A low melting fraction of milk fat (LMF), with a dropping point (MDP) of 16.7 °C, was encapsulated by freeze-drying emulsions formulated with trehalose or its blends with 30 wt% lactose or sucrose as hydrophilic phase, and with a mixed of 50 wt% of the palmitic sucrose esters (SE) β-170 and β-1670 as emulsifiers. Trehalose or trehalose/sucrose matrices were very efficient to encapsulate LMF (retention values were 82.8%± 3.2% and 90.5%± 3.7%, dry basis, respectively), whereas trehalose/lactose showed a significant decline in initial retention (42.5%± 2.5%, dry basis). The role of emulsion stability, water content, physical state of the matrix, …
Healthcare Resources For Older Adults In A Medium Sized Community, Ashley Nielson
Healthcare Resources For Older Adults In A Medium Sized Community, Ashley Nielson
Undergraduate Honors Capstone Projects
Healthcare has become a large concern for a number of older Americans. With increases in healthcare costs and complex programs such as, Medicare, Medicaid, Medigap insurance policies and community programs, many older Americans are left worrying where they will find the money and resources to provide for themselves and their healthcare needs. Medicare, Medicaid and community care resources help to offset individual healthcare costs, but they are often not enough. The programs are complex and confusing and are limited in the care they provide.

Deer-Vehicle Crash Patterns Across Ecoregions In Michigan, Krishnan Sudharsan, Shawn J. Riley, Brent A. Rudolph, Brian A. Maurer
Wildlife Damage Management Conference
Deer-vehicle collisions (DVCs) impact the economic and social well being of humans. We examined large-scale patterns behind DVCs across 3 ecoregions: Southern Lower Peninsula (SLP), Northern Lower Peninsula (NLP), and Upper Peninsula (UP) in Michigan. A 3 component conceptual model of DVCs with drivers, deer, and a landscape was the framework of analysis. The conceptual model was parameterized into a parsimonious mathematical model. The dependent variable was DVCs by county by ecoregion and the independent variables were percent forest cover, percent crop cover, mean annual vehicle miles traveled (VMT), and mean deer density index (DDI) by county. A discriminant function …

Estimating Drc-1339 Mortality Using Bioenergetics: A Case Study Of European Starlings, H. Jeffery Homan, Randal S. Stahl, John J. Johnston, George M. Linz
Wildlife Damage Management Conference
We developed a bioenergetics model for European starlings (Sturnus vulgaris) that estimated mortality from baitings with CU Bird Carrier pellets treated with 1% DRC-1339 Concentrate and diluted 5:1 (untreated:treated pellets). A bioenergetic analysis of heat and radiative energy exchanges between the starling body surface and surrounding environment was converted to daily caloric demand based on a steady-state energy balance. The amount of Bird Carrier eaten per starling was governed by subroutines in the model that used probability distributions to simulate variability in dietary intake at the bait site. Mortality was estimated through dose-response regression analysis. Compared to onsite …

Hunters----Can They Do The Job?, Paul D. Curtis, David Drake, Jody Enck, Gary J. San Julian, David Taylor
Wildlife Damage Management Conference
Management of white-tailed deer (Odocoileus virginianus) herds at the landscape scale is increasingly difficult. The future of eastern hardwood forests is threatened by inadequate regeneration of valuable timber species, due in large measure to deer browsing. In the northeast, deer damage to crops, landscaping, and vehicles costs more than 640 million dollars annually. Nationally, hunter ranks are decreasing. In the east, white-tailed deer numbers are increasing; state wildlife agencies have expanded season lengths, and increased deer bag limits. While venison is still a highly prized meat, the average hunting family wants to use about 2 deer per year. …

Effectiveness Of Milorganite® As A Repellent To Protect Ornamental And Agronomic Plants From Deer Over-Browsing, Odin L. Stephens, Michael T. Mengak, George R. Gallagher, David A. Osborn, Karl V. Miller
Wildlife Damage Management Conference
When deer populations become locally overabundant, browsing of ornamental and agronomic plants negatively affects plant establishment, survival, and productivity. Milorganite® is a slow-release, organic fertilizer produced from human sewage. We tested Milorganite® as a deer repellent on chrysanthemums (Chrysanthemums morifolium) in an urban/suburban environment, and soybeans (Gycine max) in a rural agriculture environment. Six beds of chrysanthemums at two sites were monitored for 28 to 35 days. Treatment plants received a top dressing of 104 grams of Milorganite® (1120.9 kg/ha). Milorganite® treated plants had more (P < 0.001) terminal buds and achieved greater height (P < 0.002) compared to controls at one site, however damage observed was similar at the second site. In a second experiment, 0.2-ha plots of soybeans (Glycine max) were planted on five rural properties in …
Conditioning Beaver To Avoid Desirable Plants, Julie L. Harper, Dale L. Nolte, Thomas J. Deliberto, David L. Bergman
Conditioning Beaver To Avoid Desirable Plants, Julie L. Harper, Dale L. Nolte, Thomas J. Deliberto, David L. Bergman
Wildlife Damage Management Conference
Conditioned food aversion can be used to train animals to avoid select foods. Generally, aversive conditioning is best applied when animals first encounter a food item. However, almost by definition damage is inflicted to desirable plants very familiar to the culprit. We assessed the potential for training beaver to avoid a known preferred food. During a 5 day day treatment period beavers were offered only corn at 1600 hours. Six hours later, animals that had ingested corn were injected with 150 mg/kg lithium chloride (LiCl), with a control group receiving sodium chloride (NaCl). Alternate foods were then offered with corn …
Development Of Diazacon™ As An Avian Contraceptive, Christi A. Yoder, Kimberly S. Bynum, Lowell A. Miller
Development Of Diazacon™ As An Avian Contraceptive, Christi A. Yoder, Kimberly S. Bynum, Lowell A. Miller
Wildlife Damage Management Conference
Due to increasing human-wildlife conflicts with birds and growing opposition to lethal techniques, nonlethal methods need to be developed to help manage bird populations. DiazaCon™ is a promising oral contraceptive that acts by directly inhibiting the conversion of desmosterol to cholesterol. Because cholesterol is essential for the production of the steroid reproductive hormones testosterone, progesterone, and estradiol, DiazaCon™ also indirectly inhibits the formation of these hormones. These hormones are essential for sperm and egg production, and the production of egg yolk precursors in the liver. Because DiazaCon™ is cleared slowly from the liver, its contraceptive effects are long-lasting. Initial research …

In-Situ Monitoring Of Solid Fat Content By Means Of P-Nmr And Ultrasonics, Silvana Martini, Constantin Bertoli, Maria Lidia Herrera, Ian Neeson, Alejandro Marangoni
Nutrition, Dietetics, and Food Sciences Faculty Publications
An ultrasonic technique was developed to study the crystallization process of edible fats on-line. A chirp wave was used instead of the conventional pulser signal, thus achieving a higher signal-to-noise ratio. This enabled measurements to be made in concentrated systems [≈20% solid fat content (SFC)] through a 8.11-cm thick sample without significant signal loss. Fat samples were crystallized at 20, 25, and 30°C at a constant agitation rate of 400 rpm for 90 min. The crystallization process was followed by ultrasonic spectroscopy and a low-resolution pulsed nuclear magnetic resonance spectrometer. Specific relationships were found between ultrasonic parameters [integrated response, time …

New Technologies To Determine Solid Fat Content On-Line, Silvana Martini, Maria Lidia Herrera, Alejandro Marangoni
New Technologies To Determine Solid Fat Content On-Line, Silvana Martini, Maria Lidia Herrera, Alejandro Marangoni
Nutrition, Dietetics, and Food Sciences Faculty Publications
The determination of solid fat content (SFC) is an important analytical procedure in the food industry. The most common way to determine SFC is by low-resolution pulsed NMR (p-NMR). Although this technique is very sensitive and easy to use, it has the disadvantage that it cannot be used for on-line measurements. The present work compares new technologies to determine SFC on-line. On-line ultrasonic spectroscopy and NMR-MOUSE (NMR mobile universal surface explorer) techniques were compared with off-line p-NMR measurements and there was a good correlation between the values obtained. Ultrasonic measurements accurately described the SFC variation, whereas NMR-MOUSE determinations need to …
Attenuation Of Ultrasonic Waves: Influence Of Microstructure And Solid Fat Content, Silvana Martini, Constantin Bertoli, Maria Lidia Herrera, Ian Neeson, Alejandro Marangoni
Attenuation Of Ultrasonic Waves: Influence Of Microstructure And Solid Fat Content, Silvana Martini, Constantin Bertoli, Maria Lidia Herrera, Ian Neeson, Alejandro Marangoni
Nutrition, Dietetics, and Food Sciences Faculty Publications
Ultrasonic technology can be used to monitor the crystallization of fats and determine solid fat content (SFC) online. Ultrasonic waves are attenuated as crystals form and grow, and this attenuation occurs first at higher frequencies. The attenuation of the ultrasonic signal does not depend on the induction times of crystallization of the systems, or on their thermal behavior; but it does depend on SFC and on microstructure, particularly on the crystal size. At low SFC values (≈5%), bigger crystals generate more attenuation. At intermediate SFC values (≈10%), crystal size does not affect signal attenuation and SFC is the key factor …
The Relation Between Religiosity And Late-Life Depression In A Community Sample Of Members Of The Church Of Jesus Christ Of Latter-Day Saints, Lynn Marie Franklin
The Relation Between Religiosity And Late-Life Depression In A Community Sample Of Members Of The Church Of Jesus Christ Of Latter-Day Saints, Lynn Marie Franklin
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
A secondary analysis of extant data from The Cache County Study on Memory Health and Aging (CCSMHA), this study examines the association between religiosity and new-onset depression between baseline and 4-year follow-up interviews in a sample of 1,439 community-dwelling elderly members of The Church of Jesus Christ of Latter-day Saints (LDS), aged 65 to 100. Logistic regression models found that church attendance, voluntarism in religious groups, and direct experiences of God occurring more often than weekly were (statistically and practically) significantly associated with lower depression risk. No evidence was found for moderator effects of gender or prior depression history; however, …

"Bariatic Surgery For Obese Adolescents", Hilary Brooke Spooner
Undergraduate Honors Capstone Projects
With the rise of adolescent obesity, the need for treatment of this life-threatening disease is under consideration. There are several methods for the treatment of this disease, but a newer method is on the rise. Bariatric surgery for adolescents is a new technique that has been performed on adults for years, but the effects on the younger population are still unknown. There are certain criteria and guidelines for the patients undergoing this surgery, but the results seem to be promising. Nutritional and surgical complications are of great concern, but are the chronic disease health benefits brought on by weight loss …
Cardiovascular Medical Nutrition Therapy Looking At The Dash Trials, Rachel Anne Naegle
Cardiovascular Medical Nutrition Therapy Looking At The Dash Trials, Rachel Anne Naegle
Undergraduate Honors Capstone Projects
OBJECTIVE: To review the recent medical literature on the effects of the DASH diet principles of increased fruits, vegetables, low-fat dairy, and decreased total and saturated fat; focusing on the intent to implement this dietary pattern to reduce hypertension, and thus to reduce cardiovascular disease.
FINDINGS: The combination diet reduced systolic by 5.5 mm Hg, and diastolic by 3.0 mm Hg as compared to the control diet (P<0.001 for each) (5, 7, 8). When comparing the two diet variables, the combination diet reduced systolic blood pressure 2.7 mm Hg, and diastolic 1.9 mm Hg more than the fruits-and-vegetables diet, (all with a P<0.001)! The results of the DASH-sodium (DASH II), proved also to substantially lower blood pressure when used with the combination diet.
CONCLUSION: Even though the DASH-sodium diet did decrease blood pressure, there is no scientific background to recommend this to all populations, and that instead of focusing attention on reducing sodium, efforts should …
0.001>The Adverse Health Effects Of Trans Fatty Acids, And Implications For Public Policy, Jonathan D. Atkin
The Adverse Health Effects Of Trans Fatty Acids, And Implications For Public Policy, Jonathan D. Atkin
Undergraduate Honors Capstone Projects
Subject: Trans fatty acids (TFAs) are produced either by the process of bacterial hydrogenation in the stomachs of ruminant animals, or the commercial method called industrial hydrogenation. The latter began early in the 20th century based on purported health benefits and lowered costs. Alarming results from scientific studies in the early 1990's began to raise questions about whether TFAs should be regulated in our food supply.
Findings/Statistics: Scientific research initially discovered that TFAs raise the LDL/HDL ratio, thereby increasing the risk of coronary heart disease (CHD). Recent large, prospective, population-based studies have indicated a 25% increased risk of ischemic …
The Macrobiotic Diet May Have Benefits In Cancer Prevention, Brittany Lewis
The Macrobiotic Diet May Have Benefits In Cancer Prevention, Brittany Lewis
Undergraduate Honors Capstone Projects
Macrobiotics is one of the most popular alternative or complementary approaches to fighting cancer. The diet is primarily plant-based, is centered on the idea of an all encompassing "yin-yang" concept in life, mind, environment and food. The dietary components of the macrobiotic diet, along with the many lifestyle implications are shown to have beneficial effects in cancer prevention and therapy. The diet has many anti-carcinogenic compounds, as well as a decrease in foods thought to promote cancer. A cause for concern is the vitamin deficiencies that may ensue in following a strict macrobiotic diet, which typically results from an all …
Investigation Of The Toxic Affect Of Manganese On Ruminal Microbial Digestion And Growth, Erin Dearing
Investigation Of The Toxic Affect Of Manganese On Ruminal Microbial Digestion And Growth, Erin Dearing
Undergraduate Honors Capstone Projects
This research investigated the toxic effect of manganese, in a reduced chemical state, on rumen microbial metabolism and growth. The reduced form of manganese is the soluble state found in subsurface waters and has a high red-ox potential. In the study, we investigated the effects of reduced manganese at varying concentrations, on rumen microbial ability to replicate and metabolize carbohydrates. The hypotheses that we tested were as follows: (1) reduced manganese decreases the rate of pH drop associated with rumen culture fermentation of a com based diet and (2) reduced manganese decreases the bacterial growth in rumen culture, as measured …
The Composition And Comparison Of Essential Oils And Their Nutritional Benefits To Enhance And Decrease Risk For Chronic Disease, Heather Wollschleger
The Composition And Comparison Of Essential Oils And Their Nutritional Benefits To Enhance And Decrease Risk For Chronic Disease, Heather Wollschleger
Undergraduate Honors Capstone Projects
This paper reviews the current status of our knowledge of essential oils and their nutritional contribution to our diet. The effects of dietary fats on our health differ markedly from the type and form of the fat. Special emphasis is placed on omega-3 and omega-6 fatty acids, and their dietary involvement. Specific oils increase our levels of vital vitamin E and the essential omega-3 and omega-6 fats humans need for mental and physical health. Chronic diseases remain a major cause of death and disability, and risk factors include diets high in saturated fatty acids and trans fatty acids. This risk …

PURPOSE: A retrospective chart review was conducted to determine if nutritional source of feeding and/or infant age at diagnosis of cystic fibrosis had any effect on nutritional status and subsequent growth accretion. Additionally, an attempt was made to identify predictors for poor growth in patients with undiagnosed cystic fibrosis.
METHODS: Data was collected from medical and clinic charts at Primary Children's Medical Center (PCMC), Salt Lake City, Utah, for subjects born between January 1, 1995 and December 31, 200 I, who were diagnosed with cystic fibrosis before 1 year of age. Thirty-one subjects met inclusion parameters. These subjects were divided …
Weight Maintenance: Determinants Of Success, Cynthia Mitchell
Weight Maintenance: Determinants Of Success, Cynthia Mitchell
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
This literature review was a selective examination of current obesity and physical activity research and opinions. Its purpose was more to evoke thought and discussion regarding the United States' obesity epidemic, rather than serve as an exhaustive account of prospective causes and solutions. Obesity and physical inactivity are major preventable health problems in the United States, but despite overwhelming evidence regarding the benefits of a healthy weight and regular physical activity, adult, childhood and adolescent obesity rates continue to escalate, creating significant health, medical and economic consequences.
While obesity rates soar, a small population percentage has proven successful in long-term …

Development And Evaluation Of An Electronic Food Frequency Questionnaire For Estimating Calcium Intake Among Multiethnic Youth, Siew Sun Wong
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
Youth consuming inadequate amounts of calcium are at risk of developing osteoporosis later in life. To better assess dietary calcium intakes and the efficacy of dietary intervention strategies to improve bone health among youth, it is important to develop calcium intake assessment tools that are reliable, accurate, and interactively engaging for a new generation of youth who have a higher computer literacy and are more technologically knowledgeable than preceding generations. The goal of this dissertation was to develop and evaluate an electronic food frequency questionnaire (eFFQ) that measures calcium intake among 11-to 18-year-old Asian, Hispanic, and White youth. Enhancing this …
