Undefined mesophilic mixed (DL-type) starter cultures are composed of predominantly Lactococcus lactis subspecies and 1–10% Leuconostoc spp. The composition of the Leuconostoc population in the starter culture ultimately affects the characteristics and the quality of the final product. The scientific basis for the taxonomy of dairy relevant leuconostocs can be traced back 50 years, and no documentation on the genomic diversity of leuconostocs in starter cultures exists. We present data on the Leuconostoc population in five DL-type starter cultures commonly used by the dairy industry. Background: Although there are numerous health benefits associated with eating fruit and vegetables (FV), few children are consuming recommended amounts. Gardening interventions have been implemented in various settings in an effort to increase FV consumption of children by expanding knowledge, exposure, and preferences for a variety of FV.
Objective: The purpose of this review was to identify the effectiveness of gardening interventions that have been implemented to increase FV consumption among children.

Interesterified soybean oil was crystallized at 32, 30, 28, and 26 °C with and without high intensity ultrasound (20 kHz). Samples were placed in 1 cm diameter tubes and stored at 5 °C for 48 h. After storage, a 1.3 cm height cylinder was cut from the cylinder and placed in a filter paper (diameter 12.5 cm) at 5 and 25 °C for 24 h. Oil migration was measured as the diameter of the oil diffusing out of the crystalline matrix into the filter paper. Effects Of High Intensity Ultrasound Frequency And High-Speed Agitation On Fat Crystallization, Roberta Silva, Juhee Lee, V. Gibon, Silvana Martini

The objective of this research was to examine the effect of ultrasound frequency and high-speed agitation on lipid crystallization. Interesterified soybean oil was crystallized at 44 °C without and with the application of high intensity ultrasound (HIU—20 and 40 kHz) or with high-speed agitation (6000 and 24,000 rpm). Two tip amplitudes (24 and 108 µm) and three pulse durations were evaluated (5, 10, and 15 s) for the acoustic frequencies tested. Sonication at 20 kHz of frequency significantly reduced crystal size, increased (p < 0.05) elasticity (435.9 ± 173.3–80,218 ± 15,384 Pa) and SFC (0.2 ± 0.0–4.5 ± 0.4%). No significant difference was observed in the crystallization behavior of these samples when sonicated at different amplitudes for 5 and 10 s. The crystallization behavior was significantly delayed (p < 0.05) in samples sonicated using 108 µm amplitude for 15 s. Larger crystals were formed in samples sonicated at 40 kHz compared to those obtained with 20 kHz and lower SFC (3.7 ± 0.0%) and elasticity (3943 ± 1459 Pa) values were obtained. High-speed agitation at 24,000 rpm increased SFC (5.5 ± 0.1%) and crystallized area and decreased the elasticity (42,602 ± 11,775 Pa) compared to the samples sonicated at 20 kHz.

Physical blends (PB) of high oleic sunflower oil and tristearin with 20 and 30% stearic acid and their interesterified (IE) products where 20 and 30% of the fatty acids are stearic acid at the sn-2 position crystallized without and with application of high intensity ultrasound (HIU). IE samples were crystallized at supercooling temperatures (ΔT) of 12, 9, 6, and 3 °C while PB were crystallized at ΔT = 12 °C. HIU induced crystallization in PB samples, but not in the IE ones. Adequate weed control and nutrient supply are critical for successful establishment of fruit trees. This is of particular concern in organic orchard establishment. In order to determine the best approach for establishing peach trees (Prunus persica L.) organically in climates characterized by hot dry summers and cold winters such as the North American Intermountain West, seven organic and three integrated and conventional treatment combinations were established in two first leaf orchards at the USU Kaysville Research Farm, Utah, in 2008 and 2009. Sap-sucking insects typically engage in obligate relationships with symbiotic bacteria that play nutritional roles in synthesizing nutrients unavailable or in scarce supply from the plant-sap diets of their hosts. Adelgids are sap-sucking insects with complex life cycles that involve alternation between conifer tree species. While all adelgid species feed on spruce during the sexual phase of their life cycle, each adelgid species belongs to a major lineage that feeds on a distinct genus of conifers as their alternate host. MicroRNAs (miRNAs) are small non-protein-coding RNA molecules that regulate gene expression. Diet and lifestyle factors have been hypothesized to be involved in the regulation of miRNA expression. In this study it was hypothesized that diet and lifestyle factors are associated with miRNA expression. Data from 1,447 cases of colorectal cancer to evaluate 34 diet and lifestyle variables using miRNA expression in normal colorectal mucosa as well as for differential expression between paired carcinoma and normal tissue were used. miRNA data were obtained using an Agilent platform. In many savanna ecosystems worldwide, livestock share the landscape and its resources with wildlife. The nature of interactions between livestock and wildlife is a subject of considerable interest and speculation, yet little controlled experimental research has been carried out. Since 1995, we have been manipulating the presence and absence of cattle and large mammalian herbivore wildlife in a Kenyan savanna in order to better understand how different herbivore guilds influence habitat use by specific wildlife species. Using dung counts as a relative assay of herbivore use of the different experimental plots, we found that cattle had a range of effects, …

Carotenoids are pigments found throughout nature in a large variety of plants including fruits and vegetables (F/V). Carotenoids provide much of the color we see in nature but are perhaps most noticeable in plants with yellow, orange, or red flesh. Carotenoids are antioxidants that serve as a protection against harmful ultraviolet radiation and other free radical producing processes in the body and in plant tissues. Once consumed, carotenoids are deposited in the skin, particularly in fatty tissue. Raman resonance spectroscopy (RRS) can be used to quantify skin carotenoid levels and has been proven a good indicator of F/V consumption. A …

An estimated 1.6 million American couples struggle with infertility. Some causes for poor fertility can be clearly defined but in many instances, subfertility is unexplained. Poor oocyte quality is now considered to be a main contributing factor for many causes of infertility. Good oocyte quality is crucial for many processes including embryo development and maintaining pregnancy. There is a possibility that any alterations to the oocyte can have long lasting effects on embryo development and the health of the offspring.
