The increasing bacterial resistance to available antibiotics requires the search for new antibacterial compounds to be broadened. This study investigated the antimicrobial properties of two secondary metabolites from fluorescent pseudomonads -- syringopeptin 25A, a lipodepsipeptide produced by Pseudomonas syringae pv. syringae, and a rhamnolipid mixture produced by Pseudomonas aeruginosa. The rate of antimicrobial action was determined by monitoring the rate of uptake of propidium iodide during exposure to the compounds. Inhibition was also confirmed by the microbroth dilution method to determine the MI Cs. The research in this dissertation focused on determining antioxidant effects of various natural antioxidants in cooked meat systems. Milk mineral (MM), spices, and raisin paste were used in cooked meat systems to verify their potential antioxidant properties.

The MM study determined the antioxidant activity of 1.5% MM added to uncured cooked beef meatballs, and possible additive effects of MM in combination with 20-ppm or 40-ppm sodium nitrate in cooked beef sausages. There was no additive inhibition of lipid oxidation in samples containing 20-ppm or 40-ppm sodium nitrite plus 1.5% MM. Cooked meat yield was not different between control meatballs and …

Prior studies have unequivocally established a consistent association between osteoporotic hip fracture risk and type 2 diabetes mellitus. One reason this association still remains unclear is primarily due to the limited amount of research conducted in this area. The Utah Study of Nutrition and Bone Health (USNBH) is a case-control study conducted in Utah during the period of 1997-2001 to determine risk factors for osteoporotic hip fracture. All study participants (n = 2590) were determined from Utah residents 50-90 years of age. Cases were determined from 18 Utah hospitals during 1997-2001. Use of an induced blanket reactor (IBR) to break down organic matter into methane is a financially attractive method to reduce the environmental impact of animal or industrial waste. In order to better understand the biological processes involved with the conversion of waste to biogas by an IBR, it is necessary to gain a better understanding of the microorganisms and their roles in the reactor. Different fiber types were incorporated in an extruded expanded high-protein snack food. Three dietary fibers (powdered cellulose, wheat fiber, and oat fiber) were selected based on ease of extrusion, percent total dietary fiber, visible expansion, and commercial availability. A high-fiber, high-protein snack food containing whey protein, normal cornstarch, and pregelatinized waxy cornstarch was extruded using the three selected fibers. The fibers replaced the normal cornstarch at 30, 60, and 80% yielding extrudates with three fiber levels (18, 36, and 48%). Cigarette smoke contains sufficient carbon monoxide to induce maternal and fetal hypoxia. Hypoxia is a known teratogen, and consequently maternal smoking has been the focus of many studies on adverse birth outcomes, including cleft lip and palate. Current literature of epidemiological studies on smoking and clefts suggests a modest but statistically significant increase in risk of clefting associated with maternal smoking. A biological condition that may also contribute to hypoxia is anemia. There is very little research to date on infant development in developing countries, including Paraguay. The present study aimed to determine the effects of Pastoral del Nino, an ECD program, in rural Paraguay by assessing two groups of infants. Group 1 (n = 50) was receiving no intervention and group 2 (n =58) was participating in Pastoral del Nino. Both groups were matched for SES and age of infant. Results indicate that group 2 performed better on the Bayley Scales of Infant Development Mental Development Index. Group 1 had a mean MDI score of 77.96 and group 2 …

All species of Tapiridae and Rhinocerotidae are threatened or endangered in the wild. Captive populations have been established for most of these species, but successful management has proved challenging. Effective ex situ conservation strategies, however, rely on the ability of zoological institutions to maintain and breed these endangered species. In this study, I examined the captive environment to identify the factors associated with reproduction, mortality, and health of rhinos and tapirs. Zoological institutions in the North American region that currently housed rhinos and/or tapirs were surveyed in 2003. The distribution of vascular plant species and species richness in a mid-elevation Rocky Mountain landscape can be attributed to a number of variables. The distribution of species with respect to physiognomic type, patch size, shape, and environmental heterogeneity was assessed for a mosaic landscape comprised of conifer forest, deciduous forest, and shrub-steppe physiognomic types in the southwest comer of Grand Teton National Park, Wyoming. Youth with inflammatory bowel disease (IBD) have higher rates of depression than healthy youth. A cognitive-behavioral treatment, primary and secondary control enhancement training-physical illness (PASCET-PI), for depressed adolescents with IBD was associated with reductions in depressive symptoms. The purpose of this study was to examine the salience of nonspecific processes (factors inherent in any human relationship) and specific processes (factors related to therapy content) during PASCET-PI sessions and their association with improvements in psychological functioning.

A secondary analysis of extant data from The Cache County Study on Memory Health and Aging (CCSMHA), this study examines the association between religiosity and new-onset depression between baseline and 4-year follow-up interviews in a sample of 1,439 community-dwelling elderly members of The Church of Jesus Christ of Latter-day Saints (LDS), aged 65 to 100. Logistic regression models found that church attendance, voluntarism in religious groups, and direct experiences of God occurring more often than weekly were (statistically and practically) significantly associated with lower depression risk. PURPOSE: A retrospective chart review was conducted to determine if nutritional source of feeding and/or infant age at diagnosis of cystic fibrosis had any effect on nutritional status and subsequent growth accretion. Additionally, an attempt was made to identify predictors for poor growth in patients with undiagnosed cystic fibrosis.

METHODS: Data was collected from medical and clinic charts at Primary Children's Medical Center (PCMC), Salt Lake City, Utah, for subjects born between January 1, 1995 and December 31, 200 I, who were diagnosed with cystic fibrosis before 1 year of age. Lactic acid bacteria are essential as flavor producers of cheese and fermented products. They are capable of catabolizing aromatic, branched chain, and sulfur amino acids to flavor compounds. During cheese ripening the numbers of lactococcal colonies decrease, but lactococci survive without replication in culture. This prompted an investigation into possible mechanisms of catabolism of branched chain amino acids into branched chain fatty acids and the physiological relevance of amino acid catabolism to the bacteria. We hypothesized that lactococci catabolize branched chain amino acids to branched chain fatty acids during nonculturability.

To determine the effects of a targeted curriculum and dual program involvement on childhood overweight status among low-income preschool children, a nutrition curriculum was developed. Three Special Supplemental Food Program for Women Infants and Children (WIC) clinics participated in the study: the control clinic, a clinic which received the targeted curriculum, and a third clinic which received the targeted curriculum and referred participant families to the Expanded Food and Nutrition lll Education Program (EFNEP). Participants were followed for six months. Data collected included anthropometrics, dietary intake, and parental behaviors.

This study determined antioxidant and sensory effects of cinnamon, cloves, fennel, pepper, and star anise (Chinese 5-spice ingredients) in cooked ground beef. In experiment 1, thiobarbituric acid (TBA) values of cooked samples were measured during refrigerated storage. In experiment 2, trained panelists evaluated cooked samples for rancid, beef, and spice flavor intensity. Total aerobic plate counts were also measured.

Mean TBA values were high (3.4) for control samples. In previous studies, TBA values >1.0 were associated with unacceptably rancid cooked meats. At the lowest spice level of 0.1% of meat weight, all spices except pepper had lower TBA values than …

Xylitol, a five-carbon sugar alcohol, is a possible functional food, as well as a sugar replacement. The cost of xylitol has led manufacturers to add inulin, a nondigestible oligosaccharide, as an extender. Studies have reported mixed results for people with or without diabetes with cognitive decline or Alzheimer's disease (AD). Cognitive decline and AD among people with diabetes will be the focus of much discussion since results have been controversial.

The study examined whether diabetes is associated with cognitive decline and whether it is an independent risk factor for the development of AD among elderly residents of Cache County, Utah.

Approximately 10% of cystic fibrosis (CF) cases remain undiagnosed until age 18 or later and medical professionals are still unclear about the needs of these individuals. Adults with CF must either adapt to life with a chronic disease or transition into adulthood with CF. The purpose of this study was to address the impact of age-at-diagnosis on quality of life in a CF adult population.

Suboptimal growth and nutritional status are problematic for children with cystic fibrosis (CF). Optimal nutrition predicts better lung function and longevity. Daily nutrition therapy for children with CF requires adequate food resources, knowledge of appropriate nutrition and behavior management skills, and confidence in one's ability to correctly apply the necessary skills. The Mountain West Cystic Fibrosis Consortium Questionnaire (MWCFC-Q) was designed as an educational needs assessment for parents of children with CF. Several experimental lines of forage kochia [Kochia prostrata (L. Shrad.)] have potential to provide taller forage on fall and winter rangelands than the only released variety of forage kochia, Immigrant. This study was conducted to determine differences in cattle utilization among experimental lines of forage kochia and relate them to forage quality and morphological attributes. The utilization of forage kochia was also compared to 'Ladak ' alfalfa [Medicago saliva (L.)] and two entries of winterfat [Krashnennikovia species (Guldenstaedt)]. I studied the characteristics of fence mortality in pronghorn (Antilocapra americana), mule deer (Odocoileus hemionus), and elk (Cervus elaphus) along roads in Colorado and Utah from June 2004 to June 2005. I defined a direct-fence mortality as a carcass caught directly in a fence and an indirect-fence mortality as a carcass on the ground within 10 m of a fence. I estimated an average annual direct mortality occurrence of 0.25 mortalities/km (0.078 mule deer mortalities/km, 0.113 pronghorn mortalities/km, and 0.061 elk mortalities/km). Humic substances are reported to improve plant growth and nutrient uptake, with iron the most studied nutrient. The most common forms of iron in soils are iron oxides, which are stable under aerobic conditions and unavailable for plant uptake. Iron deficient plants become chlorotic, which reduces growth and yield. To determine if humic substances can reduce iron chlorosis, five commercially available organic acids were tested on maize grown in sand columns at high pH. The Health Resources and Services Administration (HRSA) allocated $940 million in 2002, through Title II of the Ryan White Comprehensive AIDS Resources Emergency (CARE) Act, to help states improve the quality and availability of health-related services for people living with HIV/AIDS. These resources are allocated based upon recommendations made by community planning committees, which in turn base their recommendations on HIV/AIDS needs assessments. A methodologically sound, comprehensive needs assessment is a critical component of effective resource allocation decisions. During decision-making, an individual must weigh the value of the outcomes involved while also considering the amount of time until the outcomes will occur. Discounting occurs when a smaller, immediately available reward is chosen over a larger, more delayed reward. Discounting rates are likely related to working memory capacity, because working memory stores and processes the value of the outcomes. The purpose of this study was to examine the relationship between working memory, temporal discounting, and the decision to engage in physical activity.

Achieving and maintaining maximal peak bone mass is critical to the prevention of osteoporosis. Adequate calcium intake during youth is a major aspect of proper bone mass development. Because of the importance of calcium, a food frequency questionnaire (FFQ) that estimates calcium intake of 10- to 18-year-old Asian, Hispanic, and white youth living in the western United States was developed. This new FFQ was shown to accurately and reliably estimate calcium intake of these youth. Accuracy among Hispanics, however, was low and requires further evaluation. A series of experiments evaluated: 1) the influence of seed intake and gut retention time on seed passage, recovery, and germinability; 2) fecal seeding and broadcast /trampling as techniques to incorporate seeds into a well-established Agropyron desertorum (Fisch.) Schult. stand in Skull Valley , Utah; 3) intensive grazing as a means to reduce Agropyron biomass and increase establishment and survival of seeded species; and 4) the recovery and germinability of seed extracted from dung collected from the field.
