Due to significant lipid and carbohydrate production as well as other useful properties such as high production of useful biomolecular substrates (e.g., lipids) and the ability to grow using non-potable water sources, algae are being explored as a potential high-yield feedstock for biofuels production. In both natural and engineered systems, algae can be exposed to a variety of environmental conditions that affect growth rate and cellular composition. With respect to the latter, the amount of carbon fixed in lipids and carbohydrates (e.g., starch) is highly influenced by environmental factors and nutrient availability. Two Studies On Childhood Obesity: Effect Of Obesity On Academic Achievement And Effect Of Food Store Access On Diet Quality, Gaogao Yu

This thesis includes two studies on childhood obesity. This first study investigates whether childhood obesity rates affect their academic achievement scores by using a school-level panel data set on Arkansas 4th and 6th grades. The main results indicate that childhood obesity rates do not significantly affect academic achievement scores. Controls for education inputs such as library volume, educational expenditures per student and teacher salary show consistently significant positive relationship to students' test scores in both whole sample and in subsample analyses by socio-economic and minority status. Protein and oil are the major chemical constituents of soybean seed that affect the quality of soyfood, feed, and oil products. Therefore, soybean cultivars with high protein and/or high oil are desirable for the soyfood and feed markets. Use of molecular-marker-assisted selection will facilitate the breeding process of such cultivar development. The objectives of this research were to identify new quantitative trait loci (QTL) and confirm previously reported QTL associated with seed protein and oil content by using simple sequence repeat (SSR) markers and single nucleotide polymorphism (SNP) markers. What is now known as Amarna, Egypt there once stood a grand city. Hastily built and quickly abandoned, this once capital city of Egypt was the brainchild of the Pharaoh Akhenaten. In 2002 the final resting place of the inhabitants who populated this ancient city were discovered. Since excavations began at the South Tombs Cemetery an unusual high number of individuals aged 3-25 have been excavated. Out of the 278 individuals excavated thus far, 45% of them fall to the adolescent and sub-adult category. This dissertation consists of three research parts: 1) development of rapid detection methods for foodborne pathogens; 2) immune response of chicken cells against Salmonella and bacteriophage P22; 3) evaluation of novel control measures for poultry productions. In order to develop rapid and accurate detection methods for foodborne pathogens, two types of PCR assays were utilized. Three foodborne pathogens included Campylobacter, Escherichia coli and Salmonella in watershed were qualitatively and quantitatively detected by multiplex PCR and qPCR (chapter 2). This research looked at the potential impact that parent education may have on the feeding practices of parents of young children. Since eating behaviors are a national concern for both children and adults, it's important to examine how we can create not just healthier children but, as a result, healthier adults. This study utilized an intervention that was an adapted version of a healthy eating curriculum created by Sesame Workshop and the California WIC association with the intention of improving parental feeding practices through a behavior-based approach. Salinity is a common abiotic stress causing soybean yield loss worldwide. Use of tolerant cultivars is an effective and economic approach to coping with this stress. Toward this, research is needed to identify salt-tolerant germplasm and better understand the genetic and molecular basis of salt tolerance in soybean. The objectives of this study were to identify salt-tolerant genotypes, to search for SNPs and QTLs associated with salt tolerance, and to identify candidate salt tolerance genes. Propylene glycol dinitrate (PGDN) is an important component used in the formulation of energetic materials. A renewable, environmentally-friendly and effective production technique for the production of 1,2-propanediol, an important precursor to PGDN, is desired. While fermentation of 1,2-propanediol has been achieved, it suffers from major limitations such as expensive feed sugars and relatively low yields. It is hypothesized that algae sugars could serve as a feedstock for the microbial synthesis of 1,2-propanediol, thereby reducing production costs and enhancing sustainability.

Despite the interest of consumers in sustainable and environmentally friendly products, only a limited number of studies have focused on sustainability level disclosures for consumer packaged goods. The general overarching purpose of this dissertation is to extend the internal reference point and information processing literatures to better understand how consumers will process sustainability disclosures. Applying the theoretical lens of assimilation bias in conjunction with self-enhancement offers an important extension to prior work. Effects Of High-Velocity Versus Low-Velocity Resistance Training On Resting Metabolic Rate And Functional Performance In Older Adults, Laura Ashleigh Morgan

The purpose of this study was to compare the effects of a 12-week high-velocity resistance training (HVRT) protocol to a traditional low-velocity resistance training (LVRT) protocol on resting metabolic rate (RMR) and other selected measures of muscular and functional fitness in older adults. Nineteen adults between the ages of 65 and 82 participated: 8 HVRT, 7 LVRT, and 4 controls (CTRL). Initially, no differences existed between groups except for age (p = .016). HVRT (75.6 years) was older than LVRT (69.6 years) and CTRL (69.3 years). The exercise intervention consisted of 2 days/week sessions for 12 weeks at 3 sets …

Flavonoids, such as anthocyanins, may be responsible for the health benefits of chokeberries, as they are present in large quantities in chokeberries and are potent antioxidant and anti-inflammatory agents. Despite these health properties, previous investigations on the bioavailability of flavonoids illustrate that little of the ingested amount reaches the bloodstream. This study investigated two factors that may help to explain these inconsistencies. First, storage of berry fruits and berry fruit products leads to extensive polymerization of their anthocyanins with procyanidins. Heat stress causes major losses to cotton seed and lint yield. Introduction of heat stress tolerance to Arkansas cotton varieties is highly desirable. However, very little is known about the molecular basis of heat stress tolerance in cotton. The present study attempted to identify heat stress tolerance genes in two heat-tolerant cotton cultivars, VH260 and MNH456, originating from Pakistan. In my first essay I use data from licensed child care centers in the state of Arkansas to examine the relationship between quality and price charged. To measure quality, I use Arkansas's Better Beginnings Quality Rating and Improvement System, a tier-structured voluntary certification program which can be viewed as a voluntary increase in regulations for licensed child care centers which allows them to send an observable signal of quality to consumers. Using an hedonic pricing estimation with controls for varying geographic markets, results indicate firms with Better Beginnings classification charge higher prices once the highest levels of certification are obtained. …

An evaluation of poultry farm water supplies was conducted to determine the value and impact of water system sanitation practices in commercial broiler houses on microbial levels. Water line cleaning between flocks using concentrated disinfectant solution before placing chicks reduced biofilms retained in the lines to a safe level. Occasional microbial surges were noticed during different points of flock grow-out period even when daily water sanitation was present indicating water is highly susceptible to microbial contamination. However, the daily water sanitation practice controlled the occasional microbial surges in water from sustaining and kept drinking water to a microbiologically acceptable level. …

The objective of this research focuses on “Generation Y students perceptions of packaging and pricing of Arkansas wines”. A thirteen-question quantitative survey was given to 200 Generation Y students at a mid-south land-grant university student union. The questions focused on consumers’ preferences on labeling, packaging, and pricing of Arkansas wines. This research is important to the state’s wineries success with implication on product satisfaction, perceived quality, and price value. Generation Y prefers the glass bottle with the traditional cork and description of the wine. Majority of Generation Y would spend $10 to $15 on a 750 ml of Arkansas wine.

The literature is rich in studies that measure the benefits of rural development programs. However, many of these studies lack a temporal dimension because they measure cost and benefits for only capital investments and for only a single, static year, while not accounting for skill enhancement. Cow-calf producers in the Ozark Highlands region are under continuous pressure to improve economic efficiency. Additionally, estimating greenhouse gas (GHG) emissions from cow-calf and forage production processes may become increasingly important as policy makers seek to mitigate or reduce agriculture's role in climate change.
