The Triticeae tribe DUMORTER in the grass family (Poaceae) includes the most important cereal crops such as wheat, barley, and rye. They are also economically important forage grasses. Elymus is the largest and most complex genus with approximately 150 species occurring worldwide. Asia is an important centre for the origin and diversity of perennial species in the Triticeae tribe, and more than half of the Elymus are known to occur in the Asia. This study was done to examine the relationship between self-rated health and social/community relations. Due to advances in modern medicine, multifactorial diseases are more prevalent than acute infectious diseases and a greater understanding of the impact sociological variables has on health is of great importance. In prior research, self-rated health has been demonstrated to be a robust predictor of mortality, even when controlling for other variables known to impact health. Presence of a strong social network and attachments to community have been shown to be protective of self-perceptions of health.

Rates of obesity in the United States have been increasing despite an increase of dieters. A new paradigm, intuitive eating, has been introduced to counter the negative effects of dieting. Intuitive eating has not been compared to dieters on a nutritional level, however. The main purpose of this study was to determine the nutritional differences between intuitive eaters and dieters.

Participants were asked to complete questionnaires regarding food consumption and attitudes about eating. Participants (N = 32) were then classified as intuitive eaters or dieters and asked to complete six, 24-hr food logs. Data received from these food logs were …

This study involves data from the Cache County Study, which began in 1994 with joined efforts by Duke University, Utah State University, and Johns Hopkins University. It consisted of 5,092 participants from Cache County, Utah, located in the northern part of the state. Characteristics of the population include high participation rates (~ 90%), a majority of participants are members of The Church of Jesus Christ of Latter-day Saints, longer life expectancy than the general US population, a greater than 80% rate of at least a high school education, and low rates of migration.

Facilitating nutritional improvement in schools is an important strategy for reversing the alarming trends of overweight and undernourishment currently observed among children in the United States. Compared to national recommendations, many people in the United States under-consume nutrient-dense foods, such as fruits and vegetables. The objective of this study was to determine if various school-based interventions can increase fruit and vegetable consumption among 75 fourth-graders. Interventions included fruit and vegetable challenges, offering a new variety of fruit, and classroom nutrition education. Carbohydrates are a major energy source for the human body and particularly glucose is the only energy source for the brain. Thus glucose metabolism is important to maintain normal brain function. Evidence showed insulin resistance and diabetes are associated with cognitive decline and a large amount of highly processed carbohydrate intake; in other words, a high glycemic load diet, which increases blood glucose faster and insulin demand, is associated with increased risk of insulin resistance and diabetes.

Granivores are important components of sagebrush communities in western North America. These same regions are being altered by the invasion of the exotic annual Bromus tectorum (cheatgrass) that alters physical and biological dynamics in ways that appear to promote its persistence. This research directly relates to the restoration of B. tectorum-dominated systems in two inter-related ways. Heavy and repeated ungulate browsing on reproductive suckers has limited trembling aspen (Populus tremuloides Michx.) regeneration on many Western landscapes. However, little is known about the specific effects of season and intensity of browsing. My objectives were to determine the effects of season and intensity of clipping (simulated browsing) on suckers’ (1) density and growth characteristics, and (2) nutritional quality and quantity.

Ponderosa pine delayed mortality, and bark beetle attacks and emergence were monitored on 459 trees for 3 years following one prescribed fire in Idaho and one wildland fire in Montana. Resin flow volume (ml) was measured on 145 fire-injured ponderosa pine 2 and 3 years post-fire. Logistic regression was used to construct two predictive ponderosa pine mortality models, and two predictive bark beetle-attack models. Post-fire delayed tree mortality was greater with the presence of primary bark beetles independent of diameter at breast height (DBH) (cm), and was greater in smaller diameter trees most likely due to direct effects of fire-caused …

Three types of biosolids (lime-stabilized, aerobically digested, and anaerobically digested biosolids) were applied on 0.13-ha test plots on disturbed rangelands in Western Utah at rates of up to twenty times (20X) the estimated N-based agronomic rate. Soil samples at depths up to 1.5 m were collected and analyzed for nitrogen, phosphorus, regulated metals, pH, and electrical conductivity for up to two years after biosolids application.

NH4-N at the soil surface (0.2 m) was primarily lost through ammonia volatilization and nitrification. This observation was consistent with reported increases in nitrate (NO3-N) concentrations found within the soil surface …

The purpose of this phenomenological study was to describe what experiences, attitudes, and learning strategies developmental mathematics students believed contributed to their failure to gain basic math skill proficiency in the past and what experiences, attitudes, and learning strategies these students now believed were most likely to enhance the successful learning of basic math skills.

This study explored the preventive impact of a brief Hat ha yoga program on stress-reduction and enhanced wellbeing in a sample of healthy African American college athletes. African Americans suffer higher rates of hypertension and sudden cardiac death syndrome, both linked to stress. Study design was single case, with six replications, utilizing comparison of pre- and post-intervention scores on physiological and psychological indicators of distress and wellbeing. A common approach has been to quantify the amount of shoot dry mass produced as a surrogate for competitiveness. Besides dry mass production , other morphological characteristics have been employed , but physiological parameters have received less emphasis. Differences in texture at any particular stage of ripening depend upon differences in the basic structure and the extent to which the basic structure is modified by physical parameters. Thus, very young cheeses of the same variety differ in texture because of variations in pH and in salt, moisture, and fat content. This study investigated genetic predictions for amino acid biosynthesis and catabolism by Lactobacillus helveticus CNRZ 32, a commercial cheese flavor adjunct that reduces bitterness and intensifies flavor notes. Conversion of amino acids into volatile and nonvolatile flavor compounds by L. helveticus and other lactic acid bacteria in cheese is thought to represent the rate-limiting step in the development of mature cheese flavor and aroma. The present study was conducted with the use of data from the Freshmen Health Study, a longitudinal study of college freshmen aged 18 that examined change in diet, physical activity, and weight during the first year of college at Utah State University (USU). Participants were assessed at different data collection periods including the beginning and end of their first semester attending USU. Control of the pathogen Listeria monocytogenes in ready-to-eat (RTE) meats is a major concern in the food industry. The objective of this study was to compare the growth of L. monocytogenes on refrigerated RTE meats containing sodium levulinate (4-oxopentanoic acid, a five carbon organic acid with GRAS status), sodium lactate, or a combination of sodium lactate and sodium diacetate. Changes in cheese physical properties during aging are related to proteolysis by coagulant type, culture enzymes, and non-starter lactic acid bacteria (NSLAB). Storage temperature also affects aging rate. Cultures are important for flavor development , but less is understood about their role in melting and textural properties.

Our objective was to make Cheddar cheese using different cultures, to age it at 6 and 13°C, and measure physical and proteolytic properties over 12 mo to determine whether changes in texture and melting correlated with the extent of proteolysis that occurred during aging.

The purpose of this study was to explore perceptions of adolescent's motivation to change in therapy, specifically while residing in a residential treatment center (RTC) and participating in family therapy. Fire suppression, grazing, wildlife management practices, and climate patterns of the past century are some of the threats to aspen coverage in this region. Certain Native American groups have been harder hit than the mainstream population, both in prevalence of the disease and in rates of related complications. Obesity and overweight are major risk factors in the development of the disease and in the development of complications. The steroid hormone 1,25-dihydroxyvitamin D3 [1,25(OH)2D3] rapidly stimulates the uptake of phosphate in isolated chick intestinal cells, while the steroid 24,25-dihydroxyvitamin D3 [24,25(OH)2D3] inhibits the rapid stimulation by 1,25(OH)2D3. Earlier work in this laboratory has indicated that a cellular binding protein for the 24,25(OH)2D3 is the enzyme catalase. The relationship between milk intake and risk of osteoporotic fractures is uncertain. Associations between milk intake and milk avoidance in relation to osteoporotic hip fracture were examined in the Utah Study of Nutrition and Bone Health (USNBH), a statewide case-control study. Cases were ascertained at Utah hospitals treating 98 percent of hip fractures during 1997-2001 and included 1188 men and women aged 50-89 years. Age- and gender-matched controls were randomly selected from Utah driver's license and Medicare databases (N= 1324). This thesis examined the lifetime exposure of women's employment on cognitive functioning and cognitive decline in late life.

From the Cache County Study on Memory, Health, & Aging data, a sample of 2,588 women, aged 65 and older gave retrospective occupational history and were screened using the Modified Mini-Mental State Exam at study entry and approximately 3 years later. Non-demented women were used.

Ordinary least squares regression was used cross-sectionally and longitudinally to test the association between cognitive complexity level of the longest job and baseline cognitive status, and rate of cognitive decline over approximately 3 years.

On September 10, 2005, a landslide occurred to the south of Utah State University Campus and Highway 89. This landslide did considerable damage to the Logan and Northern canal, which is cut into the slope, and to a residence at the toe of the slope. Literature Review

Undernutrition in the hospital setting has been shown to cause adverse outcomes. Screening for nutritional risk assists in the detection of undernutrition with subsequent early intervention to prevent further decline. While many nutrition screening tools exist, none are proven to detect undernutrition. Furthermore, many barriers exist for utilizing nurses as primarily responsible for screening patients for nutritional risk.

Background

A hospital reviewed the nutrition screening process and found that the form used and screening factors were insufficient to adequately detect undernutrition and appropriate referrals for dietitians.
