Spinach is an important vegetable crop grown in many parts of the world (Correll et al. 2011). It has become increasingly popular due to its nutritional value as it is very high in antioxidants (Prior, 2003). Spinach production, however, is affected by many biotic stresses. Downy mildew, caused by Peronospora farinosa f. sp. spinaciae (Pfs) , is perhaps the most important biotic constraint for spinach production worldwide (Correll et al, 1994). The objectives of this study were to measure how quickly cattle shed their winter coat in the sub-tropical climate of Arkansas. As well as, to understand the role age may play on cattle shedding efficiency in spring and summer months, in conjunction with the relationship between mother hair coat and calf sex. Angus based commercial beef cattle (n = 224) were observed over a five-month period in 2012. Once monthly, at approximately 28-day intervals, cattle were evaluated for shedding on a scale from 1 to 5. A score of 5 indicated the cow/heifer had a full winter coat and a …

Food customs and traditions bind human groups together in many ways--Socially, geographically, temporally, and emotionally. This thesis describes the intricate relationships between food, ritual, and cultural identity in a rural German-Catholic community in Missouri. By drawing on the anthropological, cultural geographical and folkloric literature surrounding rural Missouri, a portrait of foodways emerges, which in turn illuminates valuable, often understated regional cultural traditions. Religion and ritual are understood as crucial to the continuity of regional identity--it is reinforced and made resilient through shared Social action. A retrospective chart review was done using a sample of breastfeeding Hispanic mothers recruited from a large pediatric clinic in Northwest Arkansas in order to examine the impact of a tailored breastfeeding intervention and to identify factors associated with discontinuation of breastfeeding before four months of age. It was hypothesized that Hispanic women who participated in the study would increase their breastfeeding rates compared to Hispanic women who received no intervention. Breastfeeding rates at four months were assessed via self-report in the electronic medical record. Oxidation Of Thrombomodulin Methionine 388 In Cigarette Smokers, Samrat B. Thapa

This work tested the hypothesis that oxidation of methionine 388 in thrombomodulin is higher in cigarette smokers, and thus a likely contributor towards the hypercoagulable state in smokers. Thrombomodulin, a protein cofactor found on endothelial cell surfaces, regulates the activity of thrombin. Thrombin bound to thrombomodulin no longer converts fibrinogen to fibrin, but instead activates Protein C which, in turn, stops the coagulation cascade by inactivation of clotting factors. The oxidation of methionine 388 of thrombomodulin has been shown in vitro to dramatically decrease the anticoagulant cofactor activity of thrombomodulin. This thesis evaluates the PromegaTM P450-Glo assay (PromegaTM V9800) as a tool for quantifying ergot alkaloid concentration. Current techniques used for detection of ergot alkaloids are slow and expensive, do not detect all ergot alkaloids, or are not effective on bovine bodily fluids. The first study was conducted to determine effects of commercial ergot alkaloids (n = 6; 0 - 400 μM) on the PromegaTM P450-Glo assay. Cytochrome P450 (CYP450) activity in assay had a differential response to each ergot alkaloid and concentration. Growing broilers on wire flooring provides an excellent experimental model for reproducibly triggering significant levels of lameness. In Pilot Study #1 using broilers from Line C grown on wire flooring, adding the Biomin probiotic PoultryStar® to the feed reduced the percentage of lameness by half when compared with broilers that received the control diet alone. In Pilot Study # 2 using broilers from Line B grown on wire flooring, adding the PoultryStar® probiotic reduced the percentage of lameness to 8% when compared with 28% lameness in broilers that received the control diet alone. Rearing birds on wire flooring has proven to be an effective method for consistently triggering significant levels of lameness in broilers, and while the wire flooring model has been proven effective, more mobile wire floor models have been developed to compliment the facility management conditions within commercial genetic selection programs. The tocols (alpha-, beta-, gamma- and delta- tocopherols (T); alpha-, beta-, gamma- and delta-tocotrienols (T3)) make up the vitamin E family of antioxidants. Tocols have many health benefits. Gamma-T3 has been shown to protect against harmful radiation effects in mice. During rice bran oil refining up to 90% of tocols in rice bran are lost to the deodorizer distillate. The objective of this study was to optimize parameters for analyzing and isolating tocols from rice bran oil deodorizer distillate (RBODD). An experiment conducted in El Reno, Oklahoma during the fly season (May - September/October) evaluated the effects of horn flies on milk production, calf performance, and pasture behavior and temperament measurements of beef cow calf pairs. Six experiments were conducted to evaluate the response of broilers fed canola meal. Experiment 1 assessed performance and carcass yields when broilers were fed various combinations of canola and soybean meal in nutritionally balanced diets based on digestible amino acid values. The results suggested that canola meal can be used in isocaloric diets as a partial replacement for Soybean meal.

This study examines the relationship between food insecurity and Social capital among 5th-7th graders attending an intermediate school in Northwest Arkansas where nearly 70 percent of students participate in the free or reduced lunch program. The central research questions are: Does Social capital have a direct impact on children's food insecurity? And, does Social capital mediate the influence of negative circumstances on children's food insecurity? This study finds that Social capital does have a significant association with food insecurity, even when controlling for multiple demographic and circumstantial factors. Objectives of this research were to determine effects of LDH enzymatic activity and circulating PRL on immune response, growth, composition, and reproduction, and to determine the effects of single nucleotide polymorphisms of LDH and PRL on immune function, growth and carcass traits, cyclicty, and fecundity of replacement heifers grazing endophyte infected tall fescue. Eighty-nine Angus based heifers had physical and ultrasound measurements along with blood samples collected at weaning, yearling, and prebreeding. Salmonellosis is the most frequently occurring bacterial foodborne illness in the United States and the human case rate has not improved for the past two decades. The federal agency responsible for oversight of meat and poultry processors has announced the intent to extend existing pathogen reduction performance standards for Salmonella spp. to cover all classes of products including fermented sausages that are currently produced under HACCP plans that are validated for control of Escherichia coli O157:H7. The "war on obesity" is now well into its second decade. What began as an effort to encourage medical doctors to screen and treat patients whose weight put them at risk for health problems has transformed into a much broader public health campaign to address the root causes of obesity. A growing number of state, territorial and local health departments are currently exploring new ways to promote healthy eating and physical activity. At the federal level, the U.S. Centers for Disease Control and Prevention (CDC) has made "nutrition, physical activity and obesity" a top priority.

After a long process of judicial action, states have revised the education funding distribution systems to meet the legal requirement of providing both horizontal and vertical funding equity between districts (interdistrict) in the state. A major part of the judicially required reforms was a shift to weighted student funding or funding which provides differential amounts of education funding dependent on the estimated needs of students based on their individual characteristics. However, little research has been done to examine the equity of the funding distribution systems between schools within districts (intradistrict).

Pulmonary Hypertension Syndrome (PHS) and lameness are important metabolic diseases that affect rapidly growing broilers. The research reported in the first section of this dissertation focused on developing qPCR assays to identify differences in the expression levels of four candidate genes possibly associated with PHS: angiotensin II type 1 receptor (AGTR1): urotensin receptor 2D (UTS2D); serotonin receptor/transporter type 2Bn (HTR2B); and angiotensinogen cleaving enzyme (ACE). Expression levels of these candidate genes were examined in four different tissues. Observers of food law in the 2012 presidential election year witnessed a dramatic slowing of federal initiatives-perhaps arising from a desire by both Congress and the administration to avoid upsetting critical constituent groups during a year seemingly dominated by campaigns and endless talking points. For example, Congress failed to take action on a unique compromise between what some had considered mortal enemies-the Humane Society of the United States and United Egg Producers-that would implement a federal animal welfare standard for laying hens in return for abandoning ballot measures in various states. This study developed and evaluated a novel method to recover the microalgae species Arthrospira platensis from a closed helical photo bioreactor system. A recovery apparatus was designed and shown to increase recovery by 40% via periodic online recovery runs during exponential growth phase of biomass. Considerations for the apparatus design included the low shear tolerance of the algae and the necessity for a closed system in order to monitor CO2 consumption. Rice is the grain with the third-highest global production. In the US, Arkansas is the largest rice producing state; however, an estimated 62% of the rice fields in the state are infested with red rice, and can cause up to 80% yield reduction in rice. Among its weedy traits, seed dormancy plays an important role in its persistence, and helps red rice escape weed management techniques thereby increasing the red rice soil seedbank. In March 2006, four groundcover management systems (GMS) and two nutrient sources (NS) were implemented for their ability to alter the soil physical condition of a newly established, organically managed apple (Malus x domestica Borkh.) orchard. Annual applications of municipal green compost (GC), shredded office paper (SP), wood chips (WC), and mow-blow (MB) grass mulch were utilized as GMS, and NS supplied to trees were from composted poultry litter (PL), a commercial organic fertilizer (CF), or an untreated control (NF) in a 4x3 factorial study.
