Crystallization behavior of three edible fats: interesterified soybean oil (IESBO), interesterified palm olein (IEPO), and fully hydrogenated palm kernel oil (FHPKO) were explored to understand how this process is affected by different factors. The study focused on how the chemical composition of these fats affects their behavior like how much time they require to be crystallized at a certain temperature. By using different scientific methods, how quickly each fat began to crystallize and how much energy it took to start the process was measured. Climate change and its cascading effects are driven by increases in atmospheric carbon dioxide (CO2). Many climate solutions exists to remove this excess carbon (C) from the atmosphere, and soils, in particular, represent one of the few win-win solutions. Soils play a vital role in the global C cycle because they store more C than plants and the atmosphere combined, however, they also release more CO2 annually than fossil fuel combustion (a major contributor to accelerating climate change). As more people prioritize their food choices, questions have circulated about how farming practices might impact not just the environment, but also human health. Iron deficiency has remained a global issue even in developed countries despite food fortification and increased nutritional literacy, biological women of child baring age are at particular risk due to menstruation and reduced dietary intake of iron containing foods compared to men. This issue is of particular concern in athletics due to the critical role of iron in oxygen transport and energy metabolism. Consumer expectations govern what is acceptable when it comes to the flavor, texture, and color of the cheese. These quality attributes of cheese are all influenced by the pH of the cheese which is in turn controlled by the acid production of the starter lactic acid bacteria (SLAB) used to make cheese. Whatever the final pH of the cheese is, is what determines the quality of the cheese. Unfortunately, there are some Cheddar cheese manufacturers that have observed pH variation during the early aging of their cheeses. Utah State University Extension conducted a needs assessment in the Tri-County area of Utah, encompassing Uintah, Duchesne, and Daggett Counties, to identify key community priorities. Using a three-phased approach, the assessment identified mental health, strengthening relationships, and financial literacy as top concerns. These findings will inform resource allocation to Extension programming to address the region’s most urgent needs.

Chronic kidney disease (CKD) is a progressive condition affecting hundreds of millions of individuals worldwide. However, clinical datasets often record continuous laboratory measurements as categorical intervals rather than precise numerical values. This interval-censored structure presents methodological challenges for standard regression-based classifiers. This study compares three strategies for handling interval-valued predictors prior to fitting a logistic LASSO model: (1) midpoint imputation, which replaces each interval with its arithmetic center; (2) ordinal encoding, which maps intervals to integer ranks; and (3) a Monte Carlo simulation approach, which repeatedly samples uniformly from each observed interval and averages predictions across replications. Beef production on chemically uniform grass monocultures can limit nutrient synchrony and contribute to uneven pasture use. We evaluated whether supplementing tannins with bioactive plant secondary compounds improves foraging dynamics and landscape use by beef cattle grazing a meadow bromegrass monoculture in ways aligned with rangeland sustainability. Twenty-four Angus cow–calf pairs were allocated to six 3.6-ha paddocks (four pairs/paddock), randomly assigned to Control (Ctrl; n = 3) or Tannin treatment (TT; n = 3). Animals received 1 kg/cow/day of DDGs, with TT receiving an added 0.4% tannins (2:1 condensed:hydrolyzable). Grazing occurred during four 15-day periods (July– September) across two years. …

Every Utahn, regardless of income, ZIP code, race, age, or health status, deserves reliable access to affordable, nutritious, and culturally meaningful food. Yet, too many communities across the state face persistent barriers that limit their ability to eat well and live healthy lives. This fact sheet reviews results of a 2024 Utah State University (USU) Extension needs assessment that identified food and nutrition security as a high-priority issue in Utah. It explores the current landscape, identifies key challenges, and outlines strategic opportunities for USU Extension and its partners to enhance food security statewide.

The Follow-Up Gap: Racial Disproportionality And Social Determinants Of Health In New Jersey’S Hearing Detection And Intervention Program, Maryrose Mcinerney, Wendy Zeitlin

Journal of Early Hearing Detection and Intervention

Objectives. To assess how race/ethnicity and social determinants of health are related to loss to follow-up (LTF) from NJ’s Early Hearing Detection and Intervention (EHDI) program.

Methods. All infants born in NJ between June 2015 and June 2017 referring for additional hearing healthcare after hospital discharge were considered for inclusion in this study. The sample consisted of 4,141 babies, 10.7% of which received no follow-up care. Step-wise multi-level logistic regression was used to determine how race/ethnicity, family-level, and community-level social determinants of health (SDOH) were predictive of LTF.

In the fall of 2024, researchers at Utah State University (USU) studied western U.S. consumer preferences and willingness to pay for regionally sourced processed food products. Researchers examined consumer preferences, purchasing habits, and pricing for three processed food products, one of which was bottled mild salsa (16-ounce bottle). This fact sheet describes the target market (consumer group) for bottled mild salsa. Target consumers were identified as those who consume salsa at least several times weekly.

In the United States, consumer demand for specialty processed foods is increasingly centered on natural, organic, and local offerings that represent health and ethical values. This fact sheet provides an overview of a Utah State University study showing respondent preferences for specialty labeled processed foods. Specifically, consumer knowledge and familiarity with various specialty production and labeling programs, including organic, local, grass-fed, and non-GMO, were examined, along with specialty food consumption habits and attitudes. Hylocereus species are promising for enhancing fruit productivity in arid regions, but high solar radiation often leads to yield loss. This study aimed to evaluate the short-term impact of different shading levels on the physiological performance, productivity, and post-harvest quality of Hylocereus costaricensis under semi-arid conditions. Plants were grown in the field under two shade levels, i.e., 35 and 50% and their performances were compared to plants under control, i.e., 0% of shade or full sunlight. With the growing use of AI, it is important to know target audiences’ perceptions of its use. A convenience sample of students were invited to take an online survey in which they were randomly assigned to Group 1 (evaluated a student-generated blog; n = 456) or Group 2 (evaluated an AI-generated blog; n = 492). The results of independent t-tests and chi-squared tests indicated no group differences in ratings of ease of recipe preparation, time to prepare the recipe, utilization of common ingredients, and frequency of intended use of the blog. Previous researches have proved that the synchronized use of inexpensive RGB images, image processing, and machine learning (ML) can accurately identify crop stress. Four Machine Learning Image Modules (MLIMs) were developed to enable the rapid and cost-effective identification of sugar beet stresses caused by water and/or nitrogen deficiencies. RGB images representing stressed and non-stressed crops were used in the analysis. To improve robustness, data augmentation was applied, generating six variations on each image and expanding the dataset from 150 to 900 images for training and testing. The genome of the hemlock woolly adelgid (Adelges tsugae) is presented in 10 chromosomal pseudomolecules along with 132 unplaced scaffolds for a combined length of 216.56 Mb. The genome is highly contiguous with an N50 of 20.54 Mb and its longest scaffold 37.41 Mb in length. The assembly recovered 97.7% of benchmarked universal single-copy Hemiptera orthologs (BUSCO) with an overall completion score of 98.6%. On the basis of chromosomal synteny with other aphid genomes, the hemlock woolly adelgid’s genome is composed of eight autosomes and two sex (X) chromosomes.
