Crested wheatgrass arrived in North America at the turn of the twentieth century through the foreign plant exploration missions sponsored by the United States Department of Agriculture. During the first two decades of the new century, scientists tested the grass at agricultural experiment stations. They determined it was useful for grazing and particularly valuable because it could grow in drought conditions with little or no care and would continue to produce high quality feed even after several years of heavy use. Breastfeeding is considered to be the optimal choice of infant feeding methods, yet the rates of breastfeeding are consistently lower than national recommendations despite efforts to reverse this trend. Designing effective interventions to increase breastfeeding requires a thorough understanding of the women who choose to breastfeed their infants as well as those who do not choose this infant feeding method. In order to determine which demographic factors predicted breastfeeding in the early postpartum period in Utah women, 600 "intercept interviews" were conducted in the spring and early summer of 2007. Whitebark pine (Pinus albicaulis Engelmann) is a treeline species in the central Rocky Mountains. Its occupation of high elevations previously protected whitebark pine from long-term mountain pine beetle outbreaks. The mountain pine beetle, however, is currently reaching outbreaks of record magnitude in high-elevation whitebark pine. We used a factorial laboratory experiment to compare mountain pine beetle (Dendroctonus ponderosae Hopkins) life history characteristics between a typical host, lodgepole pine (Pinus contorta Engelmann), and whitebark pine. All plants contain primary and secondary compounds. Primary compounds are needed by plants and herbivores for maintenance, growth, and reproduction, while secondary compounds play roles as diverse as protecting plants from ultraviolet radiation, defenses against herbivores, pollination attraction, and stress resistance. Secondary compounds have nutritional and medicinal benefits for herbivores as well, especially when eaten in diverse combinations that complement one another. While complementarities among secondary compounds are an important but little understood area of plant-herbivore interactions, even less is known about how the sequences of eating plants with different compounds affects foraging behavior, though they may be critical. The purpose of this study was to determine whether there is a significant difference between measured values of thoracic gas volume (MTGV) and predicted values of thoracic gas volume (PTGV) using the Bod Pod®. One hundred and thirteen college freshmen, both males and females, were tested using the Bod Pod® by first measuring thoracic gas volume with the Bod Pod® technique, then by using pre-determined values based on height, weight, and age that predict thoracic gas volume. Solid cancer tumors must recruit new blood vessels for growth and maintenance. Discovering drugs that block this tumor-induced development of new blood vessels (angiogenesis) is an important approach in cancer treatment. However, the complexity of angiogenesis and the difficulty in implementing and evaluating medical changes prevent the discovery of novel and effective new therapies. This paper presents a massively parallel computational search-based approach for the discovery of novel potential cancer treatments, using a high fidelity simulation of angiogenesis. Aphidophagous lady beetles rely on multiple sources of food in their environment. Alfalfa fields provide both aphids and many alternate foods, such as other arthropod prey, pollen, and fungi. Alfalfa fields (Medicago sativa L.) in Utah have low aphid densities, which may require lady beetles to consume alternative sources of food. Many methods can be used to determine these diets; frass analysis is used here to compare the diets of the introduced species Coccinella septempunctata L. with two native species, C. transversoguttata richardsoni Brown and Hippodamia convergens Guérin-Méneville, that occur in the Utah alfalfa habitat.

The objective of this research was to systematically study the effect of processing conditions on crystallization behavior and destabilization mechanisms of oil-in-water (o/w) emulsions. The effects of oil content (20 and 40 wt %); crystallization temperature (Tc = 10, 5, 0, -5, -10 °C); homogenization conditions, such as high shear (HS), very low pressure homogenization (VLPH), and high pressure homogenization (HPH); and cooling rate (0.2 and 30 °C/min) on both thermal behavior and destabilization mechanisms were analyzed. Docosahexaenoic acid (DHA) was added to VLPH emulsions and its effect on the physicochemical and oxidative stabilities and flavor was studied.

Liver off-flavor is a sporadic problem that limits the consumer acceptance of several beef chuck muscles, including the infraspinatus (flat iron steak). Residual blood hemoglobin is known to contribute to liver off-flavor development. Selecting a nest site is an important decision for waterfowl. Because most nest failure is due to depredation, the primary selective pressure in choosing a nest site should be to reduce depredation risk. This task is difficult because predators use differing tactics to locate nests, such as olfactory or visual cues. I investigated several components of waterfowl nest-site selection and success on sites with shelterbelts (planted tree-rows) in North Dakota, during the 2006 and 2007 nesting seasons.

An epidemic proportion of children and adolescents is currently overweight or at-risk of being overweight. This is associated with many negative outcomes, including short-term and long-term health risks, as well as increased psychosocial problems. The etiology of this problem is likely complex, though environmental factors (i.e., factors related to decreased physical activity and increased consumption of calories) have been implicated in previous research. Immobilization is an effective method to increase ethanol production, as proven by previous research. Results almost exclusively demonstrate an increase in ethanol production by and decrease in reproduction rate of immobilized Saccharomyces cerevisiae cells. Recently, research has been conducted to determine the cause of this change. The extreme variance in results due to lack of technology makes it difficult to determine the cellular changes induced by immobilization. With the advent of new technology, specifically gene expression analysis, the RNA content of cells can be easily and rapidly analyzed.

Overweight and obesity trends are on the rise, and young people are no exception. The popular phrase "Freshman 15" suggests that freshmen in college tend to gain weight faster than other populations. There is a growing body of literature that supports evidence of increased weight gain during the transition from high school to college. Hydrogen production by means of anaerobic fermentation was researched utilizing three different substrates. Synthetic wastewater, dairy manure, and cheese whey were combined together at different concentrations under batch anaerobic conditions to determine the optimal hydrogen producing potential and waste treatment of each. Cheese whey at a concentration of 55% was combined with dairy manure at a concentration of 45% to produce 1.53 liters of hydrogen per liter of substrate. These results are significant because the control, synthetic wastewater, which was a glucose-based substrate, produced less hydrogen, 1.34 liters per liter of substrate, than the mixture of cheese whey and dairy …

As wolf populations increase throughout the United States there is a corresponding increase in wolf/livestock interactions. Fatty amines (hexadecyl-amine) can be esterified to lactose via Schiff-base formation at temperatures of 60° C. Extending the time of the reaction results in a darker colored product due to the Maillard reaction. Due to the amphiphilic properties of the lactose-amines, the emulsion stabilization characteristics were investigated.

In this study, synthesis of lactose-amines was done at four different heating and cooling cycles from 4 to 24 hours. In 1988 data on coral reef community composition were collected from two areas, Akumal and Chemuyil, Quintana Roo, Mexico, ranging from 5-35m depth. These areas were revisited in 2005 and data were collected by the same methods and at the same depths as in 1988. Data from 1988 and 2005 were compared to determine if the coral reefs had undergone significant changes, and what specific changes had occurred. Chi-square analysis determined that community composition data collected in 1988 are significantly different from data collected in 2005 at all sites and depths within the categories of corals, gorgonians, sponges, and macroalgae. …

This study was designed to present descriptive data from a survey of 201 school psychologists. Psychologists completed a survey addressing current practices for determining placement for students with ADHD including the role of school psychologists in determining placement, how often and who monitors services, where students are served, and what services are provided in each setting. Findings indicated that psychologists were involved less frequently in placement decisions and evaluation for Section 504 than in Special Education. Students with 504 plans received less frequent follow-up than students in Special Education. Results indicated that schools were generally following federal guidelines and recommendations …

In order to evaluate the short-term educational and behavioral impact of the American Heart Association's "Face the Fats" web application had upon college students, a study involving 116 Utah State University undergraduate students was conducted. A one-group pre-posttest design was utilized to answer eight research questions focusing on: health risks associated with trans fat, general trans fat knowledge, ability to identify foods containing trans and saturated fats, food label information, healthy alternatives to trans fat, and readiness to change trans fat intake. Diet selection and self-medication are fundamental to the survival of all species. The abilities to choose healthy foods in response to past consequences are basic elements of evolution. This study explores self-medication regarding tannins both as a medication and as a dietary challenge. In the first study, sheep with natural parasite infections were offered a low quality supplement containing a dose of tannins considered to be therapeutic (medicine), while the control infected lambs received the same supplement without tannins (placebo). My objectives were to determine if nutritional benefits occur when animals are offered foods with compounds -- alkaloids, saponins, and tannins - that are potentially complementary. I hypothesized that food intake and digestibility increase when lambs consume plants such as alfalfa ALF that contain saponins or birdsfoot trefoil (BFT) that contain tannins when the basal diet is endophyte-infected tall fescue (TF) or reed canarygrass (RCG) both of which contain alkaloids. Twenty cows were used in a repeated measures, block design experiment for 9 wk to determine the effects of feeding partially ruminally inert calcium salts (Ca-salts) of fish oil (FO) and a general fatty acid (FA) supplement (EnerGII) at varying levels. The effects on cow health, milk components, composition of milk FA, and sensory evaluation of milk were evaluated. The influence of increasing hydrolyzed protein content on the microstructure and hardness of high protein nutrition bars was investigated to determine the mechanism of hardening during storage. Bars with various hydrolyzed protein levels were manufactured using differing ratios of 0, 25, 50, 75, 100% (wt. /wt.) of partially hydrolyzed whey protein isolate (HWPI) to an intact (non-hydrolyzed) whey protein isolate (WPI) which made up approximately 38% of the total bar composition. Policies regulating wildlife winter-feeding programs may have long-term impacts on conservation and future management of both target and non-target species. In 2000, the Utah Wildlife Board, upon reviewing input from a series of public regional meetings, adopted a Utah Big Game Winter-Feeding Policy. The Utah Division of Wildlife Resources used this policy to regulate winter-feeding programs for mule deer in northern Utah, 2001-2005. I monitored the program effects on mule deer biology, activity and migration, and winter browse utilization and productivity.

Prior research has found the female athlete triad in both female athletes and female non-athletes. This study consisted of 192 female participants attending Utah State University with 103 collegiate athletes and 89 non-athletes. The instruments used included the EAT-26, menstrual cycle history questionnaire, osteoporosis questionnaire, and time spent in exercise questionnaire. Results from the present study found a statistically significant difference between athletes and non-athletes being at risk for the triad with female athletes having a higher percentage (4.8%, 3.4%). The land application of biosolids to provide nutrients and organic matter is widely practiced in agricultural applications. However, the potential benefit of applying biosolids to disturbed rangelands has not been adequately evaluated. The purpose of this study was to determine the effectiveness of a teacher professional development program as measured by the extent that participants have continued to use lessons and materials up to three years after the professional development experience. The professional development program was delivered online and structured by five key characteristics of effective professional development.

Sixty-five participants of Food, Land, and People (FLP) professional development completed an online survey answering certain demographic variables and indicating the number of lessons and activities they had used from the FLP professional development.
