Weight bias has been linked with obesity epidemic and other weight-related concerns such as eating disorders in our society. Previous studies have found that healthcare providers such as medical doctors, nurses, and dieticians showed stigmatizing attitudes toward patients who are categorized as overweight or obese individuals. Due to those professionals’ negative attitudes toward the particular vulnerable population, patients expressed lack of willingness to seek out for help or students experienced negative psychological states. This research study focuses on the vegetarian and vegan groups in our community, specifically undergraduates at USU. The specialized diets vegetarians and vegans follow can cause nutritional deficiency in iron and protein. Iron and protein are particularly difficult for vegetarians and vegans to obtain, especially for those new to the diet. Our research study seeks to identify whether on and off campus vegetarians and vegans obtain sufficient iron and protein levels according to the USDA’s recommended daily amounts. This was accomplished through participant 24 hour diet recalls. Data gathered from the 24hr diet recall included time of day, amount, type, …

Trembling aspen covers a large geographic range in North America, and previous studies reported that a better understanding of its singular influence on soil properties and processes is of high relevance for global change questions. Here we investigate the potential impact of a shift in aspen abundance on soil carbon sequestration and soil carbon stability at the continental scale by conducting a systematic literature review using 23 published studies. Our review shows that aspen’s effect on soil carbon is relatively consistent throughout the species range. Aspen stores less C in the forest floor but similar amounts in the mineral soil …

The objective of this study was to assess the impact of cattle finishing diet and muscle type on meat quality. Consumer sensory response, proximate composition, Warner–Bratzler shear force (WBSF), fatty acid composition, and volatile compounds were assessed from the gluteus medius (GM) and triceps brachii (TB) muscles of cattle (n = 6 per diet) which were grain-finished (USUGrain) on conventional feedlot or 2 forage diets, a perennial legume, birdsfoot trefoil-fin-ished (USUBFT; Lotus corniculatus), and grass-finished (USUGrass; Bromus riparius). Diet had an interacting effect with muscle for all sensory attributes (P ≤ 0.002), except aroma and flavor (P ≥ 0.078). In …

Managing the demands of an academic appointment in extension can be a challenging task. Demands from constituent groups, expectations of supervisors, and rigors of promotion and tenure processes can create pressures that young faculty did not expect. Throw in spousal and family duties and you have created a situation that many will find hard to navigate. However, there are ways to cope and, even better news, there are ways to excel in meeting the demands of an academic appointment and enjoying life. The objective of this essay, which is based on a keynote presentation delivered at the 2016 Empowering Teaching Excellence Conference at Utah State University, is to address this central question: how faculty can make a positive, substantive impact on students through 1-on-1 instruction? The consensus answer derived from experiences and anecdotes offered by this author, her colleagues, and students is to be deliberate in 1-on-1 interactions with students. For our inaugural issue, we reviewed the feedback from our 2016 ETE faculty conference—an event for USU faculty hosted every August on the USU main campus. We identified several of the presenters who received high marks in post-session surveys and invited them to submit a proceedings paper for their presentation. Many responded, and their papers now comprise the majority of this issue. Because most of the articles began as stand-up presentations for a conference, several adopt a first-person narrative style in which the authors share examples of things they have tried in their teaching that have worked. What is Kefir ? Kefir is a type of fermented milk that is cultured with Kefir grains. Kefir grains make up the probiotic culture used to produce Kefir. These cauliflower-like grains contain mostly lactobacilli bacteria and yeasts held together by Kefiran, an exopolysaccharide structure. (Korsak et al. 2014). Kefir grains are Mesophilic. Mesophilic starters are cultured at room temperature, which allows the probiotics to remain active when consumed. Properties of mesophilic starters also give Kefir the liquid consistency it is known for. (Sarah, 2016). Storage Induced Changes In Sensory Characteristics And Viscosity Of Cocoa And Whey Protein Enriched Functional Dairy Drink, H. R. Gupta, S. K. Kanawjia, M. K. Saluja, Prateek Sharma

The functional dairy drink product developed in the present study was packaged in LDPE pouches stored at refrigeration temperature 4±1°C. The results of storage studies depict that the product can be stored upto 18 days at 4±1°C without significantly affecting its sensory qualities. Overall acceptability scores decreased from initial 93.0 to 69.2 after 18 days of storage at 4±1°C for the drink enriched with whey protein; for the drink enriched with whey protein and cocoa, the scores decreased from 93.4 to 72.4. The consistency score of the product decreased from 27.5 to 19.5 for whey protein enhanced drink and from …

Animals attempt to maximize foraging efforts by making strategic foraging decisions. Foraging efforts can be influenced by chemically defended food. Food resources that are chemically defended force foragers to balance the nutritional gain with the toxic costs of foraging on a defended food resource. Chemical defense, in this case sunflower treated with chemical repellent, may be capable of deterring birds from foraging on treated crops. Blackbirds (Icteridae) cause significant damage to sunflower (Helianthus annuus) with damage estimates of $3.5 million annually in the Prairie Pothole Region of North Dakota, the largest sunflower producing state. Rapid Sounder Removal™ is a time sensitive strategy where emphasis is placed on efficient removal of every sounder expanding at least 1,012 ha within 30 days of operation. The mission is to quickly and efficiently remove 100% of each individual sounder, on multiple properties, in the shortest time possible. Several Integrated Wild Pig Control strategies can be implemented in unison to eliminate wild pig escapes, education, and reproduction from large tracts of land at one time. Background: Oil in the form of triacylglycerols (TAGs) is quantitatively the most important storage form of energy for eukaryotic cells. Diacylglycerol acyltransferase (DGAT) is considered the rate-limiting enzyme for TAG accumulation. Chlorella, a unicellular eukaryotic green alga, has attracted much attention as a potential feedstock for renewable energy production. However, the function of DGAT1 in Chlorella has not been reported.
Results: A full-length cDNA encoding a putative diacylglycerol acyltransferase 1 (DGAT1, EC 2.3.1.20) was obtained from Chlorella ellipsoidea. The 2,142 bp open reading frame of this cDNA, designated CeDGAT1, encodes a protein of 713 amino acids showing …
