powder was extruded with pearled corn starch at different moisture contents, protein contents, lactose/protein ratios, and feed rates (control variables). Response surface methodology and a central composite in cube experimental design were used. This design required 30 experimental runs with 16 factorial points, 8 axial points, and 6 center points for replication. The purpose of this research was to investigate the effect of ultra-high temperature process parameters on age gelation of milk concentrate. Skim milk was concentrated to 2X (volume reduction) using reverse osmosis. The milk concentrate was preheated at 75 or 90°C for 20 or 50 s and UHT-processed at 138 or 145°C for 4 or 16 s. Sterilizing methods used were direct steam injection and indirect plate heat exchanger. The samples were aseptically collected in presterilized plastic containers and stored at 15 or 35°C. Processed turkey rolls were prepared with 1 or 3% whey protein concentrates WPC-50 (pH=5.80), WPC-60 (pH=4.53) and WPC-75 (pH=6.85} containing 50, 60 and 75% protein along with controls (phosphate and no phosphate). Control rolls made with 0.5% phosphate had the highest bind strength, and sensory evaluation scores. Only WPC-75 (1%) was acceptable as a binding agent and flavor enhancer. WPC-60 reduced pink discoloration of rolls, but flavor, bind and cohesiveness scores were unacceptably low. WPC-50 was not an effective binding agent. In general, rolls made with 3% WPC had lower scores for intensity of turkey flavor.

Seven chromium-containing complexes were tested for effects on blood glucose regulation, serum cholesterol levels, serum triglyceride levels, and body composition. The compounds included Cr picolinate, Cr chelidonate, chromate, Cr chelidamate, Cr arginate, nichrome, and Cr chloride.
The study was divided into two major sections, a rat study and a chicken study. In the rat study all seven chromium-containing complexes were tested. They were administered to the rats in four different testing periods at 1 ppm, 5 ppm, and 25 ppm of chromium. Methods of administration varied for each testing period. Two studies were conducted to evaluate the effects of milk solids on restructured and emulsified turkey rolls. the milk solids used were nonfat dry milk (NFDM), whey protein concentrate (WPC), and calcium caseinate (CC). Turkey rolls consisted of 100% breast meat or 90:10 or 70:30 breast-to-thigh, salt (1%), water (10%), internal or cluster fat (10%), and 3% of various milk solids (WPC, NFDM, CC).

The purpose of this project was to initiate development of a nonrefrigerated dairy dessert product. Milk was concentrated by pressure-driven filtration and then sterilized using ultra-high temperature (UHT) processing. Following sterilization, samples were aseptically inoculated with rennet to coagulate the milk, which was then stored at room temperature. These processing steps produced a dairy dessert that did not require refrigeration. I investigated the influence of total solids, milk fat, rennet dosage, storage temperature, and storage time on curd firmness and syneresis. This study used the 1987-88 USDA Nationwide Food Consumption Survey to investigate the contribution meat products make to intakes of nutrients at risk of inadequate or excessive consumption by women. The study is unique in that meat nutrients were extracted from mixed dishes, providing a more accurate picture of consumption. Cluster analysis was used to classify nonpregnant, nonlactating women 19 years and older based on their consumption patterns of total meat and individual meats (beef, poultry, processed meats, pork and seafoods) as percent of caloric intake.

I replicated a nesting study carried out 40 years ago in southern Utah to assess reasons for long-term population declines of mourning doves (Zenaida macroura) in the western United States. I compared current nesting patterns to similar data collected in 1952. I saw little difference in nest success and nest predation, but reproductive output and nest density decreased dramatically. The number of young fledged per pair of adults was only 64% of that estimated in 1952. A 1-2 week delay in the nesting season contributed to this decrease, but cannot explain it entirely. Tropical regions currently receive the highest global levels of solar ultraviolet-B radiation (UV-B, 280-320 nm) even without ozone depletion. Thus, the influence of natural, present-day UV-B irradiance in the tropics was examined for five tropical species, including three native rainforest tree species and two economically important species. Solar UV-B radiation conditions were obtained vi using either a UV-B excluding plastic film or a near-ambient UV-B transmitting film in a small clearing on Barro Colorado Island (BCI), Panama (9 ° N). During the eighteenth and nineteenth centuries, the xii Shoshones of Cache Valley evolved from scattered pedestrian hunter-gatherers to large, armed, mounted bands that hunted and gathered from the Great Basin to the Plains. Trade with European Americans helped initiate this evolution. However, Shoshones did not respond passively to the presence of European Americans. Shoshones actively sought change, and incorporated trade goods into their culture within a Shoshone context. They adapted to each wave of European Americans that they encountered. When Mormons dispossessed them of their land, Cache Valley Shoshones resisted by going on the offensive. Finally overwhelmed, the remnants of …

I studied nutrient reserves, digestive organs, molt intensity, diets, and seasonal changes in food resources available to postbreeding adult male Northern Pintails (Anas acuta) and Cinnamon Teal (Anas cyanoptera) in marshes near Great Salt Lake, Utah. Total lipid and protein reserves of Northern Pintails were lower during the flightless period than before or after. For Cinnamon Teal, total protein was lowest during the flightless period, and total lipid showed a similar trend. Total mineral did not differ among plumage classes in either species. Six nonlactating Holstein cows fitted with rumen and duodenal cannula were used to determine the efficacy of pH sensitive fatty acid polymer encapsulation as a means protecting amino acids from rumen fermentation and as a post-ruminal amino acid delivery system. The cows were arranged in a 2 X 2 factorial in a Latin Square design. Treatments were 1) the basal ration, and 2) basal ration plus rumen-protected lysine, methionine, and threonine at 10 g each per day.

The Relationship Between Perceived Parenting Styles And Adolescent Locus Of Control And Self-Concept, Lisa Ann Mcclun

Relationships between adolescents' perceptions of their parents' responsiveness and demandingness, adolescents' locus of control orientation, and adolescents' self-concept ratings were investigated. Subjects included 198 students from a middle school in northern Utah. Subjects were given the Nowicki-Strickland Internal-External Control Scale for Children, the Harter Self-Perception Profile for Adolescents, and the Perceived Parenting Style Survey.
Results indicated that subjects who perceived their parents as being authoritative had significantly (p < .001) more internal locus of control scores than subjects who reported either the permissive or authoritarian styles. Also, self-concept scores were significantly higher (p < .001) for the authoritative group than the authoritarian group on the Self-Perception Profile for Adolescents subscales of Scholastic Competence, Social Acceptance, Physical Appearance, Behavioral Conduct, Close Friendship, and Global Self Worth. The permissive group reported significantly lower scores (p < .05) on the subscales of Scholastic Competence and Behavioral Conduct. There was also a significant negative correlation (p < .001) between locus of control scores and the subscale scores on the Self-Perception Profile for Adolescents.
Although there were some limitations in the study methodology, the significant differences found between the groups indicated that the authoritative parenting style positively correlates with higher self-concept and …

Technological advances in neonatal care have dramatically improved the survival and disability rates among low birthweight infants (LBW). One common factor associated with later problems among these babies is intraventricular hemorrhage (IVH). A meta-analysis was conducted among LBW infants with and without IVH to determine developmental outcome. More than 450 studies were located. Only 125 studies met inclusion criteria.
Mean effect sizes were computed by comparing the LBW group to either a fullterm control group or to test norms. When compared to fullterm children, LBW children scored worse in all areas except gross motor skills.

The effect of ultra-high temperature (UHT) on production of polycyclic aromatic hydrocarbons (PAHs) on the surface of beef steaks was determined. Beef steaks were treated with five treatments, raw, UHT, UHT/grill marks, UHT/grill marks/microwave, and charcoal grilled. Four PAHs, benzo[a]pyrene, benz[a]anthracene, benzo[b]fluoranthene, and benzo[k]fluoranthene, were quantified. High performance liquid chromatography (HPLC) and gas chromatography (GC) were used to purify and analyze the PAH extracts, respectively. Levels of PAH found on charcoal-grilled steaks were higher than those observed in the literature. A balanced incomplete block design was used to analyze the data. Whey permeate was anaerobically digested in laboratory scale upflow anaerobic sludge blanket reactors. Nine hydraulic retention times between 5 and 0.2 days were examined with a fixed influent concentration of 10.6 ± 0.2 g COD/L.
Chemical oxygen demand removal efficiency ranged from 99.0 to 18.9% and maximum production rate of methane gas was 2.67 L/L/day at a hydraulic loading rate of 12.97 kg COD/m3/day. About 70% of the chemical oxygen demand removed was converted to methane.

Variables affecting the physical properties of Mozzarella cheese were investigated. The effects of various milk-clotting enzymes were examined. The type of milk coagulating enzyme used played a significant role in determining physical properties of direct acid Mozzarella cheese. Samples of wheat that had been stored in homes up to 48 years were collected with information about age and storage conditions. Germination, weight per bushel, protein, moisture, grade, and aroma were investigated. Volumes of gluten balls and bread made from ground whole wheat samples were measured. Sensory attributes of bread were evaluated by Quantitative Descriptive Analysis (QDA) for eight flavor and seven texture characteristics. Because of the tremendous variation in samples, generalizations on cause and effect are difficult to make. No one criterion was a perfect indicator of quality. To study the effect of NaCl stress on gene expression in alfalfa (Medicago sativa L.), greenhouse and laboratory experiments were conducted with 22 cultivars during germination and post-germination growth. The ability of alfalfa cultivars to germinate at the different NaCl concentrations was not related to their postgermination performance (salt tolerance) under those conditions.

Ingestion and dispersal of seeds of desirable species by domestic livestock is potentially important as a range improvement practice, but the passage of seed by livestock has only been studied in a fragmented way, particularly for species adapted to rangelands of western North America. The objectives of this research were to examine the effects of different periods of exposure to in vitro and in vivo digestion processes in cattle on the germinability of several grass species, and determine if the in vitro incubation technique is a good predictor of seed fate following passage through the ruminant digestive tract.

There are many factors that affect syneresis, but measured results vary because of inaccuracies in measuring techniques. To better control syneresis, an accurate mathematical description must be developed. Current mathematical models describing syneresis are limited because of inherent error in measuring techniques used to develop them. Developing an accurate model requires an accurate way to measure syneresis.

The effects of grazing and moisture availability on the competitive interactions of intermediate wheatgrass (Thinopyrum intermedium (Host) Barkw. & D.R. Dewey) and western wheatgrass (Pascopyrum smithii (Rhydb.) A. Love) were examined under a short-duration grazing system in central Utah. The fate of tiller cohorts was observed at approximately monthly intervals at the interface between patches of these two rhizomatous grasses and in monospecific stands. The effects of short-duration grazing, clipping of western wheatgrass following grazing to achieve levels of utilization equivalent to that of intermediate wheatgrass, irrigation, and removal of the competitor were assessed in terms of the …

This study was conducted to assess the effect of nutrition education utilizing computerized dietary analysis on nutrition knowledge, dietary compliance, nutrition status, and quality of life in hemodialysis patients. Twenty patients of the Bonneville Dialysis Center in Ogden, Utah voluntarily agreed to participate in this six-month study. All participants completed quality of life assessments, the Beck Depression Inventory© (BDI), and a nutrition knowledge assessment pre- and post-study. Patients in the treatment group (n=12) completed monthly 3-day food records which were analyzed by Computrition® nutrient analysis software. Osteoporosis is responsible for approximately 1.3 to 1.5 million fractures per year in the United States. The risk of osteoporosis increases with age, especially among postmenopausal women, and with lifestyle factors such as the use of certain drugs, heavy alcohol consumption, cigarette smoking, high caffeine intake, and sedentary living. Genetic factors that may influence susceptibility to osteoporosis include a positive family history of the disease, or a low weight - for-height ratio. In some cases, race and geographic location may increase or decrease the risk of osteoporosis. The purpose of this study was to examine children's perceptions of their alternative child care environment without constraining thought processes or suggesting appropriate answers. The Child Care Game Assessment (CCGA) was developed to meet these goals. The CCGA is a role-plating, game-like assessment for preschool children. It uses a model of the child's alternative care environment and allows children to act out portions of a typical day.
The CCGA was administered to 57 four- and five-year-old children attending non-parental child care. Twenty-one children (11 boys and 10 girls) attended Utah State University's Child Development Laboratory, a 10-hour-per-week preschool. Twenty-one children …
