Background: Research has highlighted the value of centering student voices and agency in classroom contexts, yet few curricula explicitly foreground critical agency in their design. This qualitative case study examines how students enact agency within an integrated curriculum that combines computer science, social studies, and Indian Education for All (IEFA) standards. The unit focused on tribal sovereignty and why treaties still matter for indigenous people today, enabling students to connect their lived experiences to broader sociopolitical contexts. Early identification and intervention for children with developmental delays improves child outcomes, yet many children are not monitored, screened, or identified early despite its effectiveness. The relationship between the use of the Centers for Disease Control and Prevention’s “Learn the Signs. Act Early.” developmental monitoring program and referrals to intervention services is not well understood. This study investigated how “Learn the Signs. Act Early.” implementation practices within Massachusetts’ Head Start and Early Head Start agencies correlated with the rate of referrals to intervention services. Watermelon is a water-intensive vegetable crop that is sensitive to drought and requires adequate nutrient supply for good yield and fruit quality. It is an important vegetable crop grown on 142,000 acres in the United States and 586 acres throughout Utah. Utah experienced its driest year on record in 2020 during a five-year drought (2019 to 2023). This affected local ecosystems, including the Great Salt Lake, which experienced record-low water levels. The drought also negatively affected the agricultural sector, including watermelon growers. Higher-than-average fertilizer prices in recent years have also threatened watermelon production. Pasture-based ruminant systems link nitrogen (N) nutrition with ecosystem N cycling. Grazing ruminants convert fibrous forages into milk and meat but excrete 65 to 80% of ingested N, creating excreta hotspots that drive ammonia volatilization, nitrate leaching, and nitrous oxide (N2O) emissions. This review synthesizes ecological and ruminant nutrition evidence on N flows, emphasizing microbial processes, biological N2 fixation, plant diversity, and urine patch biogeochemistry, and evaluates strategies to improve N use efficiency (NUE). Chia Seed Gel Powder As A Clean-Label Enhancer Of Texture, Physicochemical Quality, Antioxidant Activity, And Prebiotic Function In Probiotic Low-Fat Yogurt, Mahmoud E. A. Hamouda, Ratul Kalita, Abdelfatah K. Ali, Pratibha Chaudhary, Pramith U. Don, Omar A. A. Abdelsater, Anjali Verma, Yaser Elderwy

Nutrition, Dietetics, and Food Science Student Research

This study evaluated the effect of incorporating chia seed gel powder (CSGP) as a natural, clean-label stabilizer on the physicochemical, functional, microbiological, microstructural, antioxidant, and sensory properties of probiotic low-fat yogurt (PLFY) during 21 days of refrigerated storage. Six formulations were prepared using 0–2.5% CSGP, including Control (0% CSGP), YOG1 (0.5% CSGP), YOG2 (1.0% CSGP), YOG3 (1.5% CSGP), YOG4 (2.0% CSGP), and YOG5 (2.5% CSGP). Results showed that increasing CSGP levels noticeably enhanced the total solids, protein content, viscosity, hardness, and water-holding capacity of the PLFY (p < 0.05), while consistently reducing syneresis. Antioxidant activity also rose with higher CSGP concentrations, with YOG5 exhibiting the greatest DPPH scavenging activity (35.12%). Confocal laser scanning microscopy revealed a denser and more uniform protein network in PLFY fortified with CSGP, consistent with rheological measurements showing increased storage (G′) and loss (G″) moduli. Probiotic viability significantly increased (p < 0.05) in CSGP-added samples, indicating a potential prebiotic effect of CSGP. Sensory results demonstrated that although higher CSGP levels slightly darkened the yogurt color, body, texture, flavor, and total sensory scores improved markedly, with YOG5 gaining the highest total score (81.77). The results demonstrate that CSGP acts as a highly effective, multifunctional ingredient that enhances texture, stability, probiotic viability, and antioxidant capacity, making it a strong clean-label candidate for developing high-quality, functional probiotic low-fat yogurt.

Community-engaged learning (CEL) in graduate-level coursework contributes to professional development and growth. CEL course design requires intentional and time-intensive planning. A graduate-level child development course was designed for CEL using the following process: needs assessment, training for community education, preparing materials, practicing with feedback, presenting to an authentic audience, and reflection on the experience. Students created presentations for authentic parent audiences based on a needs assessment of parent interest in child development topics. Reflections from four students in the course were analyzed using a general thematic analysis technique. Three themes emerged. …

Early identification and intervention are crucial to minimizing impacts of congenital hearing loss. Early Hearing Detection and Intervention (EHDI) programs recommend newborn hearing screening before one month of age and a diagnostic audiologic evaluation before three months for infants who do not pass the screening. However, not all infants meet these benchmarks, as geographic and sociodemographic factors may influence adherence.

Addresses of primary contacts and audiology clinics were geocoded to calculate drive times to the nearest clinic in 10-minute intervals for infants born in Minnesota between 2019 and 2021. Birth location, NICU admittance, and sociodemographic characteristics were also analyzed. Random …

As humanity prepares for prolonged space missions and future extraterrestrial settlements, developing reliable and resilient food-production systems is becoming a critical priority. Space agriculture, the cultivation of plants beyond Earth (particularly on the Moon and Mars), faces a constellation of interdependent environmental, biological, and engineering challenges. These include limited solar radiation, elevated ionizing radiation, large thermal variability, non-Earth atmospheric pressures, reduced gravity, regolith substrates with low nutrient-holding capacity, high-CO2/low-O2 atmospheres, pervasive dust, constrained water and nutrient availability, altered plant physiology, and the overarching need for closed-loop, resource-efficient systems. This research highlights the long-term value of compost in dryland wheat systems, where water scarcity and declining soil fertility limit productivity. A single, high-rate compost application (22 tons per acre) can improve soil moisture content, organic carbon content, aggregate stability, and microbial activity. All these benefits contributed to higher and more stable wheat yields, even more than two decades after application. These changes help to make the compost-treated wheat more resilient during dry years. While composting incurs a high upfront cost, its long-term benefits can significantly reduce the need for repeated fertilizer or soil amendments, offering cost and labor savings …

Sustaining Community Health Through Impactful Snap-Ed Initiatives In Utah, Lacee Jimenez, Kristi Strongo, Lea Palmer, Lendel K. Narine, Heidi Leblanc

Outcomes and Impact Quarterly

Create Better Health (CBH), Utah’s SNAP-Ed program, addresses food insecurity and chronic disease prevention through nutrition education, policy, systems, and environmental (PSE) initiatives, and social media marketing. From 2024 to 2025, CBH reached over 13,500 Utahns through direct education and 81,000 through community interventions. Evaluation results showed significant improvements in nutrition behaviors, including increased fruit and vegetable intake, food resource management, and label use. Follow-up surveys showed sustained behavior change. CBH’s comprehensive approach demonstrates measurable public health impact and points to the importance of continued investment in nutrition education and food access programs to build healthier, food-secure communities.

Beef producers in the United States are working to meet rising global demand for animal protein while facing major challenges such as drought, climate uncertainty, and rapid urbanization. These issues make it difficult to produce consistent and dependable feed, pushing producers to explore new ways to grow feed using fewer natural resources. Vertical farming systems are one option that can grow sprouted cereal grains indoors throughout the year while using decreased land and water than traditional agriculture.
