Historical And Modern Hard Red Spring Wheat Comparison: Analysis Of Proximate, Enzyme Activity, Phenolic Acid, And Starch Properties, Catherine Suzanne Schwebach
Historical And Modern Hard Red Spring Wheat Comparison: Analysis Of Proximate, Enzyme Activity, Phenolic Acid, And Starch Properties, Catherine Suzanne Schwebach
Cereal Science
Some claim modern wheat is biochemically different from historic wheat and contributes to chronic diseases. This research was necessary to determine if any significant differences existed between historic and modern hard red spring (HRS) wheat in several physical and chemical components. Thirty HRS cultivars were grown in the same year and location and underwent laboratory analysis. In relation to release year, significant (P<0.05) differences were found for ash content (AC), phosphorous, potassium, zinc, arabinose-to-xylose ratio, enzyme activities, and phenolic acids in whole wheat, AC, and α-amylase and xylanase activities in white flour, and total starch in bread. The remaining parameters displayed no significant (P>0.05) differences in correlation to release year, including starch digestibility. The majority of results indicate no significant biochemical variations between the historic and modern HRS cultivars. Parameters that demonstrated differences have the potential to affect consumer health …0.05)>

Assessment Of Vacuum Steam Pasteurization To Improve Safety And Quality Of Low Moisture Foods, Manoj Kumar Shah
Microbiological Sciences
Low moisture foods such as grains, seeds, spices and flour are part of our daily diet. While they are rich in bioactive compounds, they can be minimally processed or often consumed raw. Several outbreaks due to Salmonella and E. coli O157:H7 have been attributed to low moisture foods. The efficacy of vacuum steam pasteurization in inactivation of Salmonella PT 30, E. coli O157:H7 and E. faecium on whole flaxseed, quinoa, sunflower kernels, milled flaxseed and whole black peppercorns was determined. The impact of pasteurization on microbial shelf life of whole and milled flaxseed was also monitored along with their water …
On The Origin Of Modern Horse Breeds From Four Distinct Subspecies Of Equus Caballus, Margaret Turkish Brady
On The Origin Of Modern Horse Breeds From Four Distinct Subspecies Of Equus Caballus, Margaret Turkish Brady
Biological Sciences
Although the evolution and domestication of the horse has been extensively studied, many mysteries remain. No other animal has been as influential on the development of human societies and cultures as the horse. Horses have been used for milk, meat transportation, riding, plowing, transportation of goods, and recreation. Over the course of the domestication of the horse, specific traits were selected for or against depending on the intended use of the animal. A variety of types of horses appeared in different regions of the world and it has been theorized that several indigenous subspecies of wild horses were used to …
Effects Of Protein Supplement During The Last Third Of Pregnancy On Blood Flow To The Mammary Gland In Beef Cows, Craig Allen Zimprich
Effects Of Protein Supplement During The Last Third Of Pregnancy On Blood Flow To The Mammary Gland In Beef Cows, Craig Allen Zimprich
Animal Sciences
Calves born to cows fed a protein supplement during late pregnancy have greater production characteristics compared to calves from cows not supplemented, despite similar birth weights. Our hypothesis was that cows receiving protein supplement during late gestation would have greater mammary gland blood flow allowing for enhanced lactation. Mammary gland hemodynamics were recorded during late gestation. While protein supplementation did not alter the blood flow to the mammary gland, this data demonstrates that mammary gland blood flow can be monitored during late pregnancy.

The Effects Of Forage Level In Whole Or Dry-Rolled Corn Based Diets On Carcass Characteristics, Meat Tenderness, And Meat Color, Tyler James Frick
Animal Sciences
The objective of this study was to determine if increasing the forage level and feeding grain whole as opposed to dry-rolled is a feasible alternative to high energy rations with a similar age at time of slaughter. Steers were fed either twenty or forty percent forage, with whole or dry-rolled corn. There were no differences in fat thickness, longissimus area, KPH, marbling, USDA quality grade, Warner-Bratzler shear force, or cook loss. Cattle fed high forage and whole corn tended to have lower hot carcass weights. Additionally, the forty percent forage treatment tended to have lower USDA yield grades, and had …
Effects Of Nutrient Restriction, Realimentation, And Parity On Umbilical Hemodynamics In The Pregnant Ewe, Manuel Alexander Vasquez Hidalgo
Effects Of Nutrient Restriction, Realimentation, And Parity On Umbilical Hemodynamics In The Pregnant Ewe, Manuel Alexander Vasquez Hidalgo
Animal Sciences
Sheep are normally managed within grazing systems; forage availability and quality are dependent upon seasonal conditions such as drought and humidity. It is therefore important for producers to know when during gestation it is critical to supplement animals with additional feed. Previous research has shown that nutrient restriction during mid-gestation causes a decrease in umbilical blood flow with a possible consequent decrease in fetal body weight and size. Our findings indicate that a decrease in umbilical blood flow upon nutrient restriction during mid-gestation is not solely a consequence of the restriction itself or an additional effect of parity. Moreover, it …
Does Beef Inclusion In A Modern American Diet Influence Risk Factors For Obesity-Related Metabolic Disorders Via A Swine Biomedical Model, Alexis Michelle Siomka
Does Beef Inclusion In A Modern American Diet Influence Risk Factors For Obesity-Related Metabolic Disorders Via A Swine Biomedical Model, Alexis Michelle Siomka
Animal Sciences
Using swine as a model for humans, this study was conducted to determine if replacing the sugar present in the average American diet (SUG) with ground beef (GB) would alter developmental body composition, onset of puberty, and risk factors for obesity-related metabolic disorders. Twenty-four Berkshire gilts of common age and sire line were obtained at weaning, assigned to one of two dietary treatments (SUG vs. GB), and pair-fed at an average of 3.7 % body weight for 93 d. Over time, GB gilts had superior body weight gain (P < 0.01), larger cross-sectional longissimus muscle area (P < 0.0001), less subcutaneous fat depth (P = 0.0005), and greater percentage lean body mass (P < 0.0001) than SUG. Reproductive tracts were prepubertal across treatments; however, follicular development was observed in GB gilts. Sodium, hematocrit, hemoglobin, and insulin-like growth factor 1 were higher and ionic calcium lower for GB compared to SUG gilts.

2015 National Pork Retail Benchmarking Study, Laura Anne Bachmeier
Animal Sciences
The objective of this study was to quantify pork quality variation in the retail self-serve meat case nationwide. Center-cut loin chops (CCLC) (n=3795) were analyzed in-store for subjective color and marbling scores (2.85 and 2.30). Means for enhanced (EN) and non-enhanced (NON) CCLC were: L* (54.46 vs. 55.99; P < 0.0001), pH (6.00 vs. 5.74; P < 0.0001), and Warner-Bratzler Shear Force (WBSF) (20.43 vs. 25.99 N; P < 0.0001). Mean EN and NON sirloin chop values were: L* (53.74 vs. 52.51; P = 0.20), pH (6.00 vs. 5.89; P = 0.04), and WBSF (16.18 vs. 22.92 N; P < 0.0001). Mean EN and NON blade steak values were L* (45.81 vs. 45.96; P = 0.82), pH (6.42 vs. 6.28; P = 0.04), WBSF (15.74 vs. 19.42 N; P = 0.0005). Results indicate a large amount of variation exists in the pork retail self-serve meat case.

Effects Of Maternal Nutrition On Fructose, Glucose, And Cationic Amino Acid Transporter Expression In Bovine Utero-Placental Tissues From Days 16 To 50 Of Gestation, Matthew Scott Pennell Crouse
Animal Sciences
Poor Maternal nutrition has been implicated to reduce nutrient transport to the conceptus. Therefore, we hypothesized that maternal nutrition and day of gestation would impact mRNA expression of nutrient transporters GLUT1, GLUT3, GLUT5, GLUT14, CAT-1, CAT-2, and CAT-3 in beef heifers. Crossbred Angus heifers (n = 49) were bred via AI, assigned to nutritional treatment (CON = 100% of requirements for 0.45 kg/d gain and RES = 60% of CON) and ovariohysterectomized on d 16, 34, or 50 of gestation. Expression of CAT-2 was the only gene in any tissue to demonstrate a day × treatment interaction. Expression of nutrient …
Maternal Nutritional Plane And Endogenous Retroviral Gene Elements, Pregnancy Hormones, And Placental Vascularity And Angiogenic Factors During The Establishment Of Pregnancy In Beef Cattle, Kyle James Mclean
Animal Sciences
In order to meet the projected food demands by 2050, animal agriculture must increase production of animal products on the same or decreased land area through increased efficiency. Early gestation is one area to increase efficiency in beef production in a twofold manner 1) by increasing the number of calves born due to decreased early embryonic loss and 2) by minimizing detrimental effects due to fetal programming which may decrease offspring growth or reproductive efficiency. Both of which will result in more pounds of beef produced by the same number of cows. Recently, endogenous retroviral elements (ERV), which make up …
Structural Studies Of The Mechanism By Which Bcl-2 And Beclin Proteins Regulate Autophagy And Apoptosis, Minfei Su
Chemistry and Biochemistry
Autophagy and apoptosis are catabolic pathways essential for homeostasis in all eukaryotes. While autophagy usually promotes cell-survival by enabling degradation and recycling of damaged macromolecules, apoptosis is the canonical programmed cell death pathway. Dysfunction of autophagy and apoptosis is implicated in diseases like cancers, cardiac disease, and infectious disease. Beclin homologs are key for autophagy as they are core components of class III phosphatidylinositol 3-kinase autophagosome nucleation and maturation complexes. Anti-apoptotic Bcl-2s inhibit apoptosis through binding and antagonizing pro-apoptotic Bcl-2s. Anti-apoptotic Bcl-2s also down-regulate autophagy by binding to the Bcl-2 homology domain 3 (BH3D) of Beclin homologs, thereby enabling crosstalk …

Sensory And Quality Attributes Of Deodorized Pea Flour Used In Gluten-Free Food Products, Cassandra Hillen
Plant Sciences
Yellow pea (Pisum sativum L.) flour was deodorized using high-pressure solvent extraction (HPSE) with ethanol and water as solvent. These flours were evaluated in gluten-free (GF) baked goods. Sensory evaluation, volatile analysis, and laboratory quality testing were completed to determine the impact on flavor, aroma, and flour quality. The HPSE pea flours obtained from 1:1 and 3:1 ethanol and water were tested against a control pea flour in cake and cookie sensory tests. Both showed significantly higher (P<0.05) acceptance scores for flavor, texture, and overall acceptance, but acceptance was not significantly different. Texture of cookies did not change significantly over 5 days, but significant differences (P<0.05) between the three flour treatments in cookies and cakes were observed. The protein of the HPSE treated flours were significantly higher than the control. The headspace analysis showed some significant differences between control and treatments for the volatile standards of interest.

Identification Of Specific Starch Profiles In North Dakota State University Potato Germplasm For Nutritional And Industrial Utilization, Leah Kay Krabbenhoft
Plant Sciences
Amylose and amylopectin, the mostly resistant and soluble forms of starch, respectively, are two forms of starch present in the granule. In this study, we examined the effect of a new cooking method, microwave steaming, on soluble starch and resistant starch in order to determine and determined that this method may be used as a more efficient means to cook tuber material for starch analysis. Using the steaming method, we found clones present in the North Dakota State University potato breeding program with unique levels of soluble or resistant starch. Clones with high or low levels of soluble or resistant …
Hardwood Floricane Blackberry Cuttings & Production Of Primocane Blackberry In North Dakota, Abigail Ruth Debner
Hardwood Floricane Blackberry Cuttings & Production Of Primocane Blackberry In North Dakota, Abigail Ruth Debner
Plant Sciences
Blackberry (Rubus L. subgenus Rubus, Watson) is not a commercially produced crop in North Dakota since the available floricane cultivars are not winter hardy. Two experiments were performed to evaluate alternative methods of production for commercial use. The first experiment evaluated rooting of floricane-blackberry hardwood cuttings, which could be used in an annual production system. Various cultivars, auxin treatments, and rooting methods were used to determine the best adventitious root production. Rooting success was cultivar dependent with regard to auxin concentration and low results were observed overall. The second experiment evaluated practices to improve yield in four primocane-fruiting blackberry cultivars. …
Simulated Glyphosate Drift Effects On 'Red Norland' Commercial And Seed Potato Industries, Amanda Crook
Simulated Glyphosate Drift Effects On 'Red Norland' Commercial And Seed Potato Industries, Amanda Crook
Plant Sciences
Field, greenhouse, and laboratory experiments were conducted in 2014 and 2015 to evaluate effects of glyphosate drift on ‘Red Norland’ potato (Solanum tuberosum L.) grown for commercial and seed industries. Glyphosate drift was simulated by applying sub-lethal doses during the growth stages of tuber initiation (TI), early tuber bulking (EB), and late tuber bulking (LB). Sub-lethal glyphosate doses applied to mother plants had the greatest effect on daughter tubers during TI, resulting in high tuber sets and increased unmarketable tubers. Glyphosate applied to mother plants resulted in residue in the daughter tubers. When these tubers were used as seed, glyphosate …
Symmetric Protoplast Fusion In Interserial Syringa (Oleaceae) Hybridization, Nathan Allen Maren
Symmetric Protoplast Fusion In Interserial Syringa (Oleaceae) Hybridization, Nathan Allen Maren
Plant Sciences
Few other woody plants embody the preeminence of temperate woody plants in garden cultivation like the lilacs. In spite of their relationship, the trees lack the diversity of cultivated floral forms observed within the shrub lineages. Typical selection and cross-pollination schemes within the tree lilacs or between trees and shrubs have failed to yield the diversity of colors and fragrances on a tree form. With somatic fusion in Citrus spp. as a guideline for Syringa spp. protoplast isolation and culture, experiments were designed to optimize the conditions through somatic fusion. Protoplast isolation experiments revealed yield increases with increased exposure to …
Rotating Cross-Arm And Winter Row Covers For Floricane Blackberry (Rubus Subgenus Rubus Watson) Production In North Dakota, David Charles Mettler
Rotating Cross-Arm And Winter Row Covers For Floricane Blackberry (Rubus Subgenus Rubus Watson) Production In North Dakota, David Charles Mettler
Plant Sciences
Blackberry (Rubus subgenus Rubus Watson) production has potential to expand into North Dakota, but this will only occur with the evaluation of new cultivars and overwintering protection methods. Ten cultivars under four row cover treatments were evaluated for hardiness, vegetative growth, yield, and factors affecting fruit quality. Thermo-couples monitored air temperature under each treatment. Results indicate that the treatments differed in their ability to moderate winter air temperatures. Row covers had little effect on growth but differences were found between cultivars. The thermal blanket with corn stover resulted in significantly higher yield and more berries, but row covers did not …
Identifying Six-Row Barley Genotypes For Specific Brewer Needs Using A Dna Fingerprint, Jose Antonio Rivera Dompenciel
Identifying Six-Row Barley Genotypes For Specific Brewer Needs Using A Dna Fingerprint, Jose Antonio Rivera Dompenciel
Plant Sciences
Six-rowed barley (Hordeum vulgare L.) malt is an important raw material of beer. Each barley cultivar has its own unique malt profile for specific traits. The two biggest brewers in the United States, Anheuser-Busch InBev (ABI) and MillerCoors Brewing Company (MillerCoors), have different malt profiles for their ideal malt. MillerCoors wants moderate levels of protein and enzymatic activity while ABI wants higher levels of protein and enzymatic activity. Two cultivars that have the ideal malt profile for each company are Robust for MillerCoors and Stander for ABI. The pedigree of these two cultivars is very narrow; thus, understanding the genetic …

Glutograph 'E': A Simple Rheometer To Measure Quality Of Cooked Pasta, Kueh Fei Fernandez
Plant Sciences
Glutograph ‘E’ was designed to determine the stretch and relaxation properties of wet gluten. Usage of this equipment to evaluate the cooked pasta texture has not been reported and thus is the goal of this research. Procedure development involved the evaluation of the number of impulses, relaxation time, the number of spaghetti strands, and the number of tests per sample to give a reliable treatment mean. Different impulses settings affected the magnitude of strain, time and percent recovery. Traditional spaghetti required less time to reach 800 B.U and had greater percent recovery and strain values than did nontraditional spaghetti. Glutograph …
Nitrogen And Phosphorus Recalibration For Sunflower In North Dakota, Eric Charles Schultz
Nitrogen And Phosphorus Recalibration For Sunflower In North Dakota, Eric Charles Schultz
Soil Science
Sunflower is one of the most important annual crops grown for edible oil in the world and is grown in North Dakota and the northern Great Plains more than any other region in the United States. Sunflower production and sunflower itself has evolved significantly since commercial cultivation began in the 1970s. In order to properly update fertility requirements of nitrogen and phosphorus in the northern Great Plains to correspond to this evolution, sunflower yield and oil concentration response to nitrogen and phosphorus fertilizer was investigated based on a twoyear (2014-2015) study. Highly significant statistical relationships between sunflower yield and oil …

Spring Wheat (Triticum Aestivum L.) Response To Nitrogen (N) Loss Management And Sulfate-Based Soil Salinity, Resham Thapa
Soil Science
The first study was conducted during 2014 growing season at Glyndon, MN to evaluate the effectiveness of nitrification inhibitor or both urease and nitrification i.e. double inhibitors on reducing N losses in a rainfed spring-wheat (Triticum aestivum L.) system. Our findings suggested that amending urea with double inhibitors might be an effective strategy to reduce all possible N losses without compromising crop yields from urea-fertilized soils. The second study was conducted to understand the responses of spring-wheat to sulfate-based salinity stress under greenhouse and field conditions. Results from the greenhouse study indicated that the threshold soil ECe (EC using saturated-paste-extract …
D-Optimal Design For The 5pl-1p Model In Chemical Toxicity Assessment, Jenna Lynn Macdonald
D-Optimal Design For The 5pl-1p Model In Chemical Toxicity Assessment, Jenna Lynn Macdonald
Statistics
The five-parameter logistic minus one-parameter model is a hybrid between the five-parameter model and the four-parameter model used for the relationship between concentration and response. The four-parameter model includes the maximum and minimum concentration, slope, and the median concentration level EC50. The five-parameter model add an asymmetric factor which is important due to asymmetry of the sigmoid curve. This model, however, is more difficult to fit due to the addition of the fifth parameter, which is why the 5PL-1P model is used so that the asymmetric factor is taken into account but has less parameters. For the 5PL-1P model, D-optimal …
